Spicy Pasta

Spicy Pasta

Simple to make pasta. With the chicken, it can serve as a full lunch.
 
Total time to cook: 20 minutes
Serves: 6
Category: Pasta, side dish
Ingredients:
  1. Pasta (1 pocket or as desired)
  2. 4-5 cups Water
  3. Pasta Sauce or Tomato Paste
  4. Salt
  5. Chilli Powder
  6. Parsley
  7. 1-2 Onions
  8. Cooking Oil
  9. Margarine
  10. Green Peppers
  11. Carrots
  12. Peas
Step Wise Instructions:
  1. Boil the pasta, finely chopped green peppers, carrots and peas in the water, till tender on medium heat.
  2. Do not over boil, as we do not want it to be very mushy.
  3. Meanwhile, brown the onions on medium heat, slowly adding the pasta sauce or tomato paste (if sauce not available).
  4. Add chilli powder and salt as desired, also lots of parsley for taste.
  5. Drain the water from the pasta and vegetables after they are tender.
  6. Add the pasta paste. Mix well.
  7. Serve with Soup and Buttered Bread….enjoy.

Grown-up Fig Cookies

Cookies are such a refreshing treat on hot summer days.
 
Total time to cook: 45 minutes
Serves: 4

Ingredients: Fig Spread
  1. 1/2 pound dried figs
  2. 1/2 cup pomegranate juice
  3. 1/2 cup port
  4. 1/4 cup meyer (or regular) lemon juice
Fig Cookie Dough
  1. 1 cup brown rice flour
  2. 1 cup sorghum flour
  3. 1/2 cup tapioca flour
  4. 1/2 tsp baking soda
  5. 1 tsp baking powder
  6. 1/2 tsp xanthium gum
  7. scant 1 tsp salt
  8. 1 tsp freshly ground nutmeg
  9. 1/2 cup packed brown sugar
  10. 1/2 cup unsalted butter, room temperature
  11. 1/2 cup organic cane sugar
  12. 1 large egg
  13. 1 tsp vanilla
  14. 2 tbsp molasses
Step Wise Instructions:
  1. Preheat the oven to 350F degrees.
  2. Mix all the dry ingredients in a medium-size bowl.
  3. Set aside.
  4. Put the softened butter into a mixer.
  5. Add the brown sugar and cane sugar to the butter and cream together.
  6. Cream until well blended, scraping down the sides of the bowl a few times if needed.
  7. Add the egg, vanilla, and molasses.
  8. Mix until blended.
  9. Add the dry ingredients (I did this in three parts), and mix until blended.
  10. Split the dough into two pieces, wrap each in plastic and then refrigerate the dough for at least one hour. This is key with gluten-free doughs.
  11. After you’ve chilled the dough, roll out half the dough to 1/4-inch thickness on a Silpat or piece of parchment paper.
  12. Slather the fig spread over the surface of the dough, stopping just shy of the edges.
  13. Roll out the second half of dough to roughly the same size as the first.
  14. Lay it over the fig spread. Crimp the edges with a fork to seal in the fig spread.
  15. Slide the baking sheet into the oven for 15 minutes, checking occasionally to make sure the dough isn’t browning too much.
  16. Remove when the edges are just starting to get nice and golden.
  17. Let cool for 10 minutes.
  18. When the cookies have cooled, cut the edges off to make straight lines.
  19. Slice the giant cookie into small squares.

I love to make Creamy Smoothies in the summer instead of hot coffee.

Ingredients:
  1. 1 cup nonfat milk
  2. 2 cups unsweetened frozen cherries
  3. 2 cups frozen raspberries
  4. 2 cups frozen low fat vanilla yogurt
  5. 1/2 teaspoon vanilla extract
  6. 2 cups ice
Step Wise Instructions:
  1. Combine all ingredients in a blender until smooth.
  2. Pour into 4 glasses to serve.

Chocolate Nut Clouds

Simple chocolate and nut cookie recipe
 
Total time to cook: 40 minutes
Serves: 4

Ingredients:
  1. 2 large egg whites, at room temperature
  2. 1 tsp vanilla extract
  3. 1/4 tsp cream of tartar
  4. 1/4 tsp salt
  5. 2/3 cup granulated sugar
  6. Food color
  7. 1 cup pecans, chopped
  8. 1 cup semisweet chocolate chips
Step Wise Instructions:
  1. Heat oven to 275 degrees F. Grease baking sheets.
  2. In a large mixer bowl at high speed, beat egg whites, vanilla extract, cream of tartar and salt until soft peaks form.
  3. Gradually add sugar and, if desired, a few drops of food color and beat until very stiff and glossy and sugar is almost dissolved.
  4. By hand, fold in pecans and chocolate chips.
  5. Drop by well-rounded teaspoonsful about 1 inch apart on baking sheets.
  6. Bake for 20 to 25 minutes or until set and dry to the touch.
  7. Cool cookies on baking sheets for 1 minute.
  8. Carefully transfer cookies to wire racks to cool.
  9. Store in an airtight container in a cool place.

Chocolate Heaven Cookies

Easy! Easy! Easy! Chocolate chip cookie dough in a mini-muffin pan with a hershey kiss or mini-peanut butter cup in the center.
 
Total time to cook: 45 minutes

Ingredients:
  1. 4 1/2 cups all-purpose flour
  2. 2 tsp baking soda
  3. 1 tsp salt
  4. 2 cups butter or margarine
  5. 1 1/4 cups granulated sugar
  6. 1 3/4 cups brown sugar
  7. 2 or 3 Hershey bars, grated
  8. 3 eggs
  9. 5 tsp vanilla extract
  10. 1 package semisweet chocolate chips
  11. 1 package peanut butter chips
  12. 1 cup nuts, chopped
Step Wise Instructions:
  1. Heat oven to 375 degrees F.
  2. Stir together flour, baking soda and salt.
  3. In large bowl, beat butter, sugar, brown sugar and vanilla extract.
  4. Add eggs and beat until well mixed.
  5. Gradually add flour, mixing well between additions.
  6. Stir in chocolate and peanut butter chips and nuts, if desired.
  7. Drop by heaping teaspoons full onto ungreased cookie sheets.
  8. Bake for 7 to 9 minutes or until very lightly browned.
  9. Cool slightly and move to wire rack to cool completely.
  10. Makes about 7 dozen good-size cookies.

  1. 4 cups cold water
  2. 10 tea bags
  3. 4 cans apricot nectar
  4. 1/2 cup fresh mint leaves, slightly crushed
  5. 1/4 cup sugar
  6. Fresh mint
  7. Citrus slices
Step Wise Instructions:
  1. In a 4-quart Dutch oven bring water to boiling.
  2. Remove from heat.
  3. Add tea bags.
  4. Let steep for 3 to 5 minutes.
  5. Discard bags.
  6. Stir in nectar, mint, and sugar.
  7. Cover; chill sometimes.

Crunchy Pea Salad

One of the easiest and quickest Crunchy Pea Salad recipes I have seen.
 
Total time to cook: 30 minutes
Serves: 6

Ingredients:
  1. 2 1/4 cups shelled green peas
  2. 1 1/4 cups diced cucumber
  3. 1/2 cup thinly sliced radishes
  4. 1/4 cup thinly sliced green onions
  5. 2 tbsp rice vinegar
  6. 1 tbsp olive oil
  7. 1 tbsp honey
  8. 1/2 tsp coarsely ground pepper
  9. 1/4 tsp salt
Step Wise Instructions:
  1. Steam peas, covered, 6 minutes or until tender.
  2. Rinse under cold water; drain well.
  3. Combine peas, diced cucumber, radishes, and green onions in a bowl.
  4. Combine vinegar and remaining ingredients in a small bowl.
  5. Stir with a whisk.
  6. Pour over vegetable mixture; toss well. Serving

Chocolate Soup

Easy to make, this chocolate soup recipe is a household favorite
Total time to cook: 30 minutes

Ingredients:
  1. 1/2 cup sugar — plus
  2. 1 tablespoon sugar
  3. 5 tablespoons Flour
  4. 2 tablespoons Cocoa
  5. 4 cups Milk
  6. 3 slices bread
  7. 1/4 cup butter
Step Wise Instructions:
  1. Combine sugar, flour and cocoa.
  2. Put under broiler and brown, stirring frequently.
  3. Slowly add a little milk until creamy.
  4. Heat the remainder of the milk to boiling point.
  5. Slowly add the cold milk mix, bring again to boiling point.
  6. Add vanilla and salt to taste (about 1/2 teaspoon vanilla and dash of salt).
  7. Cube the bread and fry golden brown in the butter. Add the toasted bread at serving time.

My wife makes fresh Jellied fruit soup every year. Makes a great take along for holiday parties

  1. 1 c Orange juice
  2. 1 c Pineapple juice
  3. 1 pk Sweetened lemon flavored -gelatin
Step Wise Instructions:
  1. Heat fruit juices to boiling.
  2. Add gelatin. Stir until dissolved.
  3. Pour into a shallow oblong mold.
  4. Chill until firm. Cut in small cubes.
  5. Serve in bouillon cups with crisp crackers.

Mexican Dinner

Not the same old dinner that you find at parties. This is wonderful to share with others.
 
Total time to cook: 45 minutes
Serves: 4

Ingredients:
  1. 1 pkg. Spanish rice mix
  2. 1lb ground beef
  3. 1 jar salsa (to taste and consistency)
  4. Shredded cheese
  5. Chopped onion
  6. Water
  7. 1 can chopped tomatoes (as needed)
  8. Corn to taste
  9. Bell pepper to taste
  10. Garlic
  11. Cumin
  12. Chili powder
  13. Hot sauce to taste
  14. Sour cream
Step Wise Instructions:
  1. Cook rice mix according to directions.
  2. Cook and crumble ground beef until done. Drain.
  3. If you like onions, bell pepper or corn, saute them.
  4. Add ground beef to rice. Add spices and veges to taste.
  5. Add enough salsa and/or canned tomatoes to make it as saucy as you’d like.
  6. Sprinkle with cheese.
  7. Serve with a dollop of sour cream.
