Ingredients:
- Pasta (1 pocket or as desired)
- 4-5 cups Water
- Pasta Sauce or Tomato Paste
- Salt
- Chilli Powder
- Parsley
- 1-2 Onions
- Cooking Oil
- Margarine
- Green Peppers
- Carrots
- Peas

Step Wise Instructions:
- Boil the pasta, finely chopped green peppers, carrots and peas in the water, till tender on medium heat.
- Do not over boil, as we do not want it to be very mushy.
- Meanwhile, brown the onions on medium heat, slowly adding the pasta sauce or tomato paste (if sauce not available).
- Add chilli powder and salt as desired, also lots of parsley for taste.
- Drain the water from the pasta and vegetables after they are tender.
- Add the pasta paste. Mix well.
- Serve with Soup and Buttered Bread….enjoy.

Ingredients: Fig Spread
- 1/2 pound dried figs
- 1/2 cup pomegranate juice
- 1/2 cup port
- 1/4 cup meyer (or regular) lemon juice
|

Fig Cookie Dough
- 1 cup brown rice flour
- 1 cup sorghum flour
- 1/2 cup tapioca flour
- 1/2 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp xanthium gum
- scant 1 tsp salt
- 1 tsp freshly ground nutmeg
- 1/2 cup packed brown sugar
- 1/2 cup unsalted butter, room temperature
- 1/2 cup organic cane sugar
- 1 large egg
- 1 tsp vanilla
- 2 tbsp molasses

Step Wise Instructions:
- Preheat the oven to 350F degrees.
- Mix all the dry ingredients in a medium-size bowl.
- Set aside.
- Put the softened butter into a mixer.
- Add the brown sugar and cane sugar to the butter and cream together.
- Cream until well blended, scraping down the sides of the bowl a few times if needed.
- Add the egg, vanilla, and molasses.
- Mix until blended.
- Add the dry ingredients (I did this in three parts), and mix until blended.
- Split the dough into two pieces, wrap each in plastic and then refrigerate the dough for at least one hour. This is key with gluten-free doughs.
- After you’ve chilled the dough, roll out half the dough to 1/4-inch thickness on a Silpat or piece of parchment paper.
- Slather the fig spread over the surface of the dough, stopping just shy of the edges.
- Roll out the second half of dough to roughly the same size as the first.
- Lay it over the fig spread. Crimp the edges with a fork to seal in the fig spread.
- Slide the baking sheet into the oven for 15 minutes, checking occasionally to make sure the dough isn’t browning too much.
- Remove when the edges are just starting to get nice and golden.
- Let cool for 10 minutes.
- When the cookies have cooled, cut the edges off to make straight lines.
- Slice the giant cookie into small squares.

| Simple chocolate and nut cookie recipe |

Ingredients:
- 2 large egg whites, at room temperature
- 1 tsp vanilla extract
- 1/4 tsp cream of tartar
- 1/4 tsp salt
- 2/3 cup granulated sugar
- Food color
- 1 cup pecans, chopped
- 1 cup semisweet chocolate chips
|

Step Wise Instructions:
- Heat oven to 275 degrees F. Grease baking sheets.
- In a large mixer bowl at high speed, beat egg whites, vanilla extract, cream of tartar and salt until soft peaks form.
- Gradually add sugar and, if desired, a few drops of food color and beat until very stiff and glossy and sugar is almost dissolved.
- By hand, fold in pecans and chocolate chips.
- Drop by well-rounded teaspoonsful about 1 inch apart on baking sheets.
- Bake for 20 to 25 minutes or until set and dry to the touch.
- Cool cookies on baking sheets for 1 minute.
- Carefully transfer cookies to wire racks to cool.
- Store in an airtight container in a cool place.

Ingredients:
- 4 1/2 cups all-purpose flour
- 2 tsp baking soda
- 1 tsp salt
- 2 cups butter or margarine
- 1 1/4 cups granulated sugar
- 1 3/4 cups brown sugar
- 2 or 3 Hershey bars, grated
- 3 eggs
- 5 tsp vanilla extract
- 1 package semisweet chocolate chips
- 1 package peanut butter chips
- 1 cup nuts, chopped

Step Wise Instructions:
- Heat oven to 375 degrees F.
- Stir together flour, baking soda and salt.
- In large bowl, beat butter, sugar, brown sugar and vanilla extract.
- Add eggs and beat until well mixed.
- Gradually add flour, mixing well between additions.
- Stir in chocolate and peanut butter chips and nuts, if desired.
- Drop by heaping teaspoons full onto ungreased cookie sheets.
- Bake for 7 to 9 minutes or until very lightly browned.
- Cool slightly and move to wire rack to cool completely.
- Makes about 7 dozen good-size cookies.

- 4 cups cold water
- 10 tea bags
- 4 cans apricot nectar
- 1/2 cup fresh mint leaves, slightly crushed
- 1/4 cup sugar
- Fresh mint
- Citrus slices

Step Wise Instructions:
- In a 4-quart Dutch oven bring water to boiling.
- Remove from heat.
- Add tea bags.
- Let steep for 3 to 5 minutes.
- Discard bags.
- Stir in nectar, mint, and sugar.
- Cover; chill sometimes.

Ingredients:
- 2 1/4 cups shelled green peas
- 1 1/4 cups diced cucumber
- 1/2 cup thinly sliced radishes
- 1/4 cup thinly sliced green onions
- 2 tbsp rice vinegar
- 1 tbsp olive oil
- 1 tbsp honey
- 1/2 tsp coarsely ground pepper
- 1/4 tsp salt

Step Wise Instructions:
- Steam peas, covered, 6 minutes or until tender.
- Rinse under cold water; drain well.
- Combine peas, diced cucumber, radishes, and green onions in a bowl.
- Combine vinegar and remaining ingredients in a small bowl.
- Stir with a whisk.
- Pour over vegetable mixture; toss well. Serving

Ingredients:
- 1/2 cup sugar — plus
- 1 tablespoon sugar
- 5 tablespoons Flour
- 2 tablespoons Cocoa
- 4 cups Milk
- 3 slices bread
- 1/4 cup butter
|
|
Step Wise Instructions:
- Combine sugar, flour and cocoa.
- Put under broiler and brown, stirring frequently.
- Slowly add a little milk until creamy.
- Heat the remainder of the milk to boiling point.
- Slowly add the cold milk mix, bring again to boiling point.
- Add vanilla and salt to taste (about 1/2 teaspoon vanilla and dash of salt).
- Cube the bread and fry golden brown in the butter. Add the toasted bread at serving time.

- 1 c Pineapple juice
- 1 pk Sweetened lemon flavored -gelatin

Step Wise Instructions:
- Heat fruit juices to boiling.
- Add gelatin. Stir until dissolved.
- Pour into a shallow oblong mold.
- Chill until firm. Cut in small cubes.
- Serve in bouillon cups with crisp crackers.

- 1 pkg. Spanish rice mix
- 1lb ground beef
- 1 jar salsa (to taste and consistency)
- Shredded cheese
- Chopped onion
- Water
- 1 can chopped tomatoes (as needed)
- Corn to taste
- Bell pepper to taste
- Garlic
- Cumin
- Chili powder
- Hot sauce to taste
- Sour cream

Step Wise Instructions:
- Cook rice mix according to directions.
- Cook and crumble ground beef until done. Drain.
- If you like onions, bell pepper or corn, saute them.
- Add ground beef to rice. Add spices and veges to taste.
- Add enough salsa and/or canned tomatoes to make it as saucy as you’d like.
- Sprinkle with cheese.
- Serve with a dollop of sour cream.
