Appetizer Wieners

You can prepare this beef appetizer in just minutes.

 
Total time to cook: 15 minutes
Serves: 6

Ingredients:
  1. 4 beef wieners
  2. 1/4 cup ketchup
  3. 3 tablespoon water
  4. 1 tbsp mustard
  5. 1 teaspoon Worcestershire sauce
  6. 1/4 teaspoon onion powder
Step Wise Instructions:
  1. Cut the wieners into eighths and place them on a microwave bowl or paper plate.
  2. Combine the remaining ingredients in a small bowl.
  3. Brush half of the mixture over the wieners.
  4. With the microwave on HIGH, cook for 1-1/2 minutes, rotating the plate one-half turn after 1 minute.
  5. Brush with the remaining sauce mixture.
  6. Continue cooking on HIGH for 1 minute.
  7. Place a toothpick in the top of each wiener piece.

A light decorative way to start any good meal

 
Total time to cook: 30 minutes

Ingredients:
  1. 1 1/2 (1-ounce) slices white bread
  2. Cooking spray
  3. 1/3 cup sliced green onions
  4. 1/4 cup chopped fresh parsley
  5. 2 garlic cloves, minced
  6. 1/4 cup Italian-seasoned breadcrumbs
  7. 1/4 cup (1 ounce) grated fresh Parmesan cheese
  8. 1 tsp fresh lemon juice
  9. 1/8 tsp ground red pepper
  10. 1/8 tsp black pepper
  11. 24 oysters on the half shell
  12. 8 lemon wedges
Step Wise Instructions:
  1. Preheat oven to 450°.
  2. Place bread in a food processor, and pulse 10 times or until coarse crumbs form to measure 3/4 cup.
  3. Heat a medium nonstick skillet coated with cooking spray over medium heat. Add onions, parsley, and garlic; cook 5 minutes, stirring constantly.
  4. Remove from heat; stir in fresh breadcrumbs, Italian breadcrumbs, and the next 4 ingredients (Italian breadcrumbs through black pepper).
  5. Place oysters on a jelly roll pan. Sprinkle breadcrumb mixture evenly over oysters.
  6. Bake the oysters at 450° for 7 minutes or until the edges of the oysters curl.
  7. Serve with lemon wedges.

  1. 3 6-inch pitas, split in half and separated into 2 circles
  2. olive oil
  3. ground cumin
  4. paprika
Step Wise Instructions:
  1. Cut each pita circle into 4 wedges and transfer to a cookie sheet.
  2. Brush the tops of each of the pitas with a little olive oil.
  3. Sprinkle the pitas, to taste, with the ground cumin and paprika.
  4. Bake at 400 degrees for 5 minutes or until crisp.
  5. Serve with your favorite vegetable dip.

Beer Cheese Fondue

These fondues are easy to prepare, and they make a great recipe for your vegetarian friends.
 
Total time to cook: 35 minutes

Ingredients:
  1. 1 clove garlic - peeled
  2. 12 oz. can OR bottle of flat beer
  3. 3 Tbls. all-purpose flour
  4. 3/4 tsp. black pepper
  5. 1 splash sauce
  6. 1 pinch salt
  7. 1 dash ground mustard seed
  8. 1 lb. aged cheddar cheese
  9. 1 loaf French bread - cubed
Step Wise Instructions:
  1. Rub garlic clove over the inside surface of a fondue pot; mince garlic clove; set both aside.
  2. In a saucepan, stir together a small amount of beer and flour; once a paste has formed, stir in remaining beer and all other ingredients, except cheese.
  3. Over medium heat, heat mixture through.
  4. Slowly add cheese, stirring as you add it to the pan, until all cheese has melted.
  5. Transfer contents of pot to a fondue pot.
  6. Serve with French bread cubes to dip in cheese.

  1. 1 cup vegetable or olive oil
  2. 1/3 cup white wine vinegar
  3. 1 clove garlic minced
  4. 1 tbsp lemon peel grated
  5. 2 tbsp sugar
  6. 1 tbsp Dijon mustard
  7. 1/2 tbsp salt
  8. 6 cups long grain rice cooked
  9. 2 cups wild rice cooked
  10. 2 cups seeded cucumbers diced
  11. 2/3 cup green onions thinly sliced
  12. 1/4 cup fresh parsley minced
  13. 1/4 cup fresh basil or 1 Tbls dried minced
  14. 1/2 tbsp pepper
  15. 1/2 cup chopped pecans toasted
Step Wise Instructions:
  1. In a jar with tight-fitting lid, combine the first 7 ingredients; shake well. In a large bowl, combine long grain and wide rice; add dressing and toss.
  2. Cover and refrigerate overnight.
  3. Add the cucumbers, green onions, parsley, basil and pepper; mix well. C
  4. hill for 2 hours.
  5. Fold in pecans just before serving.

Chilled Spring Rolls

This recipe can be livened up even more with a garnish of halved cherry tomatoes, parsley sprigs, sweet red pepper strips, steamed asparagus spears, or sautéed mushroom caps.

Ingredients:
  1. 2 green onions
  2. 5 cups bean sprouts
  3. 10 cooked fresh crab legs
  4. 1 teaspoon sesame oil
  5. 10 leaf lettuce leaves
  6. 10 ready-to-eat spring roll skins
  7. 1/3 cup chopped fresh cilantro
  8. Honey Sichuan Sauce
  9. honey Sichuan sauce
  10. 1/3 cup honey
  11. 1/3 cup chili
Step Wise Instructions:
  1. Cut green onions into 2-inch pieces; cut pieces lengthwise into thin strips. Mix green onions and bean sprouts; divide mixture into 10 equal parts.
  2. Sprinkle crabmeat pieces with sesame oil. Tear each lettuce leaf into 3-inch squares.
  3. Place 1 lettuce square on center of 1 spring roll skin. (Cover remaining skins with plastic wrap to keep them pliable.)
  4. Place 1 part bean sprout mixture on lettuce; top with 1 crabmeat piece and 1 1/2 teaspoons cilantro.
  5. Fold bottom corner of spring roll skin over filling, tucking the point under.
  6. Fold in and overlap the 2 opposite corners. Brush fourth
  7. corner generously with cold water; roll up to seal. Repeat with remaining spring roll skins. (Cover filled spring rolls with plastic wrap to keep them from drying out.)
  8. Cover and refrigerate at least 2 hours but no longer than 8 hours. Cut in half if desired.
  9. Serve with Honey Sichuan Sauce.
