Pasta Con Calamari

Pasta Con Calamari

A slightly different pasta salad recipe that is a wonderful picnic addition

Total time to cook: 40 minutes
Serves: 6

Ingredients:
  1. 1 tbsp. fresh calamari (squid)
  2. 1 small jar marinated artichoke hearts, drained and rinsed off
  3. ½ can progresso garbanzo beans
  4. 1/3 cup pitted black olives, halved
  5. 1 large tomato, chopped
  6. Lemon juice
  7. 3 tbsp extra-virgin olive oil
  8. 1 tbsp fresh basil, chopped
  9. Black pepper to taste
  10. Crushed red pepper to taste
  11. 1 lb long, thin pasta
Step Wise Instructions:
  1. Scald milk and put in bowl and add margarine and salt.
  2. Pull head out of body sac; most of the innards should follow. Remove cartilaginous “pen” also.
  3. Slice the tentacles off of the head just below the eyes; remove the beak if present.
  4. Clean out body sac under running water with your finger.
  5. Remove the purple skin.
  6. Slice the body into rings, and put them and the tentacles into a strainer and rinse them off. Easy!
  7. Bring a small pot of water to boil.
  8. Boil calamari for 3-4 minutes, just until they turn opaque and the tentacles curl up.
  9. Drain.
  10. In a bowl, combine all ingredients (except pasta of course) and mix.
  11. Boil your pasta and drain it, and mix with the other stuff.
  12. Serve with fresh grated Parmesan cheese and fresh Italian bread.

Eggplant Manicotti

Eggplant manicotti the combination of eggs & ricotta cheese .This delicious egg recipe is easy to make. Try our Eggplant manicotti.
Total time to cook: 50 minutes

Ingredients:
  1. 2 medium eggplants, peeled
  2. 18 ounces ricotta cheese
  3. 2 tablespoons roasted garlic
  4. 2 tablespoons olive oil
  5. Pinch of salt
  6. Pinch of ground black pepper
  7. 2 cups tomato sauce
  8. 1/2 cup heavy cream
  9. 1/2 teaspoon salt
Step Wise Instructions:
  1. Peel eggplant and slice into 12 pieces, 1/4 inch thick.
  2. Slice from top to bottom. Lay slices on a paper towel and sprinkle salt on them to allow water to drain from the slices.
  3. Mix ricotta cheese with roasted garlic, basil, salt and pepper. In skillet, cook eggplant slices with olive oil.
  4. Lay on paper towel to let the oil drain.
  5. Roll 1 1/2 ounce of ricotta cheese in each slice.
  6. Pour tomato sauce in casserole and neatly place manicotti in rows on top of the sauce.
  7. Bake in preheated oven at 400F until hot all the way through.
  8. Remove manicotti from pan onto serving dish.

Strawberry Soup

A pretty simple strawberry recipe, with a nice taste

Total time to cook: 40 minutes
Serves: 5

Ingredients:
  1. 1/2 kg fresh strawberries
  2. 50 to 100 gms granulated white sugar
  3. 1/4 to 1/2 cup plain yogurt or sour cream
  4. 120 to 180 ml milk or cream
  5. whipped cream for garnish
Step Wise Instructions:
  1. Wash and cut the strawberries and place in your food processor.
  2. Process until the strawberries are pureed.
  3. Add the sugar, yogurt and milk and process until combined.
  4. Adjust the sugar, yogurt, and milk as necessary.
  5. Ladle into dessert bowls and garnish with a dollop of whipped cream just before serving.
  6. Can be refrigerated for a few hours.
  7. If refrigerating, do not garnish with whipped cream until just before serving.

Cowboy Pie

A wonderful tasting pie recipe. Cowboy pie - Easy, quick and tasty pie.

Ingredients:
  1. 1 tin of hotdogs
  2. 4 or 5 medium to large potatoes
  3. 2 medium tins of baked beans
  4. cheese
Step Wise Instructions:
  1. Peel, chop potatoes, put in pan with water, bring to boil them simmer till potatoes are soft.
  2. When potatoes are nearly cooked put beans on a gentle simmer.
  3. Chop hotdogs into bite sized chunks, no need to cook these first.
  4. Drain and mash potatoes.
  5. Put beans and chopped hotdogs into suitable sized casserole dish.
  6. Spread mashed potatoes onto beans and sausages.
  7. Sprinkle grated cheese on top.
  8. Put under hot grill till cheese bubbles and browns.

A little different, but these chives rolls make a wonderful party snack.

Ingredients:
  1. 1 package active dry yeast
  2. 1/4 cup warm water
  3. 1 cup milk
  4. 1/3 cup vegetable oil
  5. 1/4 cup mashed potatoes
  6. 1 egg
  7. 3 tablespoons sugar
  8. 1-1/2 teaspoons salt
  9. 3-1/2 cups all-purpose flour
Filling:
  1. 1 cup sour cream
  2. 1 cup minced fresh or frozen chives
  3. 1 egg yolk
  4. Butter or margarine, melted
Step Wise Instructions:
  1. In a bowl, dissolve yeast in water. In a saucepan, heat milk, oil and mashed potatoes to 110 -115 F.
  2. Transfer to a mixing bowl; add yeast mixture, egg, sugar and salt.
  3. Add enough flour to make a soft dough.
  4. Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes.
  5. Place in a greased bowl; turn once to grease top.
  6. Cover and let rise in a warm place until doubled, about 1 hour.
  7. Turn dough onto a floured surface.
  8. Roll into a 15-in. x 10-in. rectangle. In a bowl, combine sour cream, chives and egg yolk.
  9. Spread over dough to within 1/2 in. of edges.
  10. Roll up jelly-roll style, starting with a long side; pinch seam to seal.
  11. Cut into 1-in. slices.
  12. Place cut side down in a quarter sheet baking pan (13″ x 9″ x 2″).
  13. Cover and let rise until doubled, about 1 hour.
  14. Bake at 350 F for 30-35 minutes or until golden brown.
  15. Brush with butter.
  16. Cool on a wire rack.
  17. Refrigerate leftovers.

Apple Noodle Casserole

This is a quick & delicious casserole of nutmeg, Macintosh apple and cinnamon that is sure to become a family favorite.
Total time to cook: 1 hour

Ingredients:
  1. 1/2 cup butter
  2. 1 lb. pkg. egg noodles
  3. 4 large Macintosh apples
  4. 4 eggs - beaten
  5. 1 cup packed brown sugar
  6. 1 cup golden raisins
  7. 1 Tbls. lemon juice
  8. 2 tsp. ground cinnamon
  9. 1 dash grated nutmeg
Step Wise Instructions:
  1. Pour melted butter into a 9″ X 13″ X 2″ baking dish and coat bottom of dish evenly.
  2. Combine remaining ingredients and pour into baking dish.
  3. Bake in a 375 degree oven for 45 minutes

Ingredients:
  1. 2 1/2 c. cubed cooked chicken
  2. 2 c. sliced celery
  3. 1 med. green pepper, chopped
  4. 1 can condense cream of chicken soup
  5. 1 can sliced water chestnuts, drained
  6. 1 can mushroom pieces, drained
  7. 1 jar diced pimento, drained
  8. 2 tsp. soy sauce
  9. 1/4 c. chopped cashews
  10. 1 c. chow mien noodles
Step Wise Instructions:
  1. Combine chicken, celery, green pepper, soup, water chestnuts, mushrooms, pimento and soy sauce in 2-quart casserole; mix well.
  2. Cover with casserole lid.
  3. Microwave (high) 7 to 8 minutes or until heated through, stirring once.
  4. Add cashews and chow mein noodles; mix lightly.
  5. Microwave (high) uncovered 2 1/2 to 3 minutes or until heated through.
  6. You may wish to substitute turkey or another favorite cooked meat or fish for the chicken.
  7. Save a few chow mein noodles to use for a garnish.

This is a really easy recipe for a soothing tea with flavors of ginger, holy basil and anisseds.

  1. ½” piece of Ginger
  2. 3 tsp. of Tea Leaves
  3. ½ tsp. of Aniseeds
  4. 1 tbsp. of Holy Basil
  5. Sugar (to taste)
  6. ¾ cups of Milk
  7. 1 ½ cup of Water
Step Wise Instructions:
  1. Take a sauce pan and put the water on medium heat
  2. Add the crushed ginger, aniseeds and holy basil leaves.
  3. Let the water to come to a boil.
  4. Now add the tea leaves bring to a boil and then let it simmer for 5 minutes.
  5. Strain the team and put it in a tea pot.
  6. Enjoy it with sugar and milk.

Cheese Noodle Bake

Great snack for your halloween party. Simple homemade noodle jerky!

Ingredients:
  1. 4 ounces uncooked noodles
  2. 1 cup low fat cottage cheese
  3. 3/4 cup shredded low fat Cheddar cheese
  4. 1/3 cup chopped green onions with tops
  5. 3 tablespoons grated Parmesan cheese
  6. 1/2 teaspoon Worcestershire sauce
  7. 1/8 teaspoon pepper
  8. 1/2 cup low fat sour cream
  9. 2 egg whites
Step Wise Instructions:
  1. Heat oven to 350 degrees.
  2. Spray square baking dish, 8×8x2 inches, with nonstick cooking spray.
  3. Cook noodles as directed on package; drain.
  4. Mix noodles and remaining ingredients. Spread in dish.
  5. Bake uncovered 30-35 minutes or until center is set and edges are golden brown.
  6. Let stand 5 minutes.
