Ingredients:
- 2 1/2 c. cubed cooked chicken
- 2 c. sliced celery
- 1 med. green pepper, chopped
- 1 can condense cream of chicken soup
- 1 can sliced water chestnuts, drained
- 1 can mushroom pieces, drained
- 1 jar diced pimento, drained
- 2 tsp. soy sauce
- 1/4 c. chopped cashews
- 1 c. chow mien noodles

Step Wise Instructions:
- Combine chicken, celery, green pepper, soup, water chestnuts, mushrooms, pimento and soy sauce in 2-quart casserole; mix well.
- Cover with casserole lid.
- Microwave (high) 7 to 8 minutes or until heated through, stirring once.
- Add cashews and chow mein noodles; mix lightly.
- Microwave (high) uncovered 2 1/2 to 3 minutes or until heated through.
- You may wish to substitute turkey or another favorite cooked meat or fish for the chicken.
- Save a few chow mein noodles to use for a garnish.

This is a recipe for apple bread dipped in a mixture of cinnamon and brown sugar, and then in chopped nuts.

Ingredients:
- 1 cup sugar
- 1 cup applesauce
- 1/3 cup vegetable oil
- 2 eggs
- 3 Tbs milk
- 2 cup flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1 cup chopped nuts

Step Wise Instructions:
- Combine first 5 ingredients in mixing bowl and beat with eletric mixer for 1 minute.
- Combine remaining ingredients except nuts and add to applesauce mixture beating until smooth.
- Stir in nuts.
- Spoon into greased loaf pan and bake at 350 degrees 40-45 min allow to cool in pan on rack for 10-15 minutes
- Remove from pan and continue to cool on rack.

|

Ingredients:Roast
- 3-4 lb bottom round roast
- 2 large onions, peeled
- Salt and pepper
- Extra virgin olive oil
- 16 oz wide egg noodles
|
|
Gravy:
- 12 ginger snaps
- 4 brown gravy packs
|
|
Step Wise Instructions:
- Salt and pepper the roast all over. Put 2-3 tbsp of olive oil in a large pot.
- Place roast in pot and brown on all sides to seal in flavor. Pour warm water in pot until top of roast is just covered.
- Add onions and simmer for 2 1/2 hours, stirring occasionally.
- After roast has cooked for 2 1/2 hours, take onions and roast out of water and let cool on a platter while you mix gravy.
- Let 1/2 the ginger snaps dissolve in a small glass with water . Add 4 brown gravy packs to roast water and whisk until thickened.
- Add ginger snaps.
- Dissolve other 6 ginger snaps in same amount of water and add it to gravy and whisk.
- Cut roast into thin slices and layer them in gravy.
- Add onions back to mixture.
- Let it refrigerate overnight. Simmer for another 2 hours the next day. Serve over egg noodles.

This is an easy, but elegant baguette rolls accented with pine nuts and roasted beef.

Ingredients: Crust
- 1 small baguette
- 1 tablespoon Dijon mustard
- 6 slices lean roast beef
- 6 leaves oak leaf lettuce
- ½ cup (75g) char grilled capsicum

Step Wise Instructions:
- Halve baguette lengthways. Remove some of soft centre.
- Spread mustard evenly over bread cavity.
- Layer beef, lettuce and capsicum in bread cavity until full.
- Replace top.
- Cut baguette in half then wrap firmly in baking paper and secure with string

This is a super quick version of seafood rice that makes a great side dish for informal gatherings

Ingredients: Crust
- 2 dozens of squid
- 2 dozens small scallops
- 2 dozens of mussels
- 2 dozens machos
- 2 medium red peppers cut in strips
- 3 tablespoons of oil
- ½ cup of cooked green peas
- 2 Medium onions finely chopped
- 2 tbsp yellow hot pepper sauce
- 2 tablespoons of garlic, ground
- 2 tomatoes peeled and cut in pieces
- 3 tablespoons coriander, ground
- 4 cups rice
- 4 ½ cups of water

Step Wise Instructions:
- Boil and clean the seafood, Heat the oil and fry the onions until golden, add garlic, yellow hot peppers, tomatoes, salt and pepper.
- Stir and add the cariander and 4 1/2 cups of water.
- Put in the seafood and bring to the boil then add the rice, peas and strips of red pepper.
- Simmer until the rice is cooked.

I like this simple lamb soup recipe. Easy to make, easy to eat!

Ingredients:
- ½ packet brown gravy mix
- ½ medium onion, chopped coarsely
- ¾ lb of boneless lamb shoulder, cut into one-inch cubes
- 2 cups of beef stock
- 1 ½ cups of potatoes, cubed
- 1 cup of beer
- 1 cup of carrots, sliced thinly
- 1 cup of green cabbage, shredded
- 2 teaspoons of olive oil
- ½ teaspoon of pepper

Step Wise Instructions:
- In a small saucepan, combine sugar and water; bring to a boil and cook until sugar is dissolved, about 1 - 2 minutes. Let cool.
- Heat the olive oil in a non-stick saucepan over a medium-high heat.
- Sauté the chopped onion until golden (about 5 minutes).
- Add the lamb cubes and sauté for 5 minutes, stirring, until browned.
- Add the beer and pepper.
- Reduce heat to low; then cover and simmer for 30 minutes.
- Stir in the beef stock and gravy mix.
- Add the potato cubes and sliced carrots, cover and simmer until vegetables are tender
- Stir in the shredded cabbage and cook until the cabbage turns bright green (about 3 minutes).

Ingredients:
- 2 pounds ground beef
- 1/2 onion, chopped
- 1 tsp ground black pepper
- 1/2 tsp garlic salt
- 2 1/2 cups tomato sauce
- 1 jar salsa
- 4 tbsp chili seasoning mix
- 1 can light red kidney beans
- 1 can dark red kidney beans

Step Wise Instructions:
- In large bowl mix melted butter into cracker crumbs and garlic powder.
- Split the lobsters down the center and remove the stomach and vein.
- Save the tamale and add to cracker crumb mixture.
- Stuff lobsters with cracker mixture.
- Bake for 20 minutes at 450F.

Ingredients:
- 1-1/4 pounds boneless beef top sirloin steak, cut 3/4 inch thick
- 2 tsp dark sesame oil
- 2 garlic cloves, minced
- 1 medium red bell pepper, cut into thin strips
- 3 tbsp reduced-sodium soy sauce, divided
- 2 tbsp water
- 3 cups coarsely chopped fresh spinach
- ½ cup sliced green onions
- 3 tbsp ketchup
- 2 cups hot cooked rice

Step Wise Instructions:
- Cut beef steak lengthwise in half and then crosswise into 1/4 inch strips.
- Toss with sesame oil and garlic.
- Heat large nonstick skillet over medium-high heat until hot.
- Add beef (1/2 at a time); stir-fry 1 to 2 minutes or until outside surface is no longer pink.
- Remove from skillet.
- In same skillet, add bell pepper, 2 tablespoons soy sauce and water; cook 2 to 3 minutes or until pepper is crisp-tender.
- Add spinach and green onions; cook until spinach is just wilted.
- Stir in ketchup, remaining 1 tablespoon soy sauce and beef; heat through.
- Serve over rice.

- 2 cups of cubed cooked lamb
- 2 cups of chicken broth
- 2 medium onions, chopped
- 1 garlic clove, minced
- 2 tbsp of flour
- 1 tbsp of butter
- 1 tbsp of cooking oil
- 2 tsp of curry powder
- ½ teaspoon of cumin

Step Wise Instruction:
- In a suitably sized saucepan, heat the butter and the oil.
- Sauté the onions until they soften, then add the garlic and cook for one minute.
- Stir in the curry powder, cumin and flour; then cook for a few seconds.
- Whisk in the chicken broth and cook, stirring continuously, until thickened.
- Add the cooked lamb cubes and heat though.
- Serve with rice and traditional curry condiments.

Ingredients:
- 1 pound ground beef
- 1 small onion, sliced thin, separated into rings
- 1 small green or red bell pepper, cut into thin strips
- 3/4 teaspoon salt
- 1/2 teaspoon pepper
- 1 package thick pre baked pizza crust
- 2 cups shredded mozzarella cheese

Step Wise Instructions:
- Heat oven to 400°F. Brown ground beef in large nonstick skillet over medium heat 6 minutes.
- Add onion and bell pepper; cook until beef is not pink and vegetables are crisp-tender, breaking beef up into small crumbles.
- Pour off drippings; season with salt and pepper.
- Place pizza crust on baking sheet.
- Top with beef mixture, then cheese.
- Bake in 400°F oven 8 to 10 minutes or until cheese is melted.
