Chicken Cantonese

Chicken Cantonese

A great way to include mushrooms in your meal plan, and a delicious meal for the chicken lovers. As we like to say, good family food.

Total time to cook: 1 hour
Serves: 6
Category: Side dish, seafood, chicken, healthy recipe,
Ingredients:
  1. 2 1/2 c. cubed cooked chicken
  2. 2 c. sliced celery
  3. 1 med. green pepper, chopped
  4. 1 can condense cream of chicken soup
  5. 1 can sliced water chestnuts, drained
  6. 1 can mushroom pieces, drained
  7. 1 jar diced pimento, drained
  8. 2 tsp. soy sauce
  9. 1/4 c. chopped cashews
  10. 1 c. chow mien noodles
Step Wise Instructions:
  1. Combine chicken, celery, green pepper, soup, water chestnuts, mushrooms, pimento and soy sauce in 2-quart casserole; mix well.
  2. Cover with casserole lid.
  3. Microwave (high) 7 to 8 minutes or until heated through, stirring once.
  4. Add cashews and chow mein noodles; mix lightly.
  5. Microwave (high) uncovered 2 1/2 to 3 minutes or until heated through.
  6. You may wish to substitute turkey or another favorite cooked meat or fish for the chicken.
  7. Save a few chow mein noodles to use for a garnish.

Applesauce Nut Bread

This is a recipe for apple bread dipped in a mixture of cinnamon and brown sugar, and then in chopped nuts.

Total time to cook: 1 hour
Serves: 5

Ingredients:
  1. 1 cup sugar
  2. 1 cup applesauce
  3. 1/3 cup vegetable oil
  4. 2 eggs
  5. 3 Tbs milk
  6. 2 cup flour
  7. 1 tsp baking soda
  8. 1/2 tsp baking powder
  9. 1/2 tsp cinnamon
  10. 1/4 tsp nutmeg
  11. 1 cup chopped nuts
Step Wise Instructions:
  1. Combine first 5 ingredients in mixing bowl and beat with eletric mixer for 1 minute.
  2. Combine remaining ingredients except nuts and add to applesauce mixture beating until smooth.
  3. Stir in nuts.
  4. Spoon into greased loaf pan and bake at 350 degrees 40-45 min allow to cool in pan on rack for 10-15 minutes
  5. Remove from pan and continue to cool on rack.

Pleasing Pot Roast

Your guests will love this creamy Beef noodles. Try our Pleasing pot roast.

Total time to cook: 30 minutes
Serves: 5

Ingredients:Roast
  1. 3-4 lb bottom round roast
  2. 2 large onions, peeled
  3. Salt and pepper
  4. Extra virgin olive oil
  5. 16 oz wide egg noodles
Gravy:
  1. 12 ginger snaps
  2. 4 brown gravy packs
Step Wise Instructions:
  1. Salt and pepper the roast all over. Put 2-3 tbsp of olive oil in a large pot.
  2. Place roast in pot and brown on all sides to seal in flavor. Pour warm water in pot until top of roast is just covered.
  3. Add onions and simmer for 2 1/2 hours, stirring occasionally.
  4. After roast has cooked for 2 1/2 hours, take onions and roast out of water and let cool on a platter while you mix gravy.
  5. Let 1/2 the ginger snaps dissolve in a small glass with water . Add 4 brown gravy packs to roast water and whisk until thickened.
  6. Add ginger snaps.
  7. Dissolve other 6 ginger snaps in same amount of water and add it to gravy and whisk.
  8. Cut roast into thin slices and layer them in gravy.
  9. Add onions back to mixture.
  10. Let it refrigerate overnight. Simmer for another 2 hours the next day. Serve over egg noodles.

Roast Beef Baguette Rolls

This is an easy, but elegant baguette rolls accented with pine nuts and roasted beef.

Total time to cook: 1.5 hours
Serves: 6

Ingredients: Crust
  1. 1 small baguette
  2. 1 tablespoon Dijon mustard
  3. 6 slices lean roast beef
  4. 6 leaves oak leaf lettuce
  5. ½ cup (75g) char grilled capsicum
Step Wise Instructions:
  1. Halve baguette lengthways. Remove some of soft centre.
  2. Spread mustard evenly over bread cavity.
  3. Layer beef, lettuce and capsicum in bread cavity until full.
  4. Replace top.
  5. Cut baguette in half then wrap firmly in baking paper and secure with string

Rice with Seafood

This is a super quick version of seafood rice that makes a great side dish for informal gatherings

Total time to cook: 45 minutes
Serves: 6

Ingredients: Crust
  1. 2 dozens of squid
  2. 2 dozens small scallops
  3. 2 dozens of mussels
  4. 2 dozens machos
  5. 2 medium red peppers cut in strips
  6. 3 tablespoons of oil
  7. ½ cup of cooked green peas
  8. 2 Medium onions finely chopped
  9. 2 tbsp yellow hot pepper sauce
  10. 2 tablespoons of garlic, ground
  11. 2 tomatoes peeled and cut in pieces
  12. 3 tablespoons coriander, ground
  13. 4 cups rice
  14. 4 ½ cups of water
Step Wise Instructions:
  1. Boil and clean the seafood, Heat the oil and fry the onions until golden, add garlic, yellow hot peppers, tomatoes, salt and pepper.
  2. Stir and add the cariander and 4 1/2 cups of water.
  3. Put in the seafood and bring to the boil then add the rice, peas and strips of red pepper.
  4. Simmer until the rice is cooked.

Lamb Soup

I like this simple lamb soup recipe. Easy to make, easy to eat!

Total time to cook: 55 minutes
Serves: 5

Ingredients:
  1. ½ packet brown gravy mix
  2. ½ medium onion, chopped coarsely
  3. ¾ lb of boneless lamb shoulder, cut into one-inch cubes
  4. 2 cups of beef stock
  5. 1 ½ cups of potatoes, cubed
  6. 1 cup of beer
  7. 1 cup of carrots, sliced thinly
  8. 1 cup of green cabbage, shredded
  9. 2 teaspoons of olive oil
  10. ½ teaspoon of pepper
Step Wise Instructions:
  1. In a small saucepan, combine sugar and water; bring to a boil and cook until sugar is dissolved, about 1 - 2 minutes. Let cool.
  2. Heat the olive oil in a non-stick saucepan over a medium-high heat.
  3. Sauté the chopped onion until golden (about 5 minutes).
  4. Add the lamb cubes and sauté for 5 minutes, stirring, until browned.
  5. Add the beer and pepper.
  6. Reduce heat to low; then cover and simmer for 30 minutes.
  7. Stir in the beef stock and gravy mix.
  8. Add the potato cubes and sliced carrots, cover and simmer until vegetables are tender
  9. Stir in the shredded cabbage and cook until the cabbage turns bright green (about 3 minutes).

Simple homemade beef jerky!

Total time to cook: 45 minutes

Ingredients:
  1. 2 pounds ground beef
  2. 1/2 onion, chopped
  3. 1 tsp ground black pepper
  4. 1/2 tsp garlic salt
  5. 2 1/2 cups tomato sauce
  6. 1 jar salsa
  7. 4 tbsp chili seasoning mix
  8. 1 can light red kidney beans
  9. 1 can dark red kidney beans
Step Wise Instructions:
  1. In large bowl mix melted butter into cracker crumbs and garlic powder.
  2. Split the lobsters down the center and remove the stomach and vein.
  3. Save the tamale and add to cracker crumb mixture.
  4. Stuff lobsters with cracker mixture.
  5. Bake for 20 minutes at 450F.

Beef & Vegetable Skillet

Ingredients:
  1. 1-1/4 pounds boneless beef top sirloin steak, cut 3/4 inch thick
  2. 2 tsp dark sesame oil
  3. 2 garlic cloves, minced
  4. 1 medium red bell pepper, cut into thin strips
  5. 3 tbsp reduced-sodium soy sauce, divided
  6. 2 tbsp water
  7. 3 cups coarsely chopped fresh spinach
  8. ½ cup sliced green onions
  9. 3 tbsp ketchup
  10. 2 cups hot cooked rice
Step Wise Instructions:
  1. Cut beef steak lengthwise in half and then crosswise into 1/4 inch strips.
  2. Toss with sesame oil and garlic.
  3. Heat large nonstick skillet over medium-high heat until hot.
  4. Add beef (1/2 at a time); stir-fry 1 to 2 minutes or until outside surface is no longer pink.
  5. Remove from skillet.
  6. In same skillet, add bell pepper, 2 tablespoons soy sauce and water; cook 2 to 3 minutes or until pepper is crisp-tender.
  7. Add spinach and green onions; cook until spinach is just wilted.
  8. Stir in ketchup, remaining 1 tablespoon soy sauce and beef; heat through.
  9. Serve over rice.

Stir Fried Spinach

Tasty spinach flavor, easy to prepare, delicious
Total time to cook: 40 minutes
Serves: 6

Ingredients:
  1. 2 cups of cubed cooked lamb
  2. 2 cups of chicken broth
  3. 2 medium onions, chopped
  4. 1 garlic clove, minced
  5. 2 tbsp of flour
  6. 1 tbsp of butter
  7. 1 tbsp of cooking oil
  8. 2 tsp of curry powder
  9. ½ teaspoon of cumin
Step Wise Instruction:
  1. In a suitably sized saucepan, heat the butter and the oil.
  2. Sauté the onions until they soften, then add the garlic and cook for one minute.
  3. Stir in the curry powder, cumin and flour; then cook for a few seconds.
  4. Whisk in the chicken broth and cook, stirring continuously, until thickened.
  5. Add the cooked lamb cubes and heat though.
  6. Serve with rice and traditional curry condiments.

Cheese Steak Pizza

My grandma used to make this Cheese Steak Pizza. It makes a great side dish for any home-cooked meal.
 
Total time to cook: 40 minutes
Serves: 4

Ingredients:
  1. 1 pound ground beef
  2. 1 small onion, sliced thin, separated into rings
  3. 1 small green or red bell pepper, cut into thin strips
  4. 3/4 teaspoon salt
  5. 1/2 teaspoon pepper
  6. 1 package thick pre baked pizza crust
  7. 2 cups shredded mozzarella cheese
Step Wise Instructions:
  1. Heat oven to 400°F. Brown ground beef in large nonstick skillet over medium heat 6 minutes.
  2. Add onion and bell pepper; cook until beef is not pink and vegetables are crisp-tender, breaking beef up into small crumbles.
  3. Pour off drippings; season with salt and pepper.
  4. Place pizza crust on baking sheet.
  5. Top with beef mixture, then cheese.
  6. Bake in 400°F oven 8 to 10 minutes or until cheese is melted.
