Cajun Popcorn

Cajun Popcorn

This is a really easy recipe. Just three ingredients.
 
Total time to cook: 50 minutes
Serves: 4

Ingredients:
  1. 1 cup raw popcorn kernels
  2. 2 T. safflower oil
  3. 1 T. water
  4. 1 T. nutritional yeast flakes
  5. 1 T. Creole Seasoning
  6. 1/4 t. salt (optional)
Step Wise Instructions:
  1. Using a hot air popper or other popcorn popper, pop the popcorn and place it in a large bowl.
  2. In a small saucepan, combine the remaining ingredients, and cook over medium heat for 1-2 minutes to blend the flavors.
  3. Drizzle the oil mixture over the popcorn and toss well to evenly coat the popcorn with the mixture.
  4. Serve warm.

Creamy Coffee Smoothie

I love to make Creamy Smoothies in the summer instead of hot coffee.

Ingredients:
  1. 1 cup nonfat milk
  2. 2 cups unsweetened frozen cherries
  3. 2 cups frozen raspberries
  4. 2 cups frozen low fat vanilla yogurt
  5. 1/2 teaspoon vanilla extract
  6. 2 cups ice
Step Wise Instructions:
  1. Combine all ingredients in a blender until smooth.
  2. Pour into 4 glasses to serve.

Breakfast Fruit Parfaits

A wonderful fruity recipe for the entire family,simple and healthy rich fruit recipe.
 
Total time to cook: 20 minutes
Serves: 6

Ingredients:
  1. 1 cup blueberries
  2. 1 cup strawberries
  3. 1 cup mango, peeled
  4. 1/2 cup kiwi fruit
  5. 1/4 cup apple juice
  6. 5 large bananas
  7. 2 t. lemon juice
  8. 1 cup shredded coconut
  9. 1 Quart Almond-Flax Granola
Step Wise Instructions:
  1. In a medium bowl, place the blueberries, blackberries, strawberries, mango, kiwi, and apple juice, toss gently to combine, and set aside.
  2. In a food processor or blender, place the bananas and lemon juice, and process for 1 minute or until smooth.
  3. Scrape down the sides of the container.
  4. Add the shredded coconut and process the mixture an additional 2-3 minutes or until extremely light and creamy.
  5. Transfer the mixture to a glass bowl.
  6. To assemble the parfaits: in the bottom of 4 large glasses or dessert dishes place 1/2 cup of the mixed fruit mixture, then 1/2 cup Almond-Flax Granola, followed by 1/2 cup of the banana-coconut cream mixture.
  7. Repeat the layers ending with the banana-coconut cream mixture.
  8. Serve immediately.

Caramel Popcorn

You just can’t go wrong with caramel and popcorn! This is a quick and easy recipe, if you like caramel you will love these twists! They are sure to become a favorite. They also go great with breakfast.
 
Total time to cook: 40 minutes
Serves: 7

Ingredients:
  1. 3 quarts popped popcorn
  2. 3 cups dry roasted mixed nuts, unsalted
  3. 1 cup brown sugar, firmly packed
  4. 1/2 cup light or dark corn syrup
  5. 1/2 cup butter
  6. 1/2 tsp salt
  7. 1/2 tsp baking soda
  8. 1/2 tsp vanilla extract
Step Wise Instructions:
  1. Preheat oven to 250°. In a large roasting pan combine the popcorn and nuts.
  2. Place in the oven while preparing glaze.
  3. In a medium saucepan combine brown sugar, corn syrup, butter, and salt.
  4. Bring to a full boil over medium heat, stirring constantly, then continue to boil for 4 minutes without stirring.
  5. Remove from heat; stir in baking soda and vanilla, then pour over the warm popcorn and nuts, tossing to coat well.
  6. Bake another 60 minutes, stirring freqently, about every 10 minutes.
  7. Cool and break apart. Store in an airtight container.
  8. Makes 4 quarts.

Lemon salad

Tasty, light version of the ever popular Lemon salad recipe
 
Total time to cook: 25 minutes
Serves: 7

Ingredients:
  1. 1 cup vegetable or olive oil
  2. 1/3 cup white wine vinegar
  3. 1 clove garlic minced
  4. 1 tbsp lemon peel grated
  5. 2 tbsp sugar
  6. 1 tbsp Dijon mustard
  7. 1/2 tbsp salt
  8. 6 cups long grain rice cooked
  9. 2 cups wild rice cooked
  10. 2 cups seeded cucumbers diced
  11. 2/3 cup green onions thinly sliced
  12. 1/4 cup fresh parsley minced
  13. 1/4 cup fresh basil or 1 Tbls dried minced
  14. 1/2 tbsp pepper
  15. 1/2 cup chopped pecans toasted
Step Wise Instructions:
  1. In a jar with tight-fitting lid, combine the first 7 ingredients; shake well. In a large bowl, combine long grain and wide rice; add dressing and toss.
  2. Cover and refrigerate overnight.
  3. Add the cucumbers, green onions, parsley, basil and pepper; mix well. C
  4. hill for 2 hours.
  5. Fold in pecans just before serving.

Ingredients:
  1. 4 oz. Cheddar or American Cheese
  2. 1 tsp. Milk
  3. 8 oz. package Cream Cheese, softened
  4. 1 Tbs. Worcestershire Sauce
  5. 1/2 tsp. Garlic Powder
  6. 1 Tbs. dried Onions
  7. 1 Tbs. dried Chives
  8. Pinch dried Dilled
  9. 1 can Green or Black Olives
  10. Toothpicks
Step Wise Instructions:
  1. Grate or shred the cheddar or American cheese and let it sit at room temperature while you prepare the rest of the ingredients.
  2. In a small mixing bowl, blend together the milk, cream cheese, and Worcestershire sauce until thoroughly combined.
  3. Add the garlic powder, dried onions, chives, and dillweed, and blend again.
  4. Add the grated or shredded cheese to the creamed mixture and blend.
  5. Refrigerate until the cheese looks like it has “melted” in with the creamed cheese, then mix thoroughly again.
  6. To mold, surround each olive with about one and one-half teaspoonful of the cheese mixture, and stick each with a toothpick for easy serving.

Creamy Coleslaw

You can make this Coleslaw year-round, but they are really fun to serve around holidays.
Total time to cook: 25 minutes
Serves: 7

Ingredients:
  1. 1/2 cup plain low-fat yogurt
  2. 2 tbsp Dijon mustard
  3. 1 tbsp water
  4. 2 tbsp low-fat mayonnaise
  5. 2 tsp fresh lemon juice
  6. 6 cups thinly sliced cabbage
  7. 4 medium carrots, shredded
  8. 1 cup thinly sliced red onion
  9. 1/2 tsp dill seeds
  10. salt and pepper to taste
Step Wise Instructions:
  1. Whisk together yogurt, mustard, water, mayonnaise, and lemon juice in a large bowl.
  2. Add remaining ingredients and toss to combine well.
  3. Season coleslaw with salt and pepper.
  4. Coleslaw may be made 1 day ahead and chilled, covered.

I love Broccoli Slaw, and it’s even more fun to eat you make it at home
 
Total time to cook: 40 minutes
Serves: 7

Ingredients:
  1. 2 16 oz. packaged broccoli slaw
  2. 1 3 oz. package Ramen noodles
  3. 1/2 cup green onions
  4. 1 cup unsalted peanuts
  5. Dressing
  6. 1/4 cup granulated white sugar
  7. 1/4 cup canola oil
  8. 1/3 cup cider vinegar
  9. seasoning packet from Ramen noodles
Step Wise Instructions:
  1. Make the slaw first: Using a rolling pin, crush the Ramen noodles.
  2. This can be done while the noodles are still in the package, or you can remove the noodles and place them in a sealed zip-loc bag and then crush them.
  3. Toss together the broccoli slaw, crushed Ramen noodles and green onions in a large salad bowl. Set aside.
  4. To make the dressing: Whisk together the sugar, oil, vinegar and Ramen seasoning packet in a small bowl.
  5. Pour the dressing over the slaw and toss well to coat evenly.
  6. Sprinkle the peanuts on top.
  7. Serve immediately.

Arugula Bread Salad

Quick, easy, tasty, wonderful salad recipe. The better the bleu cheese, the better the salad!
 
Total time to cook: 40 minutes
Serves: 7

Ingredients:
  1. 3 tbsp balsamic vinegar
  2. 1/3 cup extra virgin olive oil
  3. 1/2 tsp salt
  4. 1/4 tsp black pepper, ground
  5. 1 medium red onion, peeled
  6. 1 tbsp extra virgin olive oil
  7. 1 clove garlic, fresh minced
  8. 4 slices rustic bread
  9. 4 cups arugula, washed and dried
  10. 1 fennel bulb, cored and thinly sliced
  11. 1/2 cup roasted red bell pepper
  12. 1/4 cup pine nuts, toasted
  13. 1 1/2 cups California green or red seedless grapes
  14. 1/4 cup Parmesan cheese
Step Wise Instructions:
  1. In a small bowl whisk together dressing ingredients.
  2. Place red onions in baking dish lined with foil.
  3. Drizzle with 2 tablespoons of prepared dressing and toss well.
  4. Cover tightly with foil and bake at 350 degrees for 30 minutes.
  5. Remove from oven and let cool.
  6. Mix 1 tablespoon olive oil with crushed garlic.
  7. Brush onto bread slices.
  8. Broil or grill bread for 1 to 2 minutes on each side until toasted.
  9. Cut bread into strips about 1/2 inch wide.
  10. Place bread, roasted onions, arugula, fennel, bell pepper, pinenuts and grapes in large bowl, and toss with remaining vinaigrette.
  11. Sprinkle with Parmesan and serve.
