A wonderful recipe for the entire family. This is a simple and healthy chicken, tomato recipe.

Ingredients:
1 tablespoon olive oil
4 chicken thighs
4 chicken drumsticks
2 tsp salt
1/2 tsp fresh-ground black pepper
2 ounces smoked ham, cut into 1/4-inch dice
1 small onion, chopped
2 cloves garlic, minced
1 red bell pepper, chopped
1 green bell pepper, chopped
1 3/4 cups canned tomatoes, drained and chopped
1 tbsp tomato paste
2 cups canned low-sodium chicken broth or homemade stock
1 cup rice, preferably long-grain
2 tbsp chopped fresh parsley
Step Wise Instructions:
In a large, deep frying pan, heat the oil over moderately high heat.
Season the chicken with 1/4 teaspoon each of the salt and pepper.
Cook the chicken, turning, until well browned, about 8 minutes in all. Remove.
Pour off all but 2 tablespoons of the fat from the pan.
Reduce the heat to moderately low.
Add the ham, onion, and garlic to the pan and cook, stirring occasionally, until the onion starts to soften, about 2 minutes.
Add the bell peppers and cook, stirring occasionally, until they start to soften, about 3 minutes longer.
Add the tomatoes, tomato paste, broth, and the remaining 1 3/4 teaspoons salt and 1/4 teaspoon of the pepper and bring to a simmer.
Stir in the rice and add the chicken in an even layer. Simmer, partially covered, over moderately low heat until the chicken and rice are just done, 20 to 25 minutes.
Sprinkle with parsley.

Ingredients:
1 tbsp olive oil
1 cup long grain white rice
2 tbsp honey
1 clove garlic, finely chopped
1 tsp salt
1/2 tsp dried thyme, crushed
1 14 1/2 ounce can chicken broth
1/4 tsp Tabasco sauce
2 cups finely chopped mustard greens
1 cup chopped yellow summer squash
1/2 cup chopped fresh tomatoes
Step Wise Instructions:
In a large saucepan with tight fitting lid, heat oil over medium high heat.
Add rice; cook and stir 3 minutes or until rice begins to brown.
Add honey, garlic, salt and thyme; cook and stir 1 minute.
Add broth, Tabasco , greens, squash and tomatoes.
Bring to a boil; cover and reduce heat to low.
Simmer 15 to 20 minutes or until most of liquid is absorbed.
Remove from heat; let stand 5 minutes.
Fluff with fork to serve.

Ingredients:
1 tin of hotdogs
4 or 5 medium to large potatoes
2 medium tins of baked beans

Step Wise Instructions:
Peel, chop potatoes, put in pan with water, bring to boil them simmer till potatoes are soft.
When potatoes are nearly cooked put beans on a gentle simmer.
Chop hotdogs into bite sized chunks, no need to cook these first.
Drain and mash potatoes.
Put beans and chopped hotdogs into suitable sized casserole dish.
Spread mashed potatoes onto beans and sausages.
Sprinkle grated cheese on top.
Put under hot grill till cheese bubbles and browns.

Ingredients:
2 packages active dry yeast
1 3/4 cups warm water
2 cups bread flour
2 cups whole wheat flour
1 egg white
Step Wise Instructions:
Dissolve yeast in warm water.
Add one cup of bread flour and one cup whole wheat flour.
Mix until smooth. Keep adding flour, and mix until very hard to mix.
Take dough out on a floured surface, and knead until dough is smooth and not sticky.
Roll into a ball. Place into a greasy bowl.
Cover, and let it rise in a warm place until doubled say for 2 hours.
Divide into equal balls. Place on cookie sheets, and flatten them.
Allow to rise for another 1 to 2 hours. If desired, brush with egg white.
Bake in a preheated 375 degree F (190 degree C) oven for 40 to 50 minutes.
When done remove from oven, and let cool.
Cut a circle out of the top of each loaf, and compress it to form a bowl.

Ingredients:
1 pkg. frozen blintzes
1/2 cup sour cream
1 tsp vanilla
4 eggs
1/4 cup sugar
1/4 cup orange juice
Step Wise Instructions:
Lightly coat a rectangular pan or glass casserole dish with butter or margarine.
Place blintzes in single layer.
Blend ingredients thoroughly and pour over blintzes.
Refrigerate overnight.
Bake for 45 minutes at 350 degrees.

Ingredients:
5 Eggs
1 Onion
Tomato Half
1 small piece Dry coconut
¼ spoon Coriander powder
½ Chilly Powder
½ Pepper Powder
3 flakes Garlic
5 leaves
Coriander leaves
Salt
Oil
Step Wise Instructions:
Boil eggs with salt.
Peal the cover of eggs and cut into half.
Pour oil in a kadai and put finely chopped onion, curry leaves and fry.
Add tomato and fry.
Add egg pieces also and fry.
Meanwhile, Grind coconut, coriander powder, chilly powder, pepper powder, garlic and little salt.
Add this mixture, chopped coriander leaves to eggs, and fry it for 7 minutes. Egg fry is ready.

Ingredients:
1/2 cup plus 2 tbsp milk
2 tbsp margarine
1/2 tsp salt
1 package dry yeast
2 to 2 1/4 cups all-purpse flour
1 tbsp granulated sugar
1 egg
1 to 1/2 tbsp garlic powder
Garlic salt
Step Wise Instructions:
Scald milk and put in bowl and add margarine and salt.
Cool to lukewarm.
Add yeast. Let stand 5 minutes.
Add 1 cup flour and beat until smooth; blend in sugar, egg and garlic powder, and then remaining flour.
On lightly floured surface, knead until smooth and elastic.
Put into greased bowl, cover with damp cloth or Saran, and let rise until doubled.
Put on floured board and roll to 1/2 inch thickness.
Cut 1 inch diameter.
Let rise 15 minutes.
Deep fry until golden brown.
Drain on paper towels.
Sprinkle with garlic salt.
Toss in brown bag to absorb grease.

Ingredients:
2 tubes refrigerated crescent rolls
1 package cream cheese, softened
1/2 cup sour cream
1 teaspoon dill weed
1/8 teaspoon garlic powder
1 1/2 cup chopped fresh broccoli florets
1 cup finely chopped celery
1/2 cup finely chopped sweet red pepper
Celery leaves
Step Wise Instructions:
Remove crescent dough from packaging.
Cut each tube into eight slices.
Arrange in an 11-in. circle on an ungreased 14-in. pizza pan.
Bake at 375° for 15-20 minutes or until golden brown.
Cool for 5 minutes before carefully removing to a serving platter; cool completely.
In a small mixing bowl, beat the cream cheese, sour cream, dill and garlic powder until smooth.
Spread over wreath; top with broccoli, celery and red pepper.
Form a bow garnish with celery leaves.

Crawfish Dip is a soft, creamy cheese. Baked, it makes a great dip!

Ingredients:
2 1/2 pounds craw fish Tails
2 tsp seafood seasoning
1 package cream cheese
1/4 cup mayonnaise
1 tsp horseradish
2 tsp Worcestershire sauce
1/2 teaspoon garlic powder
1 tsp onion powder
2 tsp lemon juice
Salt and Hot Sauce to taste
Step Wise Instructions:
Steam crawfish tails in double boiler with seafood seasoning.
Reserve juice, set aside.
Place in food processor or blender, the cream cheese, mayonnaise, horseradish, Worcestershire, garlic, onion powder, lemon juice, salt and hot sauce.
Blend until well-mixed.
Add crawfish.
Add juice until it is a good spreading consistency.
Serve with crackers.
