Simple chocolate and nut cookie recipe
Total time to cook:

Ingredients:
2 large egg whites, at room temperature
1 tsp vanilla extract
1/4 tsp cream of tartar
1/4 tsp salt
2/3 cup granulated sugar
Food color
1 cup pecans, chopped
1 cup semisweet chocolate chips
Step Wise Instructions:
Heat oven to 275 degrees F. Grease baking sheets.
In a large mixer bowl at high speed, beat egg whites, vanilla extract, cream of tartar and salt until soft peaks form.
Gradually add sugar and, if desired, a few drops of food color and beat until very stiff and glossy and sugar is almost dissolved.
By hand, fold in pecans and chocolate chips.
Drop by well-rounded teaspoonsful about 1 inch apart on baking sheets.
Bake for 20 to 25 minutes or until set and dry to the touch.
Cool cookies on baking sheets for 1 minute.
Carefully transfer cookies to wire racks to cool.
Store in an airtight container in a cool place.

Easy! Easy! Easy! Chocolate chip cookie dough in a mini-muffin pan with a hershey kiss or mini-peanut butter cup in the center.

Ingredients:
4 1/2 cups all-purpose flour
2 tsp baking soda
1 tsp salt
2 cups butter or margarine
1 1/4 cups granulated sugar
1 3/4 cups brown sugar
2 or 3 Hershey bars, grated
3 eggs
5 tsp vanilla extract
1 package semisweet chocolate chips
1 package peanut butter chips
1 cup nuts, chopped
Step Wise Instructions:
Heat oven to 375 degrees F.
Stir together flour, baking soda and salt.
In large bowl, beat butter, sugar, brown sugar and vanilla extract.
Add eggs and beat until well mixed.
Gradually add flour, mixing well between additions.
Stir in chocolate and peanut butter chips and nuts, if desired.
Drop by heaping teaspoons full onto ungreased cookie sheets.
Bake for 7 to 9 minutes or until very lightly browned.
Cool slightly and move to wire rack to cool completely.
Makes about 7 dozen good-size cookies.

4 cups cold water
10 tea bags
4 cans apricot nectar
1/2 cup fresh mint leaves, slightly crushed
1/4 cup sugar
Fresh mint
Citrus slices
Step Wise Instructions:
In a 4-quart Dutch oven bring water to boiling.
Remove from heat.
Add tea bags.
Let steep for 3 to 5 minutes.
Discard bags.
Stir in nectar, mint, and sugar.
Cover; chill sometimes.

A quick kulfi made with mango. Can be made year round with the frozen fruits.

Ingredients:
1 can (400g) sweetened condensed milk
1/2 cup mango pulp
1/2 cup cream
12-15 almonds-blanched and shredded
8 kulfi moulds
Vark leaves-optional
Step Wise Instructions:
Mix together the condensed milk, cream and mango pulp. Beat to blend well.
Add the nuts, saving a few for garnishing. Mix well and pour into moulds.
Freeze at the lowest possible temperature.
To serve take the mould out of the freezer and prise the kulfi out with the help of a knife, into an individual serving bowl.

Chocolate brownies with a swirl of Walnuts or pecans — coarsely broken marbled throughout.

Ingredients:
1 cup Butter OR
1 cup Butter flavor Crisco
2 cups Granulated sugar
1 cup Light brown sugar
2/3 cup dark corn syrup
6 large Eggs
6 ounces unsweetened chocolate
2 cups Flour
2 cups Walnuts or pecans
¼ tbsp Almond extract
Step Wise Instructions:
Butter the bottom and sides of two 8×8″ square pans (not the same if you use 9×13).
In a large bowl stir butter, sugars, and syrup. Stir in the eggs, one at a time until blended.
In small saucepan, melt chocolate, stir into sugar mixture.
Add almond extract. Add flour and stir until smooth.
Add the nuts and stir until evenly distributed.
Turn into prepared pans, spread evenly.
Bake at 350~ about 40 minutes.
Place on wire rack to cool.
Refrigerate uncovered until cool.
Cut into bars and enjoy.

Ingredients:
1/3 cup granulated sugar
3/4 cup low fat evaporated milk
Egg beaten
1 tbsp light corn syrup
Cup fresh blueberries
1/2 cup orange juice
whipping cream
Step Wise Instructions:
In a medium saucepan, combine the sugar and cornstarch.
Stir in the evaporated milk, beaten egg and corn syrup.
Cook and stir over low heat until the mixture coats a spoon and is thickened. Cool.
In a blender or food processor fitted with a metal blade, puree the blueberries with the orange juice.
Combine the cooked mixture, pureed berries and half and half.
Pour into an ice cream canister.
Freeze in an ice cream maker according to the manufacturer’s directions.

Ingredients:
5 oz dark organic chocolate
8oz extra firm silken tofu
3 TBS Florida Crystals sugar
3 egg whites
Step Wise Instructions:
Melt chocolate and sugar together in a double boiler stirring constantly.
Puree in blender chocolate, sugar and tofu.
You have to stop once in awhile to scrape the sides of the blender with a rubber spatula.
Transfer chocolate mixture to a bowl scraping blender well to get it all.
Beat egg whites to a semi stiff peak in a separate bowl.
With a rubber spatula, fold egg whites into chocolate, tofu puree 1/3 amount at a time.
Be careful not to over mix.
Refrigerate for best flavor and texture.

Ingredients:
4 large eggs
1 cup water
1/2 cup butter
1/4 teaspoon salt
1 cup all-purpose flour
Step Wise Instructions:
Combine water, butter, and salt in heavy saucepan.
Bring to a boil.
Add flour all at once and stir vigorously with wooden spoon until mixture leaves the sides of the pan and forms a ball.
Remove from heat, add eggs one at a time, beating well after each addition.
Mixture should be smooth and velvety.
Drop tablespoonfuls of dough 2-inches apart on ungreased baking sheet.
Bake at 400°F for 45 to 50 minutes or until puffed, golden brown, and dry.
Cool on wire racks.

2 3/4 cups Guinness Stout
1 large egg
1 cup sugar
1/2 cup milk
2 cups cream
Step Wise Instructions:
Boil Guinness until reduced to 2 cups.
Cool until just warm.
Combine egg and sugar in a bowl.
Stir in milk, then mix into the warm Guinness reduction.
Stir in cream.
Chill for 1 hour in the refrigerator.
Process in an ice cream maker according to manufacturer’s instructions.

You can do a lot of experimenting with this ice cream simply by using different ice cream flavors and mixing in ingredients such as chocolate chips or sweetened dried cranberries.

3 cups milk
1-½ cups corn syrup
1-½ tablespoons Argo or Kingsford’s Cornstarch
3 egg yolks
Few grains salt
1-½ teaspoons vanilla
1 cup heavy cream
½ cup sugar
Step Wise Instructions:
Scald milk, corn syrup and sugar and thicken with the cornstarch dissolved in an equal quantity of cold milk.
Cook fifteen minutes, stir in the egg yolks well beaten and combined with a little of the thickened mixture.
Chill, add salt, flavoring and cream, and freeze, packing with three parts of cracked ice to one of rock salt.
