Ingredients:
7 eggs
1/2 cup water
1 cup cooked regular long-grain white rice
3/4 cup crumbled feta cheese
1/2 cup shredded Cheddar cheese
1/2 cup Picante Sauce
2 tbsp. chopped fresh cilantro
1/2 tsp. dried oregano leaves
3 Italian plum tomatoes
Step Wise Instructions:
Preheat oven to 400°F.
Heat greased oven-safe skillet in oven for about 5 min.
Beat eggs and water.
Add rice, feta cheese, Cheddar cheese, picante sauce, cilantro and oregano.
Pour into skillet. Top with tomatoes.
Bake for 40 min. or until knife inserted in center comes out clean.

Absolutely wonderful lasangna recipe
Total time to cook:

Ingredients:
8 oz. lasagna noodles
3 Tablespoons olive oil
1 cup chopped onion
1/4 cup finely chopped green bell pepper
1 teaspoon minced garlic
6 medium fresh tomatoes, peeled and chopped
1 teaspoon salt
1/4 cup chopped fresh parsley
2 Tablespoons chopped fresh basil
2 Tablespoons chopped fresh oregano
1 (8 oz.) can tomato sauce
4 cups water
2 medium eggplants, peeled and thinly sliced
1 egg, beaten
1/2 cup Ranch dressing
1 1/2 cups shredded mozzarella cheese
1 cup part-skim ricotta cheese
1/2 cup freshly grated parmesan cheese
Garnish: 8 parsley sprigs
Step Wise Instructions:
Heat oven to 350 degrees.
Spray a 13×9x2 baking dish with non-stick cooking spray.
Cook lasagna noodles as directed on package. Set aside.
Heat oil in a large skillet over medium heat.
Add onion, pepper, and garlic.
Saute 6-8 minutes over low heat until onion is tender.
Stir in next six ingredients. Bring to a boil over medium heat.
Reduce heat to low and simmer for 20-25 minutes, stirring often.
Remove from heat. Meanwhile, in a 3-quart pot, bring water to a boil over medium heat.
Add eggplant. Boil for 4-5 minutes until tender. Remove from heat and drain.
In a large bowl, stir together remaining ingredients except Parmesan cheese.
To assemble, place half of eggplant in a single layer in prepared baking dish.
Top with 1/3 of tomato mixture, half of cheese mixture, and half of lasagna noodles.
Repeat layers.
Spread remaining tomato mixture over top.
Sprinkle with Parmesan cheese.
Bake for 30-35 minutes until bubbly.
To serve, cut into 6 squares.
Garnish each serving with a parsley sprig.

Asparagus Recipe A simple, healthy asparagus recipe.

Ingredients:
1 bunch medium sized asparagus
2 Tbsp olive oil
2 Tbsp Parmesan cheese
1 tsp lemon zest
Salt and freshly ground black pepper
Step Wise Instructions:
Prepare the asparagus by rinsing them thoroughly, break off any tough, white bottoms and discard.
Cut into 1 to 2 inch sections, slicing the asparagus at a slight diagonal.
2 Fill a medium sized saucepan half way with water, bring to a boil.
Add the asparagus and reduce heat slightly to a simmer.
Parboil the asparagus for exactly 2 minutes.
Drain the hot water. While the asparagus are still hot, toss them in a bowl with the olive oil, Parmesan, and lemon rind.
Salt and pepper to taste.
Serve warm or room temperature.

Ingredients:
1 lb of scrubbed boiling potatoes
6 cloves fresh garlic, sliced finely
1 cup of milk
¼ cup of breadcrumbs
3 tablespoons of grated parmesan cheese
3 tablespoons of butter
Step Wise Instructions:
Preheat your oven to 380°F (180°C).
Slice potatoes thinly.
Butter a 9-inch pie plate.
Arrange a layer of potatoes, garlic slices, parmesan and slices of butter.
Repeat using the rest of the ingredients (other than the milk), saving some of the cheese and the butter.
Heat the milk and pour over top of the potatoes.
Top with bread crumbs and remaining cheese and butter.
Bake for 1 hour, until the potatoes are tender and top has turned golden brown.

Ingredients:
8 oz shredded Mozzarella cheese
1 lb shredded sharp cheddar cheese
1/2 to 1 cup chopped green onion
1/2 cup mayonnaise
2 Tbsp sour cream
3-4 cloves garlic, minced
1 stick unsalted softened to the point of being slightly melted
1 to 2 loaves of French or Italian bread depending on the size of the loaves
Step Wise Instructions:
In a large bowl, mix together the cheeses and the green onion.
Stir in the mayonnaise and sour cream.
In a separate small bowl blend the butter and garlic until smooth.
Add the butter mixture to the cheese mixture.
Preheat broiler.
Slice loaf of bread in half horizontally, lay crust side down.
Spread cheese mixture over the bread.
Place under the broiler until nicely browned, about 3 to 5 minutes.
Remove from broiler and let sit for 5 minutes until cool enough to handle.
Slice the bread with a bread knife.
Serve.

These fondues are easy to prepare, and they make a great recipe for your vegetarian friends.

Ingredients:
1 clove garlic - peeled
12 oz. can OR bottle of flat beer
3 Tbls. all-purpose flour
3/4 tsp. black pepper
1 splash sauce
1 pinch salt
1 dash ground mustard seed
1 lb. aged cheddar cheese
1 loaf French bread - cubed
Step Wise Instructions:
Rub garlic clove over the inside surface of a fondue pot; mince garlic clove; set both aside.
In a saucepan, stir together a small amount of beer and flour; once a paste has formed, stir in remaining beer and all other ingredients, except cheese.
Over medium heat, heat mixture through.
Slowly add cheese, stirring as you add it to the pan, until all cheese has melted.
Transfer contents of pot to a fondue pot.
Serve with French bread cubes to dip in cheese.

Light and Easy

Ingredients:
4 chicken breasts, boiled and shredded
2 (8 oz.) packages of cheese (chedder, jack, or colby)
1 or 2 cans spicy chili beans
16 oz. sour cream
1 can of cream of chicken soup
1 can of diced tomatoes with green chilies
1 small can diced chilies or jalapenos
1 to 2 bags of nacho cheese Doritos
Step Wise Instructions:
Preheat oven to 350 degrees.
In large pot, add sour cream, soup, tomatoes, chilies, and chicken.
Let simmer 10-15 minutes. Layer baking dish with smashed Doritos, then pour chicken mixture on top.
Spread half of the 8 oz. package of cheese, add cans of beans, top with remainder of cheese.
Bake 20-30 minutes until cheese melts. Serve with additional Doritos instead of fork.

Wonderfully quick and easy snack to make

Ingredients:
6 slices bacon
3-1/4 cup milk
1 cup ricotta cheese
1/2 cup feta cheese, crumbled
1 tsp salt
1/2 tsp cayenne pepper
5 eggs 1 cup chopped red onion
1-3/4 cup diced tomato
1-1/2 tsp dried rosemary
1 16 oz. loaf sourdough bread
grated fresh parmesan
paprika
Step Wise Instructions:
Whisk eggs, milk, cheeses, salt & cayenne until well blended.
Combine eggs, tomato, onion and rosemary.
Arrange half of bread cubes in 9×13-inch dish coated with cooking spray.
Spoon half of tomato mixture over bread & pour half of mil mixture over tomato mixture.
Repeat procedure with remaining bread, tomato and milk mixtures.
Sprinkle with paprika and grated parmesan.
Cover and refrigerate 8 hrs. or overnight.
Bake at 350 degrees for 45-60 minutes. Let it set 15 minutes before serving.

Ingredients:
1 8 oz. pkg. broad egg noodles
1 1/2 lbs. ground beef
1 tsp. salt
1/4 tsp. pepper
1/4 tsp. garlic powder
1 8 oz. can tomato sauce
1 cup creamed cottage cheese
1 cup sour cream
6 green onions, chopped
1 cup sharp cheddar cheese, grated
Step Wise Instructions:
Cook noodles, rinse in cold water and drain.
Brown ground beef and drain off fat, then add salt, pepper, garlic powder and tomato sauce and simmer for 5 minutes.
In a large bowl, combine cottage cheese, sour cream, green onions and cooked noodles.
In buttered casserole, alternate layers of noodle mixture with meat mixture.
Top with grated cheese.
Bake at 350º F for 30 minutes

Great snack for your halloween party

Ingredients:
10 cups fresh homemade curd cheese
at least 1/2 cup (125 ml) caster sugar or icing sugar
one 7.5 cm (3-inch) strip of lemon rind
Step Wise Instructions:
Knead and bray the curd cheese on a clean surface until it is silky smooth and creamy.
Gather into one lump and calculate its volume with measuring cups. Measure one-quarter that volume of sugar.
Combine the cheese, sugar, and lemon rind and again briefly knead and bray the cheese.
Place a heavy-bottomed pan on the lowest possible heat and, constantly stirring with a wooden spoon, cook the cheese for 10 to 15 minutes or until its surface becomes glossy and its texture slightly thickens.
Scrape the sandesh from the pan and remove the lemon rind. Press the sandesh onto a lightly buttered tray into a flat 11/4 cm (1/2-inch) thick cake.
Cool to room temperature.
Cut the cake into 21/2 cm (1-inch squares.
When completely cool, store in an airtight container in a single layer.
