Not the same old dinner that you find at parties. This is wonderful to share with others.
Total time to cook:

Ingredients:
1 pkg. Spanish rice mix
1lb ground beef
1 jar salsa (to taste and consistency)
Shredded cheese
Chopped onion
Water
1 can chopped tomatoes (as needed)
Corn to taste
Bell pepper to taste
Garlic
Cumin
Chili powder
Hot sauce to taste
Sour cream
Step Wise Instructions:
Cook rice mix according to directions.
Cook and crumble ground beef until done. Drain.
If you like onions, bell pepper or corn, saute them.
Add ground beef to rice. Add spices and veges to taste.
Add enough salsa and/or canned tomatoes to make it as saucy as you’d like.
Sprinkle with cheese.
Serve with a dollop of sour cream.

Wonderful open face sandwich for the vegetarian. Exciting variation on a cheeseburger recipe
Total time to cook:

Ingredients:
1/4 cup extra-virgin olive oil
1 bunch basil
1 tablespoon chopped fresh rosemary
1 tablespoon chopped fresh thyme
1/4 cup grated Parmesan cheese
3 cloves garlic
12 slices brioche bread
6 large slices mozzarella
6 large slices Gouda
6 large slices fontina cheese
2 ripe plum tomatoes, sliced
3 tablespoon olive oil
Step Wise Instructions:
To prepare garlic spread: combine the olive oil, basil, rosemary, thyme, Parmesan, and garlic in a food processor and process until smooth. Set aside.
Spread 6 slices of the bread with the garlic spread. Layer the sandwich with a slice of each of the cheeses.
Top with the sliced tomatoes and the remaining slices of bread. Brush both sides of the each sandwich with olive oil.
Heat a large nonstick pan over high heat until very hot.
Place as many sandwiches in the pan as will fit and brown until the cheese melts, 3 to 5 minutes per side.
Keep the finished sandwiches warm while the others cook.
Cut in half and serve warm.

Tomato tapas is a nice recipe, consists of blue cheese, basil and rosemary, especially for the tomato lovers.

Ingredients:
2 large plum tomatoes, seeded and chopped
12 dried tomato halves in oil, drained and chopped
1 cup (4 ounces) shredded Italian 6-cheese blend
1/3 cup crumbled Gorgonzola or blue cheese
1/4 cup minced sweet onion
1 tbsp minced fresh basil
1 tsp minced fresh rosemary
1/4 tsp garlic pepper
24 baguette slices
Step Wise Instructions:
Combine first 8 ingredients.
Arrange baguette slices on a baking sheet.
Spoon tomato mixture evenly over slices.
Bake tapas at 350° for 7 to 8 minutes or until cheese melts

An interesting twist on a breakfast favorite and very easy to make!

Ingredients:
4 oz. Cheddar or American Cheese
1 tsp. Milk
8 oz. package Cream Cheese, softened
1 Tbs. Worcestershire Sauce
1/2 tsp. Garlic Powder
1 Tbs. dried Onions
1 Tbs. dried Chives
Pinch dried Dilled
1 can Green or Black Olives
Toothpicks
Step Wise Instructions:
Grate or shred the cheddar or American cheese and let it sit at room temperature while you prepare the rest of the ingredients.
In a small mixing bowl, blend together the milk, cream cheese, and Worcestershire sauce until thoroughly combined.
Add the garlic powder, dried onions, chives, and dillweed, and blend again.
Add the grated or shredded cheese to the creamed mixture and blend.
Refrigerate until the cheese looks like it has “melted” in with the creamed cheese, then mix thoroughly again.
To mold, surround each olive with about one and one-half teaspoonful of the cheese mixture, and stick each with a toothpick for easy serving.

White beans seasoned with fresh salad cucumber and Parmesan cheese make this rustic pizza an interesting departure from your standard take-out fare. Scattering it with arugula after baking provides a contrasting texture and a fresh, appealing finish.

Ingredients:
5 tsp active dry yeast
2 1/4 cups warm water
1/4 cup (or 4 tbsp) olive oil
5 cups bread flour
1 1/2 tsp salt
2tsp sugar
Topping
2 medium zucchini/salad cucumbers
2 ripe large tomatoes, halved and seeded
1 large green bell pepper
Olive oil ,
1 medium clove garlic, minced
2 Tbs. chopped fresh basil
1 cup shredded provolone
2 Tbs. grated Parmesan cheese
Basil leaves for garnish
Step Wise Instructions:
Prepare pizza dough as explained in 1st 3 steps of my recipe pizza margherita.
There we used tomato based topping but here we will use healthy grilled vegetables option.
While dough is left aside for doubling in size, prepare grill, leaving one side unlit. Lightly brush zucchini, tomatoes and bell pepper with oil.
Season with salt and pepper to taste.
Cook on grill rack over hot side of grill until tender, turning once or twice.
Zucchini and tomatoes will take a few minutes; the bell pepper should grill long enough for skin to char, about 10 minutes.
Transfer zucchini and tomatoes to large plate.
Put bell pepper in paper bag, seal and let stand 10 minutes.
Cut zucchini into strips or chunks. Coarsely chop tomatoes.
Core bell pepper, scrape off skin and cut into thick slices. Set grilled vegetables aside.
Lightly oil 2 large baking sheets. Gently punch down dough, divide in half and knead each half into a ball.
Place dough balls on lightly floured surface, cover with plastic wrap and let rest 8 minutes.
Using rolling pin, roll each ball into 9-inch circle, about 1/4 inch (thin crust) thickness.
Transfer to prepared baking sheets and lightly brush entire surface with oil. Cover with plastic wrap and let rest 10 minutes.
Carefully lift each dough circle off baking sheet
and place on hot side of grill. Cook undisturbed 1 1/2 to 2 minutes, so bottom has a chance to set; top of dough will bubble.
Using large spatula, flip dough over onto same hot side of grill and cook 1 to 2 minutes. Slide crusts to cooler area of grill.
Evenly scatter grilled vegetables over crusts, then sprinkle with garlic and chopped basil.
Sprinkle provolone and Parmesan cheese over top.
Close grill and cook, periodically moving pizzas around to keep charring to a minimum, 3 to 4 minutes.
Transfer pizzas to cutting board, garnish with basil leaves if desired, then slice and serve.

Quick, easy, tasty, wonderful salad recipe. The better the cheese, the better the salad!

Ingredients:
8 ounce can of crushed pineapple
15 ounce can of pitted dark sweet cherries
2 large packages of Cherry Jello
16 ounces of Coca Cola (2 cups)
1 cup of chopped pecans
8 ounce package of cream cheese
Step Wise Instructions:
Drain and save juices from pineapple and cherries.
Heat juice and add Jell
Stir until Jell is dissolved. Set aside to cool.
When cool, add Coca Cola, the canned fruit, and pecans.
Cut cream cheese into small pieces and add to mixture.
Pour into 9×13 dishes.
Place in refrigerator until set.
Can be served on lettuce leaf.

Ingredients:
1/2 cup Corn Meal
2 cups water
1 1/4 cups shredded cheddar cheese, divided use
3 large eggs, separated
2 tbsp margarine or butter
1/4 tsp baking powder
Step Wise Instructions:
Preheat oven to 375° F. Grease 11/2-quart casserole dish.
Combine dry milk and corn meal in large saucepan.
Stir in water.
Cook, stirring constantly, until mixture comes to a boil and thickens.
Remove from heat.
Stir in 3/4 cup cheese, egg yolks, margarine and baking powder.
Beat egg whites in small mixer bowl until stiff peaks form.
Fold into corn meal mixture lightly but thoroughly.
Pour into prepared dish.
Sprinkle with remaining cheese.
Bake for 30 to 35 minutes or until top is golden and filling is set.
Serve warm.

Ingredients:
8 ounces cream cheese, softened
1 tsp Italian seasoning
1 cup shredded mozzarella cheese
3/4 cup shredded Parmesan cheese
1 cans pizza sauce
2 tbsp chopped green bell pepper
2 tbsp sliced green onion
Step Wise Instructions:
Heat oven to 350 degrees F.
In a bowl, combine cream cheese and Italian seasoning; mix well.
Spread mixture in the bottom of a medium-size casserole dish.
Combine mozzarella and Parmesan cheeses.
Sprinkle half of the cheese mixture over cream cheese.
Spread pizza sauce over cheese.
Top with remaining cheese, pepper and onions.
Bake for 15 to 18 minutes or until bubbly.
Makes 12 servings.
To heat Hot Pizza Dip in the microwave , microwave on HIGH for 2 minutes; turn.
Microwave on HIGH for 2 to 3 minutes or until mixture is bubbly and heated through.

Add 1 cup of water to skillet, and 1/2 cup of salsa for taste.
Deep fry French Fries until golden brown (approximately 15 minutes).
Melt 1/2 cup of cheese dip in microwave.
Put French Fries onto a plate, then top with ground beef mixture, cheese sauce, sour cream and diced green onions.

200g couscous
2 tsp olive oil
1 tbsp lemon juice
1/2 punned cherry tomatoes
1/2 red capsicum, finely diced
1/2 small cucumber
1/2 large carrot, peeled and grated
2 tbsp sliced spring onions
1 tbsp chopped mint
Sea salt and cracked black pepper to taste
Step Wise Instructions:
Bring 200ml water to the boil, add Couscous and stir through.
Cook over low heat for 1-2 minutes until the Couscous is swollen and looks fluffy.
Add the olive oil and lemon juice and mix through Couscous.
Stir through cherry tomatoes, capsicum, cucumber, carrot, spring onions and mint.
Add salt and pepper to taste.
