Cheesy Carrot Casserole

Ingredients:
  1. 2 tbsp orange juice, frozen
  2. 1 bag frozen Sliced Carrots
  3. 1/3 cup chopped onion
  4. 1 cup shredded cheddar cheese
  5. 3/4 cup crushed crackers
Step Wise Instructions:
  1. Place orange juice, carrots and onion in 1 1/2 quart casserole.
  2. Bake, covered, in preheated 350 degree oven for 25-30 minutes or until carrots are tender.
  3. Sprinkle with cheese and crushed crackers.
  4. Return to oven, uncovered, for an additional 10 minutes or until cheese is melted.

German Chocolate Pie

This pie makes an elegant dessert after a candlelit dinner at home.
 
Total time to cook: 45 minutes

Ingredients:
  1. 4 ounces german sweet chocolate
  2. 1/3 cup milk
  3. 2 tbsp sugar
  4. 3 ounces cream cheese, softened
  5. 8 ounces cool whip or other prepared whipped; topping, thawed
  6. 1 prepared graham cracker pie crust
Step Wise Instructions:
  1. Melt chocolate with 2 tbsp of milk over low heat or in the microwave, stirring until chocolate is melted and smooth.
  2. Beat sugar into cream cheese.
  3. Add remaining milk and chocolate mixture.
  4. Beat until smooth.
  5. Fold in whipped topping.
  6. Spoon into crust, and chill until firm, usually overnight.

Ingredients:
  1. 1 onion chopped
  2. 5 T. butter
  3. 2 16 oz. can crushed tomatoes
  4. salt to taste
  5. 6 drops Tabasco sauce
  6. 1 t. Mexican oregano
  7. 2 T. flour
  8. 1/2 C. evaporated milk
  9. 1 C. cheddar cheese shredded
Step Wise Instructions:
  1. Saute onions in 3 T. butter.
  2. Add tomatoes and simmer for 1 hour.
  3. Add salt, oregano and Tabasco .
  4. Mix flour and butter together.
  5. Stir into tomato mixture.
  6. Stir in evaporated milk. Just before serving add cheese.
  7. Let it melt, but do not boil.
  8. Serve in a fondue pot with taco chips.

This cheesy chili recipe goes great with crackers or chips. This recipe is quick and simple, great for a party or for adding variety to your snack at home.

  1. 1 pound sharp Cheddar cheese, grated
  2. 1/2 cup beer
  3. 2 tsp minced onion
  4. 1 tbsp Worcestershire sauce
  5. 2 garlic cloves, minced
  6. 1/2 tsp dry mustard
  7. 1/4 tsp hot pepper sauce
Step Wise Instructions:
  1. Mix all the ingredients together in a food processor or with an electric mixer.
  2. Pack the cheese into crocks or a bowl, and cover tightly.
  3. The cheese is best after at least a day’s mellowing, and it keeps for a couple of weeks.
  4. Serve with crackers or bread.

You just can’t go wrong with cheddar cheese and ham!

 
Total time to cook: 1.5 hours

Ingredients:
  1. 3 cups frozen loose-pack shredded hash browns
  2. 1/3 cup butter, melted
  3. 1 cup shredded cheddar cheese
  4. 1 cup diced fully cooked ham
  5. 2 eggs
  6. 1 cup milk
Step Wise Instructions:
  1. Press hash browns between paper towels to remove excess moisture.
  2. Press hash browns into the bottom and up the sides of a 9-inch pie plate.
  3. Drizzle with butter. Bake at 425 degrees for 25 minutes.
  4. Combine the ham and cheese; spoon mixture over the hash brown crust.
  5. In a small bowl, beat eggs and milk.
  6. Pour mixture over all.
  7. Reduce oven heat to 350 degrees and bake for 25 to 30 minutes or until a knife inserted near the center comes out clean.
  8. Allow quiche to stand for 10 minutes before cutting.

  8. 2 Tbsp. roasted peanuts, crushed coarsely

Step Wise Instructions:
  1. Cut the sides of the bread then cut each slice into 1-inch squares.
  2. Arrange these bread pieces on a serving dish. Keep aside.
  3. Mix together potatoes, tomatoes, coriander, green chili, salt, tamarind paste and peanuts.
  4. Mix well and top each bread square with the mixture.
  5. Garnish with chopped coriander and serve immediately.

The perfect pizza for your New Year’s Eve or any other holiday party!

  1. 1 cup part-skim ricotta cheese
  2. 1/4 cup thinly sliced green onions
  3. 1/4 tsp bottled minced garlic
  4. 1/4 tsp dried oregano
  5. 1/8 tsp black pepper
  6. 1 package frozen chopped spinach, thawed and drained
  7. 1 Italian cheese-flavored pizza crust
  8. 1 can quartered artichoke hearts, drained
  9. 2/3 cup grated sharp provolone or shredded part-skim mozzarella cheese
Step Wise Instructions:
  1. Preheat oven to 450°.
  2. Combine the first 5 ingredients in a medium bowl.
  3. Stir in spinach. Place pizza crust on a baking sheet.
  4. Spread spinach mixture over pizza crust, leaving a 1/2-inch border; top with artichokes and cheese.
  5. Bake at 450° for 13 minutes or until cheese melts.

  1. 3/4 cup shortening
  2. 2 cups firmly packed brown sugar
  3. 2 eggs
  4. 4 cups all-purpose flour
  5. 2 tsp baking powder
  6. 1 tsp baking soda
  7. 1 tsp lemon extract
  8. 1 cup strong coffee
Step Wise Instructions:
  1. Beat shortening, sugar and eggs until creamy.
  2. Add dry ingredients alternately with coffee.
  3. Add lemon extract.
  4. Drop by teaspoon onto greased cookie sheet.
  5. Bake at 350 degrees F for 8 to 10 minutes.
  6. Drizzle with confectioners sugar icing flavored with lemon.

I like to serve restaurant-style pasta dishes when we have company. They’re easy to make, but they’re so good my guests think I was cooking all day.

Total time to cook: 40 minutes

Ingredients:
  1. 12 oz. fettuccine, cooked, drained
  2. 1 oz. Smoked Cooked Ham, finely sliced
  3. 1 tsp. olive oil
  4. 1/2 lb. Cheese
  5. 1/4 cup skim milk
  6. 1 pkg. frozen artichoke hearts, thawed, drained, chopped
  7. 1/2 cup frozen green peas, thawed, drained
  8. 1/2 cup seeded chopped tomato
  9. 1 tsp. dried basil leaves
Step Wise Instructions:
  1. Toss pasta with ham and oil.
  2. Stir cheese and milk in saucepan on low heat until smooth.
  3. Add remaining ingredients; cook until thoroughly heated.
  4. Pour over pasta mixture.

Ingredients:
  1. 1 tablespoon olive oil
  2. 4 chicken thighs
  3. 4 chicken drumsticks
  4. 2 tsp salt
  5. 1/2 tsp fresh-ground black pepper
  6. 2 ounces smoked ham, cut into 1/4-inch dice
  7. 1 small onion, chopped
  8. 2 cloves garlic, minced
  9. 1 red bell pepper, chopped
  10. 1 green bell pepper, chopped
  11. 1 3/4 cups canned tomatoes, drained and chopped
  12. 1 tbsp tomato paste
  13. 2 cups canned low-sodium chicken broth or homemade stock
  14. 1 cup rice, preferably long-grain
  15. 2 tbsp chopped fresh parsley
Step Wise Instructions:
  1. In a large, deep frying pan, heat the oil over moderately high heat.
  2. Season the chicken with 1/4 teaspoon each of the salt and pepper.
  3. Cook the chicken, turning, until well browned, about 8 minutes in all. Remove.
  4. Pour off all but 2 tablespoons of the fat from the pan.
  5. Reduce the heat to moderately low.
  6. Add the ham, onion, and garlic to the pan and cook, stirring occasionally, until the onion starts to soften, about 2 minutes.
  7. Add the bell peppers and cook, stirring occasionally, until they start to soften, about 3 minutes longer.
  8. Add the tomatoes, tomato paste, broth, and the remaining 1 3/4 teaspoons salt and 1/4 teaspoon of the pepper and bring to a simmer.
  9. Stir in the rice and add the chicken in an even layer. Simmer, partially covered, over moderately low heat until the chicken and rice are just done, 20 to 25 minutes.
  10. Sprinkle with parsley.
