Crockpot Dressing

Crockpot Dressing

Wonderfully quick and easy snack to make Try our Crockpot dressing.
Total time to cook: 1 minutes
Serves: 4
Category: holiday, chicken, side dish
Ingredients:
  1. 1 c. butter
  2. 3/4 c. chopped onion
  3. 2 c. chopped celery
  4. 1/4 c. parsley sprigs
  5. 2 cans mushrooms, drained
  6. 2 pkgs. seasoned stuffing mix
  7. 3 to 3 1/2 c. chicken broth
  8. 2 eggs, slightly beaten
Step Wise Instructions:
  1. Melt butter in skillet and saute onion, celery, parsley and mushrooms.
  2. Pour over bread cubes in large bowl.
  3. Pour in broth, add beaten eggs and mix together well.
  4. Pack lightly into crockpot.
  5. Cover and cook on high 45 minutes; then reduce to low 4 or more hours.

Spicy Chicken

This is a great side dish for meat-lovers. Try serving it with spice-rubbed chicken placed on top.
 
Total time to cook: 20 minutes
Serves: 4
Category: side dish, non veg, corn, egg
Ingredients:
  1. 2 lbs Chicken
  2. 2 tsp Corn Flour
  3. 2 tsp All Purpose Flour
  4. 1 no Egg
  5. 1 1/2 tsp. each of Ginger and Garlic paste
  6. 2 tsp Red Chilies powder
  7. 12 no Green Chilies
  8. 2 cups Yogurt
  9. 1 tsp Curry Powder
  10. 4 drops of red food color
  11. Onion for garnishing
  12. 3 tsp Lime juice
  13. Salt according to taste
  14. Vegetable Oil for frying
Step Wise Instructions:
  1. Mix corn flour, all purpose flour, egg, ginger garlic paste, chili powder and salt to thick batter. Add water if required.
  2. Add chicken pieces to the batter and marinate for an hour.
  3. Deep fry the marinated chicken pieces till they turn golden.
  4. Heat 4 tsp. oil in a sauce pan and add slit chilies, yogurt, garam masala, and red color, little salt and fried chicken pieces.
  5. Fry for 4-5 minutes and remove from heat.
  6. Add lime juice, mix well, garnish with onions
  7. Serve hot.

Meat Loaf

This meatloaf recipe is as simple as it gets. We like to make up a double batch and freeze them so that we always have meatloaf around for pasta dishes. The kids love them
 
Total time to cook: 40 minutes
Serves: 4
Category: non veg, dinner, smoked ham
Ingredients:
  1. 2 pounds lean ground beef
  2. 1 pound ground pork
  3. 1 large green bell pepper, minced (about 1/2 cup)
  4. 1 small onion, minced (about 1/2 cup)
  5. 2 large eggs, lightly beaten
  6. 4 cups soft breadcrumbs
  7. 3/4 cup finely chopped smoked ham
  8. 1/3 cup ketchup
  9. 1/4 cup firmly packed brown sugar
  10. 1/4 cup maple syrup
  11. 3 tablespoons Worcestershire sauce
  12. 2 tablespoons hot sauce
  13. 1 (15-ounce) can tomato sauce
  14. 4 bacon slices
Step Wise Instructions:
  1. Stir together ground beef and next 11 ingredients in a large bowl just until combined. Shape mixture into 2 (9- x 4-inch) loaves; place in an aluminum foil-lined broiler pan.
  2. Pour half of tomato sauce evenly over each loaf, and arrange 2 bacon slices over each loaf.
  3. Bake at 350° for 1 hour. Let stand 10 minutes before serving.
  4. Mini Alabama Meat Loaves: Shape mixture into 12 (2- x 4-inch) loaves, and arrange on a rack in a foil-lined broiler pan. Bake 40 to 45 minutes.
  5. To make ahead: Omit tomato sauce and bacon.
  6. Wrap unbaked meat loaf in plastic wrap and foil. Freeze up to 1 month.
  7. Thaw in refrigerator overnight, unwrap, and proceed as directed.

Vegetarian eggs

Vegetarian eggs is maybe my absolute favorite dish. When cooked just right, the flavor and texture is awesome.
 
Total time to cook: 40 minutes
Serves: 4
Category: Side dish, meat, minced meat, cheese
Ingredients:
  1. 2 eggs
  2. ½ cup Maida
  3. ½ cup minced meat
  4. 1 cube cheese
  5. ½ cup mixed vegetables
  6. 2 green chilies, few coriander leaves
  7. 1 onion, ½ teaspoon baking powder
  8. ½ cup Maida,
  9. Oil for frying
  10. Salt to taste
Step Wise Instructions:
  1. Finely chop all the vegetables, green chilies, coriander and onions and keep it aside.
  2. Take a big bowl and beat the eggs.
  3. When the eggs are well done add the Maida, baking powder and salt.
  4. Mix all these together and make a batter.
  5. Put in the green chilies, onions and coriander leaves and mix it all up.
  6. Take a tava and apply oil on it.
  7. When the oil is hot add half the batter and spread it evenly all over the tava.
  8. Now put the vegetables over this and spread it evenly on the omlette.
  9. Pour the remaining egg batter over the vegetables ensuring that the vegetables are engulfed between both the egg layers.
  10. Cook till the egg is done on one side and then flip it over.
  11. When both the sides are golden brown
  12. Check if it’s done from the inside by piercing with a knife.
  13. If its done remove from flame and serve with tomato sauce.

Tandoori Chicken

Outstanding chicken recipe for summertime cookouts.
 
Total time to cook: 40 minutes
Serves: 4

Ingredients:
  1. 8 Large Chicken pieces
  2. 2tbs Lime Juice
  3. 2tsp Coriander Seeds
  4. 2cloves Crushed Garlic
  5. 1″piece Grated Ginger
  6. Salt to taste
  7. 3 Dried Red Chilies
  8. 1 Clove
  9. 2tsp Garam Masala
  10. 2tsp Chilli powder
  11. 1/2quantity Chopped Onion
  12. 11/4cup Yogurt
Step Wise Instructions:
  1. Make slits in the flesh of the chicken pieces and rub lime juice and salt over them.
  2. Keep aside for half an hour.
  3. Grind dried chillies, coriander seeds, ginger, garlic and clove together.
  4. Mix the paste with garam masala and chilli powder.
  5. Heat a pan and saute the masala. Add onions and fry.
  6. Pour yogurt and stir well.
  7. Remove the pan from fire.
  8. Arrange chicken pieces in a dish and pour over the yogurt mixture.
  9. Refrigerate the marinade overnight or at least for 4-6 hours.
  10. Arrange the chicken on a broiler tray cook it in a pre-heated oven for 20-30 minutes or brush oil over the chicken pieces and cook in a gas stove turning over till both sides are done.
  11. Keep pouring oil and masala over the chicken pieces in between.

Cajun Pasta

Simple to make pasta with the chicken, it can serve as a full lunch.
 
Total time to cook: 40 minutes
Serves: 4

Ingredients:
  1. 1 tsp. real butter
  2. 2 cloves garlic
  3. 12 med. raw shrimp
  4. 2 cups milk
  5. 2 Tbsp. sherry
  6. 1/4 cup grated Parmesan cheese
  7. 1/4 tsp. cayenne pepper
  8. 1/2 lb. boned, skinned chicken breasts
  9. 2 1/2 Tbsp. all-purpose flour
  10. 4 plum tomatoes - seeded, chopped
  11. 1/2 cup frozen peas
  12. salt and pepper - to taste
  13. 2 cups cooked linguine
Step Wise Instructions:
  1. Melt the butter in a large non-stick skillet over medium-high heat.
  2. Add the garlic and cook for 1 minute.
  3. Add the shrimp and chicken.
  4. Pan-fry until the chicken is cooked through, about 3-4 minutes.
  5. Whisk the flour, milk, sherry, and Parmesan cheese together.
  6. Pour into the skillet and bring to a boil while stirring.
  7. Reduce heat to medium and continue to cook for about 5 minutes, until the mixture has thickened, stirring occasionally.
  8. Add the cayenne and fold in the tomatoes and peas.
  9. Cook until heated through.
  10. Season to taste with salt and pepper.
  11. Arrange the linguine on individual plates and spoon the sauce over the top.

Chicken sandwich

Open face sandwich sancks for the entire family
 
Total time to cook: 50 minutes
Serves: 6

Ingredients:
  1. 4 boned and skinless chicken breasts finely chopped
  2. 3 T. butter
  3. 2 C. unseasoned breadcrumbs
  4. 1/2 C. half and half light cream
  5. 1 beaten egg
  6. 2 T. Dijon mustard
  7. 1 C. chopped red pepper
  8. 1/2 C. chopped celery
  9. 6 green onions chopped
  10. 2 T. fresh chopped tarragon
  11. Salt and freshly ground black pepper to taste
  12. Oil for sautéing
Step Wise Instructions:
  1. Saute red peppers, celery and green onions in a pan, until tender, about 5 minutes.
  2. Cool.
  3. Add to a mixing bowl with the rest of the ingredients.
  4. Mix well.
  5. Chill for 2 hours or as long as overnight.
  6. Shape chicken mixture into patties.
  7. Saute in a skillet over medium heat, about 6 -7 minutes.
  8. Serve on onion buns, with mayonnaise, tomato and lettuce.

Chicken cacciatore Recipe

We like to serve it with just about any type of meat — steak, pork, chicken.
 
Total time to cook: 40 minutes
Serves: 4

Ingredients:
  1. 4 Boneless chicken breasts, split in half flour
  2. 1 Medium onion, diced
  3. 1/4 Pound mushrooms, sliced
  4. 1-1/2 tsp Garlic, minced
  5. 2 Cups tomatoes, diced
  6. 1 Bay leaf
  7. 1/2 tsp Rosemary
  8. 1/4 Cup white wine
  9. 1/4 Cup chicken broth
  10. 1/2 Cup sliced black olives
  11. Olive oil as needed
Step Wise Instructions:
  1. Heat the 2 tbsp of olive oil in a saucepan.
  2. Add the onion, mushrooms, and garlic.
  3. Cook until just soft.
  4. Put tomatoes, bay leaf, rosemary, wine, olives, and broth.
  5. Simmer for 30 minutes.
  6. Heat some olive oil in a heavy skillet.
  7. Dredge the chicken in flour.
  8. Add chicken to skillet and cook until chicken is done.
  9. Place chicken in a large casserole dish.
  10. Cover with the sauce and bake uncovered at 350 degrees C for 25 minutes, or until it bubbles.
  11. Cacciatore Chicken is ready.

Asian Chicken Noodle Soup

One of the easiest and quickest chicken noodle soup recipes I have seen.
 
Total time to cook: 20 munites
Serves: 6

Ingredients:
  1. 1 tbsp vegetable oil
  2. 1 tbsp bottled minced garlic
  3. 1 tbsp bottled grated ginger
  4. 2 stalks fresh lemongrass, peeled
  5. 2 cups water
  6. 2 (14-ounce) cans fat-free, less-sodium chicken broth
  7. 1 pound chicken breast tenders, cut into bite-sized pieces
  8. 4 ounces uncooked angel hair pasta
  9. 1/4 cup chopped fresh cilantro
  10. 1 tbsp fresh lime juice
  11. 1/2 tsp salt
  12. 2 green onions, thinly sliced
  13. 1 red chilli pepper, finely chopped
Step Wise Instructions:
  1. Heat oil in a large nonstick skillet over medium-high heat.
  2. Add garlic, ginger, and lemongrass; sauté 3 minutes.
  3. Add water and broth; bring to a boil.
  4. Add chicken and pasta; cook 5 minutes or until chicken is done.
  5. Remove from heat; stir in remaining ingredients.
  6. Let stand 5 minutes.
  7. Discard lemongrass

Seafood Lasagna

We use this recipe in all of our Italian cooking. You can also serve this as a sandwich, either grilled or pan fried.
 
Total time to cook: 50 minutes
Serves: 5

Ingredients:
  1. 1 green onion, finely chopped
  2. 1 cup whipping cream
  3. 2 tablespoons vegetable oil
  4. 2 tablespoons plus 1/2 cup butter or margarine, divided
  5. 1/2 cup chicken broth
  6. 1/2 cup all-purpose flour
  7. 1/4 teaspoon white pepper, divided
  8. 1 bottle (8 ounces) clam juice
  9. 1 pound bay scallops
  10. 1 pound uncooked small shrimp, peeled and deveined
  11. 1 package (8 ounces) imitation crabmeat, chopped
  12. 1-1/2 cups milk
  13. 1/2 teaspoon salt
  14. 1/2 cup shredded Parmesan cheese, divided
  15. 9 lasagna noodles, cooked and drained
Step Wise Instruction:
  1. In a large skillet, saute onion in oil and 2 tablespoons butter until tender.
  2. Stir in broth and clam juice; bring to a boil.
  3. Add the scallops, shrimp, crab and 1/8 teaspoon pepper; return to a boil.
  4. Reduce heat; simmer, uncovered, for 4-5 minutes or until shrimp turn pink and scallops are firm and opaque, stirring gently.
  5. Drain, reserving cooking liquid; set seafood mixture aside.
  6. In a saucepan, melt the remaining butter; stir in flour until smooth.
  7. Combine milk and reserved cooking liquid; gradually add to the saucepan.
  8. Add salt and remaining pepper.
  9. Bring to a boil; cook and stir for 2 minutes or until thickened.
  10. Remove from the heat; stir in cream and 1/4 cup Parmesan cheese.
  11. Stir 3/4 cup white sauce into the seafood mixture.
  12. Spread 1/2 cup white sauce in a greased 13-in. x 9-in. x 2-in. baking dish.
  13. Top with three noodles; spread with half of the seafood mixture and 1-1/4 cups sauce. Repeat layers.
  14. Top with remaining noodles, sauce and Parmesan.
  15. Bake, uncovered, at 350 F for 35-40 minutes or until golden brown. Let stand for 15 minutes before cutting.
