A little different, we like these almond balls.

Ingredients:
3 c. rolled oats
1/2 c. pumpkin seeds
1/2 c. raisins
1.5 t. vanilla
1/4 c. raw sunflower seeds
1.5 t. cinnamon
3/4 c. almond butter
1/3 c. + 1T. brown rice syrup
2 T. barley malt syrup
1/4 c. coconut, shredded
Step Wise Instructions:
Take about 1/3c. rolled oats and 1/4c. pumpkin seeds and grind them in a food processor, blender, or use a hammer to turn into a powder.
Set aside on a small plate.
Combine dry ingredients. Stir.
Add from almond butter down to the end of the list. Stir it all together.
Grab a shallow bowl and fill with water.
Wet fingers and palms and spoon batterfuls into hands and form 1-inch balls.
Coat with oat/pepita powdery mixture.
Place on cookie sheet and freeze 20 minutes.
Take out and store in the fridge & share!

Just another variation of those great effortless cookies!

Ingredients:
2/3 cup Sugar
1 cup softened Butter
2 tsp Vanilla Essence
1 tsp grated Lemon Peel
1 Egg Yolk
2 1/4 cup Fine Wheat Flour
1 1/2 cup grounded Hazelnuts
1/2 cup Jam
Step Wise Instruction:
Preheat the oven at 325 degrees.
In a bowl mix sugar and butter.
Beat the mixture till soft and fluffy.
Add vanilla essence, lemon peel and egg yolk.
Mix well.
Add the flour and the hazelnuts.
Make a soft dough.
Make 1 1/4 size balls out of the dough.
Take a ungreased cookies sheet and place the balls on it 2 inches apart.
Press the cookies in the center with the thumb.
Bake the cookiesat 325 degrees for 10 to 15 minutes or until light golden brown around edges.
Let them cool.
When completely cool fill the cavity of each cookie with ½ teaspoon jam.

Ingredients:
1 package chocolate cake mix
1container prepared chocolate frosting
1 bar chocolate flavored confectioners coating
Step Wise Instruction:
Prepare the cake mix according to package directions using any of the recommended pan sizes.
When cake is done, crumble while warm into a large bowl, and stir in the frosting until well blended.
Melt chocolate coating in a glass bowl in the microwave, or in a metal bowl over a pan of simmering water, stirring occasionally until smooth.
Use a melon balls or small scoop to form balls of the chocolate cake mixture.
Dip the balls in chocolate using a toothpick or fork to hold them.
Place on waxed paper to set.

Ingredients:
2 squares unsweetened chocolate
2 tablespoons butter
2/3 cup sifted confectioners’ sugar
1 quart chocolate ice cream, softened
2 tablespoons hot milk
2 teaspoons instant coffee, dissolved in a teaspoon of water
1/4 cup chopped pecans
Whipped topping
1 1/2 cups shredded coconut
Pecan halves and shaved chocolate, for garnish
Step Wise Instructions:
Melt chocolate and butter together, stirring to blend.
Stir hot milk into the confectioners’ sugar; add to chocolate mixture and stir to mix well.
Stir in coconut.
Press mixture into the bottom and up sides of 9-inch buttered pie plate.
Chill in refrigerator.
Stir softened ice cream; stir in coffee and chopped pecans.
Spread in chilled pie shell, swirling top.
Decorate with dollops of whipped topping, pecan halves, and shaved chocolate.
Freeze mocha ice cream pie until firm.

I love homemade pineapple, and this recipe is so easy!

Ingredients:
2 c. plain yogurt
1/2 c. canned crushed pineapple
1 can frozen pineapple or orange-pineapple juice concentrate
Step Wise Instructions:
Drain the can of crushed pineapple so all the juice runs out.
Put all the ingredients in a medium-sized bowl and mix them together.
Spoon the mixture into small paper cups. Fill them almost to the top.
Stretch a small piece of plastic wrap across the top of each cup.
Using a pop sicle stick, poke a hole in the plastic wrap. Stand the stick straight up in the center of the cup.
Put the cups in the freezer until the mixture is frozen solid.
Remove the plastic wrap and peel away the paper cup.

So simple to make, this banana ice cream is something you can throw together in a jiffy for your favorite Indian recipes

Ingredients:
2 cup sweetened flaked coconut
1 cup sugar
6 egg yolks
4 cup milk
2 cup half-and-half
1 can cream of coconut
2 tsp vanilla extract
3 ripe bananas mashed
Toasted sweetened flaked coconut for garnish
Step Wise Instructions:
Bake coconut in a shallow pan at 350 degrees, stirring occasionally, 10 minutes or until toasted.
Whisk together sugar, egg yolks, and milk in a heavy saucepan over medium heat; cook, whisking constantly, 20 minutes or until mixture thickens and will coat a spoon (do not boil).
Remove from heat; whisk in toasted coconut, half-and-half, cream of coconut, and vanilla.
Fold in banana.
Cover and chill 3 hours.
Pour mixture into freezer container of a 1-gallon hand-turned or electric ice-cream freezer.
Freeze according to manufacturer’s instructions.
Pack freezer with additional ice and rock salt, and let stand 1 hour before serving. Garnish, if desired.

Another Coconut Strawberry salad recipe.

Ingredients:
Granulated sugar to taste
1 (20 ounce) can pineapple chunks, drained
1 cup flaked sweetened coconut
2/3 cup orange juice
Step Wise Instruction:
Cut the strawberries into quarters and sprinkle them with sugar.
Stir to coat and allow macerating for 30 minutes to one hour.
In a glass bowl, mix together strawberries, pineapple, and coconut.
Drizzle orange juice over and stir to mix.
Refrigerate for at least one hour before serving.
Serve cold.

1 ts Treacle (golden corn syrup)
1/4 lb Butter
1 ts Baking soda
3/4 c Coconut, flaked
1 c Oatmeal
3/4 c Plain flour
2 tb Boiling water
Step Wise Instruction:
In saucepan place butter, treacle, soda, sugar and mix with boiling water.
Bring slowly to boil, remove and add dry ingredients.
Mix well.
Place spoonfuls about 3 inches apart on well greased cookie tray.
Bake at 275F about 25 min.

Great Cookies for the Halloween season.

Ingredients:
1 1/3 cups flaked coconut
1 cup (2 sticks) butter
1/2 teaspoon vanilla extract
2 cups all-purpose flour
3/4 teaspoon salt
1/2 cup granulated sugar
1 large egg
Assorted Candies
Step Wise Instruction:
Preheat oven to 300°F. Spread coconut on ungreased cookie sheet.
Toast in oven, stirring occasionally until coconut just begins to turn a light golden color, about 25 minutes.
Remove toasted coconut from cookie sheet; set aside.
Increase oven temperature to 350°F. In large mixing bowl, cream butter and sugar until light and fluffy.
Beat in egg and vanilla.
Combine flour and salt; add to creamed mixture, only until combined.
Form dough into 1 1/4-inch balls.
Roll heavily in toasted coconut.
Place 2-inches apart on lightly greased cookie sheets.
With thumb, press indentation in center of each cookie.
Bake 12 to 14 minutes or until coconut is golden brown.
Remove cookies to wire rack; immediately fill indentations with candies, using a scant teaspoonful in each.
Cool completely.
Wrap in plastic wrap and place in Easter basket.
Makes about 3 dozen cookies.

1 medium banana, peeled
2 tablespoons coconut milk
4 ice cubes

Juice the strawberries.
Transfer to a blender with the banana, coconut milk and ice.
Blend thoroughly.
Serve topped with freshly shaved coconut if desired.
