Toffee brickle turns these otherwise ordinary banana muffins into a delicious treat.

Ingredients:
2 c Whole wheat flour
1/4 c + 1T soy flour
2 t Baking soda
1/2 t Salt
1/3 c Millet
1/2 c Applesauce
2 large Egg
2 c Mashed over-ripe bananas
1/4 c Golden raisins
Step Wise Instructions:
Preheat oven to 350 F .In a large bowl, mix together flours, baking soda, salt, and millet.
Set aside. In blender, puree on high speed the applesauce, egg or equivalent, bananas and raisins.
Add wet stuff to dry, moisten evenly.
Spoon batter into non-stick 12 muffin tin dividing evenly and bake 40-50 minutes at 350 F or until browned.
Remove muffins from pan, cool to room temperature.
Wrap and chill. Or eat on the spot.

A great snack recipe for your Halloween party. Works well year round, but is especially fun at Halloween.

Ingredients:
1/2 cup Milk Chocolate Chips
1/2 cup Semi-Sweet Chocolate Chips
1 tbsp vegetable shortening
Cookies, dried apricots, miniature pretzels or potato chips
Step Wise Instructions:
Cover tray with wax paper.
Place chocolate chips and shortening in small microwave-safe bowl.
Microwave at high (100%) 1 minute; stir.
If necessary, microwave at high an additional 15 seconds at a time, stirring after each heating, just until chips are melted and mixture is smooth when stirred.
Cool slightly.
Dip 2/3 of each snack or fruit into chocolate mixture.
Shake gently to remove excess chocolate.
Place on prepared tray. Refrigerate, uncovered, about 30 minutes or until coating is firm.
Store in airtight container in cool, dry place.

Ingredients:
1 cup brown sugar
1/2 tsp salt
1/2 cup butter, softened
1 egg
1/2 tsp vanilla
1 3/4 cup flour, sifted
1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp cinnamon
1 1/2 cup confectioner’s sugar
1 egg white, slightly beaten
1 tbsp butter, melted
1/8 tsp salt
1/2 tsp vanilla
food coloring
Step Wise Instructions:
Mix sugar, salt and butter thoroughly.
Add egg and vanilla and beat till fluffy.
Sift flour, baking powder, soda and cinnamon and add to mixture.
Chill well, several hours, or overnight.
For the glaze, mix the confectioners sugar, egg white, butter, salt, vanilla and food coloring together until smooth.
Roll the dough out until it is about 1/8 inch thick.
Cut into fancy shapes and bake on ungreased cookie sheet for 8-10 minutes at 350F.
Let cool and glaze.

Easy to make huge cookie batch! Quick and Easy and Delicious.

Ingredients:
1/2 tsp grated lemon zest
165 g butter
1 egg
165 g flour
1/2 tsp vanilla extract
100 g cornstarch
90 g powdered sugar
Step Wise Instructions:
Whisk butter and sugar than add the egg, flour and corn starch sifted, vanilla and lemon zest.
Put in a pastry bag, than make several shape on a non stick baking mat.
Sprinkle with sugar, cocoa and chocolat chips.
Cook for 10-12 minutes.
Oven 180° C, 350 degrees F.

Gingerbread waffles are a wonderful treat for that special occasion or weekend brunch. The enticing aroma will fill your kitchen with hungry guests.

Ingredients:
2 c Buttermilk baking mix
1 c Milk
Egg
1/3 c Molasses
1/4 c Packed light brown sugar
tsp Ginger
3/4 ts Cinnamon
1/4 ts Nutmeg
Peach Sauce:
Cn (16 oz) sliced Cling Peaches in heavy syrup
1 tb Cornstarch
tbsp Lemon juice
Step Wise Instructions:
Combine baking mix, milk, egg, molasses, sugar, ginger, cinnamon and nutmeg.
Pour 1/2 cup of batter in preheated waffle iron.
Texture of finished waffle will be cake-like; it is not intended to be crisp.
Do not over bake because waffle will burn.
Repeat with remaining batter.
For Peach Sauce:
Drain liquid from peaches into a 4 cup glass measure.
Stir in cornstarch mixed with lemon juice.
Heat on medium until mixture thickens.
Cut peach slices into pieces and add to sauce.
Serve over waffles.

2 cups granulated sugar
4 eggs
2/3 cup butter
1 cup cocoa
2 tsp vanilla extract
1 1/2 cups all-purpose flour
1 tsp baking powder
1/4 tsp salt
1 Nestle Alpine white candy bar
Step Wise Instructions:
Heat oven to 350 degrees F. Grease an 11 1/2 x 9-inch baking pan.
Cream butter and sugar. Add eggs, one at a time.
Add remaining dry ingredients.
Cut candy bar into morsel size pieces (some larger) and add to mixture.
Spread mixture evenly into prepared pan, and bake for 25 minutes.

A great Halloween recipe that’s fun to include the kids while making. This biscuits are an absolute favorite of my daughter.

Ingredients:
3 1/2 cups flour
1 tsp salt
1 tbsp sugar
4 tsp baking powder
1 tsp baking soda
4 tsp butter
2 eggs — lightly beaten
1 1/2 cups buttermilk
1 spray shortening and cornmeal for coating pan
Step Wise Instructions:
Preheat oven to 400.
In a food processor or a large bowl, mix 3 cups of the flour with salt, sugar, baking powder and baking soda.
Cut the butter into the dry ingredients until the mixture is textured like cornmeal.
Separately mix the eggs with the buttermilk, and stir all but 2 tbsp. of this liquid into the dry mixture.
Mix just enough to make a uniformly moistened dough.
Dust a clean work surface with 1/2 the remaining flour, and turn the dough out onto the floured surface.
Sprinkle the top with the rest of the flour, and with floured hands, gently push the dough
into a circle about 1/2″ thick..
Cut with a 2″ or 3 ” biscuit cutter, and place biscuits close together on a grease and cornmeal coated cookie sheet.
You will get about 12 biscuits.
Brush the tops of the biscuits with the reserved buttermilk egg mixture.
Bake in the preheated oven until puffed and brown,about 15 minutes .
Cool for a few minutes before serving.

This easy, low-fat recipe yields light and delicious Cherry Spumoni.

Ingredients:
1 1/2 cups heavy cream
1/2 cup sweetened condensed milk
1/2 teaspoon rum flavoring
1 can cherry pie filling
1 cup pitted fresh sweet cherries
1/3 cup miniature chocolate chips
1/3 cup slivered almonds, toasted
Step Wise Instructions:
Combine heavy cream, sweetened condensed milk and rum flavoring in a large bowl; mix well. Refrigerate 30 minutes.
Lightly grease inside of a 9×5x3-inch baking pan.
Cut a piece of plastic wrap 24-inches long.
Line bottom and sides of pan with plastic wrap so that several inches of wrap overhang each long side.
Remove cream mixture from refrigerator.
Beat with electric mixer on high speed 3 to 4 minutes or until soft peaks form.
Do not overbeat. Fold in cherry pie filling, fresh sweet cherries, chocolate chips and almonds.
Spoon mixture evenly into lined pan.
Cover and freeze at least 5 hours or overnight.
To serve, quickly dip pan in hot water, immersing just the bottom and halfway up sides to help release ice cream.
Using overhanging plastic wrap for handles, gently remove spumoni from pan and transfer to serving plate.
Remove plastic wrap by lifting spumoni with metal spatula.
Cut crosswise into slices and serve immediately.

3/4 cup shortening
2 cups firmly packed brown sugar
2 eggs
4 cups all-purpose flour
2 tsp baking powder
1 tsp baking soda
1 tsp lemon extract
1 cup strong coffee
Step Wise Instructions:
Beat shortening, sugar and eggs until creamy.
Add dry ingredients alternately with coffee.
Add lemon extract.
Drop by teaspoon onto greased cookie sheet.
Bake at 350 degrees F for 8 to 10 minutes.
Drizzle with confectioners sugar icing flavored with lemon.

3 c Brown sugar
3c Margarine
6 c Oatmeal
3 c Flour
1 tb Baking soda
2 c Chocolate chips
Step Wise Instructions:
Put the ingredients in large bowl.
Mash, squeeze, and knead, etc until it is completely blended.
Form into small balls about 1 to 1 1/2 inches in size.
Place on an ungreased cookie sheet.
Butter the bottom of a small glass and dip into white sugar, then pound the cookies flat.
Bake at 350 degrees for about 10 to 12 minutes.
This is a good recipe to use when you need to get rid of some aggressions because the dough is too heavy for most mixers
You can also use peanut butter or butterscotch chips or a mixture of them.
