Applesauce Nut Bread

Applesauce Nut Bread

This is a recipe for apple bread dipped in a mixture of cinnamon and brown sugar, and then in chopped nuts.

Total time to cook: 1 hour
Serves: 5

Ingredients:
  1. 1 cup sugar
  2. 1 cup applesauce
  3. 1/3 cup vegetable oil
  4. 2 eggs
  5. 3 Tbs milk
  6. 2 cup flour
  7. 1 tsp baking soda
  8. 1/2 tsp baking powder
  9. 1/2 tsp cinnamon
  10. 1/4 tsp nutmeg
  11. 1 cup chopped nuts
Step Wise Instructions:
  1. Combine first 5 ingredients in mixing bowl and beat with eletric mixer for 1 minute.
  2. Combine remaining ingredients except nuts and add to applesauce mixture beating until smooth.
  3. Stir in nuts.
  4. Spoon into greased loaf pan and bake at 350 degrees 40-45 min allow to cool in pan on rack for 10-15 minutes
  5. Remove from pan and continue to cool on rack.

A great snack recipe for your Halloween party. Works well year round, but is especially fun at Halloween.

Total time to cook: 30 minutes

Ingredients:Roast
  1. 1 c. milk
  2. 1 egg, slightly beaten
  3. 1 c. flour
  4. 1 c. cornmeal
  5. Salt and pepper
Step Wise Instructions:
  1. Mix egg and milk.
  2. Sift together flour, cornmeal, salt and pepper.
  3. Dip shrimp or other meat into milk and egg mixture.
  4. Coat with flour mixture.
  5. Fry in deep hot fat until brown.
  6. Drain on paper towels. Serve.

Soft Sugar Cookies

A classic cookie with a sweet topping.

Total time to cook: 40 minutes
Serves: 8

Ingredients:Roast
  1. 1 cup sour cream
  2. 2 cups sugar
  3. 1 cup shortening
  4. 4 eggs
  5. 1 teaspoon vanilla
  6. 6 cups flour
  7. 3 teaspoons baking powder
  8. 1 teaspoon baking soda
  9. 1 teaspoon salt
Step Wise Instructions:
  1. Preheat oven to 350 degrees.
  2. Combine sour cream, sugar, shortening, eggs and vanilla. Mix well.
  3. Slowly add the dry ingredients until everything is completely mixed together.
  4. Let the dough chill for about 15 minutes.
  5. Form dough into small balls, or use fun cookie cutters.
  6. Bake until LIGHT golden brown - no more than 10 minutes.
  7. When you take them out of the oven they may seem underdone, but they are perfectly fine.
  8. Let them cool until soft and moist.

Vanilla Fudge

The recipe is an awesome dessert. I do it about weekly and this is almost as the one I use.

Total time to cook: 1 hour
Serves: 6

Ingredients: Crust
  1. 1 pk chocolate cake mix
  2. 14 oz Sweetened condensed milk
  3. 6 oz. Heath Bits ‘O Brickle
  4. 4 Heath Candy bars
  5. 8 oz. Cool Whip
Step Wise Instructions:
  1. Bake cake as directed on box.
  2. As soon as cake comes out of the oven, punch holes in the top of the cake with a straw.
  3. Spread condensed milk on top.
  4. Sprinkle package of brickle chips on top of cake.
  5. Cool cake.
  6. Spread cool whip on top.
  7. Mash frozen Heath Bars (use a hammer) and spread on top of cake.
  8. Keep refrigerated.

Ingredients:
  1. 7 oz of marshmallow crème
  2. ¼ cup of creamy peanut butter
  3. 2 tablespoons of melted butter
  4. 5 oz of chow mien noodles
  5. 1 cup of pastel peanut
  6. Confectioners’ sugar
Step Wise Instructions:
  1. Beat marshmallow crème, peanut butter and butter in a bowl until the mixture is smooth.
  2. Fold in the chow mien noodles and the M&Ms.
  3. Chill until easy to handle.
  4. On waxed paper, form into suitably sized nests.
  5. Chill for about 40 minutes.
  6. Dust with confectioners’ sugar and put some peanut M&Ms in the nests.

Almond Coconut Brownies

This is the perfect dessert to serve for an afternoon tea party or after an elegant meal.
Total time to cook: 1.5 hours
Serves: 6

Ingredients:
  1. 1 1/2 cup butter
  2. 4 squares unsweetened chocolate
  3. 2 1/4 cups sugar
  4. 3 eggs, beaten
  5. 1 cup all-purpose flour
  6. 3/4 cup chopped slivered almonds
  7. 1 teaspoon vanilla extract
Filling:
  1. 3 tbsp extra virgin olive oil
  2. 2 tbsp red wine
  3. vinegar
  4. 1 tsp Dijon or seed mustard
  5. Sea salt and black pepper
  6. 3 spring onions, finely chopped
  7. 2 tbsp dill, finely torn
  8. 1 tbsp small capers, rinsed
Topping:
  1. 3 tbsp extra virgin olive oil
  2. 2 tbsp red wine
  3. vinegar
  4. 1 tsp Dijon or seed mustard
  5. Sea salt and black pepper
  6. 3 spring onions, finely chopped
  7. 2 tbsp dill, finely torn
  8. 1 tbsp small capers, rinsed
Step Wise Instructions:
  1. Cook the potatoes in simmering, salted water until tender but still firm, about 20 minutes.
  2. To make the dressing, whisk the extra virgin olive oil, vinegar, mustard, salt and pepper in a large bowl until thickened.
  3. Add the spring onions, dill and capers.
  4. Heat 1 tbsp olive oil in a large fry pan and sear the salmon, skin side down, until the skin is crisp.
  5. Turn to finish cooking briefly on the other side, leaving the inside pink.
  6. Season well.
  7. Drain the potatoes and slice them thickly as soon as you can handle them.
  8. Toss them carefully in the dressing, making sure the slices are well-coated, and arrange on four warmed dinner plates.
  9. Place the salmon on top.
  10. Wash the watercress, toss it in any remaining dressing and serve alongside salmon.

Tasty Mex flavor, easy to prepare, delicious
Total time to cook: 40 minutes
Serves: 4

Ingredients:
  1. 6 tbsp Rolled oats
  2. 1 1/2 cups Whole wheat flour
  3. 1/2 cup all purpose flour
  4. 1/2 cup brown sugar
  5. 1 tsp Baking powder
  6. Salt
  7. 5 to 6 tbsp Low fat butter
  8. 1/2 cup Milk
Step Wise Instructions:
  1. Preheat oven to 350 degrees.
  2. Grease 2 baking sheets.
  3. Grind the rolled oats in a blender down to medium-coarse.
  4. Combine the ground oats, whole wheat flour, all purpose flour, brown sugar, baking powder, and salt.
  5. Mix well.
  6. Add in the butter, and make sure its mixed in well.
  7. Best done in a food processor or electric mixer.
  8. Add in 1/3 cup of the milk and mix well.
  9. Add enough milk so that the ingredients form a dough that just holds together.
  10. Divide the dough into 3 or 4 portions and roll out one portion at a time to about 1/4 inch thick.
  11. Then cut out round sections about 3 inch wide.
  12. Transfer the cut rounds to the baking sheets, and poke some holes into the rounds.
  13. Bake the biscuits for about 10 to 12 minutes until they’re golden brown.

Brownie biscotti

You just can’t go wrong with chocolate and creams!
Total time to cook: 40 minutes
Serves: 4

Ingredients:
  1. 1 package chocolate cake mix
  2. 1container prepared chocolate frosting
  3. 1 bar chocolate flavored confectioners coating
Step Wise Instruction:
  1. Prepare the cake mix according to package directions using any of the recommended pan sizes.
  2. When cake is done, crumble while warm into a large bowl, and stir in the frosting until well blended.
  3. Melt chocolate coating in a glass bowl in the microwave, or in a metal bowl over a pan of simmering water, stirring occasionally until smooth.
  4. Use a melon balls or small scoop to form balls of the chocolate cake mixture.
  5. Dip the balls in chocolate using a toothpick or fork to hold them.
  6. Place on waxed paper to set.

Just another variation of those great effortless cookies!
Total time to cook: 40 minutes

Ingredients:
  1. 2/3 cup Sugar
  2. 1 cup softened Butter
  3. 2 tsp Vanilla Essence
  4. 1 tsp grated Lemon Peel
  5. 1 Egg Yolk
  6. 2 1/4 cup Fine Wheat Flour
  7. 1 1/2 cup grounded Hazelnuts
  8. 1/2 cup Jam
Step Wise Instruction:
  1. Preheat the oven at 325 degrees.
  2. In a bowl mix sugar and butter.
  3. Beat the mixture till soft and fluffy.
  4. Add vanilla essence, lemon peel and egg yolk.
  5. Mix well.
  6. Add the flour and the hazelnuts.
  7. Make a soft dough.
  8. Make 1 1/4 size balls out of the dough.
  9. Take a ungreased cookies sheet and place the balls on it 2 inches apart.
  10. Press the cookies in the center with the thumb.
  11. Bake the cookiesat 325 degrees for 10 to 15 minutes or until light golden brown around edges.
  12. Let them cool.
  13. When completely cool fill the cavity of each cookie with ½ teaspoon jam.

Lemon Pasta

Lemon Pasta

This is one of my easiest pasta recipes!
Total time to cook: 40 minutes
Serves: 7

Ingredients:
  1. 1 pound long pasta
  2. 1 cup fresh chopped parsley
  3. 2 medium cloves of garlic, minced
  4. 1/2 cup olive oil
  5. Juice of two lemons
  6. 3/4 cup toasted pine nuts
  7. Salt & pepper
Step Wise Instruction:
  1. Mix together the oil, garlic, parsley and lemon zest and juice.
  2. Season with salt and pepper.
  3. Add the toasted pine nuts, stir well, and allow to sit for a couple of hours for the flavors to meld.
  4. Cook the pasta in boiling salted water until it is al dente. Just before draining, remove a small cup of pasta water.
  5. Drain the pasta, and return it to the pot with the lemon sauce over high heat.
  6. Add a little pasta water to prevent it from drying out.
  7. As soon as it is piping hot, remove from the heat and serve.
  8. Scoop the pine nuts off the bottom of the pot to top the pasta, and serve with a wedge of lemon.
