Barbecued Pecans

This is the easiest recipe ever, with yummy bits of pecans!

 
Total time to cook: 1 hours
Serves: 7
Category: Appetizer, beef recipe
Ingredients:
  1. 2 tablespoons butter
  2. 1/4 cup Worcestershire sauce
  3. 1 tablespoon ketchup
  4. 2 dashes hot sauce
  5. 4 cups pecan halves
Step Wise Instructions:
  1. Melt butter in large saucepan or skillet.
  2. Add Worcestershire sauce, ketchup and hot sauce.
  3. Add pecan halves, stirring to coat well.
  4. Spoon into a lightly greased glass or nonstick baking dish; spread out in an even layer.
  5. Toast at 400° about 15 to 20 minutes, stirring frequently.
  6. Turn out on paper towels and sprinkle with salt.

  1. 1 cup nonfat milk
  2. 2 cups unsweetened frozen cherries
  3. 2 cups frozen raspberries
  4. 2 cups frozen low fat vanilla yogurt

  6. 2 cups ice

Chocolate Nut Clouds

Simple chocolate and nut cookie recipe
 
Total time to cook: 40 minutes
Serves: 4

Ingredients:
  1. 2 large egg whites, at room temperature
  2. 1 tsp vanilla extract
  3. 1/4 tsp cream of tartar
  4. 1/4 tsp salt
  5. 2/3 cup granulated sugar
  6. Food color
  7. 1 cup pecans, chopped
  8. 1 cup semisweet chocolate chips
Step Wise Instructions:
  1. Heat oven to 275 degrees F. Grease baking sheets.
  2. In a large mixer bowl at high speed, beat egg whites, vanilla extract, cream of tartar and salt until soft peaks form.
  3. Gradually add sugar and, if desired, a few drops of food color and beat until very stiff and glossy and sugar is almost dissolved.
  4. By hand, fold in pecans and chocolate chips.
  5. Drop by well-rounded teaspoonsful about 1 inch apart on baking sheets.
  6. Bake for 20 to 25 minutes or until set and dry to the touch.
  7. Cool cookies on baking sheets for 1 minute.
  8. Carefully transfer cookies to wire racks to cool.
  9. Store in an airtight container in a cool place.

Easy to make, this chocolate soup recipe is a household favorite
Total time to cook: 30 minutes
Serves: 6

Ingredients:
  1. 1/2 cup sugar — plus
  2. 1 tablespoon sugar
  3. 5 tablespoons Flour
  4. 2 tablespoons Cocoa
  5. 4 cups Milk
  6. 3 slices bread
  7. 1/4 cup butter
Step Wise Instructions:
  1. Combine sugar, flour and cocoa.
  2. Put under broiler and brown, stirring frequently.
  3. Slowly add a little milk until creamy.
  4. Heat the remainder of the milk to boiling point.
  5. Slowly add the cold milk mix, bring again to boiling point.
  6. Add vanilla and salt to taste (about 1/2 teaspoon vanilla and dash of salt).
  7. Cube the bread and fry golden brown in the butter. Add the toasted bread at serving time.

Chocolate Mousse

One bite of this recipe and you’ll be floating in a chocolate reverie.

Ingredients:
  1. 5 oz dark organic chocolate
  2. 8oz extra firm silken tofu
  3. 3 TBS Florida Crystals sugar
  4. 3 egg whites
Step Wise Instructions:
  1. Melt chocolate and sugar together in a double boiler stirring constantly.
  2. Puree in blender chocolate, sugar and tofu.
  3. You have to stop once in awhile to scrape the sides of the blender with a rubber spatula.
  4. Transfer chocolate mixture to a bowl scraping blender well to get it all.
  5. Beat egg whites to a semi stiff peak in a separate bowl.
  6. With a rubber spatula, fold egg whites into chocolate, tofu puree 1/3 amount at a time.
  7. Be careful not to over mix.
  8. Refrigerate for best flavor and texture.

Tomato tapas is a nice recipe, consists of blue cheese, basil and rosemary, especially for the tomato lovers.

  1. 2 large plum tomatoes, seeded and chopped
  2. 12 dried tomato halves in oil, drained and chopped
  3. 1 cup (4 ounces) shredded Italian 6-cheese blend
  4. 1/3 cup crumbled Gorgonzola or blue cheese
  5. 1/4 cup minced sweet onion
  6. 1 tbsp minced fresh basil
  7. 1 tsp minced fresh rosemary
  8. 1/4 tsp garlic pepper
  9. 24 baguette slices
Step Wise Instructions:
  1. Combine first 8 ingredients.
  2. Arrange baguette slices on a baking sheet.
  3. Spoon tomato mixture evenly over slices.
  4. Bake tapas at 350° for 7 to 8 minutes or until cheese melts

Chilled Avocado Soup

  1. 2 ripe peeled avocados
  2. 1 1/2 cups vegetable broth
  3. 1 (4-ounce) can or jar chopped green chiles
  4. 1/2 cup whole milk
  5. 1 tablespoon lime juice
  6. 3/4 teaspoon salt
  7. 1/4 teaspoon black pepper
  8. Fresh cilantro and/or crushed tortilla chips for garnish
Step Wise Instructions:
  1. Cut the avocados in half, and remove the pits.
  2. Spoon avocado into a blender, add the remaining ingredients (except garnish), and puree until creamy.
  3. Chill the soup for up to 2 hours before serving, or serve immediately.
  4. Cover leftovers with plastic wrap, refrigerate, and use within 2 days..

Spinach Burritos

It’s one of those meals I make when I’m happy. It also makes regular appearances for celebrations, slumber parties and potlucks.
 
Total time to cook: 50 minutes
Serves: 6

Ingredients:
  1. 1 Tb Olive Oil
  2. 2 Can Pinto Beans - 15 oz, drained and rinsed
  3. 1/2 C Mild Salsa, plus more for serving
  4. 9 Oz Baby Spinach
  5. 1/2 C Cheddar or Monterey Jack cheese, shredded
  6. 6 ea lour or Whole Wheat Tortillas - large Guacamole
Step Wise Instructions:
  1. In a skillet, heat oil and add beans and salsa and cook for several minutes, stirring occasionally.
  2. In a loosely covered bowl, wilt the spinach in the microwave about 2 minutes.
  3. Add the spinach to the skillet and stir it gently.
  4. Remove the bean mixture from the heat and add the cheese.
  5. Stir it gently until cheese is melted. Warm tortillas in microwave, Put a scoop of bean mixture in middle of tortilla.
  6. Add more salsa and guacamole if desired.
  7. Fold half the tortilla up over the beans and roll it up tightly.

Comfort Dinner

I always thought of this dish as a fussy, difficult to make dish. It was one of my friends, eventually, who persuaded me to give it a go, thanks to the effortless way he makes everything seem so do-able. The only real skill you need for this dish is patience.
 
Total time to cook: 50 minutes
Serves: 6
Category: Dinner, potatoes, side dish, beans
Ingredients:
  1. 1 package of pork ribs, boneless
  2. 1 jar of good Texas sweet barbecue sauce
  3. 4 large potatoes, peeled and cut into chunks
  4. 1 small container sour cream
  5. 1/2 cup beef broth
  6. large amount of cilantro
  7. 1 large can of kidney beans
  8. 1 package of gravy
Step Wise Instructions:
  1. Cut most of the fat off your pork ribs, then cut into large chunks and place in slow cooker.
  2. Place your barbecue sauce and broth in with pork and stir around.
  3. Cover and cook on high 6 hours or on low 8-9 hours.
  4. During last 30 minutes place in your beans, dry gravy and cilantro.
  5. Also start cooking your potatoes in large saucepan on top of stove.
  6. When done mash really good or mix in electric mixture with butter or olive oil and sour cream.
  7. To serve place potatoes on plate and cover them with your tender pork chops mixture and sweet sauce.
