Squash Corn Casserole

This recipe scored far above the ground in our Test Kitchens for its rich flavor and ultra creamy feel.

 
Total time to cook: 45 minutes
Serves: 5
Category: corn , fruit, casserole, zucchini sliced
Ingredients:
  1. 4 zucchini sliced
  2. 1 c Whole kernel corn
  3. 1/3 Onion, chopped
  4. 1 Jalapeno pepper, seeded and chopped
  5. Salt to taste
Step Wise Instructions:
  1. Mix above ingredients and cook (or steam) until tender.
  2. Drain and top with: 3/4 cup grated cheddar or Monterey Jack cheese.
  3. Bake about 10 minutes at 350 .

Manhattan Calm Chowder

Need a more sophisticated appetizer for your party? Manhattan Calm Chowder is elegant and delicious.
 
Total time to cook: 45 minutes
Serves: 5

Ingredients:
  1. 2 pieces lean bacon diced
  2. 1 large red bell pepper diced
  3. 1 large green pepper diced
  4. 1 celery stalk chopped
  5. 1 carrot peeled and chopped
  6. 1 small onion chopped
  7. 2 clove garlic finally chopped
  8. 2 cups bottled clam juice
  9. 1 cup Clamato Tomato Juice Cocktail
  10. 2 medium potatoes peeled and diced
  11. 1 large tomato chopped
  12. 1 teaspoon oregano rub in palm
  13. 1/2 teaspoon black pepper
  14. 2 cups fresh or canned clams chopped
Step Wise Instructions:
  1. In a heavy med pot
  2. Saute bacon, peppers, celery, carrot, onion and garlic over med heat until tender about 10 min.
  3. Do not brown bacon
  4. Add clam juice, Clamato, potatoes, tomato oregano and pepper.
  5. Simmer 35 minutes or until potatoes tender.
  6. Add Clams and cook for 5 min more
  7. Dish up and serve with lots of fresh crusty bread and butter or olive oil dipper.

Bacon Pizza

A great way to include Bacon in your meal plan, and a delicious meal for the pizza lover. As we like to say, good family food.

Total time to cook: 40 minutes
Serves: 5

Ingredients:
  1. 1 can (16 oz) chili beans, mild or hot
  2. 5 slices bacon, cooked & crumbled
  3. 1 small onion, sliced in rings
  4. 2 cups Mexican-style cheese blend, shredded
  5. Refrigerated or homemade pizza dough, for 12″ pizza
Step Wise Instructions:
  1. Place oven rack in lowest position; preheat oven to 425°.
  2. Grease a 12-inch pizza pan or 9×13-inch baking pan.
  3. Press pizza dough into greased pan.
  4. Bake for 5 minutes, or until crust just begins to brown. In a bowl combine beans (undrained) onion slices and bacon.
  5. Spread bean mixture over the pizza crust.
  6. Sprinkle cheese evenly over the bean mixture.
  7. Bake for 8 to 12 minutes, or until cheese is melted and bubbly.

Ingredients:Roast
  1. 1 c. milk
  2. 1 egg, slightly beaten
  3. 1 c. flour
  4. 1 c. cornmeal
  5. Salt and pepper
Step Wise Instructions:
  1. Mix egg and milk.
  2. Sift together flour, cornmeal, salt and pepper.
  3. Dip shrimp or other meat into milk and egg mixture.
  4. Coat with flour mixture.
  5. Fry in deep hot fat until brown.
  6. Drain on paper towels. Serve.

Soft Sugar Cookies

A classic cookie with a sweet topping.

Ingredients:Roast
  1. 1 cup sour cream
  2. 2 cups sugar
  3. 1 cup shortening
  4. 4 eggs
  5. 1 teaspoon vanilla
  6. 6 cups flour
  7. 3 teaspoons baking powder
  8. 1 teaspoon baking soda
  9. 1 teaspoon salt
Step Wise Instructions:
  1. Preheat oven to 350 degrees.
  2. Combine sour cream, sugar, shortening, eggs and vanilla. Mix well.
  3. Slowly add the dry ingredients until everything is completely mixed together.
  4. Let the dough chill for about 15 minutes.
  5. Form dough into small balls, or use fun cookie cutters.
  6. Bake until LIGHT golden brown - no more than 10 minutes.
  7. When you take them out of the oven they may seem underdone, but they are perfectly fine.
  8. Let them cool until soft and moist.

Roasted Almond Ice-cream

A simple crepes dish good for dessert. Light and elegant.

Total time to cook: 45 minutes
Serves: 4

Ingredients:
  1. 1 liter full cream milk
  2. 2-1/2 tsp. corn flour
  3. 1 tsp. gel a tine or 1/2 packet china grass chopped fine
  4. 3/4 cup sugar
  5. 1 cup fresh cream
  6. 1 tsp. almond or
  7. 1/2cup cold milk
  8. 1 cup almonds, sliced thinly
  9. 1 tbsp. pistachios, sliced thinly
  10. 1 tsp. cardamom powder
  11. 1 recipe basic ice cream
Step Wise Instructions:
  1. Bring milk to a boil. Boil for 15 minutes on low, stirring occasionally.
  2. Mix corn flour in 1/2 cup cold milk, keep aside.
  3. Add sugar to milk, stir. Add corn flour paste, stirring continuously, till boil resumes.
  4. Boil for a further 4-5 minutes, take off fire.
  5. Sprinkle gel a tine over 3 tbsp. water in a small pan, warm and dissolve over low flame till transparent. Or soak china grass in 1 cup water till spongy, then dissolve over flame till transparent.
  6. When boiled milk cools a little, add gel a tine solution and mix well.
  7. Cool to room temperature, freeze in covered tray, till set but not hard.
  8. Roast almond slivers in preheated oven on a baking sheet for 5 minutes or till light golden. Remove and cool, mix with pistachios.
  9. Break into pieces; beat with an egg beater till soft.
  10. Add cream, almonds, cardamom, and saffron and mix well.
  11. The texture should be light and creamy.
  12. Reset in the freezer till frozen.

Cream Cheese Ice Cream

Such a simple recipe to make. Cream cheese frosting goes great with rich, chocolate cupcakes

  1. 3 8-ounce pkg’s cream cheese
  2. 2 1/2 c Sugar
  3. 4 eggs
  4. 2 tbsp Lemon juice
  5. 2 tsp Vanilla
  6. c Light cream
Step Wise Instructions:
  1. In a large mixer bowl beat cream cheese and sugar with an electric mixer on med. speed till smooth.
  2. Beat in the eggs, lemon juice, and vanilla till combined.
  3. Stir in the light cream.
  4. Freeze in a 4 or 5 qt ice cream freezer according to the manufacturers directions.

Banana Nut Torte

So simple to make, this banana filling is something you can throw together in a jiffy for your favorite Indian recipes

Total time to cook: 1.5 hours

Ingredients:
  1. 9 large egg whites
  2. 3/8 tablespoon cream of tarter
  3. 1 1/2 cups granulated sugar
  4. 1 1/2 cups packed brown sugar
  5. 1 tablespoon vanilla extract
  6. 1 tablespoon almond extract
  7. 2 1/4 cups grahmn cracker crumbs
  8. 1 cup chopped pecans
  9. 4 bananas, peeled and sliced
  10. 1 pint frozen whipped topping
Step Wise Instructions:
  1. Preheat oven to 325°F(160°C).
  2. Beat egg whites and creme of tarter until peaks form.
  3. Combine sugars, gradually add to egg white mixture, with extracts, blend in for about 30 seconds.
  4. Mix the crumbs and pecan together.
  5. Fold in egg white mixture then pour in a well greased 13 x 9-inch pan.
  6. Bake for about 40 minutes or until wooden pick inserted in the center of the cake comes out clean.
  7. Cool and top with bananas and whipped topping.

Coffee Ice Cream

Treat your friends with this rich, creamy coffee ice cream.
Total time to cook: 1 hour
Serves: 6

Ingredients:
  1. 1 3/4 cups milk
  2. 1 3/4 cups cream
  3. 4 tablespoons cornstarch
  4. 2/3 cup sugar
  5. 2 teaspoons unsweetened cocoa powder
  6. 3 tablespoon instant-coffee granules or espresso granules
  7. 2 teaspoons vanilla
Step Wise Instruction:
  1. Special equipment: an ice-cream maker
  2. Stir together 1/2 cup milk and cornstarch.
  3. Whisk together sugar, cocoa, cream and remaining 1 1/4 cups milk in a small heavy saucepan and bring to a boil over moderate heat, stirring.
  4. Whisk in coffee granules.
  5. Stir cornstarch mixture again and whisk into coffee mixture.
  6. Return to a boil, whisking, then remove from heat.
  7. Add vanilla to saucepan, stirring.
  8. Set saucepan in a large bowl of ice water to cool, whisking frequently.
  9. Freeze coffee mixture in ice-cream maker. Transfer to an airtight container and store in freezer.

Mexican corn casserole

An international twist on a favorite! Mexican corn casserole is inexpensive to make. It’s even better the next day, which is perfect for this college student on a tight budget!
Total time to cook: 30 minutes
Serves: 4

Ingredients:
  1. 1 cn Corn with red and green
  2. Peppers drained
  3. 1 cn Corn, cream-style
  4. 2 tb Peanut oil
  5. 1 ts Sesame oil
  6. 1 lg Garlic clove crushed
  7. 1 ts Fresh ginger root grated
  8. 1 1/2 lb Vegetables sliced
  9. 1/2 c Light stock or hot water
  10. 1 tb Oyster sauce
  11. 2 ts Soy sauce, low sodium
  12. 1/2 ts Salt
  13. 1/2 ts Monosodium glutamate
  14. 2 ts Cornstarch
  15. 1 tb Cold water
Step Wise Instruction:
  1. Heat oils in wok with garlic and ginger, add vegetables and fry, stirring, for 2 minutes.
  2. Add hot water or stock and sauces, salt and Monosodium mixed together.
  3. Cover and simmer for 4 minutes.
  4. Push vegetables
  5. to side of wok, add cornstarch mixed with cold water, stir until thick.
  6. Toss vegetables in sauce and serve immediately with boiled rice.
