Tasty, light version of the ever popular Lemon salad recipe
Total time to cook:

Ingredients:
1 cup vegetable or olive oil
1/3 cup white wine vinegar
1 clove garlic minced
1 tbsp lemon peel grated
2 tbsp sugar
1 tbsp Dijon mustard
1/2 tbsp salt
6 cups long grain rice cooked
2 cups wild rice cooked
2 cups seeded cucumbers diced
2/3 cup green onions thinly sliced
1/4 cup fresh parsley minced
1/4 cup fresh basil or 1 Tbls dried minced
1/2 tbsp pepper
1/2 cup chopped pecans toasted
Step Wise Instructions:
In a jar with tight-fitting lid, combine the first 7 ingredients; shake well. In a large bowl, combine long grain and wide rice; add dressing and toss.
Cover and refrigerate overnight.
Add the cucumbers, green onions, parsley, basil and pepper; mix well. C
hill for 2 hours.
Fold in pecans just before serving.

Ingredients:
2 tbsp olive oil
1 tbsp garlic, chopped
2 onions, chopped
2 stalks celery, chopped
1 jalapeno pepper, minced
1 tsp chili powder
1/2 tsp cumin
1 can tomatoes, cut and drained, with juice reserved
1/2 cup corn
1 tbsp basil, sliced into thin ribbons
4 cups beef or vegetable stock
1 avocado, chopped
2 tsp lime juice
Garnish: nacho chips, sour cream, and basil shreds
Step Wise Instructions:
In a medium saucepan, saute garlic, onions, jalapeno pepper, and celery in the olive oil for about 5 minutes.
Add tomato pieces, chili powder, and cumin, and cook down over medium heat for about 10 minutes, stirring often.
Add corn, basil, reserved tomato juice, and stock, bring to a boil, then reduce heat and simmer 15 minutes.
When ready to serve, remove soup from heat and stir in the lime juice and avocado.
Break several nacho chips into each bowl, ladle in the soup, then top each with a spoonful of sour cream.
Toss on a few basil shreds and stick a nacho chip on top.
Serve immediately.

Ingredients:
1/2-1 cup onion, chopped.
2-5 cloves garlic, chopped.
1 1/2 cups mushrooms cut into halves or quarters.
2 sliced carrots
1 cup green beans
2 cups chopped squash
2 cups canned tomatoes
One can hominy
pinch salt
2 tsp each cumin and oregano
black pepper to taste.
Fresh cilantro to taste
Step Wise Instructions:
Brown the onions and garlic in a little oil.
Add the vegetables to the browning onions and garlic.
Add the tomatoes and cook until vegetables start to soften
Add the seasonings.
Add the hominy.

Ingredients:
5 cup Vegetable stock
Cup Murmured
1 Carrot
Salt 1 tsp
Some Mushrooms
1/2 tsp Ajinomoto
8-10 Spinach leaves
1 tbsp Soya sauce
100 gm Paneer
1/4 tsp each Sherry and Black Pepper
Step Wise Instructions:
Make vegetable stock as for Talumin Soup.
Put mushrooms, carrot and spinach. Add paneer.
Mix ajinomoto, salt and black pepper.
Add soya sauce and sherry.
While serving, add murmure.
Serve hot with chilly sauce.

Ingredients:
6 potatoes - sliced
1 large onion -sliced
2 carrots- sliced
1 green pepper — sliced
1 zucchini - sliced
1 cup corn, frozen or fresh
1 cup peas, frozen or freshOptional Vegetables:
mushrooms
broccoli
green beans
Sauce:
2 1/2 cups tomato sauce
1/4 cup tamari, low-sodium
1 tsp thyme- ground
1 tsp dry mustard
1 tsp basil
2 tsp chili powder
1/2 tsp cinnamon
1/8 tsp sage
2 Tbsp parsley flakes
Step Wise Instructions:
Layer vegetables in large casserole in order given.
Mix together ingredients for sauce and pour over vegetables.
Cook six hours at high or 12 at low.

This is a really easy recipe for a soothing tea with flavors of ginger, holy basil and anisseds.

Ingredients:
½” piece of Ginger
3 tsp. of Tea Leaves
½ tsp. of Aniseeds
1 tbsp. of Holy Basil
Sugar (to taste)
¾ cups of Milk
1 ½ cup of Water
Step Wise Instructions:
Take a sauce pan and put the water on medium heat
Add the crushed ginger, aniseeds and holy basil leaves.
Let the water to come to a boil.
Now add the tea leaves bring to a boil and then let it simmer for 5 minutes.
Strain the team and put it in a tea pot.
Enjoy it with sugar and milk.

Great snack for your halloween party. Simple homemade noodle jerky!

Ingredients:
4 ounces uncooked noodles
1 cup low fat cottage cheese
3/4 cup shredded low fat Cheddar cheese
1/3 cup chopped green onions with tops
3 tablespoons grated Parmesan cheese
1/2 teaspoon Worcestershire sauce
1/8 teaspoon pepper
1/2 cup low fat sour cream
2 egg whites
Step Wise Instructions:
Heat oven to 350 degrees.
Spray square baking dish, 8×8x2 inches, with nonstick cooking spray.
Cook noodles as directed on package; drain.
Mix noodles and remaining ingredients. Spread in dish.
Bake uncovered 30-35 minutes or until center is set and edges are golden brown.
Let stand 5 minutes.

A great snack recipe for your Halloween party. Works good year round, but is especially fun at Halloween.

Ingredients: Crust
1 pk chocolate cake mix
14 oz Sweetened condensed milk
6 oz. Heath Bits ‘O Brickle
4 Heath Candy bars
8 oz. Cool Whip
Step Wise Instructions:
Bake cake as directed on box.
As soon as cake comes out of the oven, punch holes in the top of the cake with a straw.
Spread condensed milk on top.
Sprinkle package of brickle chips on top of cake.
Cool cake.
Spread cool whip on top.
Mash frozen Heath Bars (use a hammer) and spread on top of cake.
Keep refrigerated.

Broiled pineapple is delightful the combination of pineapple & Lime .This delicious fruit recipe is easy to make. It can also be served as an accompaniment to a side dish.

Ingredients:
1 large pineapple
2 tsp canola oil, divided
2 tablespoons brown sugar
Lime wedges
Step Wise Instructions:
Peel pineapple.
With a sharp knife, cut it crosswise into 1-inch-thick slices.
Brush the slices lightly with 1 teaspoon oil and place in a single layer on a baking sheet.
Broil until lightly browned, about 7 minutes.
Turn slices over, brush with remaining teaspoon oil and broil for 5 to 7 minutes longer.
Immediately sprinkle pineapple with brown sugar.
Cut into chunks and serve with lime wedges.

This easy, low-fat recipe yields light and delicious Cherry squash.

Ingredients:
4 c cherries, pitted, sliced
1/2 c Water
1/3 c Granulated Sugar
2 tb Lime Juice, fresh
Step Wise Instructions:
In a small saucepan, combine sugar and water; bring to a boil and cook until sugar is dissolved, about 1 - 2 minutes. Let cool.
Puree the cherries in a food processor or blender until smooth; place in a bowl along with sugar syrup and lime juice.
Pour into an 8-inch square baking dish.
Freeze until nearly solid.
Scoop mixture into a food processor or blender and beat until mixture is smooth, but not melted.
Spoon into dishes and serve immediately.
