Acorn Squash Cake

This dessert is simple and healthy.
 
Total time to cook: 1 - 1.5 hours
Serves: 5

Ingredients:
  1. 1/4 cup butter softened
  2. ¾ cup light brown sugar firmly packed
  3. 1 large Eggs
  4. 1 cup cooked and mashed acorn squash
  5. ½ tsp vanilla extract
  6. 2 cup All-purpose flour
  7. 2 tsp Baking soda
  8. 1/2 tsp Salt
  9. 1 tsp. Ground cinnamon
  10. 1 cup Chopped pecans
  11. Streusel Topping
Step Wise Instructions:
  1. Beat butter and sugar at medium speed with and electric mixer until creamy.
  2. Add egg, beating well.
  3. Stir in squash and vanilla.
  4. Combine flour and next 3 ingredients; gradually add to squash mixture, beati ng at low speed after each additon.
  5. Stir in pecans.
  6. Pour batter into a grease d 9-inch square pan, and sprinkle with Streusel Topping.

Tomato-Feta Frittata

Good for side or main dish.
 
Total time to cook: 1- 1.5 hours

Ingredients:
  1. 7 eggs
  2. 1/2 cup water
  3. 1 cup cooked regular long-grain white rice
  4. 3/4 cup crumbled feta cheese
  5. 1/2 cup shredded Cheddar cheese
  6. 1/2 cup Picante Sauce
  7. 2 tbsp. chopped fresh cilantro
  8. 1/2 tsp. dried oregano leaves
  9. 3 Italian plum tomatoes
Step Wise Instructions:
  1. Preheat oven to 400°F.
  2. Heat greased oven-safe skillet in oven for about 5 min.
  3. Beat eggs and water.
  4. Add rice, feta cheese, Cheddar cheese, picante sauce, cilantro and oregano.
  5. Pour into skillet. Top with tomatoes.
  6. Bake for 40 min. or until knife inserted in center comes out clean.

Country Garden Lasagna

Absolutely wonderful lasangna recipe
Total time to cook: 1- 1.5 hours
Serves: 5

Ingredients:
  1. 8 oz. lasagna noodles
  2. 3 Tablespoons olive oil
  3. 1 cup chopped onion
  4. 1/4 cup finely chopped green bell pepper
  5. 1 teaspoon minced garlic
  6. 6 medium fresh tomatoes, peeled and chopped
  7. 1 teaspoon salt
  8. 1/4 cup chopped fresh parsley
  9. 2 Tablespoons chopped fresh basil
  10. 2 Tablespoons chopped fresh oregano
  11. 1 (8 oz.) can tomato sauce
  12. 4 cups water
  13. 2 medium eggplants, peeled and thinly sliced
  14. 1 egg, beaten
  15. 1/2 cup Ranch dressing
  16. 1 1/2 cups shredded mozzarella cheese
  17. 1 cup part-skim ricotta cheese
  18. 1/2 cup freshly grated parmesan cheese
  19. Garnish: 8 parsley sprigs
Step Wise Instructions:
  1. Heat oven to 350 degrees.
  2. Spray a 13×9x2 baking dish with non-stick cooking spray.
  3. Cook lasagna noodles as directed on package. Set aside.
  4. Heat oil in a large skillet over medium heat.
  5. Add onion, pepper, and garlic.
  6. Saute 6-8 minutes over low heat until onion is tender.
  7. Stir in next six ingredients. Bring to a boil over medium heat.
  8. Reduce heat to low and simmer for 20-25 minutes, stirring often.
  9. Remove from heat. Meanwhile, in a 3-quart pot, bring water to a boil over medium heat.
  10. Add eggplant. Boil for 4-5 minutes until tender. Remove from heat and drain.
  11. In a large bowl, stir together remaining ingredients except Parmesan cheese.
  12. To assemble, place half of eggplant in a single layer in prepared baking dish.
  13. Top with 1/3 of tomato mixture, half of cheese mixture, and half of lasagna noodles.
  14. Repeat layers.
  15. Spread remaining tomato mixture over top.
  16. Sprinkle with Parmesan cheese.
  17. Bake for 30-35 minutes until bubbly.
  18. To serve, cut into 6 squares.
  19. Garnish each serving with a parsley sprig.

Ingredients:
  1. 6 ea Eggs
  2. 1 c Flour
  3. 1/2 ts Salt
  4. 1 c Milk
  5. 2 tb Melted butter
  6. Powdered sugar
Step Wise Instructions:
  1. Preheat oven to 450.
  2. Butter 9×13″ pan and put into the freezer while you mix the batter.
  3. Beat eggs with a fork.
  4. Slowly add the flour and mix well.
  5. Add salt, milk and melted butter.
  6. Pour into cold pan and bake for 18 to 20 minutes; then lower temperature to 350 and cook for an additional 10 minutes.
  7. Sprinkle with powdered sugar and serve with butter and syrup..

This is one of my easiest omelet recipes!
 
Total time to cook: 50 minutes
Serves: 4

Ingredients:
  1. 6 lg Eggs
  2. 1/4 ts Black pepper
  3. 1/3 cup water
  4. 1/2 tsp. salt
  5. 1 sm Onion
  6. 1 md Sized green bell pepper
  7. 1 pk (4 oz) sliced ham
  8. 8 oz Mushrooms
  9. 2 lg Tomatoes
  10. 4 tbsp oil, divided
  11. Parsley sprigs for garnish
Step Wise Instructions:
  1. In a bowl, with a wire whisk or fork, beat eggs, black pepper, water and salt until blended.
  2. Dice onion, green pepper and ham.
  3. Cut each mushroom in half.
  4. Cut tomatoes into wedges.
  5. Put 1 Tbsp. oil in a 12″ skillet and over medium-high heat, cook onion, green pepper and salt until tender.
  6. Add ham and heat through.
  7. Remove to small bowl; keep warm.
  8. In same skillet, in 1 Tbsp. oil, cook mushrooms until golden in colour.
  9. Remove to another bowl; keep warm.
  10. In the same skillet over medium heat, heat 2 Tbsp. salad oil.
  11. Pour egg mixture into skillet; cook until set around edges.
  12. With metal spatula, gently lift edge as it sets, tilting to allow uncooked portion to run under the omelet.
  13. Shake skillet occasionally to keep omelet moving freely in the pan.
  14. When omelet is set but still moist, spoon ham mixture over half the omelet.
  15. Tilt skillet and, with spatula, fold omelet in half; slide onto heated platter.
  16. Top with mushrooms.
  17. Garnish platter with parsley sprigs and tomato wedges.

Caviar Puff Pastry Stars

The combination of pastry, egg and chives makes this the best seafood recipe in the world.
 
Total time to cook: 50 minutes
Serves: 4

Ingredients:
  1. 1/2 pound frozen puff pastry
  2. 1 large egg and 1 tsp water
  3. 1/3 cup sour cream
  4. 1 ounce black caviar
  5. 3 tbsp minced fresh chives
Step Wise Instructions:
  1. On a floured surface roll out the puff pastry 1/8 inch thick and with a 3-inch star-shaped cutter cut out 8 pastry stars.
  2. Transfer the stars to a lightly greased baking sheet, brush the tops with the egg wash, being careful not to let the wash drip down the sides
  3. Bake the stars in the middle of a preheated 400°F. oven 12 to 15 minutes, or until they are puffed and golden.
  4. Transfer the stars to a rack and let them cool completely.
  5. With a sharp small knife carefully split the stars in half horizontally to form a total of 16 stars
  6. Leaving the bottoms cut sides up and the tops cut sides down. Just before serving, spoon about 1 tsp of the sour cream onto each star
  7. Divide the caviar among the stars, and sprinkle the hors d’oeuvres with the chives.

Wonderfully quick and easy snack to make

 
Total time to cook: 50 minutes

Ingredients:
  1. 6 slices bacon
  2. 3-1/4 cup milk
  3. 1 cup ricotta cheese
  4. 1/2 cup feta cheese, crumbled
  5. 1 tsp salt
  6. 1/2 tsp cayenne pepper
  7. 5 eggs 1 cup chopped red onion
  8. 1-3/4 cup diced tomato
  9. 1-1/2 tsp dried rosemary
  10. 1 16 oz. loaf sourdough bread
  11. grated fresh parmesan
  12. paprika
Step Wise Instructions:
  1. Whisk eggs, milk, cheeses, salt & cayenne until well blended.
  2. Combine eggs, tomato, onion and rosemary.
  3. Arrange half of bread cubes in 9×13-inch dish coated with cooking spray.
  4. Spoon half of tomato mixture over bread & pour half of mil mixture over tomato mixture.
  5. Repeat procedure with remaining bread, tomato and milk mixtures.
  6. Sprinkle with paprika and grated parmesan.
  7. Cover and refrigerate 8 hrs. or overnight.
  8. Bake at 350 degrees for 45-60 minutes. Let it set 15 minutes before serving.

Ingredients:
  1. 1 cup fine, dry breadcrumbs, divided
  2. 1 cup ground cooked ham
  3. 2 eggs, beaten
  4. 1/2 cup shredded sharp cheddar cheese
  5. 1/4 cup grated onion
  6. 2 tablespoons brown sugar
  7. 1 tablespoon Dijon mustard
  8. Vegetable oil for frying
Mustard Sauce:
  1. 2 tablespoons brown sugar
  2. 2 tablespoons butter or margarine
  3. 2 tablespoons flour
  4. 1 cup half-and-half
  5. 1/4 cup Dijon mustard
  6. 1 tablespoon cider vinegar
  7. 1/4 teaspoon ground ginger
Step Wise Instructions:
  1. Combine 1/2 cup breadcrumbs, ground ham, eggs, shredded cheese, grated onion, brown sugar, and mustard in a large bowl; stir well.
  2. Shape ham mixture into 1″ balls.
  3. Roll balls in remaining 1/2 cup breadcrumbs, pressing firmly so that crumbs adhere.
  4. Cover and chill ham balls thoroughly.
  5. In large deep skillet, heat 2″ of oil; fry ham balls for 1 minute, turn and fry until golden brown.
  6. Drain on paper towels.
  7. Serve immediately with Sweet Mustard Sauce.
  8. Sweet Mustard Sauce:
Mustard Sauce:
  1. Combine brown sugar and butter in a heavy saucepan.
  2. Cook over low heat until sugar dissolves and butter melts.
  3. Add flour, stirring until smooth.
  4. Cook 1 minute, stirring constantly.
  5. Gradually add half-and-half; cook over medium heat, stirring constantly, until mixture is thickened nd bubbly.
  6. Stir in mustard, vinegar and ginger; stir well.
  7. Remove from heat.
  8. Cool slightly.

Simple homemade onion jerky!
 
Total time to cook: 50 minutes
Serves: 4

Ingredients:
  1. 1 large Vidalia or other sweet onion
  2. 2 tbsp flour
  3. 1 large egg, beaten lightly
  4. 1 cup crushed saltines
  5. vegetable oil
  6. 1/2 tsp salt, optional
  7. honey mustard or ranch dressing for dipping
Step Wise Instructions:
  1. Peel onion, leaving root intact.
  2. Cut onion vertically into quarters, cutting to within half inch of root end.
  3. Cut each quarter vertically into thirds.
  4. Place onion in boiling water 1 minute; remove and place in ice water 5 minutes. Loosen “petals” if necessary.
  5. Drain onion cut side down.
  6. Place flour in a heavy duty ziplock plastic bag; add onion; shake to coat. Dip onion in egg.
  7. Place crushed crackers in plastic bag; add onion, tossing to coat.
  8. Chill onion 1 hour.
  9. Pour oil to depth of 3 inches to electric fryer or heavy saucepan, and heat to 375F.
  10. Fry onion 5 to 7 minutes or until golden brown; drain on paper towels.
  11. Sprinkle with salt, if desired.
  12. Serve with honey mustard or ranch dressing.
