A slightly different pasta salad recipe that is a wonderful picnic addition
|

Ingredients:
- 1 tbsp. fresh calamari (squid)
- 1 small jar marinated artichoke hearts, drained and rinsed off
- ½ can progresso garbanzo beans
- 1/3 cup pitted black olives, halved
- 1 large tomato, chopped
- Lemon juice
- 3 tbsp extra-virgin olive oil
- 1 tbsp fresh basil, chopped
- Black pepper to taste
- Crushed red pepper to taste
- 1 lb long, thin pasta

Step Wise Instructions:
- Scald milk and put in bowl and add margarine and salt.
- Pull head out of body sac; most of the innards should follow. Remove cartilaginous “pen” also.
- Slice the tentacles off of the head just below the eyes; remove the beak if present.
- Clean out body sac under running water with your finger.
- Remove the purple skin.
- Slice the body into rings, and put them and the tentacles into a strainer and rinse them off. Easy!
- Bring a small pot of water to boil.
- Boil calamari for 3-4 minutes, just until they turn opaque and the tentacles curl up.
- Drain.
- In a bowl, combine all ingredients (except pasta of course) and mix.
- Boil your pasta and drain it, and mix with the other stuff.
- Serve with fresh grated Parmesan cheese and fresh Italian bread.

Ingredients:
- 2 pounds white yams
- 1/2 an onion
- 3 spring onions finely chopped
- 2 garlic cloves
- 2 tsp lemon thyme
- 1 tbsp coriander
- 1 large green chili
- 1/2 tsp cumin
- 1/2 tsp ginger
- 1/2 tsp paprika
- 1 egg, beaten
- pinch salt
- 4 ounces plain flour
- oil for deep frying

Step Wise Instructions:
- Peel the yams and cut into even pieces.
- Bring a saucepan of water to boil and place the cut up yam pieces in it.
- Let cook for 20-25 minutes until it is tender.
- Drain and mash in a large bowl with a fork so that you have a fairly smooth mash.
- Add the remaining ingredients except the flour and stir it together until the ingredients are well combined.
- Place the flour on a large plate.
- Take a tablespoon of the mixture and roll it in floured hands into a small balls, then roll it in the flour so that it is coated.
- Repeat this with the remaining mixture.
- To Cook: Heat oil in a deep fryer, wok or large saucepan to 350F.
- Cook for around 3 minutes until they rise to the top and are golden brown and crisp.
- Drain the balls on paper towels, then place in a warm oven while you cook the rest.
- Serve with sauce of your choice.

Great tuna recipe for those tired of the plain old tuna, mayo, pickle juice recipe.

Ingredients:
- 2 cans tuna packed in water, drained
- 3 tbsp mayonnaise, or to taste
- 1 tsp celery salt
- 1 tsp onion powder
- 1 tsp garlic powder
- 1/3 cup chopped celery
- 1/3 cup chopped onion
- 1/4 cup chopped yellow bell pepper
- 2 tbsp butter
- 3 English muffins split
- 6 slices American cheese
- 6 slices fresh tomato

Step Wise Instructions:
- Preheat oven to 200 degrees F (95 degrees C).
- Flake the tuna into a medium bowl. Mix in the mayonnaise, celery salt, onion powder, and garlic powder.
- Stir in celery, onion, and yellow bell pepper.
- Butter English muffin halves, place them on a baking sheet, and bake 3 minutes in the preheated oven, until lightly browned.
- Remove from oven. Spoon tuna mixture onto each muffin half, and top each with a slice of cheese.
- Return to the oven, and continue baking until the cheese has melted, about 8 minutes. Remove, and top each with a tomato slice to serve.

Ingredients:
- 1 tin of hotdogs
- 4 or 5 medium to large potatoes
- 2 medium tins of baked beans
- cheese
|

Step Wise Instructions:
- Peel, chop potatoes, put in pan with water, bring to boil them simmer till potatoes are soft.
- When potatoes are nearly cooked put beans on a gentle simmer.
- Chop hotdogs into bite sized chunks, no need to cook these first.
- Drain and mash potatoes.
- Put beans and chopped hotdogs into suitable sized casserole dish.
- Spread mashed potatoes onto beans and sausages.
- Sprinkle grated cheese on top.
- Put under hot grill till cheese bubbles and browns.

Ingredients:
- 1/2 cup butter
- 1 lb. pkg. egg noodles
- 4 large Macintosh apples
- 4 eggs - beaten
- 1 cup packed brown sugar
- 1 cup golden raisins
- 1 Tbls. lemon juice
- 2 tsp. ground cinnamon
- 1 dash grated nutmeg

Step Wise Instructions:
- Pour melted butter into a 9″ X 13″ X 2″ baking dish and coat bottom of dish evenly.
- Combine remaining ingredients and pour into baking dish.
- Bake in a 375 degree oven for 45 minutes

Ingredients:
- 3 tsp grated orange peel
- 3 cinnamon sticks, crushed
- 3 tsp whole cloves
- 1 whole nutmeg, crushed
- 3 c Apple juice
- 6 Cinnamon sticks

Step Wise Instructions:
- Combine orange peel, 3 crushed cinnamon sticks, cloves and nutmeg in a small bowl.
- Tie dry ingredients in a double thickness of cheesecloth to make a sachet, or secure in a large tea-straining ball.
- In a medium pan, simmer apple juice with spices for at least 20 minutes.
- Ladle into mugs and garnish each with a cinnamon stick.

Ingredients:
- ½” piece of Ginger
- 3 tsp. of Tea Leaves
- ½ tsp. of Aniseeds
- 1 tbsp. of Holy Basil
- Sugar (to taste)
- ¾ cups of Milk
- 1 ½ cup of Water

Step Wise Instructions:
- Take a sauce pan and put the water on medium heat
- Add the crushed ginger, aniseeds and holy basil leaves.
- Let the water to come to a boil.
- Now add the tea leaves bring to a boil and then let it simmer for 5 minutes.
- Strain the team and put it in a tea pot.
- Enjoy it with sugar and milk.

Ingredients:
- 1 c Butter
- 1 c Brown sugar
- 1/2 c Sifted fruit sugar
- 1 t Ground nutmeg
- 1 t Ground cinnamon
- 2 c Vanilla ice cream, softened
- Rum
- Boiling water
|
|
Step Wise Instructions:
- In a small mixing bowl, beat together butter, both sugars and spices until well combined. Beat in the ice cream.
- Turn into a 4 cup freezer container.
- Seal and freeze.
- To serve, spoon about 1/3 cup mix into a mug, add one jigger of rum and 1/2 cup boiling water.
- Stir well.

- 4 ounces uncooked noodles
- 1 cup low fat cottage cheese
- 3/4 cup shredded low fat Cheddar cheese
- 1/3 cup chopped green onions with tops
- 3 tablespoons grated Parmesan cheese
- 1/2 teaspoon Worcestershire sauce
- 1/8 teaspoon pepper
- 1/2 cup low fat sour cream
- 2 egg whites

Step Wise Instructions:
- Heat oven to 350 degrees.
- Spray square baking dish, 8×8x2 inches, with nonstick cooking spray.
- Cook noodles as directed on package; drain.
- Mix noodles and remaining ingredients. Spread in dish.
- Bake uncovered 30-35 minutes or until center is set and edges are golden brown.
- Let stand 5 minutes.

This is a recipe for apple bread dipped in a mixture of cinnamon and brown sugar, and then in chopped nuts.

Ingredients:
- 1 cup sugar
- 1 cup applesauce
- 1/3 cup vegetable oil
- 2 eggs
- 3 Tbs milk
- 2 cup flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1 cup chopped nuts

Step Wise Instructions:
- Combine first 5 ingredients in mixing bowl and beat with eletric mixer for 1 minute.
- Combine remaining ingredients except nuts and add to applesauce mixture beating until smooth.
- Stir in nuts.
- Spoon into greased loaf pan and bake at 350 degrees 40-45 min allow to cool in pan on rack for 10-15 minutes
- Remove from pan and continue to cool on rack.
