Tofu Cacciatore

Easy and tasty
 
Total time to cook: 40 minutes
Serves: 5
Category: Dinner, mushrooms recipes
Ingredients:
  1. lb. extra firm tofu cut into 1/2-inch cubes
  2. 1 cup button mushrooms
  3. 1 stalk celery
  4. 1 medium carrot
  5. 1 medium onion
  6. 1 sweet pepper
  7. 1/2 teaspoon minced garlic
  8. 1 tablespoon olive oil or canola oil
  9. 28-ounce can organic chunky tomato sauce
  10. 1/3 cup dry white wine or sherry
  11. 2 teaspoons dried oregano
  12. 2 teaspoons unbleached sugar
  13. 1/8 teaspoon freshly-ground pepper
  14. 1/2 teaspoon salt
Step Wise Instructions:
  1. In a large skillet, stir fry mushrooms, celery, carrot, onion, pepper and garlic in hot oil until tender.
  2. Add tomato sauce, tofu, wine, oregano, salt, pepper, and sugar.
  3. Bring to boil; reduce heat.
  4. Cover and simmer for 20 minutes.
  5. Serve over rice or pasta

Fruit Pizza

My kids always loved fruit when they were babies, and I loved making my own pizza recipe

 
Total time to cook: 50 minutes
Serves: 8

Ingredients:
  1. 3/4 cups butter
  2. 1/2 cup confectioners’ sugar
  3. 1 1/2 cups all purpose flour
  4. 8 ounces cream cheese, softened
  5. 1/2 cup sugar
  6. 2 cups fresh fruit (peaches, kiwi, strawberries, blueberries, bananas, etc.)
  7. 1 cup apple juice
  8. 2 tbs. cornstarch
  9. 1 tbs. lemon juice
  10. 1/2 cup sugar
Step Wise Instructions:Crust
  1. Mix together by hand, butter, confectioners sugar and flour until crumb-like.
  2. Do not melt butter.
  3. Put into 15″ pizza pan and bake at 350F for 13-15 minutes until golden brown.
  4. Do no over bake.
Filling and Glaze :
  1. With hand mixer, mix cream cheese, sugar and vanilla until smooth.
  2. Spread over cooled crust.
  3. Place fruit on top, so design will remain when cut into 12 wedges.
  4. Mix apple juice, cornstarch, lemon juice and sugar together in saucepan.
  5. Cook over medium heat until clear and thick, stirring constantly.
  6. Cool. Spread on top of pizza after slicing.

Apple Jelly Delight

Great recipe. This recipe makes a great summer picnic delight.

 
Total time to cook: 30 minutes
Serves: 6

Ingredients:
  1. 2 firm apples
  2. 8 glaced cherries
  3. 1 packet jelly of desired flavor
  4. 8 flutted or champagne glasses
  5. 2-3 pinches clove-cinnamon powder
  6. 1/2 cup sugar
  7. 1 1/2 cup water
  8. 2 tbsp cornflour
  9. 8-10 scoops vanilla ice cream
  10. 1 drop yellow colour
Step Wise Instructions:
  1. Set jelly as per instructions on packet.
  2. Peel and cut apple in quarters.
  3. Put sugar and apple quarters in a heavy saucepan.
  4. Heat on high.
  5. Sprinkle some water. When all sugar has dissolved and the apples are slightly soft, take off gas.
  6. Remove the apples, drain on a colander.
  7. To the remaining syrup, add water, cornflour, spices (clove and cinnamon powder) and 1 drop yellow colour. Boil, stirring continuously till thick and transparent.
  8. Cut the jelly into cubes.
  9. To serve spoon jelly into glasses.
  10. Put a scoop of ice cream on the jelly.
  11. Place an apple quarter on top and pour some warm sauce.
  12. Top with a cherry.

Carrot Pineapple Salad

This is a great slaw recipe for diabetics as well as for those on low carb diets

 
Total time to cook: 30 minutes
Serves: 6

Ingredients:
  1. 3 Carrots shredded
  2. 1 granny smith apple chopped
  3. 1/2 cup chopped pineapple
  4. 1/4 cup shredded cheddar cheese
  5. 1 teaspoon lemon juice
  6. 1/3 cup salad dressing
  7. 1/4 cup slivered almonds
Step Wise Instructions:
  1. In mixing bowl, combine carrots, apple, pineapple and cheese.
  2. Sprinkle with lemon juice.
  3. Add salad dressing.
  4. Stir to coat.
  5. Cover and chill until ready to eat.
  6. Add milk if dressing becomes too thick.
  7. Before serving, sprinkle on toasted almonds.
  8. Approximately 5 minutes.

Apple Juice Vinaigrette This is a delicious, fruity iced juice with flavors of apple and lemon.

Ingredients:
  1. 4 tbsp olive oil
  2. 2 tbsp cider vinegar
  3. 1/2 cup apple juice
  4. 1/4 tsp salt
  5. 1/2 tsp minced garlic
Step Wise Instructions:
  1. Put all ingredients in a jar with a tight fitting lid and shake well.
  2. Use on salads or as a marinade.

Blackberry Tart

Great recipe that I got at a friend’s cookout. Wonderful and easy to make!
Total time to cook: 2 hours
Serves: 4

Ingredients:
  1. 2 1/2 cups walnuts
  2. 1 1/2 cups dates
  3. 5 cups fresh or frozen blackberries
  4. 3 TBS honey
  5. 1 1/2 TBS arrowroot
  6. 2 TBS water, or juice from frozen berries
Step Wise Instructions:
  1. Combine walnuts and pitted dates in a food processor.
  2. Process until well mixed and ground, but not smooth. About 40 seconds. It should be a coarse texture when done.
  3. Press into a 9 inch tart pan. Set in refrigerator while making the filling.
  4. If you are using frozen blackberries make sure they are completely thawed. If not, they will dilute the filling as they thaw and make it runny.
  5. Place 2 cups of the berries along with the arrowroot and water, or juice in a blender. Blend into a puree.
  6. Place in a small saucepan along with honey and cook puree over medium heat stirring constantly for about 3-4 minutes.
  7. It should lose its cloudiness and thicken. When it thickens and the cloudiness is gone remove from heat.
  8. Mix with rest of the blackberries and fill tart shell. Refrigerate for sometimes.
  9. Make sure it is covered so it doesn’t pick up moisture from the refrigerator.

This orange-flavored drink is delicious…!

Ingredients:
  1. 1 6 ounce can orange juice
  2. 1 cup cranberry juice
  3. 4 tablespoons sugar
  4. 16 ounces club soda
  5. mint for garnish
Step Wise Instructions:
  1. Combine orange juice concentrate, cranberry juice, and sugar.
  2. Chill. Just before serving.
  3. Stir in club soda.
  4. Pour over crushed ice in goblets.

My wife makes fresh Jellied fruit soup every year. Makes a great take along for holiday parties
 
Total time to cook: 30 minutes

Ingredients:
  1. 1 c Orange juice
  2. 1 c Pineapple juice
  3. 1 pk Sweetened lemon flavored -gelatin
Step Wise Instructions:
  1. Heat fruit juices to boiling.
  2. Add gelatin. Stir until dissolved.
  3. Pour into a shallow oblong mold.
  4. Chill until firm. Cut in small cubes.
  5. Serve in bouillon cups with crisp crackers.

Mango Kulfi

A quick kulfi made with mango. Can be made year round with the frozen fruits.
 
Total time to cook: 1 hours
Serves: 6

Ingredients:
  1. 1 can (400g) sweetened condensed milk
  2. 1/2 cup mango pulp
  3. 1/2 cup cream
  4. 12-15 almonds-blanched and shredded
  5. 8 kulfi moulds
  6. Vark leaves-optional
Step Wise Instructions:
  1. Mix together the condensed milk, cream and mango pulp. Beat to blend well.
  2. Add the nuts, saving a few for garnishing. Mix well and pour into moulds.
  3. Freeze at the lowest possible temperature.
  4. To serve take the mould out of the freezer and prise the kulfi out with the help of a knife, into an individual serving bowl.

Blueberry Orange Ice Cream

Simple, quick and tasty — who can resist? Hand these out for dessert at a cookout .
 
Total time to cook: 1 hours
Serves: 7

Ingredients:
  1. 1/3 cup granulated sugar
  2. 3/4 cup low fat evaporated milk
  3. Egg beaten
  4. 1 tbsp light corn syrup
  5. Cup fresh blueberries
  6. 1/2 cup orange juice
  7. whipping cream
Step Wise Instructions:
  1. In a medium saucepan, combine the sugar and cornstarch.
  2. Stir in the evaporated milk, beaten egg and corn syrup.
  3. Cook and stir over low heat until the mixture coats a spoon and is thickened. Cool.
  4. In a blender or food processor fitted with a metal blade, puree the blueberries with the orange juice.
  5. Combine the cooked mixture, pureed berries and half and half.
  6. Pour into an ice cream canister.
  7. Freeze in an ice cream maker according to the manufacturer’s directions.
