Breakfast Fruit Parfaits

A wonderful fruity recipe for the entire family,simple and healthy rich fruit recipe.
 
Total time to cook: 20 minutes
Serves: 6
Category: Dessert, snacks, coconut recipe
Ingredients:
  1. 1 cup blueberries
  2. 1 cup strawberries
  3. 1 cup mango, peeled
  4. 1/2 cup kiwi fruit
  5. 1/4 cup apple juice
  6. 5 large bananas
  7. 2 t. lemon juice
  8. 1 cup shredded coconut
  9. 1 Quart Almond-Flax Granola
Step Wise Instructions:
  1. In a medium bowl, place the blueberries, blackberries, strawberries, mango, kiwi, and apple juice, toss gently to combine, and set aside.
  2. In a food processor or blender, place the bananas and lemon juice, and process for 1 minute or until smooth.
  3. Scrape down the sides of the container.
  4. Add the shredded coconut and process the mixture an additional 2-3 minutes or until extremely light and creamy.
  5. Transfer the mixture to a glass bowl.
  6. To assemble the parfaits: in the bottom of 4 large glasses or dessert dishes place 1/2 cup of the mixed fruit mixture, then 1/2 cup Almond-Flax Granola, followed by 1/2 cup of the banana-coconut cream mixture.
  7. Repeat the layers ending with the banana-coconut cream mixture.
  8. Serve immediately.

Peach Ice Cream

This is our favorite recipe for fixing up fresh picked peaches. Peachy Keen ice cream. Very rich and very good!
 
Total time to cook: 1 hours
Serves: 7

Ingredients:
  1. cup of peach pulp
  2. Juice of½ lemon
  3. cup of granulated sugar
  4. 1½ cups of thin cream
Step Wise Instructions:
  1. Pare and stone choice, ripe peaches and press the pulp through a “ricer;” add the sugar and lemon juice and turn into the can of a freezer, packed in ice and salt; add the cream and freeze as usual.

  4. 1/2 an orange, peeled, seeded and sliced
  5. 2 peaches, pared and sliced
  6. Sugar to sweeten
  7. Mix the prepared fruit with the sugar; put into chilled cups and dispose peach ice cream above. part rock salt, and let stand three hours.

Cheese Balled Olives

An interesting twist on a breakfast favorite and very easy to make!
Total time to cook: 30 minutes
 
Serves: 7

Ingredients:
  1. 4 oz. Cheddar or American Cheese
  2. 1 tsp. Milk
  3. 8 oz. package Cream Cheese, softened
  4. 1 Tbs. Worcestershire Sauce
  5. 1/2 tsp. Garlic Powder
  6. 1 Tbs. dried Onions
  7. 1 Tbs. dried Chives
  8. Pinch dried Dilled
  9. 1 can Green or Black Olives
  10. Toothpicks
Step Wise Instructions:
  1. Grate or shred the cheddar or American cheese and let it sit at room temperature while you prepare the rest of the ingredients.
  2. In a small mixing bowl, blend together the milk, cream cheese, and Worcestershire sauce until thoroughly combined.
  3. Add the garlic powder, dried onions, chives, and dillweed, and blend again.
  4. Add the grated or shredded cheese to the creamed mixture and blend.
  5. Refrigerate until the cheese looks like it has “melted” in with the creamed cheese, then mix thoroughly again.
  6. To mold, surround each olive with about one and one-half teaspoonful of the cheese mixture, and stick each with a toothpick for easy serving.

Banana Sour Cream Waffles

I found this recipe and it comes highly recommended. It was very nice but I think I’d change the icing to a cream cheese icing.
 
Total time to cook: 40 minutes

Ingredients:
  1. 1 cup all-purpose flour
  2. 1 1/2 teaspoons granulated sugar
  3. 1 tsp baking powder
  4. 1/4 tsp baking soda
  5. 1/4 tsp salt
  6. 1 egg, separated
  7. 1 cup sour cream
  8. 1/4 cup milk
  9. 1/4 cup butter, melted
  10. 1 banana, mashed
Step Wise Instructions:
  1. Heat waffle iron.
  2. Stir together flour, sugar, baking powder, baking soda and salt in mixing bowl.
  3. Set aside.
  4. In separate bowl whisk together egg yolk, sour cream, milk, butter and banana.
  5. Add liquid mixture to dry ingredients, stirring just until blended.
  6. Fold in beaten egg white.
  7. Pour batter from cup or ladle onto center of hot waffle iron.
  8. Bake about 5 minutes or until steaming stops.
  9. Remove waffle carefully.

Rock shrimp is luscious, forgiving, and so easy to cook with. Peppers and corn are the essence of summer eating, and when you combine them with rock shrimp and fettuccine you end up with the perfect, hassle-free summer dinner.

  1. 2 lb Rock shrimp
  2. 1 c Celery, diced
  3. 1 c Chopped onion
  4. 1 c Chopped carrots
  5. 1/4 lb Butter or margarine
  6. 1/4 ts Black pepper (optional)
  7. 1 t Curry powder
  8. 1 1/2 ts Chili powder
  9. 1/2 ts Thyme
  10. 1 t Chopped garlic
  11. 1/2 c Flour
  12. 1 Tomato, diced medium
  13. 1 Green pepper, diced medium
  14. 2 Tomatos, diced medium
  15. Chopped parsley for garnish
Step Wise Instructions:
  1. Here’s a very autumnal soup to get you in the Fall spirit.
  2. Served it with mugs of mulled cider and a hearty Italian loaf.
  3. Put oil (or substitute) in a hot pan and then add all ingredients except stock.
  4. Cover and cook for 10 minutes.
  5. Add stock and simmer 45 minutes.

Coke Salad

Quick, easy, tasty, wonderful salad recipe. The better the cheese, the better the salad!

Ingredients:
  1. 8 ounce can of crushed pineapple
  2. 15 ounce can of pitted dark sweet cherries
  3. 2 large packages of Cherry Jello
  4. 16 ounces of Coca Cola (2 cups)
  5. 1 cup of chopped pecans
  6. 8 ounce package of cream cheese
Step Wise Instructions:
  1. Drain and save juices from pineapple and cherries.
  2. Heat juice and add Jell
  3. Stir until Jell is dissolved. Set aside to cool.
  4. When cool, add Coca Cola, the canned fruit, and pecans.
  5. Cut cream cheese into small pieces and add to mixture.
  6. Pour into 9×13 dishes.
  7. Place in refrigerator until set.
  8. Can be served on lettuce leaf.

  1. 1 box white cake mix
  2. 1 stick of butter
  3. 1/2 cup chopped walnuts
  4. 1 can cherry pie filling
  5. 2 tablespoon lemon juice

Step Wise Instructions:
  1. Mix cherries, lemon juice and almond flavoring, pour into a 9″ pan.
  2. Melt butter, mix with dry cake mix and walnuts.
  3. Sprinkle over cherries, bake at 350 for about 30 minutes until slightly brown on top.

  1. 1/2 cup vegetable oil
  2. 3 tbsp lemon juice, divided
  3. 1 tsp sugar
  4. 1/4 tsp salt
  5. 1 cup dried cranberries
  6. 3 large red apples, cut into 1/2-inch cubes
  7. 2 cups fresh broccoli florets
  8. 1/2 cup chopped walnuts
Step Wise Instructions:
  1. In a bowl, whisk the oil, 2 tablespoons lemon juice, sugar and salt.
  2. Add cranberries; let stand for 10 minutes.
  3. In a large bowl, toss apples with remaining lemon juice.
  4. Add the broccoli, walnuts and cranberry mixture; toss to coat.
  5. Cover and refrigerate for 2 hours or until chilled.
  6. Toss before serving.

This Creamy Cherry Smoothie is a nice, refreshing drink to serve during the year round.

  1. 2 cups frozen sweet or tart cherries
  2. 1 ripe banana, peeled
  3. 1 cup cherry juice blend, or other juice
  4. 4 maraschino cherries, for garnish
Step Wise Instructions:
  1. Put frozen cherries, banana and cherry juice blend in container of electric blender or food processor.
  2. Cover and process until smooth.
  3. Pour into individual serving glasses.
  4. Garnish with maraschino cherries.
  5. Serve immediately.
