Butter Bean Salad

Yes, as the recipe name says, this is another bean salad recipe. Bean salads are a staple on our picnic table during summer outings, and this one is nice
 
Total time to cook: 2 - 2.5 hours
Serves: 6

Ingredients:
  1. 3 Tbsp. apple cider vinegar
  2. 5 Tbsp. olive oil
  3. 1/4 tsp. pepper
  4. 1 Tbsp. dried parsley
  5. 2 (15 oz.) cans butter beans, rinsed and drained
  6. 11 oz. can shoe peg corn, drained
  7. 14.5 oz. can zesty chili diced tomatoes, undrained
  8. 1 small red onion, chopped
Step Wise Instructions:
  1. In large bowl, combine vinegar, olive oil, salt, pepper, and parsley and mix well with wire whisk.
  2. Add remaining ingredients and toss to coat.
  3. Cover and chill 2 hours, or serve immediately.

Stuffed Fresh Figs

Quite flavorful.
 
Total time to cook: 50 minutes
Serves: 4

Ingredients:
  1. 1 pound swordfish, cut into 3/8-inch-thick slices
  2. Fresh lemon juice
  3. Olive oil
  4. Chopped fresh oregano
  5. Salt and pepper
Step Wise Instructions:
  1. On plate, with fork, mash the ripest fig with honey; set aside.
  2. With sharp knife, trim stems from remaining figs, then cut a deep X in the top of each, making sure not to cut all the way through to the bottom.
  3. With fingertips, gently spread each fig apart to make “petals.”
  4. In small bowl, combine ricotta and almonds.
  5. With back of spoon, press mashed fig mixture through sieve into 1 cup measure.
  6. To serve, spoon ricotta mixture into figs.
  7. Arrange figs on platter.
  8. Drizzle with fig honey.

Nutty Pistachio Ice Cream

This is a very easy and good recipe for evening ………..!
 
Total time to cook: 20 minutes
Serves: 4

Ingredients:
  1. 1 cup half-and-half
  2. 3/4 cup sugar
  3. 1/8 teaspoon salt
  4. 2 egg yolks, beaten
  5. 1 tablespoon vanilla
  6. 2 cups heavy cream
  7. 1 cup blanched, natural California pistachios, chopped
  8. 1 tablespoon finely grated orange peel
Step Wise Instructions:
  1. Heat half-and-half in saucepan; stir in sugar and salt.
  2. Pour a small amount of hot half-and-half into egg yolks, stirring constantly.
  3. Return yolk mixture to half-and-half; cook and stir over medium heat about 5 to 10 minutes or until thickened and creamy.
  4. Do not boil.
  5. Cool. Stir in vanilla and heavy cream.
  6. Chill. Pour into freezer container; follow manufacturer’s directions for freezing.
  7. Add pistachios and orange peel when almost frozen; freeze until firm.
  8. Allow ice cream to stand at least 2 hours in refrigerator-freezer to mellow flavors.

This is one of my easiest omelet recipes!
 
Total time to cook: 50 minutes
Serves: 4

Ingredients:
  1. 6 lg Eggs
  2. 1/4 ts Black pepper
  3. 1/3 cup water
  4. 1/2 tsp. salt
  5. 1 sm Onion
  6. 1 md Sized green bell pepper
  7. 1 pk (4 oz) sliced ham
  8. 8 oz Mushrooms
  9. 2 lg Tomatoes
  10. 4 tbsp oil, divided
  11. Parsley sprigs for garnish
Step Wise Instructions:
  1. In a bowl, with a wire whisk or fork, beat eggs, black pepper, water and salt until blended.
  2. Dice onion, green pepper and ham.
  3. Cut each mushroom in half.
  4. Cut tomatoes into wedges.
  5. Put 1 Tbsp. oil in a 12″ skillet and over medium-high heat, cook onion, green pepper and salt until tender.
  6. Add ham and heat through.
  7. Remove to small bowl; keep warm.
  8. In same skillet, in 1 Tbsp. oil, cook mushrooms until golden in colour.
  9. Remove to another bowl; keep warm.
  10. In the same skillet over medium heat, heat 2 Tbsp. salad oil.
  11. Pour egg mixture into skillet; cook until set around edges.
  12. With metal spatula, gently lift edge as it sets, tilting to allow uncooked portion to run under the omelet.
  13. Shake skillet occasionally to keep omelet moving freely in the pan.
  14. When omelet is set but still moist, spoon ham mixture over half the omelet.
  15. Tilt skillet and, with spatula, fold omelet in half; slide onto heated platter.
  16. Top with mushrooms.
  17. Garnish platter with parsley sprigs and tomato wedges.

Caviar Puff Pastry Stars

The combination of pastry, egg and chives makes this the best seafood recipe in the world.
 
Total time to cook: 50 minutes
Serves: 4

Ingredients:
  1. 1/2 pound frozen puff pastry
  2. 1 large egg and 1 tsp water
  3. 1/3 cup sour cream
  4. 1 ounce black caviar
  5. 3 tbsp minced fresh chives
Step Wise Instructions:
  1. On a floured surface roll out the puff pastry 1/8 inch thick and with a 3-inch star-shaped cutter cut out 8 pastry stars.
  2. Transfer the stars to a lightly greased baking sheet, brush the tops with the egg wash, being careful not to let the wash drip down the sides
  3. Bake the stars in the middle of a preheated 400°F. oven 12 to 15 minutes, or until they are puffed and golden.
  4. Transfer the stars to a rack and let them cool completely.
  5. With a sharp small knife carefully split the stars in half horizontally to form a total of 16 stars
  6. Leaving the bottoms cut sides up and the tops cut sides down. Just before serving, spoon about 1 tsp of the sour cream onto each star
  7. Divide the caviar among the stars, and sprinkle the hors d’oeuvres with the chives.

Wonderfully quick and easy snack to make

 
Total time to cook: 50 minutes
Serves: 4

Ingredients:
  1. 6 slices bacon
  2. 3-1/4 cup milk
  3. 1 cup ricotta cheese
  4. 1/2 cup feta cheese, crumbled
  5. 1 tsp salt
  6. 1/2 tsp cayenne pepper
  7. 5 eggs 1 cup chopped red onion
  8. 1-3/4 cup diced tomato
  9. 1-1/2 tsp dried rosemary
  10. 1 16 oz. loaf sourdough bread
  11. grated fresh parmesan
  12. paprika
Step Wise Instructions:
  1. Whisk eggs, milk, cheeses, salt & cayenne until well blended.
  2. Combine eggs, tomato, onion and rosemary.
  3. Arrange half of bread cubes in 9×13-inch dish coated with cooking spray.
  4. Spoon half of tomato mixture over bread & pour half of mil mixture over tomato mixture.
  5. Repeat procedure with remaining bread, tomato and milk mixtures.
  6. Sprinkle with paprika and grated parmesan.
  7. Cover and refrigerate 8 hrs. or overnight.
  8. Bake at 350 degrees for 45-60 minutes. Let it set 15 minutes before serving.

A little different, this Ham Bites Recipe.

Ingredients:
  1. 1 cup fine, dry breadcrumbs, divided
  2. 1 cup ground cooked ham
  3. 2 eggs, beaten
  4. 1/2 cup shredded sharp cheddar cheese
  5. 1/4 cup grated onion
  6. 2 tablespoons brown sugar
  7. 1 tablespoon Dijon mustard
  8. Vegetable oil for frying
Mustard Sauce:
  1. 2 tablespoons brown sugar
  2. 2 tablespoons butter or margarine
  3. 2 tablespoons flour
  4. 1 cup half-and-half
  5. 1/4 cup Dijon mustard
  6. 1 tablespoon cider vinegar
  7. 1/4 teaspoon ground ginger
Step Wise Instructions:
  1. Combine 1/2 cup breadcrumbs, ground ham, eggs, shredded cheese, grated onion, brown sugar, and mustard in a large bowl; stir well.
  2. Shape ham mixture into 1″ balls.
  3. Roll balls in remaining 1/2 cup breadcrumbs, pressing firmly so that crumbs adhere.
  4. Cover and chill ham balls thoroughly.
  5. In large deep skillet, heat 2″ of oil; fry ham balls for 1 minute, turn and fry until golden brown.
  6. Drain on paper towels.
  7. Serve immediately with Sweet Mustard Sauce.
  8. Sweet Mustard Sauce:
Mustard Sauce:
  1. Combine brown sugar and butter in a heavy saucepan.
  2. Cook over low heat until sugar dissolves and butter melts.
  3. Add flour, stirring until smooth.
  4. Cook 1 minute, stirring constantly.
  5. Gradually add half-and-half; cook over medium heat, stirring constantly, until mixture is thickened nd bubbly.
  6. Stir in mustard, vinegar and ginger; stir well.
  7. Remove from heat.
  8. Cool slightly.

Family Noodle Casserole

This is a quick and delicious casserole of noodles, cheese and onion that is sure to become a family favorite.
 
Total time to cook: 50 minutes

Ingredients:
  1. 1 8 oz. pkg. broad egg noodles
  2. 1 1/2 lbs. ground beef
  3. 1 tsp. salt
  4. 1/4 tsp. pepper
  5. 1/4 tsp. garlic powder
  6. 1 8 oz. can tomato sauce
  7. 1 cup creamed cottage cheese
  8. 1 cup sour cream
  9. 6 green onions, chopped
  10. 1 cup sharp cheddar cheese, grated
Step Wise Instructions:
  1. Cook noodles, rinse in cold water and drain.
  2. Brown ground beef and drain off fat, then add salt, pepper, garlic powder and tomato sauce and simmer for 5 minutes.
  3. In a large bowl, combine cottage cheese, sour cream, green onions and cooked noodles.
  4. In buttered casserole, alternate layers of noodle mixture with meat mixture.
  5. Top with grated cheese.
  6. Bake at 350º F for 30 minutes

Barbecued Pecans

This is the easiest recipe ever, with yummy bits of pecans!

Ingredients:
  1. 2 tablespoons butter
  2. 1/4 cup Worcestershire sauce
  3. 1 tablespoon ketchup
  4. 2 dashes hot sauce
  5. 4 cups pecan halves
Step Wise Instructions:
  1. Melt butter in large saucepan or skillet.
  2. Add Worcestershire sauce, ketchup and hot sauce.
  3. Add pecan halves, stirring to coat well.
  4. Spoon into a lightly greased glass or nonstick baking dish; spread out in an even layer.
  5. Toast at 400° about 15 to 20 minutes, stirring frequently.
  6. Turn out on paper towels and sprinkle with salt.
