Wonderfully quick and easy snack to make

 
Total time to cook: 50 minutes
Serves: 4
Category: Eggs , quiche recipes
Ingredients:
  1. 6 slices bacon
  2. 3-1/4 cup milk
  3. 1 cup ricotta cheese
  4. 1/2 cup feta cheese, crumbled
  5. 1 tsp salt
  6. 1/2 tsp cayenne pepper
  7. 5 eggs 1 cup chopped red onion
  8. 1-3/4 cup diced tomato
  9. 1-1/2 tsp dried rosemary
  10. 1 16 oz. loaf sourdough bread
  11. grated fresh parmesan
  12. paprika
Step Wise Instructions:
  1. Whisk eggs, milk, cheeses, salt & cayenne until well blended.
  2. Combine eggs, tomato, onion and rosemary.
  3. Arrange half of bread cubes in 9×13-inch dish coated with cooking spray.
  4. Spoon half of tomato mixture over bread & pour half of mil mixture over tomato mixture.
  5. Repeat procedure with remaining bread, tomato and milk mixtures.
  6. Sprinkle with paprika and grated parmesan.
  7. Cover and refrigerate 8 hrs. or overnight.
  8. Bake at 350 degrees for 45-60 minutes. Let it set 15 minutes before serving.

Barbecued Pecans

This is the easiest recipe ever, with yummy bits of pecans!

 
Total time to cook: 1 hours
Serves: 7

Ingredients:
  1. 2 tablespoons butter
  2. 1/4 cup Worcestershire sauce
  3. 1 tablespoon ketchup
  4. 2 dashes hot sauce
  5. 4 cups pecan halves
Step Wise Instructions:
  1. Melt butter in large saucepan or skillet.
  2. Add Worcestershire sauce, ketchup and hot sauce.
  3. Add pecan halves, stirring to coat well.
  4. Spoon into a lightly greased glass or nonstick baking dish; spread out in an even layer.
  5. Toast at 400° about 15 to 20 minutes, stirring frequently.
  6. Turn out on paper towels and sprinkle with salt.

Breakfast Fruit Parfaits

A wonderful fruity recipe for the entire family,simple and healthy rich fruit recipe.
 
Total time to cook: 20 minutes
Serves: 6

Ingredients:
  1. 1 cup blueberries
  2. 1 cup strawberries
  3. 1 cup mango, peeled
  4. 1/2 cup kiwi fruit
  5. 1/4 cup apple juice
  6. 5 large bananas
  7. 2 t. lemon juice
  8. 1 cup shredded coconut
  9. 1 Quart Almond-Flax Granola
Step Wise Instructions:
  1. In a medium bowl, place the blueberries, blackberries, strawberries, mango, kiwi, and apple juice, toss gently to combine, and set aside.
  2. In a food processor or blender, place the bananas and lemon juice, and process for 1 minute or until smooth.
  3. Scrape down the sides of the container.
  4. Add the shredded coconut and process the mixture an additional 2-3 minutes or until extremely light and creamy.
  5. Transfer the mixture to a glass bowl.
  6. To assemble the parfaits: in the bottom of 4 large glasses or dessert dishes place 1/2 cup of the mixed fruit mixture, then 1/2 cup Almond-Flax Granola, followed by 1/2 cup of the banana-coconut cream mixture.
  7. Repeat the layers ending with the banana-coconut cream mixture.
  8. Serve immediately.

Even if you think you don’t like Salmon…..you will love this dish. It is a simple recipe, but it takes a little time to put together ….well worth it and even better the next day!
 
Total time to cook: 40 minutes

Ingredients:
  1. 1 can salmon
  2. 1 small green pepper, chopped
  3. 3 stalks celery, sliced
  4. 1 medium onion, chopped
  5. 3 cans tomatoes, chopped
  6. 3/4 cup uncooked rice
  7. 1 can mushroom soup
  8. 1 tablespoon soy sauce
  9. 1 soup can water
Step Wise Instructions:
  1. Preheat oven to 350 degrees.
  2. Mix well in lightly greased 2-quart casserole.
  3. Cover and bake 1 1/2 hours.

Tasty, light version of the ever popular Lemon salad recipe
 
Total time to cook: 25 minutes

Ingredients:
  1. 1 cup vegetable or olive oil
  2. 1/3 cup white wine vinegar
  3. 1 clove garlic minced
  4. 1 tbsp lemon peel grated
  5. 2 tbsp sugar
  6. 1 tbsp Dijon mustard
  7. 1/2 tbsp salt
  8. 6 cups long grain rice cooked
  9. 2 cups wild rice cooked
  10. 2 cups seeded cucumbers diced
  11. 2/3 cup green onions thinly sliced
  12. 1/4 cup fresh parsley minced
  13. 1/4 cup fresh basil or 1 Tbls dried minced
  14. 1/2 tbsp pepper
  15. 1/2 cup chopped pecans toasted
Step Wise Instructions:
  1. In a jar with tight-fitting lid, combine the first 7 ingredients; shake well. In a large bowl, combine long grain and wide rice; add dressing and toss.
  2. Cover and refrigerate overnight.
  3. Add the cucumbers, green onions, parsley, basil and pepper; mix well. C
  4. hill for 2 hours.
  5. Fold in pecans just before serving.

Chilled Avocado Soup

Yum, This recipe is so good, your mouth will water just reading it and delicious soup recipe is easy to make.
 
Total time to cook: 1 hours

Ingredients:
  1. 2 ripe peeled avocados
  2. 1 1/2 cups vegetable broth
  3. 1 (4-ounce) can or jar chopped green chiles
  4. 1/2 cup whole milk
  5. 1 tablespoon lime juice
  6. 3/4 teaspoon salt
  7. 1/4 teaspoon black pepper
  8. Fresh cilantro and/or crushed tortilla chips for garnish
Step Wise Instructions:
  1. Cut the avocados in half, and remove the pits.
  2. Spoon avocado into a blender, add the remaining ingredients (except garnish), and puree until creamy.
  3. Chill the soup for up to 2 hours before serving, or serve immediately.
  4. Cover leftovers with plastic wrap, refrigerate, and use within 2 days..

Rock shrimp is luscious, forgiving, and so easy to cook with. Peppers and corn are the essence of summer eating, and when you combine them with rock shrimp and fettuccine you end up with the perfect, hassle-free summer dinner.

  1. 2 lb Rock shrimp
  2. 1 c Celery, diced
  3. 1 c Chopped onion
  4. 1 c Chopped carrots
  5. 1/4 lb Butter or margarine
  6. 1/4 ts Black pepper (optional)
  7. 1 t Curry powder
  8. 1 1/2 ts Chili powder
  9. 1/2 ts Thyme
  10. 1 t Chopped garlic
  11. 1/2 c Flour
  12. 1 Tomato, diced medium
  13. 1 Green pepper, diced medium
  14. 2 Tomatos, diced medium
  15. Chopped parsley for garnish
Step Wise Instructions:
  1. Here’s a very autumnal soup to get you in the Fall spirit.
  2. Served it with mugs of mulled cider and a hearty Italian loaf.
  3. Put oil (or substitute) in a hot pan and then add all ingredients except stock.
  4. Cover and cook for 10 minutes.
  5. Add stock and simmer 45 minutes.

Coconut Chicken Curry

A perfect family soup recipe that should be a hit with both kids and adults. Feel free to increase half and half or heavy cream for a more rich taste. You can also add a second chicken breast if your family prefers chunkier curry.

Ingredients:
  1. 1/4 cup whole unsalted cashews
  2. 1 pound skinless, boneless chicken breasts
  3. Salt To Taste
  4. 1/4 cup vegetable oil
  5. 1/4 tsp black mustard seeds
  6. 1/4 tsp cumin seeds
  7. 1/4 tsp ground coriander
  8. 1 tbsp curry powder
  9. 1 medium onion, thinly sliced
  10. 1 tsp finely grated fresh ginger
  11. 1 garlic clove, minced
  12. 1 (14 ounce) can unsweetened coconut milk
  13. 1/4 cup frozen peas
  14. 2 tbsp chopped cilantro
Step Wise Instructions:
  1. Preheat the oven to 350 degrees F.
  2. Spread the cashews in a pie plate and bake for 5 minutes, or until fragrant and lightly toasted. Transfer to a plate to cool.
  3. Lightly season the chicken with salt. In a large, deep skillet, heat 3 tablespoons of the oil until smoking.
  4. Add the chicken and cook over moderately high heat until golden brown, about 1 1/2 minutes per side. Transfer the chicken to a plate and reduce the heat to moderate.
  5. Add the remaining 1 tablespoon of oil to the skillet and heat until smoking.
  6. Add the mustard seeds and cook for about 1 minute, or until they stop popping.
  7. Add the cumin seeds, coriander and curry powder, and cook, stirring occasionally, until fragrant, about 1 minute.
  8. Add the onion, ginger and garlic, and cook until the onion softens, about 10 minutes; if the mixture seems dry, add up to 1/4 cup of water to prevent sticking.
  9. Stir in the coconut milk and bring to a boil.
  10. Reduce the heat to low. Return the chicken to the skillet and simmer until cooked through, about 5 minutes.
  11. Stir in the peas and cook for 1 minute.
  12. Transfer the coconut chicken curry to a bowl, sprinkle with the cilantro and cashews and serve.

Chicken & Rice Bake

My cookbook collection is growing out of hand. In an effort to justify my addiction, I thought I would share my collection with everyone by actually trying more new recipes. This one ‘Chicken and Rice Bake’ is my recently prepared recipe, I found it superb. You all just try and comment.
 
Total time to cook: 50 minutes
Serves: 6 to 8
Category: Dinner, non veg, side dish
Ingredients:
  1. 4 boned and skinned chicken breast halves
  2. 1 1/2 cups uncooked white rice
  3. 1 can condense cream of celery soup
  4. 1 can condense cream of chicken soup
  5. 2 soup cans of water
  6. 1 package Onion Soup Mix
Step Wise Instructions:
  1. Spread rice evenly over the bottom of a 9″ X 9″ X 2″ baking dish.
  2. Combine condensed soups and water; pour 1/2 of this mixture over the rice.
  3. Arrange the chicken breasts in the pan, making sure not to overlap.
  4. Pour remaining soup mixture over the chicken.
  5. Sprinkle onion soup mix evenly over the chicken.
  6. Bake in a 400 degree oven for 1 hour.
