4 cups cold water
10 tea bags
4 cans apricot nectar
1/2 cup fresh mint leaves, slightly crushed
1/4 cup sugar
Fresh mint
Citrus slices
Step Wise Instructions:
In a 4-quart Dutch oven bring water to boiling.
Remove from heat.
Add tea bags.
Let steep for 3 to 5 minutes.
Discard bags.
Stir in nectar, mint, and sugar.
Cover; chill sometimes.

Bake at 400° for 20 minutes.

Kids love these little Cranberry Jelly, and moms love them because they’re easy to make.
Total time to cook:

Ingredients:
2 cups Cranberries
3 ounces Liquid pectin (regular)
1 cup Concentrated apple juice
5 tablespoons Glycerin
1/4 cup Lemon juice
1 tablespoon Unfl.gelatin or 2 tb.freezer
Step Wise Instructions:
Wash and pick over cranberries, discarding any that are soft.
Place in a deep saucepan and add fruit juices.
Cover and simmer for about 20 minutes, until fruit is soft.
Mash to break up any berries left whole.
Strain in food mill to remove seeds. Return to saucepan and heat to boiling.
Add pectin, glycerin and gelatin, stirring well. Boil for 1 minute.
Remove from heat.
Skim and pour into hot, sterile pint jars, leaving 1/2 inch at top.
Cap with hot sterile lids.
Process in boiling water bath for 5 minutes after water returns to boiling.
If any jars fail to seal, refrigerate and use within 10 days or freeze for later use.
Makes 3 1/2 cups.

A little different, but these chives rolls make a wonderful party snack.

Ingredients:
1 package active dry yeast
1/4 cup warm water
1 cup milk
1/3 cup vegetable oil
1/4 cup mashed potatoes
1 egg
3 tablespoons sugar
1-1/2 teaspoons salt
3-1/2 cups all-purpose flour
Filling:
1 cup sour cream
1 cup minced fresh or frozen chives
1 egg yolk
Butter or margarine, melted
Step Wise Instructions:
In a bowl, dissolve yeast in water. In a saucepan, heat milk, oil and mashed potatoes to 110 -115 F.
Transfer to a mixing bowl; add yeast mixture, egg, sugar and salt.
Add enough flour to make a soft dough.
Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes.
Place in a greased bowl; turn once to grease top.
Cover and let rise in a warm place until doubled, about 1 hour.
Turn dough onto a floured surface.
Roll into a 15-in. x 10-in. rectangle. In a bowl, combine sour cream, chives and egg yolk.
Spread over dough to within 1/2 in. of edges.
Roll up jelly-roll style, starting with a long side; pinch seam to seal.
Cut into 1-in. slices.
Place cut side down in a quarter sheet baking pan (13″ x 9″ x 2″).
Cover and let rise until doubled, about 1 hour.
Bake at 350 F for 30-35 minutes or until golden brown.
Brush with butter.
Cool on a wire rack.
Refrigerate leftovers.

This is a really easy recipe for a soothing tea with flavors of ginger, holy basil and anisseds.

½ tsp. of Aniseeds
1 tbsp. of Holy Basil
Sugar (to taste)
¾ cups of Milk

Step Wise Instructions:
Take a sauce pan and put the water on medium heat
Add the crushed ginger, aniseeds and holy basil leaves.
Let the water to come to a boil.
Now add the tea leaves bring to a boil and then let it simmer for 5 minutes.
Strain the team and put it in a tea pot.
Enjoy it with sugar and milk.

Great snack for your halloween party. Simple homemade noodle jerky!

Ingredients:
4 ounces uncooked noodles
1 cup low fat cottage cheese
3/4 cup shredded low fat Cheddar cheese
1/3 cup chopped green onions with tops
3 tablespoons grated Parmesan cheese
1/2 teaspoon Worcestershire sauce
1/8 teaspoon pepper
1/2 cup low fat sour cream
2 egg whites
Step Wise Instructions:
Heat oven to 350 degrees.
Spray square baking dish, 8×8x2 inches, with nonstick cooking spray.
Cook noodles as directed on package; drain.
Mix noodles and remaining ingredients. Spread in dish.
Bake uncovered 30-35 minutes or until center is set and edges are golden brown.
Let stand 5 minutes.

7 oz of marshmallow crème
¼ cup of creamy peanut butter
2 tablespoons of melted butter
5 oz of chow mien noodles
1 cup of pastel peanut
Confectioners’ sugar
Step Wise Instructions:
Beat marshmallow crème, peanut butter and butter in a bowl until the mixture is smooth.
Fold in the chow mien noodles and the M&Ms.
Chill until easy to handle.
On waxed paper, form into suitably sized nests.
Chill for about 40 minutes.
Dust with confectioners’ sugar and put some peanut M&Ms in the nests.

An international twist on a favorite! Mexican corn casserole is inexpensive to make. It’s even better the next day, which is perfect for this college student on a tight budget!

Ingredients:
1 cn Corn with red and green
Peppers drained
1 cn Corn, cream-style
2 tb Peanut oil
1 ts Sesame oil
1 lg Garlic clove crushed
1 ts Fresh ginger root grated
1 1/2 lb Vegetables sliced
1/2 c Light stock or hot water
1 tb Oyster sauce
2 ts Soy sauce, low sodium
1/2 ts Salt
1/2 ts Monosodium glutamate
2 ts Cornstarch
1 tb Cold water
Step Wise Instruction:
Heat oils in wok with garlic and ginger, add vegetables and fry, stirring, for 2 minutes.
Add hot water or stock and sauces, salt and Monosodium mixed together.
Cover and simmer for 4 minutes.
Push vegetables
to side of wok, add cornstarch mixed with cold water, stir until thick.
Toss vegetables in sauce and serve immediately with boiled rice.
