Apricot Mint Tea

This is a great tea to serve after a meal since mint is a good breath freshener.
 
Total time to cook: 20 minutes
Serves: 6

Ingredients:
  1. 4 cups cold water
  2. 10 tea bags
  3. 4 cans apricot nectar
  4. 1/2 cup fresh mint leaves, slightly crushed
  5. 1/4 cup sugar
  6. Fresh mint
  7. Citrus slices
Step Wise Instructions:
  1. In a 4-quart Dutch oven bring water to boiling.
  2. Remove from heat.
  3. Add tea bags.
  4. Let steep for 3 to 5 minutes.
  5. Discard bags.
  6. Stir in nectar, mint, and sugar.
  7. Cover; chill sometimes.

Ingredients:
  1. 4 cups diced cooked parsnips
  2. 1/4 cup melted butter
  3. 1/2 cup light brown sugar, packed
  4. 1 tsp dry mustard
Step Wise Instructions:
  1. Place parsnips in a greased baking dish.
  2. Pour melted butter over parsnips.
  3. Combine sugar and mustard; sprinkle over parsnips.
  4. Bake at 400° for 20 minutes.
  5. Parsnips recipe serves 6 to 8

You can do a lot of experimenting with these ice cream simply by using different ice cream flavors and mixing in ingredients such as chocolate chips or sweetened dried cranberries.

  1. 1/2 gallon Vanilla ice cream
  2. 1/2 oz Powdered green tea
Step Wise Instructions:
  1. Soften the ice cream and add the powder in small amounts, until the ice cream has the strength and flavor you desire.
  2. Then refreeze the ice cream until it is ready to be served.

Cranberry Jelly

Kids love these little Cranberry Jelly, and moms love them because they’re easy to make.

Total time to cook: 45 minutes
Serves: 5

Ingredients:
  1. 2 cups Cranberries
  2. 3 ounces Liquid pectin (regular)
  3. 1 cup Concentrated apple juice
  4. 5 tablespoons Glycerin
  5. 1/4 cup Lemon juice
  6. 1 tablespoon Unfl.gelatin or 2 tb.freezer
Step Wise Instructions:
  1. Wash and pick over cranberries, discarding any that are soft.
  2. Place in a deep saucepan and add fruit juices.
  3. Cover and simmer for about 20 minutes, until fruit is soft.
  4. Mash to break up any berries left whole.
  5. Strain in food mill to remove seeds. Return to saucepan and heat to boiling.
  6. Add pectin, glycerin and gelatin, stirring well. Boil for 1 minute.
  7. Remove from heat.
  8. Skim and pour into hot, sterile pint jars, leaving 1/2 inch at top.
  9. Cap with hot sterile lids.
  10. Process in boiling water bath for 5 minutes after water returns to boiling.
  11. If any jars fail to seal, refrigerate and use within 10 days or freeze for later use.
  12. Makes 3 1/2 cups.

A little different, but these chives rolls make a wonderful party snack.

Ingredients:
  1. 1 package active dry yeast
  2. 1/4 cup warm water
  3. 1 cup milk
  4. 1/3 cup vegetable oil
  5. 1/4 cup mashed potatoes
  6. 1 egg
  7. 3 tablespoons sugar
  8. 1-1/2 teaspoons salt
  9. 3-1/2 cups all-purpose flour
Filling:
  1. 1 cup sour cream
  2. 1 cup minced fresh or frozen chives
  3. 1 egg yolk
  4. Butter or margarine, melted
Step Wise Instructions:
  1. In a bowl, dissolve yeast in water. In a saucepan, heat milk, oil and mashed potatoes to 110 -115 F.
  2. Transfer to a mixing bowl; add yeast mixture, egg, sugar and salt.
  3. Add enough flour to make a soft dough.
  4. Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes.
  5. Place in a greased bowl; turn once to grease top.
  6. Cover and let rise in a warm place until doubled, about 1 hour.
  7. Turn dough onto a floured surface.
  8. Roll into a 15-in. x 10-in. rectangle. In a bowl, combine sour cream, chives and egg yolk.
  9. Spread over dough to within 1/2 in. of edges.
  10. Roll up jelly-roll style, starting with a long side; pinch seam to seal.
  11. Cut into 1-in. slices.
  12. Place cut side down in a quarter sheet baking pan (13″ x 9″ x 2″).
  13. Cover and let rise until doubled, about 1 hour.
  14. Bake at 350 F for 30-35 minutes or until golden brown.
  15. Brush with butter.
  16. Cool on a wire rack.
  17. Refrigerate leftovers.

Ginger Tea

This is a really easy recipe for a soothing tea with flavors of ginger, holy basil and anisseds.

  1. ½” piece of Ginger
  2. 3 tsp. of Tea Leaves
  3. ½ tsp. of Aniseeds
  4. 1 tbsp. of Holy Basil
  5. Sugar (to taste)
  6. ¾ cups of Milk
  7. 1 ½ cup of Water
Step Wise Instructions:
  1. Take a sauce pan and put the water on medium heat
  2. Add the crushed ginger, aniseeds and holy basil leaves.
  3. Let the water to come to a boil.
  4. Now add the tea leaves bring to a boil and then let it simmer for 5 minutes.
  5. Strain the team and put it in a tea pot.
  6. Enjoy it with sugar and milk.

Great snack for your halloween party. Simple homemade noodle jerky!

Total time to cook: 40 minutes

Ingredients:
  1. 4 ounces uncooked noodles
  2. 1 cup low fat cottage cheese
  3. 3/4 cup shredded low fat Cheddar cheese
  4. 1/3 cup chopped green onions with tops
  5. 3 tablespoons grated Parmesan cheese
  6. 1/2 teaspoon Worcestershire sauce
  7. 1/8 teaspoon pepper
  8. 1/2 cup low fat sour cream
  9. 2 egg whites
Step Wise Instructions:
  1. Heat oven to 350 degrees.
  2. Spray square baking dish, 8×8x2 inches, with nonstick cooking spray.
  3. Cook noodles as directed on package; drain.
  4. Mix noodles and remaining ingredients. Spread in dish.
  5. Bake uncovered 30-35 minutes or until center is set and edges are golden brown.
  6. Let stand 5 minutes.

Step Wise Instructions:
  1. Beat marshmallow crème, peanut butter and butter in a bowl until the mixture is smooth.
  2. Fold in the chow mien noodles and the M&Ms.
  3. Chill until easy to handle.
  4. On waxed paper, form into suitably sized nests.
  5. Chill for about 40 minutes.
  6. Dust with confectioners’ sugar and put some peanut M&Ms in the nests.

  1. Blend all of the ingredients until liquid, about 1 minute.
  2. Serve immediately. If you have to store this in the fridge, it may separate, so to revive it,
  3. Stir in a bit more cream before serving.

Mexican corn casserole

An international twist on a favorite! Mexican corn casserole is inexpensive to make. It’s even better the next day, which is perfect for this college student on a tight budget!
Total time to cook: 30 minutes
Serves: 4

Ingredients:
  1. 1 cn Corn with red and green
  2. Peppers drained
  3. 1 cn Corn, cream-style
  4. 2 tb Peanut oil
  5. 1 ts Sesame oil
  6. 1 lg Garlic clove crushed
  7. 1 ts Fresh ginger root grated
  8. 1 1/2 lb Vegetables sliced
  9. 1/2 c Light stock or hot water
  10. 1 tb Oyster sauce
  11. 2 ts Soy sauce, low sodium
  12. 1/2 ts Salt
  13. 1/2 ts Monosodium glutamate
  14. 2 ts Cornstarch
  15. 1 tb Cold water
Step Wise Instruction:
  1. Heat oils in wok with garlic and ginger, add vegetables and fry, stirring, for 2 minutes.
  2. Add hot water or stock and sauces, salt and Monosodium mixed together.
  3. Cover and simmer for 4 minutes.
  4. Push vegetables
  5. to side of wok, add cornstarch mixed with cold water, stir until thick.
  6. Toss vegetables in sauce and serve immediately with boiled rice.
