Artichoke Spinach Pizza

The perfect pizza for your New Year’s Eve or any other holiday party!

Total time to cook: 45 minutes
Serves: 5
Category: Artichoke hearts , side dish , cheese
Ingredients:
  1. 1 cup part-skim ricotta cheese
  2. 1/4 cup thinly sliced green onions
  3. 1/4 tsp bottled minced garlic
  4. 1/4 tsp dried oregano
  5. 1/8 tsp black pepper
  6. 1 package frozen chopped spinach, thawed and drained
  7. 1 Italian cheese-flavored pizza crust
  8. 1 can quartered artichoke hearts, drained
  9. 2/3 cup grated sharp provolone or shredded part-skim mozzarella cheese
Step Wise Instructions:
  1. Preheat oven to 450°.
  2. Combine the first 5 ingredients in a medium bowl.
  3. Stir in spinach. Place pizza crust on a baking sheet.
  4. Spread spinach mixture over pizza crust, leaving a 1/2-inch border; top with artichokes and cheese.
  5. Bake at 450° for 13 minutes or until cheese melts.

Roasted Almond Ice-cream

Roasted Almond Ice-cream

A simple crepes dish good for dessert. Light and elegant.

Total time to cook: 45 minutes
Serves: 4

Ingredients:
  1. 1 liter full cream milk
  2. 2-1/2 tsp. corn flour
  3. 1 tsp. gel a tine or 1/2 packet china grass chopped fine
  4. 3/4 cup sugar
  5. 1 cup fresh cream
  6. 1 tsp. almond or
  7. 1/2cup cold milk
  8. 1 cup almonds, sliced thinly
  9. 1 tbsp. pistachios, sliced thinly
  10. 1 tsp. cardamom powder
  11. 1 recipe basic ice cream
Step Wise Instructions:
  1. Bring milk to a boil. Boil for 15 minutes on low, stirring occasionally.
  2. Mix corn flour in 1/2 cup cold milk, keep aside.
  3. Add sugar to milk, stir. Add corn flour paste, stirring continuously, till boil resumes.
  4. Boil for a further 4-5 minutes, take off fire.
  5. Sprinkle gel a tine over 3 tbsp. water in a small pan, warm and dissolve over low flame till transparent. Or soak china grass in 1 cup water till spongy, then dissolve over flame till transparent.
  6. When boiled milk cools a little, add gel a tine solution and mix well.
  7. Cool to room temperature, freeze in covered tray, till set but not hard.
  8. Roast almond slivers in preheated oven on a baking sheet for 5 minutes or till light golden. Remove and cool, mix with pistachios.
  9. Break into pieces; beat with an egg beater till soft.
  10. Add cream, almonds, cardamom, and saffron and mix well.
  11. The texture should be light and creamy.
  12. Reset in the freezer till frozen.

Cream Cheese Ice Cream

Such a simple recipe to make. Cream cheese frosting goes great with rich, chocolate cupcakes

  1. 3 8-ounce pkg’s cream cheese
  2. 2 1/2 c Sugar
  3. 4 eggs
  4. 2 tbsp Lemon juice
  5. 2 tsp Vanilla
  6. c Light cream
Step Wise Instructions:
  1. In a large mixer bowl beat cream cheese and sugar with an electric mixer on med. speed till smooth.
  2. Beat in the eggs, lemon juice, and vanilla till combined.
  3. Stir in the light cream.
  4. Freeze in a 4 or 5 qt ice cream freezer according to the manufacturers directions.

Broiled Pineapple

Broiled pineapple is delightful the combination of pineapple & Lime .This delicious fruit recipe is easy to make. It can also be served as an accompaniment to a side dish.
 
Total time to cook: 30 minutes
Serves: 6

Ingredients:
  1. 1 large pineapple
  2. 2 tsp canola oil, divided
  3. 2 tablespoons brown sugar
  4. Lime wedges
Step Wise Instructions:
  1. Peel pineapple.
  2. With a sharp knife, cut it crosswise into 1-inch-thick slices.
  3. Brush the slices lightly with 1 teaspoon oil and place in a single layer on a baking sheet.
  4. Broil until lightly browned, about 7 minutes.
  5. Turn slices over, brush with remaining teaspoon oil and broil for 5 to 7 minutes longer.
  6. Immediately sprinkle pineapple with brown sugar.
  7. Cut into chunks and serve with lime wedges.

  2. 16 oz. canister chocolate milk mix
  3. 6 oz. canister powdered coffee creamer

  1. Combine all ingredients in a large sealable bowl.
  2. For one serving, measure 1/3-1/2 cup of mix into a coffee mug.
  3. Fill with hot water.

Frozen Yogurt Pops

Wonderful yogurt dessert recipe.
Total time to cook: 40 minutes
Serves: 6

Ingredients:
  1. Small paper cups
  2. Wooden popsicle sticks
  3. plastic wrap
Step Wise Instruction:
  1. Pour yogurt into paper cups.
  2. Fill them almost to the top.
  3. Stretch a small piece of plastic wrap across the top of each cup.
  4. Using the Popsicle stick, poke a hole in the plastic wrap.
  5. Stand the stick straight up in the center of the cup.
  6. Put the cups in the freezer until the yogurt is frozen solid.
  7. Remove the plastic wrap, peel away the paper cup, and eat your pop!

Brownie biscotti

You just can’t go wrong with chocolate and creams!
Total time to cook: 40 minutes

Ingredients:
  1. 1 package chocolate cake mix
  2. 1container prepared chocolate frosting
  3. 1 bar chocolate flavored confectioners coating
Step Wise Instruction:
  1. Prepare the cake mix according to package directions using any of the recommended pan sizes.
  2. When cake is done, crumble while warm into a large bowl, and stir in the frosting until well blended.
  3. Melt chocolate coating in a glass bowl in the microwave, or in a metal bowl over a pan of simmering water, stirring occasionally until smooth.
  4. Use a melon balls or small scoop to form balls of the chocolate cake mixture.
  5. Dip the balls in chocolate using a toothpick or fork to hold them.
  6. Place on waxed paper to set.

Carob Mint Ice Cream

 
Make this Mint Ice Cream the night before to allow time to chill.
Total time to cook: 40 minutes

Ingredients:
  1. Frozen bananas
  2. 1/2 c to 3/4 water
  3. 2 tb Nuts or 1 tb Peanut butter
  4. 1/16 ts Salt
  5. 1 1/2 tb Carob powder
  6. 1/8 s Mint-peppermint flavor
Step Wise Instruction:
  1. Peel ripe, but not mushy bananas.
  2. Place in plastic bag and freeze solid. This takes several hours.
  3. To make ice cream, cut 2 medium size bananas into about 5 or 6 pieces.
  4. Blend with 1/2-3/4 cup liquid, or just enough to slowly turn bananas through the blades.
  5. The liquid may be fruit juice such as pineapple, apple, orange or grape, or soy or nut milk.
  6. While blending, use a rubber spatula to help bananas rotate. Also, occasionally turn off machine and stir.
  7. Ice cream will keep in the freezer up top 2 hours before getting hard to serve.
  8. Use as a dessert or over waffles, pancakes, granola, cooked cereal, etc.

Iced Papaya Soup

I can’t get enough papaya when it is in season.
Total time to cook: 30 minutes
Serves: 6

Ingredients:
  1. 3 ripe papayas, peeled and seeded
  2. 1/4 cup lime juice
  3. 1/4 cup honey
  4. 2 cups orange juice
  5. 1 cup champagne, chilled
  6. 1 kiwi fruit, peeled and cut in sixths
  7. 6 strawberries
Step Wise Instruction:
  1. Place the papayas, lime juice, honey and orange juice in blender and process until smooth.
  2. Pour the papaya puree into a large bowl and chill.
  3. At serving time, add the champagne and stir to blend well.
  4. Pour into chilled bowls and top each serving with a kiwi slice and a strawberry.
