Italian Oysters

 Italian Oysters

A light decorative way to start any good meal

 
Total time to cook: 30 minutes
Serves: 6

Ingredients:
  1. 1 1/2 (1-ounce) slices white bread
  2. Cooking spray
  3. 1/3 cup sliced green onions
  4. 1/4 cup chopped fresh parsley
  5. 2 garlic cloves, minced
  6. 1/4 cup Italian-seasoned breadcrumbs
  7. 1/4 cup (1 ounce) grated fresh Parmesan cheese
  8. 1 tsp fresh lemon juice
  9. 1/8 tsp ground red pepper
  10. 1/8 tsp black pepper
  11. 24 oysters on the half shell
  12. 8 lemon wedges
Step Wise Instructions:
  1. Preheat oven to 450°.
  2. Place bread in a food processor, and pulse 10 times or until coarse crumbs form to measure 3/4 cup.
  3. Heat a medium nonstick skillet coated with cooking spray over medium heat. Add onions, parsley, and garlic; cook 5 minutes, stirring constantly.
  4. Remove from heat; stir in fresh breadcrumbs, Italian breadcrumbs, and the next 4 ingredients (Italian breadcrumbs through black pepper).
  5. Place oysters on a jelly roll pan. Sprinkle breadcrumb mixture evenly over oysters.
  6. Bake the oysters at 450° for 7 minutes or until the edges of the oysters curl.
  7. Serve with lemon wedges.

Pasta Pizza

A little different than the norm for your pasta. Great on capellini, spaghettini or linguine.
 
Total time to cook: 50 minutes
Serves: 4

Ingredients:
  1. 8 oz. spaghetti, cooked, drained
  2. 1 egg, beaten
  3. 1/4 cup fat free milk
  4. 1/2 lb. extra lean ground beef
  5. 1 can (14 oz.) tomato sauce, no salt added
  6. 1 env. Garlic & Herb Salad Dressing & Recipe Mix
  7. 1 cup Shredded Reduced Fat Mozzarella Cheese
Step Wise Instructions:
  1. Toss spaghetti, egg and milk in large bowl. Spread evenly in greased 12-inch pizza pan.
  2. Cook meat untill brown in medium skillet; drain.
  3. Stir in tomato sauce and salad dressing mix.
  4. Spoon over spaghetti crust.
  5. Sprinkle with cheese.
  6. Bake at 350°F for 20 to 25 minutes or until cheese is melted..

Hot Pizza Dip

An elegant main dish that’s sure to be a crowd pleaser.
 
Total time to cook: 50 minutes
Serves: 6

Ingredients:
  1. 8 ounces cream cheese, softened
  2. 1 tsp Italian seasoning
  3. 1 cup shredded mozzarella cheese
  4. 3/4 cup shredded Parmesan cheese
  5. 1 cans pizza sauce
  6. 2 tbsp chopped green bell pepper
  7. 2 tbsp sliced green onion
Step Wise Instructions:
  1. Heat oven to 350 degrees F.
  2. In a bowl, combine cream cheese and Italian seasoning; mix well.
  3. Spread mixture in the bottom of a medium-size casserole dish.
  4. Combine mozzarella and Parmesan cheeses.
  5. Sprinkle half of the cheese mixture over cream cheese.
  6. Spread pizza sauce over cheese.
  7. Top with remaining cheese, pepper and onions.
  8. Bake for 15 to 18 minutes or until bubbly.
  9. Makes 12 servings.
  10. To heat Hot Pizza Dip in the microwave , microwave on HIGH for 2 minutes; turn.
  11. Microwave on HIGH for 2 to 3 minutes or until mixture is bubbly and heated through.

Easy to make huge cookie batch! Quick and Easy and Delicious.

Ingredients:
  1. 1/2 tsp grated lemon zest
  2. 165 g butter
  3. 1 egg
  4. 165 g flour
  5. 1/2 tsp vanilla extract
  6. 100 g cornstarch
  7. 90 g powdered sugar
Step Wise Instructions:
  1. Whisk butter and sugar than add the egg, flour and corn starch sifted, vanilla and lemon zest.
  2. Put in a pastry bag, than make several shape on a non stick baking mat.
  3. Sprinkle with sugar, cocoa and chocolat chips.
  4. Cook for 10-12 minutes.
  5. Oven 180° C, 350 degrees F.

Your vegetarian friends will love this meatless appetizer selection.

 
Total time to cook: 20 minutes
Serves: 5

Ingredients:
  1. 1 block mozzarella cheese
  2. 16 Genoa salami slices
  3. 1 can small artichoke hearts, drained and halved
  4. 1 pint grape tomatoes
  5. 1 jar large pitted Spanish olives, drained
  6. 16 wooden skewers
  7. 1 bottle balsamic-basil vinaigrette
  8. 1 tbsp fresh lemon juice
Step Wise Instructions:
  1. Cut cheese evenly into 16 cubes.
  2. Wrap salami slices around cheese cubes.
  3. Thread cubes, artichoke hearts, tomatoes, and olives alternatively on skewers.
  4. Place skewers in a large plastic container or baking dish.
  5. Stir together vinaigrette and lemon juice.
  6. Pour dressing mixture over skewers; cover tightly, and chill 8 hours.
  7. Remove skewers from marinade, discarding marinade before serving.

I like to serve restaurant-style pasta dishes when we have company. They’re easy to make, but they’re so good my guests think I was cooking all day.

Total time to cook: 40 minutes
Serves: 5

Ingredients:
  1. 12 oz. fettuccine, cooked, drained
  2. 1 oz. Smoked Cooked Ham, finely sliced
  3. 1 tsp. olive oil
  4. 1/2 lb. Cheese
  5. 1/4 cup skim milk
  6. 1 pkg. frozen artichoke hearts, thawed, drained, chopped
  7. 1/2 cup frozen green peas, thawed, drained
  8. 1/2 cup seeded chopped tomato
  9. 1 tsp. dried basil leaves
Step Wise Instructions:
  1. Toss pasta with ham and oil.
  2. Stir cheese and milk in saucepan on low heat until smooth.
  3. Add remaining ingredients; cook until thoroughly heated.
  4. Pour over pasta mixture.

Chickpea Patties

Yams for the holiday season are required in our household. A must for Thanksgiving as well as Christmas
 
Total time to cook: 20 minutes
Serves: 4

Ingredients:
  1. 1 can chickpeas rinsed and drained
  2. 1 cup shredded carrots
  3. 1/3 cup seasoned dry bread crumbs
  4. 2 tablespoons creamy Italian salad dressing
  5. 1 egg
  6. 2 tablespoons vegetable oil
Step Wise Instructions:
  1. Mash chickpeas coarsely in medium bowl with hand potato masher, leaving some larger pieces.
  2. Stir in carrots, bread crumbs, dressing and egg.
  3. Shape chickpea mixture into 4 patties.
  4. Heat oil in large nonstick skillet over medium-high heat.
  5. Add patties; cook 3 minutes per side or until well browned.
  6. Remove from skillet; drain on paper towels.
  7. Serve immediately.

Have a vegetarian coming to the party? These white pizza are sure to please.
 
Total time to cook: 30 minutes

Ingredients:
  1. 10 slices hickory smoked bacon, cooked and crumbled
  2. 1 medium sized loaf Italian bread, sliced (20 slices)
  3. 3/4 cup green onion, finely chopped
  4. 1/8 cup fresh garlic, crushed
  5. 20 1/8″ thick slices fresh mozzarella cheese
Step Wise Instruction:
  1. Cook bacon until golden, drain on paper towels, let cool then crumble.
  2. Set bacon aside.
  3. Place bread on cookie sheet.
  4. Layer with onion, garlic, crumbled bacon and top with thick slice of mozzarella.
  5. Bake at 350 degrees for 15 minutes.

This is a great slaw recipe for diabetics as well as for those on low carb diets
 
Total time to cook: 30 minutes

Ingredients:
  1. 1/4 Loaf Italian Bread - Cubed
  2. 1/2 cup vegetable broth
  3. 2 tablespoons red wine vinegar
  4. 1 Cucumber, Seeded, Sliced - Peeled
  5. 5 Green Onion Tops - Thinly Sliced
  6. 1/2 cup finely diced red onion
  7. 1 pound Tomatoes- Seeded, Chunked
  8. 6 basil leaves - chopped
  9. 3 tablespoons olive oil
  10. Salt
  11. Freshly ground pepper
Step Wise Instruction:
  1. In large bowl, moisten bread with broth; squeeze out excess liquid and discard.
  2. Sprinkle bread with 1 tablespoon vinegar; toss to distribute vinegar flavor.
  3. Mix lightly with cucumber, green and red onions, tomatoes and basil.
  4. Add olive oil and remaining 1 tablespoon vinegar.
  5. Season to taste with salt ad pepper.
  6. Toss gently; refrigerate for at least 1 hour. Can be made a day ahead.
  7. Season to taste.
  8. For serving, use radicchio leaves as cups.
  9. Serve chilled or at room temperature.

  1. 1 medium apple, chopped
  2. 1 cup diced cooked chicken
  3. 2 to 4 tablespoons regular or light mayonnaise
  4. 2 tablespoons diced green pepper
  5. 1 teaspoon chopped pimientos
  6. Dash dried rosemary, crushed
  7. Dash lemon pepper
  8. Lettuce leaf
Step Wise Instruction:
  1. In a small bowl, combine first seven ingredients.
  2. Chill until ready to serve.
  3. Place lettuce leaf on a serving plate and top with the chilled chicken salad
