2 tsp Oil
1tart Green apple — sliced
2 Leeks — in 1/2 inch slices
1Butternut squash peeled and diced
½ Onion sliced
1Carrot — sliced
1sprig Thyme
1Bay leaf
1tsp Allspice
1tsp Cinnamon
2 tsp Salt
7 cups Stock
Step Wise Instructions:
Here’s a very autumnal soup to get you in the Fall spirit.
Served it with mugs of mulled cider and a hearty Italian loaf.
Put oil (or substitute) in a hot pan and then add all ingredients except stock.
Cover and cook for 10 minutes.
Add stock and simmer 45 minutes.

Ingredients:
5 cup Vegetable stock
Cup Murmured
1 Carrot
Salt 1 tsp
Some Mushrooms
1/2 tsp Ajinomoto
8-10 Spinach leaves
1 tbsp Soya sauce
100 gm Paneer
1/4 tsp each Sherry and Black Pepper
Step Wise Instructions:
Make vegetable stock as for Talumin Soup.
Put mushrooms, carrot and spinach. Add paneer.
Mix ajinomoto, salt and black pepper.
Add soya sauce and sherry.
While serving, add murmure.
Serve hot with chilly sauce.

Ingredients:
1/2 cup vegetable oil
3 tbsp lemon juice, divided
1 tsp sugar
1/4 tsp salt
1 cup dried cranberries
3 large red apples, cut into 1/2-inch cubes
2 cups fresh broccoli florets
1/2 cup chopped walnuts
Step Wise Instructions:
In a bowl, whisk the oil, 2 tablespoons lemon juice, sugar and salt.
Add cranberries; let stand for 10 minutes.
In a large bowl, toss apples with remaining lemon juice.
Add the broccoli, walnuts and cranberry mixture; toss to coat.
Cover and refrigerate for 2 hours or until chilled.
Toss before serving.

Shake well.
Strain into a cocktail glass.

This easy, low-fat recipe yields light and delicious Cherry squash.

Ingredients:
4 c cherries, pitted, sliced
1/2 c Water
1/3 c Granulated Sugar
2 tb Lime Juice, fresh
Step Wise Instructions:
In a small saucepan, combine sugar and water; bring to a boil and cook until sugar is dissolved, about 1 - 2 minutes. Let cool.
Puree the cherries in a food processor or blender until smooth; place in a bowl along with sugar syrup and lime juice.
Pour into an 8-inch square baking dish.
Freeze until nearly solid.
Scoop mixture into a food processor or blender and beat until mixture is smooth, but not melted.
Spoon into dishes and serve immediately.

10 milliliters Cacao essence

Blend all of the ingredients until liquid, about 1 minute.
Serve immediately. If you have to store this in the fridge, it may separate, so to revive it,
Stir in a bit more cream before serving.

Almond syrup is a refreshing beverage to serve on a hot summer day.

Ingredients:
4 1/2 c Water
20 oz Almonds, ground
6 c Sugar; up to 7 cups
3 tb Bitter almond extract
2 Oranges ; juice of
2 tb Almond syrup
2 tb Yogurt
6 oz Cold water
Step Wise Instruction:
To serve, put a few tablespoons in a glass and add cold or sparkling water and ice.
Bring water to a boil; add almonds and return to a boil.
Remove from heat and allow to cool thoroughly.
Squeeze the ground almonds in several layers of rinsed cheesecloth.
Pour almond extract into a saucepan; add sugar, bitter almond extract, and orange juice.
Stir well and bring to a boil; cook to a thick syrup consistency.
Let cool completely. If syrup if not thick enough, boil again for 5 minutes.
Pour into sterile bottles, seal and refrigerate.
Can be used immediately.
Serve with ice water or with club soda.

Ingredients:
3 fresh pears (or 6 dried pears)
2 cups sugar, dissolved in 1/2 cup water
1 orange
3 whole cloves
1/2 tsp. whole coriander
1/2 tsp. ground cinnamon
1 whole peppercorn
2 cups 80-proof vodka
Step Wise Instruction:
Remove seeds and dice pears.
Put in a glass jar along with spices and peel from 1 orange (avoid the white pith).
Meanwhile measure the flaked grains and mix them together in a large bowl.
Strain through cheese cloth and add sugar solution. Leave until clear.
