Breakfast treat.

Ingredients:
1/2 pound spaghetti
1 medium-small clove garlic
3 packed cups basil leaves
1/8 tsp salt
1/8 tsp pepper
1/4 cup olive oil
1/4 cup Parmesan cheese
Step Wise Instructions:
Begin cooking the spaghetti.
Take all the basil leaves off the stems.
Discard the stems, and put the leaves into the food processor.
Smash and peel the garlic.
Add it to the basil, and blend.
Add the cheese, oil, salt and pepper and blend again until it forms a thick paste (pesto).
Transfer the pesto to a bowlful of hot spaghetti and mix well with a fork.

Ingredients:
1/3 cup butter
3/4 cup white sugar
2 eggs
1 teaspoon vanilla extract
1/4 teaspoon almond extract
2 teaspoons orange zest
2 1/4 cups all-purpose flour
1 1/2 teaspoons baking powder
1/8 teaspoon ground nutmeg
1/4 teaspoon salt
1 cup semisweet chocolate chips
1/2 cup toasted almond pieces
Step Wise Instructions:
Preheat the oven to 325 degrees F (165 degrees C).
Grease and flour a large baking sheet.
In a large bowl, cream butter and sugar until light and fluffy.
Beat in eggs, vanilla, almond extract, and zest.
Combine flour, baking powder, nutmeg, and salt.
Stir into the creamed mixture until just blended. Mix in almonds.
Divide dough into two pieces.
Form into long flat loaves about 1/2 inch tall and 12 inches long.
Place the loaves 2 inches apart on the prepared baking sheet.
Bake in preheated oven for 25 minutes, or until a light golden brown.
Cool on a wire rack for 5 minutes.
With a serrated knife, cut diagonally into slices about 1/2 inch thick. Lay the slices flat on the baking sheet.
Bake for 10 minutes, turning over once.
Transfer to a wire rack to cool.
Place chocolate chips into a small, microwave-safe bowl.
Melt chocolate in the microwave, stirring every 20 to 30 seconds until smooth.
Use a spatula to spread chocolate onto one side of each cookie.
Let stand at room temperature until set.
Store biscotti at room temperature in an airtight container.

Ingredients:
3 cups plus 2 tablespoons all-purpose flour
1/2 cup unsweetened cocoa
2 1/4 teaspoons baking powder
3/4 cup (1 1/2 sticks) unsalted butter
1 3/4 cups granulated sugar
4 large eggs
Grated zest of 1 lemon
2 tablespoons coffee liqueur
1 cup bittersweet chocolate chunks
1 teaspoon kosher salt
1 cup whole blanched almonds, toasted
Step Wise Instructions:
Preheat the oven to 325 degrees. Line 2 large baking sheets with parchment paper (or use nonstick baking sheets).
In a large bowl, sift together the flour, cocoa, baking powder, and salt. In a large bowl of an electric mixer, beat the butter and 1 1/4 cups sugar until light and fluffy.
Beat in the eggs, one at a time, then add the lemon zest and liqueur.
At low speed, add the flour mixture just until combined.
Stir in the chocolate chunks and almonds.
Sprinkle a work surface with the remaining 1/2 cup sugar.
Divide the dough in half.
Roll each piece in the sugar into a 15-inch log.
Arrange the logs, 3 inches apart, on 1 prepared baking sheet.
Bake for 30 minutes or until center of each log is firm when gently pressed with a fingertip.
Cool logs on the baking sheet 1 hour or overnight.
Preheat the oven to 300 degrees.
Transfer the logs to a large cutting board. With a serrated knife, slice each log crosswise into 1/4-inch thick slices.
Transfer the slices, cut-side down, to the baking sheets.
Bake 12 to 15 minutes until crisp.
Transfer the biscotti to wire racks and cool completely.

Blend the peanut butter and boiling water together.
Toast the slices of bread.
Dip the toast into the mixture and fry quickly in the butter in a frying pan.

A classic cookie with a sweet topping

3 Tbsp. apple cider vinegar
5 Tbsp. olive oil
1/4 tsp. pepper
1 Tbsp. dried parsley
2 (15 oz.) cans butter beans, rinsed and drained
11 oz. can shoe peg corn, drained
14.5 oz. can zesty chili diced tomatoes, undrained
1 small red onion, chopped
Step Wise Instructions:
In large bowl, combine vinegar, olive oil, salt, pepper, and parsley and mix well with wire whisk.
Add remaining ingredients and toss to coat.
Cover and chill 2 hours, or serve immediately.

Ingredients:
1 cup half-and-half
3/4 cup sugar
1/8 teaspoon salt
2 egg yolks, beaten
1 tablespoon vanilla
2 cups heavy cream
1 cup blanched, natural California pistachios, chopped
1 tablespoon finely grated orange peel
Step Wise Instructions:
Heat half-and-half in saucepan; stir in sugar and salt.
Pour a small amount of hot half-and-half into egg yolks, stirring constantly.
Return yolk mixture to half-and-half; cook and stir over medium heat about 5 to 10 minutes or until thickened and creamy.
Do not boil.
Cool. Stir in vanilla and heavy cream.
Chill. Pour into freezer container; follow manufacturer’s directions for freezing.
Add pistachios and orange peel when almost frozen; freeze until firm.
Allow ice cream to stand at least 2 hours in refrigerator-freezer to mellow flavors.

This is a very simple delicious recipe for evening.

Ingredients:
6 cups diced fresh rhubarb
1 1/2 cups sugar
2 cups water
1/4 cup lemon juice
1/2 teaspoon salt
4 cups heavy cream
1 teaspoon vanilla
1/4 teaspoon red food coloring, or to get desired color
3 cups milk
Step Wise Instructions:
In a 2 quart saucepan over medium-low heat, combine rhubarb, sugar, water, lemon juice, and salt.
Simmer, uncovered, for 10 minutes, or until rhubarb is tender.
Cool thoroughly.
Combine cooled rhubarb mixture with heavy cream, vanilla, and red food coloring.
Pour into a 1 gallon freezer container.
Add milk, filling 2.3 full.
Freeze, following ice cream freezer directions.

Ingredients:
8 oz. spaghetti, cooked, drained
1 egg, beaten
1/4 cup fat free milk
1/2 lb. extra lean ground beef
1 can (14 oz.) tomato sauce, no salt added
1 env. Garlic & Herb Salad Dressing & Recipe Mix
1 cup Shredded Reduced Fat Mozzarella Cheese
Step Wise Instructions:
Toss spaghetti, egg and milk in large bowl. Spread evenly in greased 12-inch pizza pan.
Cook meat untill brown in medium skillet; drain.
Stir in tomato sauce and salad dressing mix.
Spoon over spaghetti crust.
Sprinkle with cheese.
Bake at 350°F for 20 to 25 minutes or until cheese is melted..
