| Marmalade pudding is very easy and good father’s day recipe. |

Ingredients:
- 2 oz breadcrumbs
- 2 oz flour
- 2 oz shredded suet
- grated rind of 1 lemon (nimbu)
- 2 tblsp marmalade
- 2 oz. castor sugar
- 1 egg
- 1/4 tspful baking powder
- 1/2 cup milk
- marmalade sauce

Step Wise Instructions:
- Mix all the dry ingredients together, sieving the flour and baking powder.
- Add the marmalade, egg and milk.
- If the mixture is too stiff, add a little more milk.
- Put mixture into a greased basin, cover with a double piece of greased paper and steam for sometimes hours.
- To make the marmalade sauce:
- peel a lemon very thinly and cut the peel into short strips.
- Boil these in water until soft, then add 2 tblspfuls of sugar and 2 tspfuls of cornflour made into a paste with a little water.
- Stir well and simmer for about 3 minutes.
- Remove from fire and add 2 tspfuls of lemon juice.
- Dish up the pudding and serve with the sauce.

Ingredients:
- 3/4 cup sugar
- 1 large egg
- 2 tablespoons butter, melted and cooled
- 1 teaspoon vanilla extract
- 1/4 cup milk
- 1/2 cup all-purpose flour, sifted
|

Step Wise Instructions:
- Preheat oven to 300 F. In medium mxing bowl, beat the sugar into the egg until it is thickened and pale yellow. .
- Beat in the butter, vanilla, and milk.
- Gently stir in the flour.
- Grease a large non-stick cookie sheet and spread 1.5 tablespoons of the batter into a 6 inch circle using a thin, flexible spatula.
- Bake for 15 minutes or until lightly browned.
- Remove each cookie from the sheet and wrap around a cone shaped mold, sealing the point.
- The cookies harden as they cool so work as quickly as you can.

Ingredients:
- 2 1/2 cups walnuts
- 1 1/2 cups dates
- 5 cups fresh or frozen blackberries
- 3 TBS honey
- 1 1/2 TBS arrowroot
- 2 TBS water, or juice from frozen berries
|
|
|
|
Step Wise Instructions:
- Combine walnuts and pitted dates in a food processor.
- Process until well mixed and ground, but not smooth. About 40 seconds. It should be a coarse texture when done.
- Press into a 9 inch tart pan. Set in refrigerator while making the filling.
- If you are using frozen blackberries make sure they are completely thawed. If not, they will dilute the filling as they thaw and make it runny.
- Place 2 cups of the berries along with the arrowroot and water, or juice in a blender. Blend into a puree.
- Place in a small saucepan along with honey and cook puree over medium heat stirring constantly for about 3-4 minutes.
- It should lose its cloudiness and thicken. When it thickens and the cloudiness is gone remove from heat.
- Mix with rest of the blackberries and fill tart shell. Refrigerate for sometimes.
- Make sure it is covered so it doesn’t pick up moisture from the refrigerator.

Ingredients:
- 1 cup fine, dry breadcrumbs, divided
- 1 cup ground cooked ham
- 2 eggs, beaten
- 1/2 cup shredded sharp cheddar cheese
- 1/4 cup grated onion
- 2 tablespoons brown sugar
- 1 tablespoon Dijon mustard
- Vegetable oil for frying

Mustard Sauce:
- 2 tablespoons brown sugar
- 2 tablespoons butter or margarine
- 2 tablespoons flour
- 1 cup half-and-half
- 1/4 cup Dijon mustard
- 1 tablespoon cider vinegar
- 1/4 teaspoon ground ginger
|
|
Step Wise Instructions:
- Combine 1/2 cup breadcrumbs, ground ham, eggs, shredded cheese, grated onion, brown sugar, and mustard in a large bowl; stir well.
- Shape ham mixture into 1″ balls.
- Roll balls in remaining 1/2 cup breadcrumbs, pressing firmly so that crumbs adhere.
- Cover and chill ham balls thoroughly.
- In large deep skillet, heat 2″ of oil; fry ham balls for 1 minute, turn and fry until golden brown.
- Drain on paper towels.
- Serve immediately with Sweet Mustard Sauce.

Mustard Sauce:
- Combine brown sugar and butter in a heavy saucepan.
- Cook over low heat until sugar dissolves and butter melts.
- Add flour, stirring until smooth.
- Cook 1 minute, stirring constantly.
- Gradually add half-and-half; cook over medium heat, stirring constantly, until mixture is thickened nd bubbly.
- Stir in mustard, vinegar and ginger; stir well.
- Remove from heat.
- Cool slightly.

Ingredients:
- 1 cup raw popcorn kernels
- 2 T. safflower oil
- 1 T. water
- 1 T. nutritional yeast flakes
- 1 T. Creole Seasoning
- 1/4 t. salt (optional)

Step Wise Instructions:
- Using a hot air popper or other popcorn popper, pop the popcorn and place it in a large bowl.
- In a small saucepan, combine the remaining ingredients, and cook over medium heat for 1-2 minutes to blend the flavors.
- Drizzle the oil mixture over the popcorn and toss well to evenly coat the popcorn with the mixture.
- Serve warm.

Ingredients:
- 1 8 oz. pkg. broad egg noodles
- 1 1/2 lbs. ground beef
- 1 tsp. salt
- 1/4 tsp. pepper
- 1/4 tsp. garlic powder
- 1 8 oz. can tomato sauce
- 1 cup creamed cottage cheese
- 1 cup sour cream
- 6 green onions, chopped
- 1 cup sharp cheddar cheese, grated

Step Wise Instructions:
- Cook noodles, rinse in cold water and drain.
- Brown ground beef and drain off fat, then add salt, pepper, garlic powder and tomato sauce and simmer for 5 minutes.
- In a large bowl, combine cottage cheese, sour cream, green onions and cooked noodles.
- In buttered casserole, alternate layers of noodle mixture with meat mixture.
- Top with grated cheese.
- Bake at 350º F for 30 minutes

Ingredients:
- 4 eggs, separated
- 3/4 c. sugar, divided
- 1/2 c. flour
- 1/3 c. cocoa
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1/3 c. water
- 1 tsp. vanilla
- 1 tbsp. sugar
- 1 qt. ice cream, softened

Step Wise Instructions:
- Beat egg yolks for 3 minutes, add 1/2 cup sugar and beat 2 minutes more.
- In a separate bowl, combine flour, cocoa, 1/4 cup sugar, baking soda, and salt.
- Add the dry ingredients alternately with the water to the egg mixture. Stir in vanilla.
- In another bowl, beat egg whites until soft peaks form; add 1 tablespoon of sugar and beat until stiff.
- Fold mixture into the batter.
- Cover the bottom and sides of a jelly roll pan with wax paper. Grease wax paper completely with Crisco.
- Spread batter into pan and bake at 375 degrees for 15 minutes or until top springs back when touched.
- Sprinkle powdered sugar on a towel the size of the jelly roll pan.
- While the cake is still hot, turn onto towel, peel off wax paper and roll gently with towel and cool.
- Unroll, spread a layer of ice cream, then roll again. Wrap in heavy-duty foil and freeze 3 hours.

Ingredients:
- 1 2/3 c flour
- 4 t baking powder
- pinch salt
- ½ c white sugar
- ¾ t cinnamon
- ¾ c rolled oats
- ¼ c finely chopped
- 1 large egg
- 1 c buttermilk
- 3 T butter, melted
- 1 t vanilla
- 1 c fresh or frozen fruit (blueberries, apricots, cranberries, raisins, chopped apples…)
- 3 T brown sugar
- 1 T butter, softened

Step Wise Instructions:
- Preheat oven to 400º.
- Sift the flour, baking powder, salt, white sugar, and ½ t cinnamon together. Stir in ½ c oats and the chopped nuts.
- Beat egg, buttermilk, melted butter, and vanilla together.
- Gradually stir contents of bowl 2 into bowl 1, mixing only enough to combine the wet and dry. Fold in the fruit.
- Butter the baking dish, and spread the batter into it.
- Combine ¼ c oats, brown sugar, ¼ t cinnamon, and softened butter and stir until crumbly. Sprinkle over coffee cake.
- Bake for 40 minutes, until golden brown and done in the middle.

Ingredients: Fig Spread
- 1/2 pound dried figs
- 1/2 cup pomegranate juice
- 1/2 cup port
- 1/4 cup meyer (or regular) lemon juice
|

Fig Cookie Dough
- 1 cup brown rice flour
- 1 cup sorghum flour
- 1/2 cup tapioca flour
- 1/2 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp xanthium gum
- scant 1 tsp salt
- 1 tsp freshly ground nutmeg
- 1/2 cup packed brown sugar
- 1/2 cup unsalted butter, room temperature
- 1/2 cup organic cane sugar
- 1 large egg
- 1 tsp vanilla
- 2 tbsp molasses
|

Step Wise Instructions:
- Preheat the oven to 350F degrees.
- Mix all the dry ingredients in a medium-size bowl.
- Set aside.
- Put the softened butter into a mixer.
- Add the brown sugar and cane sugar to the butter and cream together.
- Cream until well blended, scraping down the sides of the bowl a few times if needed.
- Add the egg, vanilla, and molasses.
- Mix until blended.
- Add the dry ingredients (I did this in three parts), and mix until blended.
- Split the dough into two pieces, wrap each in plastic and then refrigerate the dough for at least one hour. This is key with gluten-free doughs.
- After you’ve chilled the dough, roll out half the dough to 1/4-inch thickness on a Silpat or piece of parchment paper.
- Slather the fig spread over the surface of the dough, stopping just shy of the edges.
- Roll out the second half of dough to roughly the same size as the first.
- Lay it over the fig spread. Crimp the edges with a fork to seal in the fig spread.
- Slide the baking sheet into the oven for 15 minutes, checking occasionally to make sure the dough isn’t browning too much.
- Remove when the edges are just starting to get nice and golden.
- Let cool for 10 minutes.
- When the cookies have cooled, cut the edges off to make straight lines.
- Slice the giant cookie into small squares.

| Simple chocolate and nut cookie recipe |

Ingredients:
- 2 large egg whites, at room temperature
- 1 tsp vanilla extract
- 1/4 tsp cream of tartar
- 1/4 tsp salt
- 2/3 cup granulated sugar
- Food color
- 1 cup pecans, chopped
- 1 cup semisweet chocolate chips
|

Step Wise Instructions:
- Heat oven to 275 degrees F. Grease baking sheets.
- In a large mixer bowl at high speed, beat egg whites, vanilla extract, cream of tartar and salt until soft peaks form.
- Gradually add sugar and, if desired, a few drops of food color and beat until very stiff and glossy and sugar is almost dissolved.
- By hand, fold in pecans and chocolate chips.
- Drop by well-rounded teaspoonsful about 1 inch apart on baking sheets.
- Bake for 20 to 25 minutes or until set and dry to the touch.
- Cool cookies on baking sheets for 1 minute.
- Carefully transfer cookies to wire racks to cool.
- Store in an airtight container in a cool place.
