Marmalade Pudding

Marmalade Pudding

Marmalade pudding is very easy and good father’s day recipe.
 
Total time to cook: 50 minutes
Serves: 4
Category: father’s day special, pudding
Ingredients:
  1. 2 oz breadcrumbs
  2. 2 oz flour
  3. 2 oz shredded suet
  4. grated rind of 1 lemon (nimbu)
  5. 2 tblsp marmalade
  6. 2 oz. castor sugar
  7. 1 egg
  8. 1/4 tspful baking powder
  9. 1/2 cup milk
  10. marmalade sauce
Step Wise Instructions:
  1. Mix all the dry ingredients together, sieving the flour and baking powder.
  2. Add the marmalade, egg and milk.
  3. If the mixture is too stiff, add a little more milk.
  4. Put mixture into a greased basin, cover with a double piece of greased paper and steam for sometimes hours.
  5. To make the marmalade sauce:
  6. peel a lemon very thinly and cut the peel into short strips.
  7. Boil these in water until soft, then add 2 tblspfuls of sugar and 2 tspfuls of cornflour made into a paste with a little water.
  8. Stir well and simmer for about 3 minutes.
  9. Remove from fire and add 2 tspfuls of lemon juice.
  10. Dish up the pudding and serve with the sauce.

Ice Cream Cones

Ice-Cream Cones. Very easy and very good!
 
Total time to cook: 2 hours
Serves: 4

Ingredients:
  1. 3/4 cup sugar
  2. 1 large egg
  3. 2 tablespoons butter, melted and cooled
  4. 1 teaspoon vanilla extract
  5. 1/4 cup milk
  6. 1/2 cup all-purpose flour, sifted
Step Wise Instructions:
  1. Preheat oven to 300 F. In medium mxing bowl, beat the sugar into the egg until it is thickened and pale yellow. .
  2. Beat in the butter, vanilla, and milk.
  3. Gently stir in the flour.
  4. Grease a large non-stick cookie sheet and spread 1.5 tablespoons of the batter into a 6 inch circle using a thin, flexible spatula.
  5. Bake for 15 minutes or until lightly browned.
  6. Remove each cookie from the sheet and wrap around a cone shaped mold, sealing the point.
  7. The cookies harden as they cool so work as quickly as you can.

Blackberry Tart

Blackberry Tart

Great recipe that I got at a friend’s cookout. Wonderful and easy to make!
Total time to cook: 2 hours
Serves: 4

Ingredients:
  1. 2 1/2 cups walnuts
  2. 1 1/2 cups dates
  3. 5 cups fresh or frozen blackberries
  4. 3 TBS honey
  5. 1 1/2 TBS arrowroot
  6. 2 TBS water, or juice from frozen berries
Step Wise Instructions:
  1. Combine walnuts and pitted dates in a food processor.
  2. Process until well mixed and ground, but not smooth. About 40 seconds. It should be a coarse texture when done.
  3. Press into a 9 inch tart pan. Set in refrigerator while making the filling.
  4. If you are using frozen blackberries make sure they are completely thawed. If not, they will dilute the filling as they thaw and make it runny.
  5. Place 2 cups of the berries along with the arrowroot and water, or juice in a blender. Blend into a puree.
  6. Place in a small saucepan along with honey and cook puree over medium heat stirring constantly for about 3-4 minutes.
  7. It should lose its cloudiness and thicken. When it thickens and the cloudiness is gone remove from heat.
  8. Mix with rest of the blackberries and fill tart shell. Refrigerate for sometimes.
  9. Make sure it is covered so it doesn’t pick up moisture from the refrigerator.

A little different, this Ham Bites Recipe.

Ingredients:
  1. 1 cup fine, dry breadcrumbs, divided
  2. 1 cup ground cooked ham
  3. 2 eggs, beaten
  4. 1/2 cup shredded sharp cheddar cheese
  5. 1/4 cup grated onion
  6. 2 tablespoons brown sugar
  7. 1 tablespoon Dijon mustard
  8. Vegetable oil for frying
Mustard Sauce:
  1. 2 tablespoons brown sugar
  2. 2 tablespoons butter or margarine
  3. 2 tablespoons flour
  4. 1 cup half-and-half
  5. 1/4 cup Dijon mustard
  6. 1 tablespoon cider vinegar
  7. 1/4 teaspoon ground ginger
Step Wise Instructions:
  1. Combine 1/2 cup breadcrumbs, ground ham, eggs, shredded cheese, grated onion, brown sugar, and mustard in a large bowl; stir well.
  2. Shape ham mixture into 1″ balls.
  3. Roll balls in remaining 1/2 cup breadcrumbs, pressing firmly so that crumbs adhere.
  4. Cover and chill ham balls thoroughly.
  5. In large deep skillet, heat 2″ of oil; fry ham balls for 1 minute, turn and fry until golden brown.
  6. Drain on paper towels.
  7. Serve immediately with Sweet Mustard Sauce.
  8. Sweet Mustard Sauce:
Mustard Sauce:
  1. Combine brown sugar and butter in a heavy saucepan.
  2. Cook over low heat until sugar dissolves and butter melts.
  3. Add flour, stirring until smooth.
  4. Cook 1 minute, stirring constantly.
  5. Gradually add half-and-half; cook over medium heat, stirring constantly, until mixture is thickened nd bubbly.
  6. Stir in mustard, vinegar and ginger; stir well.
  7. Remove from heat.
  8. Cool slightly.

Cajun Popcorn

This is a really easy recipe. Just three ingredients.

Ingredients:
  1. 1 cup raw popcorn kernels
  2. 2 T. safflower oil
  3. 1 T. water
  4. 1 T. nutritional yeast flakes
  5. 1 T. Creole Seasoning
  6. 1/4 t. salt (optional)
Step Wise Instructions:
  1. Using a hot air popper or other popcorn popper, pop the popcorn and place it in a large bowl.
  2. In a small saucepan, combine the remaining ingredients, and cook over medium heat for 1-2 minutes to blend the flavors.
  3. Drizzle the oil mixture over the popcorn and toss well to evenly coat the popcorn with the mixture.
  4. Serve warm.

Family Noodle Casserole

This is a quick and delicious casserole of noodles, cheese and onion that is sure to become a family favorite.

Ingredients:
  1. 1 8 oz. pkg. broad egg noodles
  2. 1 1/2 lbs. ground beef
  3. 1 tsp. salt
  4. 1/4 tsp. pepper
  5. 1/4 tsp. garlic powder
  6. 1 8 oz. can tomato sauce
  7. 1 cup creamed cottage cheese
  8. 1 cup sour cream
  9. 6 green onions, chopped
  10. 1 cup sharp cheddar cheese, grated
Step Wise Instructions:
  1. Cook noodles, rinse in cold water and drain.
  2. Brown ground beef and drain off fat, then add salt, pepper, garlic powder and tomato sauce and simmer for 5 minutes.
  3. In a large bowl, combine cottage cheese, sour cream, green onions and cooked noodles.
  4. In buttered casserole, alternate layers of noodle mixture with meat mixture.
  5. Top with grated cheese.
  6. Bake at 350º F for 30 minutes

Ice Cream Roll-up Cake

So simple to make, this recipe is something you can throw together in a jiffy for your favorite Indian recipes

Ingredients:
  1. 4 eggs, separated
  2. 3/4 c. sugar, divided
  3. 1/2 c. flour
  4. 1/3 c. cocoa
  5. 1/2 tsp. baking soda
  6. 1/4 tsp. salt
  7. 1/3 c. water
  8. 1 tsp. vanilla
  9. 1 tbsp. sugar
  10. 1 qt. ice cream, softened
Step Wise Instructions:
  1. Beat egg yolks for 3 minutes, add 1/2 cup sugar and beat 2 minutes more.
  2. In a separate bowl, combine flour, cocoa, 1/4 cup sugar, baking soda, and salt.
  3. Add the dry ingredients alternately with the water to the egg mixture. Stir in vanilla.
  4. In another bowl, beat egg whites until soft peaks form; add 1 tablespoon of sugar and beat until stiff.
  5. Fold mixture into the batter.
  6. Cover the bottom and sides of a jelly roll pan with wax paper. Grease wax paper completely with Crisco.
  7. Spread batter into pan and bake at 375 degrees for 15 minutes or until top springs back when touched.
  8. Sprinkle powdered sugar on a towel the size of the jelly roll pan.
  9. While the cake is still hot, turn onto towel, peel off wax paper and roll gently with towel and cool.
  10. Unroll, spread a layer of ice cream, then roll again. Wrap in heavy-duty foil and freeze 3 hours.

Buttermilk Coffee Cake

A luxurious dessert with a sinful blend of chocolate, cinnamon, fruits and coffee.

Ingredients:
  1. 1 2/3 c flour
  2. 4 t baking powder
  3. pinch salt
  4. ½ c white sugar
  5. ¾ t cinnamon
  6. ¾ c rolled oats
  7. ¼ c finely chopped
  8. 1 large egg
  9. 1 c buttermilk
  10. 3 T butter, melted
  11. 1 t vanilla
  12. 1 c fresh or frozen fruit (blueberries, apricots, cranberries, raisins, chopped apples…)
  13. 3 T brown sugar
  14. 1 T butter, softened
Step Wise Instructions:
  1. Preheat oven to 400º.
  2. Sift the flour, baking powder, salt, white sugar, and ½ t cinnamon together. Stir in ½ c oats and the chopped nuts.
  3. Beat egg, buttermilk, melted butter, and vanilla together.
  4. Gradually stir contents of bowl 2 into bowl 1, mixing only enough to combine the wet and dry. Fold in the fruit.
  5. Butter the baking dish, and spread the batter into it.
  6. Combine ¼ c oats, brown sugar, ¼ t cinnamon, and softened butter and stir until crumbly. Sprinkle over coffee cake.
  7. Bake for 40 minutes, until golden brown and done in the middle.

Grown-up Fig Cookies

Cookies are such a refreshing treat on hot summer days.
 
Total time to cook: 45 minutes

Ingredients: Fig Spread
  1. 1/2 pound dried figs
  2. 1/2 cup pomegranate juice
  3. 1/2 cup port
  4. 1/4 cup meyer (or regular) lemon juice
Fig Cookie Dough
  1. 1 cup brown rice flour
  2. 1 cup sorghum flour
  3. 1/2 cup tapioca flour
  4. 1/2 tsp baking soda
  5. 1 tsp baking powder
  6. 1/2 tsp xanthium gum
  7. scant 1 tsp salt
  8. 1 tsp freshly ground nutmeg
  9. 1/2 cup packed brown sugar
  10. 1/2 cup unsalted butter, room temperature
  11. 1/2 cup organic cane sugar
  12. 1 large egg
  13. 1 tsp vanilla
  14. 2 tbsp molasses
Step Wise Instructions:
  1. Preheat the oven to 350F degrees.
  2. Mix all the dry ingredients in a medium-size bowl.
  3. Set aside.
  4. Put the softened butter into a mixer.
  5. Add the brown sugar and cane sugar to the butter and cream together.
  6. Cream until well blended, scraping down the sides of the bowl a few times if needed.
  7. Add the egg, vanilla, and molasses.
  8. Mix until blended.
  9. Add the dry ingredients (I did this in three parts), and mix until blended.
  10. Split the dough into two pieces, wrap each in plastic and then refrigerate the dough for at least one hour. This is key with gluten-free doughs.
  11. After you’ve chilled the dough, roll out half the dough to 1/4-inch thickness on a Silpat or piece of parchment paper.
  12. Slather the fig spread over the surface of the dough, stopping just shy of the edges.
  13. Roll out the second half of dough to roughly the same size as the first.
  14. Lay it over the fig spread. Crimp the edges with a fork to seal in the fig spread.
  15. Slide the baking sheet into the oven for 15 minutes, checking occasionally to make sure the dough isn’t browning too much.
  16. Remove when the edges are just starting to get nice and golden.
  17. Let cool for 10 minutes.
  18. When the cookies have cooled, cut the edges off to make straight lines.
  19. Slice the giant cookie into small squares.

Chocolate Nut Clouds

Simple chocolate and nut cookie recipe
 
Total time to cook: 40 minutes

Ingredients:
  1. 2 large egg whites, at room temperature
  2. 1 tsp vanilla extract
  3. 1/4 tsp cream of tartar
  4. 1/4 tsp salt
  5. 2/3 cup granulated sugar
  6. Food color
  7. 1 cup pecans, chopped
  8. 1 cup semisweet chocolate chips
Step Wise Instructions:
  1. Heat oven to 275 degrees F. Grease baking sheets.
  2. In a large mixer bowl at high speed, beat egg whites, vanilla extract, cream of tartar and salt until soft peaks form.
  3. Gradually add sugar and, if desired, a few drops of food color and beat until very stiff and glossy and sugar is almost dissolved.
  4. By hand, fold in pecans and chocolate chips.
  5. Drop by well-rounded teaspoonsful about 1 inch apart on baking sheets.
  6. Bake for 20 to 25 minutes or until set and dry to the touch.
  7. Cool cookies on baking sheets for 1 minute.
  8. Carefully transfer cookies to wire racks to cool.
  9. Store in an airtight container in a cool place.
