Chocolate Heaven Cookies

Chocolate Heaven Cookies

Easy! Easy! Easy! Chocolate chip cookie dough in a mini-muffin pan with a hershey kiss or mini-peanut butter cup in the center.
 
Total time to cook: 45 minutes
Serves: 4

Ingredients:
  1. 4 1/2 cups all-purpose flour
  2. 2 tsp baking soda
  3. 1 tsp salt
  4. 2 cups butter or margarine
  5. 1 1/4 cups granulated sugar
  6. 1 3/4 cups brown sugar
  7. 2 or 3 Hershey bars, grated
  8. 3 eggs
  9. 5 tsp vanilla extract
  10. 1 package semisweet chocolate chips
  11. 1 package peanut butter chips
  12. 1 cup nuts, chopped
Step Wise Instructions:
  1. Heat oven to 375 degrees F.
  2. Stir together flour, baking soda and salt.
  3. In large bowl, beat butter, sugar, brown sugar and vanilla extract.
  4. Add eggs and beat until well mixed.
  5. Gradually add flour, mixing well between additions.
  6. Stir in chocolate and peanut butter chips and nuts, if desired.
  7. Drop by heaping teaspoons full onto ungreased cookie sheets.
  8. Bake for 7 to 9 minutes or until very lightly browned.
  9. Cool slightly and move to wire rack to cool completely.
  10. Makes about 7 dozen good-size cookies.

Chocolate Soup

Easy to make, this chocolate soup recipe is a household favorite
Total time to cook: 30 minutes
Serves: 6

Ingredients:
  1. 1/2 cup sugar — plus
  2. 1 tablespoon sugar
  3. 5 tablespoons Flour
  4. 2 tablespoons Cocoa
  5. 4 cups Milk
  6. 3 slices bread
  7. 1/4 cup butter
Step Wise Instructions:
  1. Combine sugar, flour and cocoa.
  2. Put under broiler and brown, stirring frequently.
  3. Slowly add a little milk until creamy.
  4. Heat the remainder of the milk to boiling point.
  5. Slowly add the cold milk mix, bring again to boiling point.
  6. Add vanilla and salt to taste (about 1/2 teaspoon vanilla and dash of salt).
  7. Cube the bread and fry golden brown in the butter. Add the toasted bread at serving time.

Mango Kulfi

Mango Kulfi

A quick kulfi made with mango. Can be made year round with the frozen fruits.
 
Total time to cook: 1 hours
Serves: 6

Ingredients:
  1. 1 can (400g) sweetened condensed milk
  2. 1/2 cup mango pulp
  3. 1/2 cup cream
  4. 12-15 almonds-blanched and shredded
  5. 8 kulfi moulds
  6. Vark leaves-optional
Step Wise Instructions:
  1. Mix together the condensed milk, cream and mango pulp. Beat to blend well.
  2. Add the nuts, saving a few for garnishing. Mix well and pour into moulds.
  3. Freeze at the lowest possible temperature.
  4. To serve take the mould out of the freezer and prise the kulfi out with the help of a knife, into an individual serving bowl.

Blueberry Orange Ice Cream

Simple, quick and tasty — who can resist? Hand these out for dessert at a cookout .

Ingredients:
  1. 1/3 cup granulated sugar
  2. 3/4 cup low fat evaporated milk
  3. Egg beaten
  4. 1 tbsp light corn syrup
  5. Cup fresh blueberries
  6. 1/2 cup orange juice
  7. whipping cream
Step Wise Instructions:
  1. In a medium saucepan, combine the sugar and cornstarch.
  2. Stir in the evaporated milk, beaten egg and corn syrup.
  3. Cook and stir over low heat until the mixture coats a spoon and is thickened. Cool.
  4. In a blender or food processor fitted with a metal blade, puree the blueberries with the orange juice.
  5. Combine the cooked mixture, pureed berries and half and half.
  6. Pour into an ice cream canister.
  7. Freeze in an ice cream maker according to the manufacturer’s directions.

Crispy Rice Treats

Perfect for the teenager in your midst and nice for kids and grown-ups as well.

Ingredients:
  1. 4 tablespoons (1/2 stick) unsalted butter
  2. 10 ounces jumbo marshmallows
  3. 3/4 cup creame
  4. 6 cups crispy rice cereal
  5. 6 ounces semisweet chocolate chips
Step Wise Instructions:
  1. Melt the butter over low heat in a large pot.
  2. Stir in the marshmallows and cook until fully melted and no marshmallow white remains.
  3. Stir in the peanut butter until combined.
  4. Stir in the cereal until distributed evenly through the marshmallow mixture.
  5. Pour out onto a lightly greased rectangular baking dish (9 by 13 inches).
  6. Smooth out the top of the treats by moistening your hands with a little water and using the palms of your hand to press down gently.
  7. Don’t press down too hard or else your treats will be too dense.
  8. Set aside to cool.
  9. Once the treats have cooled, melt the chocolate over low heat.
  10. Cut the treats into even squares and quickly just shallowly dip the top side of the treats into the chocolate.
  11. Turn chocolate side up and set in a baking dish or on a rack until set.

Unique cream dough. This is quick and very easy to make and is sure to please the whole family. It is also a great dessert to serve when you have guests.

  1. 4 large eggs
  2. 1 cup water
  3. 1/2 cup butter
  4. 1/4 teaspoon salt
  5. 1 cup all-purpose flour
Step Wise Instructions:
  1. Combine water, butter, and salt in heavy saucepan.
  2. Bring to a boil.
  3. Add flour all at once and stir vigorously with wooden spoon until mixture leaves the sides of the pan and forms a ball.
  4. Remove from heat, add eggs one at a time, beating well after each addition.
  5. Mixture should be smooth and velvety.
  6. Drop tablespoonfuls of dough 2-inches apart on ungreased baking sheet.
  7. Bake at 400°F for 45 to 50 minutes or until puffed, golden brown, and dry.
  8. Cool on wire racks.

Peach Ice Cream

This is our favorite recipe for fixing up fresh picked peaches. Peachy Keen ice cream. Very rich and very good!

Ingredients:
  1. cup of peach pulp
  2. Juice of½ lemon
  3. cup of granulated sugar
  4. 1½ cups of thin cream
Step Wise Instructions:
  1. Pare and stone choice, ripe peaches and press the pulp through a “ricer;” add the sugar and lemon juice and turn into the can of a freezer, packed in ice and salt; add the cream and freeze as usual.

  1. 2 3/4 cups Guinness Stout
  2. 1 large egg
  3. 1 cup sugar
  4. 1/2 cup milk
  5. 2 cups cream
Step Wise Instructions:
  1. Boil Guinness until reduced to 2 cups.
  2. Cool until just warm.
  3. Combine egg and sugar in a bowl.
  4. Stir in milk, then mix into the warm Guinness reduction.
  5. Stir in cream.
  6. Chill for 1 hour in the refrigerator.
  7. Process in an ice cream maker according to manufacturer’s instructions.

French Ice Cream

You can do a lot of experimenting with this ice cream simply by using different ice cream flavors and mixing in ingredients such as chocolate chips or sweetened dried cranberries.

Ingredients:
  1. 3 cups milk
  2. 1-½ cups corn syrup
  3. 1-½ tablespoons Argo or Kingsford’s Cornstarch
  4. 3 egg yolks
  5. Few grains salt
  6. 1-½ teaspoons vanilla
  7. 1 cup heavy cream
  8. ½ cup sugar
Step Wise Instructions:
  1. Scald milk, corn syrup and sugar and thicken with the cornstarch dissolved in an equal quantity of cold milk.
  2. Cook fifteen minutes, stir in the egg yolks well beaten and combined with a little of the thickened mixture.
  3. Chill, add salt, flavoring and cream, and freeze, packing with three parts of cracked ice to one of rock salt.

Ingredients:
  1. 3 quarts popped popcorn
  2. 3 cups dry roasted mixed nuts, unsalted
  3. 1 cup brown sugar, firmly packed
  4. 1/2 cup light or dark corn syrup
  5. 1/2 cup butter
  6. 1/2 tsp salt
  7. 1/2 tsp baking soda
  8. 1/2 tsp vanilla extract
Step Wise Instructions:
  1. Preheat oven to 250°. In a large roasting pan combine the popcorn and nuts.
  2. Place in the oven while preparing glaze.
  3. In a medium saucepan combine brown sugar, corn syrup, butter, and salt.
  4. Bring to a full boil over medium heat, stirring constantly, then continue to boil for 4 minutes without stirring.
  5. Remove from heat; stir in baking soda and vanilla, then pour over the warm popcorn and nuts, tossing to coat well.
  6. Bake another 60 minutes, stirring freqently, about every 10 minutes.
  7. Cool and break apart. Store in an airtight container.
  8. Makes 4 quarts.
