Lamb Soup

I like this simple lamb soup recipe. Easy to make, easy to eat!

Total time to cook: 55 minutes
Serves: 5

Ingredients:
  1. ½ packet brown gravy mix
  2. ½ medium onion, chopped coarsely
  3. ¾ lb of boneless lamb shoulder, cut into one-inch cubes
  4. 2 cups of beef stock
  5. 1 ½ cups of potatoes, cubed
  6. 1 cup of beer
  7. 1 cup of carrots, sliced thinly
  8. 1 cup of green cabbage, shredded
  9. 2 teaspoons of olive oil
  10. ½ teaspoon of pepper
Step Wise Instructions:
  1. In a small saucepan, combine sugar and water; bring to a boil and cook until sugar is dissolved, about 1 - 2 minutes. Let cool.
  2. Heat the olive oil in a non-stick saucepan over a medium-high heat.
  3. Sauté the chopped onion until golden (about 5 minutes).
  4. Add the lamb cubes and sauté for 5 minutes, stirring, until browned.
  5. Add the beer and pepper.
  6. Reduce heat to low; then cover and simmer for 30 minutes.
  7. Stir in the beef stock and gravy mix.
  8. Add the potato cubes and sliced carrots, cover and simmer until vegetables are tender
  9. Stir in the shredded cabbage and cook until the cabbage turns bright green (about 3 minutes).

Stir Fried Spinach

Tasty spinach flavor, easy to prepare, delicious
Total time to cook: 40 minutes
Serves: 6
Category: Chicken, lamb, side dishs
Ingredients:
  1. 2 cups of cubed cooked lamb
  2. 2 cups of chicken broth
  3. 2 medium onions, chopped
  4. 1 garlic clove, minced
  5. 2 tbsp of flour
  6. 1 tbsp of butter
  7. 1 tbsp of cooking oil
  8. 2 tsp of curry powder
  9. ½ teaspoon of cumin
Step Wise Instruction:
  1. In a suitably sized saucepan, heat the butter and the oil.
  2. Sauté the onions until they soften, then add the garlic and cook for one minute.
  3. Stir in the curry powder, cumin and flour; then cook for a few seconds.
  4. Whisk in the chicken broth and cook, stirring continuously, until thickened.
  5. Add the cooked lamb cubes and heat though.
  6. Serve with rice and traditional curry condiments.

Lamb Curry

I like this soup alot. Fresh lamb and a nice curry flavor… mmmm.
Total time to cook: 40 minutes
Serves: 4
Category: Spinach, side dish, onion
Ingredients:
  1. 2 medium sized bunch
  2. 2 tbsp oil
  3. 8 cloves garlic
  4. 1 medium sized onion
  5. 1 or 2 green chilies
  6. 1 small tomato
  7. 1 tsp coriander powder
  8. salt to taste
Step Wise Instruction:
  1. Wash the spinach and chop finely.
  2. Lightly heat oil in a non-stick pan.
  3. Add the crushed garlic and fry for few seconds till light brown.
  4. Add onions, green chilies and saute on a medium flame till pink.
  5. Add spinach and stir fry on a high flame till the water from the spinach dries completely.
  6. Add the chopped tomato and cook on a high flame for 5 minutes.
  7. Add salt and coriander powder and cook for 2 minutes.
  8. Serve hot with rotis.
