Ingredients:
2 Tsp Peanut Oil
2 ea Bell pepper
8 Oz Shitake or Conventional mushrooms, sliced
1 lb Ground Pork a
3/4 C Dry white rice
1 Can Chicken
3 Tb Soya Sauce
3/4 Tsp Salt
1/4 Tsp Pepper
4 ea Scallions
1 C Carrot
1/4 C Cilantro
2 Tb Fresh Lime juice
Step Wise Instructions:
In medium skillet heat 1 tsp oil and add peppers and mushrooms and cook them stirring occasionally until they are soft, about 5 minutes.
In a pot with a tight fitting lid, heat remaining oil and add meat.
Brown and spoon off any fat, if there is any and add the skillet ingredients to pot.
Add rice, broth, water, soy sauce, salt and pepper to the pot and bring to a boil.
Reduce heat, cover pot and simmer without removing lid until the rice is fully cooked about 15 to 20 minutes.
Stir in scallions, carrots, cilantro and lime juice and serve.

Everyone’s favorite - pasta and vegetables!!
Total time to cook:
30 minutes

Ingredients:
8 ounces spaghetti
2 cloves crushed garlic
2 tablespoons olive oil
1 onion, sliced into thin rings
2 cups broccoli florets
2 cups cauliflower florets
2 cups julienned carrots
2 skinless, boneless chicken breast halves - cut into bite-size pieces
salt to taste
ground black pepper to taste
2 tablespoons soy sauce
Step Wise Instructions:
Bring a large pot of water to a boil.
Cook spaghetti pasta in boiling water until al dente.
Drain.
Meanwhile, heat oil in a large skillet or wok over medium-high heat.
Cook garlic in oil for 1 minute.
Stir in onion, and cook until soft.
Stir in chicken, and cook until juices run clear.
Mix in the broccoli, cauliflower, and carrots, and cook for 2 to 5 minutes, stirring frequently.
Season with soy sauce, salt, and pepper.
Toss pasta with vegetables, and serve warm.

Ingredients:
1 pound chicken breast tenders
1/2 tsp salt
1/4 tsp freshly ground black pepper
1 tsp olive oil
1/2 cup sliced onion
1/2 cup seedless raspberry jam
1 tbsp red wine vinegar
1 tbsp low-sodium soy sauce
1 tsp bottled minced ginger
1/2 tsp dried rosemary
Step Wise Instructions:
Sprinkle chicken with salt and pepper.
Heat oil in a large nonstick skillet over medium-high heat.
Add onion and sauté 2 minutes.
Add chicken to pan; sauté 8 minutes or until chicken is done.
Remove onion and chicken from pan.
Add jam and remaining ingredients to pan; cook 2 minutes, stirring constantly with a whisk.
Return chicken mixture to pan.
Cook 4 minutes, stirring occasionally.

An exotic recipe for a special occasion, you could also use this on other meats.

Ingredients:
3 lb Salmon
1 ts Salt
2 Cucumbers; peeled and cut into strips
1 ts Pepper, black
1/2 ts Thyme
3 tb Butter
1 1/2 c Cream, light
3 Onion; sliced
3 Parsley sprigs
1 Garlic clove; quartered
1 Bay leaf
Step Wise Instructions:
Combine salt and pepper, and thyme then rub all over the salmon.
Melt butter in baking dish then add salmon and coat it with the butter.
Add light cream, onion slices, parsley, garlic, and bay leaf. Arrange cucumber strips around the salmon.
Bake it covered for 40 minutes or until centre bone can be removed easily.
Remove and discard bay leaf, onion, parsley and garlic before you serve..

This is a quick and delicious casserole of noodles, cheese and onion that is sure to become a family favorite.

Ingredients:
1 8 oz. pkg. broad egg noodles
1 1/2 lbs. ground beef
1 tsp. salt
1/4 tsp. pepper
1/4 tsp. garlic powder
1 8 oz. can tomato sauce
1 cup creamed cottage cheese
1 cup sour cream
6 green onions, chopped
1 cup sharp cheddar cheese, grated
Step Wise Instructions:
Cook noodles, rinse in cold water and drain.
Brown ground beef and drain off fat, then add salt, pepper, garlic powder and tomato sauce and simmer for 5 minutes.
In a large bowl, combine cottage cheese, sour cream, green onions and cooked noodles.
In buttered casserole, alternate layers of noodle mixture with meat mixture.
Top with grated cheese.
Bake at 350º F for 30 minutes

Preheat oven to 350 degrees.
Mix well in lightly greased 2-quart casserole.
Cover and bake 1 1/2 hours.

Ingredients:
1-1/2 pounds ground beef
1 can (8 ounces) tomato sauce
1 cup soft bread crumbs
1 egg
1 small onion, finely chopped
2 tbsp Worcestershire sauce
1 tsp dried thyme leaves, crushed
1/2 tsp garlic salt
1/4 tsp pepper
Topping:
1 tbsp packed brown sugar
1 tsp dry mustard
Step Wise Instructions:
Heat oven to 350°F. Measure 1/4 cup tomato sauce; combine with topping ingredients. Set aside.
Combine remaining tomato sauce with remaining meatloaf ingredients in large bowl, mixing lightly but thoroughly.
Shape beef mixture into 8 x 4-1/2-inch loaf on rack in broiler pan.
Spread topping over meatloaf.
Bake in 350°F oven 1 hour to medium (160°F) doneness, until not pink in center and juices show no pink color.
Let stand 10 minutes before cutting.
Cut into slices.

Ingredients:
3- 4 tsp of ginger paste
1-2 tsp red chili powder
½ tsp turmeric
½ pepper powder
1tsp fish masala
1-2 tsp salt
Step Wise Instructions:
Clean the pomfret by making a slit at the side and take out the intestines.
Wash with salt and turmeric.
Make few slits on both sides of the fish with knife.
Apply the paste all over the fish and allow to marinate for 1 hr in the fridge.
Heat the pan at low heat with 5-6 tsp of oil.
Once the oil gets hot add the fish and let it cook for 5 minutes.
Turn the fish to the other side and let to cook for another 5 minutes.
Do the process twice for each side and cook for about 20 minutes covered.
Be very careful while turning the fish, the fish can easily break into pieces, so handle with care.
Serve hot with rice

Remove from pan.
In the same skillet, bring vinegar to a boil.
Add chicken, tomatoes, basil, salt, pepper and remaining oil
Cook and stir until heated through.
Divide salad greens among six plates; top with chicken mixture.
