A quick summer time salad that everyone loves. Anytime I make it for someone new, they want the recipe.
Total time to cook:

Ingredients:
1 1/2 pound baccala
4 medium potatoes, quartered
1 clove garlic, minced
2 medium onions
1 tablespoon parsley, chopped
1/4 cup wine vinegar
1/2 cup oil
1 teaspoon salt
1/2 teaspoon pepper
1/2 stalk celery, chopped
Step Wise Instructions:
Cut baccala in 2 pieces. Soak in water for 2 days.
Change water twice a day.
Boil fish in 3 quarts of water together with onions and potatoes for about 30 to 40 minutes or until baccala is tender.
Strain and cool.
Place sliced baccala and potatoes on large platter.
Sprinkle salt, pepper, garlic, parsley, celery, oil and vinegar.
Mix gently.

A wonderful recipe for the entire family. This is a simple and healthy chicken, tomato recipe.

Ingredients:
1 tablespoon olive oil
4 chicken thighs
4 chicken drumsticks
2 tsp salt
1/2 tsp fresh-ground black pepper
2 ounces smoked ham, cut into 1/4-inch dice
1 small onion, chopped
2 cloves garlic, minced
1 red bell pepper, chopped
1 green bell pepper, chopped
1 3/4 cups canned tomatoes, drained and chopped
1 tbsp tomato paste
2 cups canned low-sodium chicken broth or homemade stock
1 cup rice, preferably long-grain
2 tbsp chopped fresh parsley
Step Wise Instructions:
In a large, deep frying pan, heat the oil over moderately high heat.
Season the chicken with 1/4 teaspoon each of the salt and pepper.
Cook the chicken, turning, until well browned, about 8 minutes in all. Remove.
Pour off all but 2 tablespoons of the fat from the pan.
Reduce the heat to moderately low.
Add the ham, onion, and garlic to the pan and cook, stirring occasionally, until the onion starts to soften, about 2 minutes.
Add the bell peppers and cook, stirring occasionally, until they start to soften, about 3 minutes longer.
Add the tomatoes, tomato paste, broth, and the remaining 1 3/4 teaspoons salt and 1/4 teaspoon of the pepper and bring to a simmer.
Stir in the rice and add the chicken in an even layer. Simmer, partially covered, over moderately low heat until the chicken and rice are just done, 20 to 25 minutes.
Sprinkle with parsley.

A quick chicken recipe that is great for a small snack. Server on a roll or over a bed of lettuce.

Ingredients:
1 whole cut up frying chicken
4 cups red sauce
3 cups shredded mozzarella
8 oz. sliced pizza pepperoni
2 cloves garlic sliced
1/2 cup parmesan cheese
1 green pepper chopped chunky
1 cup sliced zucchini
Step Wise Instructions:
Preheat oven to 350°.
In a small roaster sprayed with cooking spray, put 4 tbsp. olive oil, add garlic and chicken pieces meaty side down.
Bake covered for 30 minutes.
Turn pieces over and put 2 cups sauce on top, then the pepperoni, green pepper and zucchini.
Put last 2 cups sauce, parmesan cheese and mozzarella on top.

Ingredients:
2 1/2 c. cubed cooked chicken
2 c. sliced celery
1 med. green pepper, chopped
1 can condense cream of chicken soup
1 can sliced water chestnuts, drained
1 can mushroom pieces, drained
1 jar diced pimento, drained
2 tsp. soy sauce
1/4 c. chopped cashews
1 c. chow mien noodles
Step Wise Instructions:
Combine chicken, celery, green pepper, soup, water chestnuts, mushrooms, pimento and soy sauce in 2-quart casserole; mix well.
Cover with casserole lid.
Microwave (high) 7 to 8 minutes or until heated through, stirring once.
Add cashews and chow mein noodles; mix lightly.
Microwave (high) uncovered 2 1/2 to 3 minutes or until heated through.
You may wish to substitute turkey or another favorite cooked meat or fish for the chicken.
Save a few chow mein noodles to use for a garnish.

Crawfish Dip is a soft, creamy cheese. Baked, it makes a great dip!

Ingredients:
2 1/2 pounds craw fish Tails
2 tsp seafood seasoning
1 package cream cheese
1/4 cup mayonnaise
1 tsp horseradish
2 tsp Worcestershire sauce
1/2 teaspoon garlic powder
1 tsp onion powder
2 tsp lemon juice
Salt and Hot Sauce to taste
Step Wise Instructions:
Steam crawfish tails in double boiler with seafood seasoning.
Reserve juice, set aside.
Place in food processor or blender, the cream cheese, mayonnaise, horseradish, Worcestershire, garlic, onion powder, lemon juice, salt and hot sauce.
Blend until well-mixed.
Add crawfish.
Add juice until it is a good spreading consistency.
Serve with crackers.

Your guests will love this creamy Beef noodles. Try our Pleasing pot roast.
Total time to cook:

Ingredients:Roast
3-4 lb bottom round roast
2 large onions, peeled
Salt and pepper
Extra virgin olive oil
16 oz wide egg noodles
Gravy:
12 ginger snaps
4 brown gravy packs
Step Wise Instructions:
Salt and pepper the roast all over. Put 2-3 tbsp of olive oil in a large pot.
Place roast in pot and brown on all sides to seal in flavor. Pour warm water in pot until top of roast is just covered.
Add onions and simmer for 2 1/2 hours, stirring occasionally.
After roast has cooked for 2 1/2 hours, take onions and roast out of water and let cool on a platter while you mix gravy.
Let 1/2 the ginger snaps dissolve in a small glass with water . Add 4 brown gravy packs to roast water and whisk until thickened.
Add ginger snaps.
Dissolve other 6 ginger snaps in same amount of water and add it to gravy and whisk.
Cut roast into thin slices and layer them in gravy.
Add onions back to mixture.
Let it refrigerate overnight. Simmer for another 2 hours the next day. Serve over egg noodles.

This is an easy, but elegant baguette rolls accented with pine nuts and roasted beef.

Ingredients: Crust
1 small baguette
1 tablespoon Dijon mustard
6 slices lean roast beef
6 leaves oak leaf lettuce
½ cup (75g) char grilled capsicum
Step Wise Instructions:
Halve baguette lengthways. Remove some of soft centre.
Spread mustard evenly over bread cavity.
Layer beef, lettuce and capsicum in bread cavity until full.
Replace top.
Cut baguette in half then wrap firmly in baking paper and secure with string

Another snack mix recipe that makes a great informal party recipe.

Ingredients: Crust
1 lb. white crab meat
1 lg. onion, chopped fine
6 sprigs celery, chopped fine
4 tbsp. butter
1 tbsp. Worcestershire sauce
Salt and pepper to taste
1 tsp. hot sauce
12 soda crackers, finely crushed
1/2 tsp. oregano
1 c. water
1 tbsp. chopped pepper
1 tbsp. chopped pimento
Step Wise Instructions:
Saute onions and celery in butter until almost done.
Stir in seasonings and crab meat; mix well over low flame.
Add cracker crumbs and water, blending thoroughly.
Put in baking casserole, top with buttered crumbs, and bake at 350 degrees for 30 minutes, or until brown.

Combine and moisten all of the ingredients with hot water.
Stuff the turkey, or bake in a buttered pan.

1/4 c. yellow cornmeal
1 tsp. chili powder
1 1/2 tsp. dry mustard
1/4 tsp. salt
1/8 tsp. pepper
1/2 c. milk
1 egg
1/4 c. flour
1 1/2 c. tomatoes
1/4 c. shortening
Step Wise Instructions:
Combine meat, onion, green pepper, cornmeal, seasonings, milk and egg.
Blend thoroughly.
Form into 12 balls, roll in flour and brown in hot shortening.
Add remaining flour and tomatoes.
Cover and bake in 450 degree oven for 35 minutes.
