Mexican Dinner

Mexican Dinner

Not the same old dinner that you find at parties. This is wonderful to share with others.
 
Total time to cook: 45 minutes
Serves: 4
Category: Dinner, tomatoes, rice
Ingredients:
  1. 1 pkg. Spanish rice mix
  2. 1lb ground beef
  3. 1 jar salsa (to taste and consistency)
  4. Shredded cheese
  5. Chopped onion
  6. Water
  7. 1 can chopped tomatoes (as needed)
  8. Corn to taste
  9. Bell pepper to taste
  10. Garlic
  11. Cumin
  12. Chili powder
  13. Hot sauce to taste
  14. Sour cream
Step Wise Instructions:
  1. Cook rice mix according to directions.
  2. Cook and crumble ground beef until done. Drain.
  3. If you like onions, bell pepper or corn, saute them.
  4. Add ground beef to rice. Add spices and veges to taste.
  5. Add enough salsa and/or canned tomatoes to make it as saucy as you’d like.
  6. Sprinkle with cheese.
  7. Serve with a dollop of sour cream.

Mexican Hot Cocoa

Hot cocoa is the perfect beverage on a cold winter day, especially with a touch of Grand Marnier - add as little or as much as you like!

 
Total time to cook: 20 minutes

Ingredients:
  1. 3 to 4 tbsp granulated sugar
  2. 3 tbsp Baking Cocoa
  3. 1/4 tsp ground cinnamon
  4. 2 1/3 cups milk
  5. 1/2 tsp vanilla extract
Step Wise Instructions:
  1. In a large saucepan, combine pineapple-grapefruit juice, sugar and candies.
  2. Bring to a boil and stir until candies dissolve.
  3. Cool until time to serve, stirring occasionally, to completely dissolve candies.
  4. Add ginger ale just before serving

Mexican Fondue

Mexican fondue the combination of mexican oregano and cheese .This delicious cheese recipe is easy to make. Try our mexican fondue .
 
Total time to cook: 50 minutes
Serves: 5

Ingredients:
  1. 1 onion chopped
  2. 5 T. butter
  3. 2 16 oz. can crushed tomatoes
  4. salt to taste
  5. 6 drops Tabasco sauce
  6. 1 t. Mexican oregano
  7. 2 T. flour
  8. 1/2 C. evaporated milk
  9. 1 C. cheddar cheese shredded
Step Wise Instructions:
  1. Saute onions in 3 T. butter.
  2. Add tomatoes and simmer for 1 hour.
  3. Add salt, oregano and Tabasco .
  4. Mix flour and butter together.
  5. Stir into tomato mixture.
  6. Stir in evaporated milk. Just before serving add cheese.
  7. Let it melt, but do not boil.
  8. Serve in a fondue pot with taco chips.

Rice with Seafood

This is a super quick version of seafood rice that makes a great side dish for informal gatherings

Total time to cook: 45 minutes
Serves: 6

Ingredients: Crust
  1. 2 dozens of squid
  2. 2 dozens small scallops
  3. 2 dozens of mussels
  4. 2 dozens machos
  5. 2 medium red peppers cut in strips
  6. 3 tablespoons of oil
  7. ½ cup of cooked green peas
  8. 2 Medium onions finely chopped
  9. 2 tbsp yellow hot pepper sauce
  10. 2 tablespoons of garlic, ground
  11. 2 tomatoes peeled and cut in pieces
  12. 3 tablespoons coriander, ground
  13. 4 cups rice
  14. 4 ½ cups of water
Step Wise Instructions:
  1. Boil and clean the seafood, Heat the oil and fry the onions until golden, add garlic, yellow hot peppers, tomatoes, salt and pepper.
  2. Stir and add the cariander and 4 1/2 cups of water.
  3. Put in the seafood and bring to the boil then add the rice, peas and strips of red pepper.
  4. Simmer until the rice is cooked.

Mexicali Meatballs

A colorful and flavorful way to spice up meat or rice dishes.
Total time to cook: 45 minutes
Serves: 4

Ingredients:
  1. 1 lb. ground round
  2. 5 tbsp. chopped onion
  3. 2 tbsp. chopped green pepper
  4. 1/4 c. yellow cornmeal
  5. 1 tsp. chili powder
  6. 1 1/2 tsp. dry mustard
  7. 1/4 tsp. salt
  8. 1/8 tsp. pepper
  9. 1/2 c. milk
  10. 1 egg
  11. 1/4 c. flour
  12. 1 1/2 c. tomatoes
  13. 1/4 c. shortening
Step Wise Instructions:
  1. Combine meat, onion, green pepper, cornmeal, seasonings, milk and egg.
  2. Blend thoroughly.
  3. Form into 12 balls, roll in flour and brown in hot shortening.
  4. Add remaining flour and tomatoes.
  5. Cover and bake in 450 degree oven for 35 minutes.

Mexican corn casserole

An international twist on a favorite! Mexican corn casserole is inexpensive to make. It’s even better the next day, which is perfect for this college student on a tight budget!
Total time to cook: 30 minutes
Serves: 4

Ingredients:
  1. 1 cn Corn with red and green
  2. Peppers drained
  3. 1 cn Corn, cream-style
  4. 2 tb Peanut oil
  5. 1 ts Sesame oil
  6. 1 lg Garlic clove crushed
  7. 1 ts Fresh ginger root grated
  8. 1 1/2 lb Vegetables sliced
  9. 1/2 c Light stock or hot water
  10. 1 tb Oyster sauce
  11. 2 ts Soy sauce, low sodium
  12. 1/2 ts Salt
  13. 1/2 ts Monosodium glutamate
  14. 2 ts Cornstarch
  15. 1 tb Cold water
Step Wise Instruction:
  1. Heat oils in wok with garlic and ginger, add vegetables and fry, stirring, for 2 minutes.
  2. Add hot water or stock and sauces, salt and Monosodium mixed together.
  3. Cover and simmer for 4 minutes.
  4. Push vegetables
  5. to side of wok, add cornstarch mixed with cold water, stir until thick.
  6. Toss vegetables in sauce and serve immediately with boiled rice.

Mexican Appetizer

This recipe is a great as an appetizer or just an afternoon snack.
Total time to cook: 45 minutes

Ingredients:
  1. 4 dozen tortilla chip rounds
  2. 2 cans(8 ounces each) bean dip
  3. sliced nacho-style jalapeno rings
  4. 3/4 cup chili sauce
  5. 12 slices cheese, cut in quarters
  6. guacamole
Step Wise Instructions:
  1. Preheat oven to 350°. Arrange tortilla chips in one layer on baking sheets. On each tortilla chip round, spread bean dip.
  2. Place a jalapeno ring or two on the bean dip.
  3. Drizzle a little salsa or chili sauce over the top and place a cheese slice on each.
  4. Bake until cheese melts, about 10 to 15 minutes.
  5. Top each with a small dollop of guacamole.
  6. Makes about 4 dozen appetizers.

Linguine Frittata

Ingredients:
  1. 8 ounces uncooked linguine
  2. 3 tablespoons olive oil, divided
  3. 1 cup chopped carrots
  4. ¼ cup chopped onion
  5. 2 cloves garlic, minced
  6. ½ pound asparagus, cut into 1-inch pieces
  7. 1 large red bell pepper, diced
  8. 1 medium tomato, seeded and chopped
  9. 1 teaspoon dried basil
  10. 1 teaspoon dried marjoram
  11. 1 teaspoon dried oregano
  12. 5 eggs
  13. ¼ cup grated Parmesan cheese
  14. ½ teaspoon salt
  15. ¼ teaspoon black pepper
Step Wise Instructions:
  1. Cook linguine according to package directions. Drain in colander.
  2. Place in large bowl.
  3. Heat 1 tablespoon oil in large skillet over medium heat until hot.
  4. Add carrots, onion and garlic; cook and stir 5 minutes or until carrots are crisp-tender.
  5. Add asparagus, bell pepper, tomato, basil, marjoram and oregano; cook and stir 5 minutes or until asparagus is crisp-tender.
  6. Add vegetable mixture to linguine in bowl; mix well.
  7. Beat eggs in medium bowl with wire whisk until frothy.
  8. Stir in cheese, salt and black pepper; pour over linguine mixture and toss.
  9. Heat remaining 2 tablespoons oil in 12-inch nonstick skillet over medium heat until hot. Add linguine mixture, spreading evenly. Reduce heat to low.
  10. Cook 5 minutes or until browned on bottom.
  11. Place large rimless plate over skillet; invert frittata onto plate.
  12. Slide frittata back into skillet.
  13. Cook 5 minutes more or until browned on bottom and eggs are set.
  14. Slide frittata onto serving plate.
  15. Cut into wedges.

Spicy Greens

A wonderful side dish at our table. This recipe can be spiced up a little if you like with chiles that are more than mild.
Total time to cook: 30 minutes
Serves: 4

Ingredients:
  1. 500 gm fresh spinach
  2. 1 Tbsp peanut oil
  3. 1/2 large onion, coarsely chopped
  4. 1 large tomato, chopped into small pieces
  5. 1/2 small lemon, sliced thin
  6. Fresh ground pepper to taste
  7. Tbsp curry powder, or to taste
Step Wise Instructions:
  1. Wash the spinach thoroughly.
  2. Cook in a saucepan over low heat about 5 minutes; do not add water.
  3. Collard greens or kale may take 7 - 10 minutes.
  4. Heat the oil in a skillet and saut e the onion and tomato for 4 - 5 minutes.
  5. Add the cooked greens, lemon slices, and seasonings; stir constantly for a few minutes.
  6. Serve hot.

Egg Noodles

Egg Noodles

This recipe adds a little extra flavor to your Thanksgiving stuffing recipe. We like this recipe.
 
Total time to cook: 55 minutes
Serves: 4

Ingredients:
  1. 1 packet plain noodles
  2. 1 egg
  3. 1 onion
  4. 2 tablespoons tomato juice
  5. 1 teaspoon ginger garlic paste
  6. 1 teaspoon pepper powder
  7. 1 teaspoon chilly powder
  8. ½ teaspoon garam masala(hot spice mix)
  9. 1 tablespoon oil and salt to taste
Step Wise Instructions:
  1. Slice the onion into small pieces and keep it aside. Now take a big pot and pour ½ liter water into it.
  2. Bring it to boil. When it is boiling add the noodles to it and then cook for three to five minutes.
  3. When the noodles are done remove from lame and drain all the water.
  4. Now take a frying pan and heat a little oil in it.
  5. When the oil is very hot add the onions and sauté till golden brown.
  6. Now add the ginger garlic paste, pepper powder, chilly powder, garam masala and fry briefly.
  7. Add the egg and scramble it till all the ingredients blend well with it.
  8. Pour in the tomato juice and cook for a minute.
  9. Sprinkle salt to taste and then add the noodles.
  10. Mix it all up and then remove from flame.
  11. Garnish with fried onions and serve.
