Buttermilk Coffee Cake

A luxurious dessert with a sinful blend of chocolate, cinnamon, fruits and coffee.
 
Total time to cook: 1 hours
Serves: 7

Ingredients:
  1. 1 2/3 c flour
  2. 4 t baking powder
  3. pinch salt
  4. ½ c white sugar
  5. ¾ t cinnamon
  6. ¾ c rolled oats
  7. ¼ c finely chopped
  8. 1 large egg
  9. 1 c buttermilk
  10. 3 T butter, melted
  11. 1 t vanilla
  12. 1 c fresh or frozen fruit (blueberries, apricots, cranberries, raisins, chopped apples…)
  13. 3 T brown sugar
  14. 1 T butter, softened
Step Wise Instructions:
  1. Preheat oven to 400º.
  2. Sift the flour, baking powder, salt, white sugar, and ½ t cinnamon together. Stir in ½ c oats and the chopped nuts.
  3. Beat egg, buttermilk, melted butter, and vanilla together.
  4. Gradually stir contents of bowl 2 into bowl 1, mixing only enough to combine the wet and dry. Fold in the fruit.
  5. Butter the baking dish, and spread the batter into it.
  6. Combine ¼ c oats, brown sugar, ¼ t cinnamon, and softened butter and stir until crumbly. Sprinkle over coffee cake.
  7. Bake for 40 minutes, until golden brown and done in the middle.

Barbecued Pecans

This is the easiest recipe ever, with yummy bits of pecans!

 
Total time to cook: 1 hours
Serves: 7

Ingredients:
  1. 2 tablespoons butter
  2. 1/4 cup Worcestershire sauce
  3. 1 tablespoon ketchup
  4. 2 dashes hot sauce
  5. 4 cups pecan halves
Step Wise Instructions:
  1. Melt butter in large saucepan or skillet.
  2. Add Worcestershire sauce, ketchup and hot sauce.
  3. Add pecan halves, stirring to coat well.
  4. Spoon into a lightly greased glass or nonstick baking dish; spread out in an even layer.
  5. Toast at 400° about 15 to 20 minutes, stirring frequently.
  6. Turn out on paper towels and sprinkle with salt.

My family loves desserts, especially when it’s homemade. I’ve never found as recipe as easy as this one with cashews and butter !
 
Total time to cook: 1 hours

Ingredients:
  1. 70 GMS. Flour
  2. 35 GMS. Powdered sugar
  3. 50 GMS. Butter
  4. 50 GMS. Chopped Cashews
  5. 1 tsp. Vanilla essence
  6. 1 tbsp. Milk
Step Wise Instructions:
  1. Cream butter and sugar together until light and fluffy.
  2. Add the vanilla essence.
  3. 2.Seive the flour and fold into the butter.
  4. Add milk for consistency.
  5. Dust the table top/work area and roll the dough into a cylindrical shape and cut into equal round pieces.
  6. Then wet the top of each cookie with milk and put chopped cashew on each.
  7. Bake at 200 C for 15 minutes.

Artichoke Spinach Pizza

The perfect pizza for your New Year’s Eve or any other holiday party!

Total time to cook: 45 minutes

Ingredients:
  1. 1 cup part-skim ricotta cheese
  2. 1/4 cup thinly sliced green onions
  3. 1/4 tsp bottled minced garlic
  4. 1/4 tsp dried oregano
  5. 1/8 tsp black pepper
  6. 1 package frozen chopped spinach, thawed and drained
  7. 1 Italian cheese-flavored pizza crust
  8. 1 can quartered artichoke hearts, drained
  9. 2/3 cup grated sharp provolone or shredded part-skim mozzarella cheese
Step Wise Instructions:
  1. Preheat oven to 450°.
  2. Combine the first 5 ingredients in a medium bowl.
  3. Stir in spinach. Place pizza crust on a baking sheet.
  4. Spread spinach mixture over pizza crust, leaving a 1/2-inch border; top with artichokes and cheese.
  5. Bake at 450° for 13 minutes or until cheese melts.

I like to serve restaurant-style pasta dishes when we have company. They’re easy to make, but they’re so good my guests think I was cooking all day.

Total time to cook: 40 minutes
Serves: 5

Ingredients:
  1. 12 oz. fettuccine, cooked, drained
  2. 1 oz. Smoked Cooked Ham, finely sliced
  3. 1 tsp. olive oil
  4. 1/2 lb. Cheese
  5. 1/4 cup skim milk
  6. 1 pkg. frozen artichoke hearts, thawed, drained, chopped
  7. 1/2 cup frozen green peas, thawed, drained
  8. 1/2 cup seeded chopped tomato
  9. 1 tsp. dried basil leaves
Step Wise Instructions:
  1. Toss pasta with ham and oil.
  2. Stir cheese and milk in saucepan on low heat until smooth.
  3. Add remaining ingredients; cook until thoroughly heated.
  4. Pour over pasta mixture.

Pepperoni Chicken

A quick chicken recipe that is great for a small snack. Server on a roll or over a bed of lettuce.

Ingredients:
  1. 1 whole cut up frying chicken
  2. 4 cups red sauce
  3. 3 cups shredded mozzarella
  4. 8 oz. sliced pizza pepperoni
  5. 2 cloves garlic sliced
  6. 1/2 cup parmesan cheese
  7. 1 green pepper chopped chunky
  8. 1 cup sliced zucchini
Step Wise Instructions:
  1. Preheat oven to 350°.
  2. In a small roaster sprayed with cooking spray, put 4 tbsp. olive oil, add garlic and chicken pieces meaty side down.
  3. Bake covered for 30 minutes.
  4. Turn pieces over and put 2 cups sauce on top, then the pepperoni, green pepper and zucchini.
  5. Put last 2 cups sauce, parmesan cheese and mozzarella on top.

Cowboy Pie

A wonderful tasting pie recipe. Cowboy pie - Easy, quick and tasty pie.

Total time to cook: 40 minutes

Ingredients:
  1. 1 tin of hotdogs
  2. 4 or 5 medium to large potatoes
  3. 2 medium tins of baked beans
  4. cheese
Step Wise Instructions:
  1. Peel, chop potatoes, put in pan with water, bring to boil them simmer till potatoes are soft.
  2. When potatoes are nearly cooked put beans on a gentle simmer.
  3. Chop hotdogs into bite sized chunks, no need to cook these first.
  4. Drain and mash potatoes.
  5. Put beans and chopped hotdogs into suitable sized casserole dish.
  6. Spread mashed potatoes onto beans and sausages.
  7. Sprinkle grated cheese on top.
  8. Put under hot grill till cheese bubbles and browns.

A fun and easy recipe with handfuls of treats. Easy to change dry ingredients around to meet your tastes

Total time to cook: 1 hour

Ingredients:
  1. 2 packages active dry yeast
  2. 1 3/4 cups warm water
  3. 2 cups bread flour
  4. 2 cups whole wheat flour
  5. 1 egg white
Step Wise Instructions:
  1. Dissolve yeast in warm water.
  2. Add one cup of bread flour and one cup whole wheat flour.
  3. Mix until smooth. Keep adding flour, and mix until very hard to mix.
  4. Take dough out on a floured surface, and knead until dough is smooth and not sticky.
  5. Roll into a ball. Place into a greasy bowl.
  6. Cover, and let it rise in a warm place until doubled say for 2 hours.
  7. Divide into equal balls. Place on cookie sheets, and flatten them.
  8. Allow to rise for another 1 to 2 hours. If desired, brush with egg white.
  9. Bake in a preheated 375 degree F (190 degree C) oven for 40 to 50 minutes.
  10. When done remove from oven, and let cool.
  11. Cut a circle out of the top of each loaf, and compress it to form a bowl.

Ingredients:
  1. 1 package active dry yeast
  2. 1/4 cup warm water
  3. 1 cup milk
  4. 1/3 cup vegetable oil
  5. 1/4 cup mashed potatoes
  6. 1 egg
  7. 3 tablespoons sugar
  8. 1-1/2 teaspoons salt
  9. 3-1/2 cups all-purpose flour
Filling:
  1. 1 cup sour cream
  2. 1 cup minced fresh or frozen chives
  3. 1 egg yolk
  4. Butter or margarine, melted
Step Wise Instructions:
  1. In a bowl, dissolve yeast in water. In a saucepan, heat milk, oil and mashed potatoes to 110 -115 F.
  2. Transfer to a mixing bowl; add yeast mixture, egg, sugar and salt.
  3. Add enough flour to make a soft dough.
  4. Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes.
  5. Place in a greased bowl; turn once to grease top.
  6. Cover and let rise in a warm place until doubled, about 1 hour.
  7. Turn dough onto a floured surface.
  8. Roll into a 15-in. x 10-in. rectangle. In a bowl, combine sour cream, chives and egg yolk.
  9. Spread over dough to within 1/2 in. of edges.
  10. Roll up jelly-roll style, starting with a long side; pinch seam to seal.
  11. Cut into 1-in. slices.
  12. Place cut side down in a quarter sheet baking pan (13″ x 9″ x 2″).
  13. Cover and let rise until doubled, about 1 hour.
  14. Bake at 350 F for 30-35 minutes or until golden brown.
  15. Brush with butter.
  16. Cool on a wire rack.
  17. Refrigerate leftovers.

This is a quick & delicious casserole of nutmeg, Macintosh apple and cinnamon that is sure to become a family favorite.

  1. 1/2 cup butter
  2. 1 lb. pkg. egg noodles
  3. 4 large Macintosh apples
  4. 4 eggs - beaten
  5. 1 cup packed brown sugar
  6. 1 cup golden raisins
  7. 1 Tbls. lemon juice
  8. 2 tsp. ground cinnamon
  9. 1 dash grated nutmeg
Step Wise Instructions:
  1. Pour melted butter into a 9″ X 13″ X 2″ baking dish and coat bottom of dish evenly.
  2. Combine remaining ingredients and pour into baking dish.
  3. Bake in a 375 degree oven for 45 minutes
