Ingredients:
- 6 potatoes - sliced
- 1 large onion -sliced
- 2 carrots- sliced
- 1 green pepper — sliced
- 1 zucchini - sliced
- 1 cup corn, frozen or fresh
- 1 cup peas, frozen or freshOptional Vegetables:
- mushrooms
- broccoli
- green beans

Sauce:
- 2 1/2 cups tomato sauce
- 1/4 cup tamari, low-sodium
- 1 tsp thyme- ground
- 1 tsp dry mustard
- 1 tsp basil
- 2 tsp chili powder
- 1/2 tsp cinnamon
- 1/8 tsp sage
- 2 Tbsp parsley flakes

Step Wise Instructions:
- Layer vegetables in large casserole in order given.
- Mix together ingredients for sauce and pour over vegetables.
- Cook six hours at high or 12 at low.

A little different, but these Mushrooms make a wonderful party snack
|
| |
| Total time to cook: |

Ingredients:
- 4 large field mushrooms
- ½ teaspoon crushed garlic
- 1 tbsp olive oil
- 1 400g can chick peas, drained
- 1 roma tomato, diced
- 1 small onion, diced
|
|
Step Wise Instructions:
- Preheat non stick frying pan over low - medium heat.
- Mix olive oil and garlic together and brush all over mushrooms.
- Place mushrooms in pan and cook each side until golden brown (about 2 minutes each side). Set aside.
- In the same pan, add onion, cook until golden brown, add roma tomato and chickpeas and cook for about 2 minutes.
- Serve chickpea mixture on top of mushrooms and serve immediately.

Ingredients:
- 1 tin of hotdogs
- 4 or 5 medium to large potatoes
- 2 medium tins of baked beans
- cheese
|

Step Wise Instructions:
- Peel, chop potatoes, put in pan with water, bring to boil them simmer till potatoes are soft.
- When potatoes are nearly cooked put beans on a gentle simmer.
- Chop hotdogs into bite sized chunks, no need to cook these first.
- Drain and mash potatoes.
- Put beans and chopped hotdogs into suitable sized casserole dish.
- Spread mashed potatoes onto beans and sausages.
- Sprinkle grated cheese on top.
- Put under hot grill till cheese bubbles and browns.

Ingredients:Roast
- 3-4 lb bottom round roast
- 2 large onions, peeled
- Salt and pepper
- Extra virgin olive oil
- 16 oz wide egg noodles
|

Gravy:
- 12 ginger snaps
- 4 brown gravy packs
|
|
Step Wise Instructions:
- Salt and pepper the roast all over. Put 2-3 tbsp of olive oil in a large pot.
- Place roast in pot and brown on all sides to seal in flavor. Pour warm water in pot until top of roast is just covered.
- Add onions and simmer for 2 1/2 hours, stirring occasionally.
- After roast has cooked for 2 1/2 hours, take onions and roast out of water and let cool on a platter while you mix gravy.
- Let 1/2 the ginger snaps dissolve in a small glass with water . Add 4 brown gravy packs to roast water and whisk until thickened.
- Add ginger snaps.
- Dissolve other 6 ginger snaps in same amount of water and add it to gravy and whisk.
- Cut roast into thin slices and layer them in gravy.
- Add onions back to mixture.
- Let it refrigerate overnight. Simmer for another 2 hours the next day. Serve over egg noodles.

- 1 cup frozen tiny peas, thawed rinsed and drained
- 1/4 cup diced celery
- 1 tbsp sweet red onion

- 1 tbsp low fat sour cream
- 1/4 tbsp fresh dill
- 2 tsp sugar

- Combine all the ingredients
- Refrigerate for two hours before serving.

Ingredients:
- 500 gm fresh spinach
- 1 Tbsp peanut oil
- 1/2 large onion, coarsely chopped
- 1 large tomato, chopped into small pieces
- 1/2 small lemon, sliced thin
- Fresh ground pepper to taste
- Tbsp curry powder, or to taste

Step Wise Instructions:
- Wash the spinach thoroughly.
- Cook in a saucepan over low heat about 5 minutes; do not add water.
- Collard greens or kale may take 7 - 10 minutes.
- Heat the oil in a skillet and saut e the onion and tomato for 4 - 5 minutes.
- Add the cooked greens, lemon slices, and seasonings; stir constantly for a few minutes.
- Serve hot.

Ingredients:
- 1 can chickpeas rinsed and drained
- 1 cup shredded carrots
- 1/3 cup seasoned dry bread crumbs
- 2 tablespoons creamy Italian salad dressing
- 1 egg
- 2 tablespoons vegetable oil
|
|
Step Wise Instructions:
- Mash chickpeas coarsely in medium bowl with hand potato masher, leaving some larger pieces.
- Stir in carrots, bread crumbs, dressing and egg.
- Shape chickpea mixture into 4 patties.
- Heat oil in large nonstick skillet over medium-high heat.
- Add patties; cook 3 minutes per side or until well browned.
- Remove from skillet; drain on paper towels.
- Serve immediately.
