Layered Dinner

Not the same old dinners that you find at parties. This recipe is wonderful to share with others
 
Total time to cook: 45 minutes
Serves: 5
Category: Peas , cinnamon , broccoli , beans recipe
Ingredients:
  1. 6 potatoes - sliced
  2. 1 large onion -sliced
  3. 2 carrots- sliced
  4. 1 green pepper — sliced
  5. 1 zucchini - sliced
  6. 1 cup corn, frozen or fresh
  7. 1 cup peas, frozen or freshOptional Vegetables:
  8. mushrooms
  9. broccoli
  10. green beans

Sauce:
  1. 2 1/2 cups tomato sauce
  2. 1/4 cup tamari, low-sodium
  3. 1 tsp thyme- ground
  4. 1 tsp dry mustard
  5. 1 tsp basil
  6. 2 tsp chili powder
  7. 1/2 tsp cinnamon
  8. 1/8 tsp sage
  9. 2 Tbsp parsley flakes
Step Wise Instructions:
  1. Layer vegetables in large casserole in order given.
  2. Mix together ingredients for sauce and pour over vegetables.
  3. Cook six hours at high or 12 at low.

Field Mushroom

Field Mushroom

A little different, but these Mushrooms make a wonderful party snack

 
Total time to cook: 30 minutes
Serves: 8
Category: Peas, lunch, tomato
Ingredients:
  1. 4 large field mushrooms
  2. ½ teaspoon crushed garlic
  3. 1 tbsp olive oil
  4. 1 400g can chick peas, drained
  5. 1 roma tomato, diced
  6. 1 small onion, diced
Step Wise Instructions:
  1. Preheat non stick frying pan over low - medium heat.
  2. Mix olive oil and garlic together and brush all over mushrooms.
  3. Place mushrooms in pan and cook each side until golden brown (about 2 minutes each side). Set aside.
  4. In the same pan, add onion, cook until golden brown, add roma tomato and chickpeas and cook for about 2 minutes.
  5. Serve chickpea mixture on top of mushrooms and serve immediately.

Cowboy Pie

A wonderful tasting pie recipe. Cowboy pie - Easy, quick and tasty pie.

Total time to cook: 40 minutes
Serves: 5
Category: Side dish, hotdogs, pie, beans
Ingredients:
  1. 1 tin of hotdogs
  2. 4 or 5 medium to large potatoes
  3. 2 medium tins of baked beans
  4. cheese
Step Wise Instructions:
  1. Peel, chop potatoes, put in pan with water, bring to boil them simmer till potatoes are soft.
  2. When potatoes are nearly cooked put beans on a gentle simmer.
  3. Chop hotdogs into bite sized chunks, no need to cook these first.
  4. Drain and mash potatoes.
  5. Put beans and chopped hotdogs into suitable sized casserole dish.
  6. Spread mashed potatoes onto beans and sausages.
  7. Sprinkle grated cheese on top.
  8. Put under hot grill till cheese bubbles and browns.

Pleasing Pot Roast

Your guests will love this creamy Beef noodles. Try our Pleasing pot roast.

Total time to cook: 30 minutes
Serves: 5
Category: roast, egg , noodles, beef
Ingredients:Roast
  1. 3-4 lb bottom round roast
  2. 2 large onions, peeled
  3. Salt and pepper
  4. Extra virgin olive oil
  5. 16 oz wide egg noodles
Gravy:
  1. 12 ginger snaps
  2. 4 brown gravy packs
Step Wise Instructions:
  1. Salt and pepper the roast all over. Put 2-3 tbsp of olive oil in a large pot.
  2. Place roast in pot and brown on all sides to seal in flavor. Pour warm water in pot until top of roast is just covered.
  3. Add onions and simmer for 2 1/2 hours, stirring occasionally.
  4. After roast has cooked for 2 1/2 hours, take onions and roast out of water and let cool on a platter while you mix gravy.
  5. Let 1/2 the ginger snaps dissolve in a small glass with water . Add 4 brown gravy packs to roast water and whisk until thickened.
  6. Add ginger snaps.
  7. Dissolve other 6 ginger snaps in same amount of water and add it to gravy and whisk.
  8. Cut roast into thin slices and layer them in gravy.
  9. Add onions back to mixture.
  10. Let it refrigerate overnight. Simmer for another 2 hours the next day. Serve over egg noodles.

Simple homemade mayonnaise and peas jerky!

Ingredients:
  1. 1 cup frozen tiny peas, thawed rinsed and drained
  2. 1/4 cup diced celery
  3. 1 tbsp sweet red onion
  4. 1 tbsp lite mayonnaise
  5. 1/4 tbsp Worcestershire sauce
  6. 1 tbsp low fat sour cream
  7. 1/4 tbsp fresh dill
  8. 2 tsp sugar
Step Wise Instructions:
  1. Combine all the ingredients
  2. Refrigerate for two hours before serving.

Spicy Greens

A wonderful side dish at our table. This recipe can be spiced up a little if you like with chiles that are more than mild.
Total time to cook: 30 minutes
Serves: 4
Category: healthy, side dish, tomatoes
Ingredients:
  1. 500 gm fresh spinach
  2. 1 Tbsp peanut oil
  3. 1/2 large onion, coarsely chopped
  4. 1 large tomato, chopped into small pieces
  5. 1/2 small lemon, sliced thin
  6. Fresh ground pepper to taste
  7. Tbsp curry powder, or to taste
Step Wise Instructions:
  1. Wash the spinach thoroughly.
  2. Cook in a saucepan over low heat about 5 minutes; do not add water.
  3. Collard greens or kale may take 7 - 10 minutes.
  4. Heat the oil in a skillet and saut e the onion and tomato for 4 - 5 minutes.
  5. Add the cooked greens, lemon slices, and seasonings; stir constantly for a few minutes.
  6. Serve hot.

Chickpea Patties

Yams for the holiday season are required in our household. A must for Thanksgiving as well as Christmas
 
Total time to cook: 20 minutes
Serves: 4
Category: dinner, non veg, egg, peas
Ingredients:
  1. 1 can chickpeas rinsed and drained
  2. 1 cup shredded carrots
  3. 1/3 cup seasoned dry bread crumbs
  4. 2 tablespoons creamy Italian salad dressing
  5. 1 egg
  6. 2 tablespoons vegetable oil
Step Wise Instructions:
  1. Mash chickpeas coarsely in medium bowl with hand potato masher, leaving some larger pieces.
  2. Stir in carrots, bread crumbs, dressing and egg.
  3. Shape chickpea mixture into 4 patties.
  4. Heat oil in large nonstick skillet over medium-high heat.
  5. Add patties; cook 3 minutes per side or until well browned.
  6. Remove from skillet; drain on paper towels.
  7. Serve immediately.
