I love to serve this Molasses Tossed Potatoes around the holidays.
Total time to cook:

Ingredients:
Nonstick cooking spray
2-1/2 small Yukon Gold potatoes
2 tablespoons cooking oil
2 tablespoons molasses
2 tablespoons balsamic vinegar
1 teaspoon dried thyme, crushed
1/2 teaspoon salt
1/2 cup walnut pieces
Fresh chive (optional)
Step Wise Instructions:
Preheat oven to 450 degree F. Coat a 13×9x2-inch baking pan with nonstick cooking spray.
Scrub and quarter potatoes (halve any large quarters).
Arrange potatoes in pan.
In a small bowl combine oil, molasses, vinegar, thyme, and salt.
Drizzle mixture over potatoes.
Toss gently to coat. Bake potatoes, uncovered, for 20 minutes.
Add nuts; stir to mix. Bake 15 to 20 minutes more or until potatoes are tender, stirring once.
Transfer to a serving bowl.
Garnish with fresh chive. Makes 8 side-dish servings.

Great dessert for your family meal.

Ingredients:
1 lb of scrubbed boiling potatoes
6 cloves fresh garlic, sliced finely
1 cup of milk
¼ cup of breadcrumbs
3 tablespoons of grated parmesan cheese
3 tablespoons of butter
Step Wise Instructions:
Preheat your oven to 380°F (180°C).
Slice potatoes thinly.
Butter a 9-inch pie plate.
Arrange a layer of potatoes, garlic slices, parmesan and slices of butter.
Repeat using the rest of the ingredients (other than the milk), saving some of the cheese and the butter.
Heat the milk and pour over top of the potatoes.
Top with bread crumbs and remaining cheese and butter.
Bake for 1 hour, until the potatoes are tender and top has turned golden brown.

Nutty Quinoa Hash makes the perfect dinner for busy families.
Total time to cook:

Ingredients:
1 cup uncooked quinoa, rinsed
2 cups water
2 medium potatoes, diced
1 small onion, chopped
2 large stalks celery, chopped
1 small green bell pepper, chopped
1/2 small zucchini, chopped
1 can (16 oz) corn
3 tbsp crunchy peanut butter
Step Wise Instructions:
In a medium saucepan, bring the two cups of water to a boil over medium-high heat.
Add the quinoa, return to a boil, cover and reduce heat to medium-low.
Simmer until all water has been absorbed. Set aside.
In a large skillet, heat olive or canola oil on medium heat.
Add the potatoes; cook, stirring occasionally, until potatoes are thoroughly cooked and slightly crispy.
Add the onion, celery, and bell pepper; cook until each is slightly soft.
Add zucchini and corn; cook until zucchini is soft and corn is heated through.
Add seasoning to taste.
Remove from heat.
Add the peanut butter to the quinoa and stir until thoroughly blended.
Add chopped nuts, if using, and stir.
Add the quinoa to the vegetables and mix well.

I always thought of this dish as a fussy, difficult to make dish. It was one of my friends, eventually, who persuaded me to give it a go, thanks to the effortless way he makes everything seem so do-able. The only real skill you need for this dish is patience.

Ingredients:
1 package of pork ribs, boneless
1 jar of good Texas sweet barbecue sauce
4 large potatoes, peeled and cut into chunks
1 small container sour cream
1/2 cup beef broth
large amount of cilantro
1 large can of kidney beans
1 package of gravy
Step Wise Instructions:
Cut most of the fat off your pork ribs, then cut into large chunks and place in slow cooker.
Place your barbecue sauce and broth in with pork and stir around.
Cover and cook on high 6 hours or on low 8-9 hours.
During last 30 minutes place in your beans, dry gravy and cilantro.
Also start cooking your potatoes in large saucepan on top of stove.
When done mash really good or mix in electric mixture with butter or olive oil and sour cream.
To serve place potatoes on plate and cover them with your tender pork chops mixture and sweet sauce.

Potatoes with French bread are a great thing to serve alongside pasta or any other dish where you want to enhance the flavor.

Ingredients:
3 boiled potatoes
5 french beans
1/2 cup boiled green peas
1 carrot
10 cauliflowerettes
1 capsicum
1 big onion
1″piece ginger
1 tsp chilli powder
2 tbsp soya sauce
salt to taste
oil for deep frying
filling:
10 whole fried cashew nuts
1tbsp chopped walnuts
1/2 tsp raisins
12 small cubes paneer
coat:
3tbsps plain flour
1tbsp corn flour
4tbsps breadcrumbs
garnish:
A few lettuce leaves
sliced onions
Sliced cucumber
sliced tomatoes
Par boiled beetroot slices
Step Wise Instructions:
Mash the potatoes coarsely.
Cut the french beans, capsicums, carrots and cauliflowerettes into small pieces.
Heat the oil in a pan vessel. When really hot, add the vegetables and cook for four to five minutes.
Add the chilli powder, green chillies, ginger, soya sauce and salt.
Remove and cool.
Prepare filling by mixing chopped nuts, raisinsand paneer cubes.
Shape the prepared vegetables in the form of a cone. Make it hollow and place the filling in the center and seal well.
Mix the flours well in a cup of water.
Dip the cones in this paste and roll into breadcrumbs. Just before serving deep fry in oil.
Place on a bed of lrttuce leaves and decorate with the sliced onions, tomatoes and cucumber.
Serve hot with tomato ketchup or chilli sauce.

4 slices of white bread
2 boiled potatoes, chopped finely
1 small tomato, chopped finely
1 Tbsp. fresh chopped coriander
1 green chili, chopped finely
Salt to taste
1 tsp. tamarind paste
2 Tbsp. roasted peanuts, crushed coarsely
2 Tbsp. fresh coriander, chopped
Step Wise Instructions:
Cut the sides of the bread then cut each slice into 1-inch squares.
Arrange these bread pieces on a serving dish. Keep aside.
Mix together potatoes, tomatoes, coriander, green chili, salt, tamarind paste and peanuts.
Mix well and top each bread square with the mixture.
Garnish with chopped coriander and serve immediately.

Ingredients:
1 tin of hotdogs
4 or 5 medium to large potatoes
2 medium tins of baked beans

Step Wise Instructions:
Peel, chop potatoes, put in pan with water, bring to boil them simmer till potatoes are soft.
When potatoes are nearly cooked put beans on a gentle simmer.
Chop hotdogs into bite sized chunks, no need to cook these first.
Drain and mash potatoes.
Put beans and chopped hotdogs into suitable sized casserole dish.
Spread mashed potatoes onto beans and sausages.
Sprinkle grated cheese on top.
Put under hot grill till cheese bubbles and browns.

Add onion and worcestshire sauce and mix together until well blended.
Chill at least 10 minutes, stir and transfer to a small serving bowl.
Serve with regular or ruffled potato chips.

I like this simple lamb soup recipe. Easy to make, easy to eat!

Ingredients:
½ packet brown gravy mix
½ medium onion, chopped coarsely
¾ lb of boneless lamb shoulder, cut into one-inch cubes
2 cups of beef stock
1 ½ cups of potatoes, cubed
1 cup of beer
1 cup of carrots, sliced thinly
1 cup of green cabbage, shredded
2 teaspoons of olive oil
½ teaspoon of pepper
Step Wise Instructions:
In a small saucepan, combine sugar and water; bring to a boil and cook until sugar is dissolved, about 1 - 2 minutes. Let cool.
Heat the olive oil in a non-stick saucepan over a medium-high heat.
Sauté the chopped onion until golden (about 5 minutes).
Add the lamb cubes and sauté for 5 minutes, stirring, until browned.
Add the beer and pepper.
Reduce heat to low; then cover and simmer for 30 minutes.
Stir in the beef stock and gravy mix.
Add the potato cubes and sliced carrots, cover and simmer until vegetables are tender
Stir in the shredded cabbage and cook until the cabbage turns bright green (about 3 minutes).

Great little snacks to have around the house.

Ingredients:
4 slices Salt pork, diced
1/2 cup Diced onion
1 cup Diced, peeled potatoes
1 1/2 cups Chicken broth
1-15 oz can Cream-style corn
1-14 oz can Kernel corn
3-4 tbsp Flour
1/2 cup Cold water
Cayenne pepper and mace
1 rich milk
Step Wise Instructions:
Fry salt pork slowly in a deep saucepan until crispy, then add the onion and stir-fry until golden. Pour off excess fat and add potatoes and broth.
Cover and simmer about 15 minutes, or until potatoes are tender.
Add both cans of corn and corn juice. Simmer for 2 minutes.
Stir in a smooth mixture of the flour and water. Let come to a boil, stirring constantly.
Add a few dashes of cayenne pepper and a pinch of mace.
Stir in the milk and reheat thoroughly, but do not boil.
Taste for seasoning.
