Yes, as the recipe name says, this is another bean salad recipe. Bean salads are a staple on our picnic table during summer outings, and this one is nice

Ingredients:
3 Tbsp. apple cider vinegar
5 Tbsp. olive oil
1/4 tsp. pepper
1 Tbsp. dried parsley
2 (15 oz.) cans butter beans, rinsed and drained
11 oz. can shoe peg corn, drained
14.5 oz. can zesty chili diced tomatoes, undrained
1 small red onion, chopped
Step Wise Instructions:
In large bowl, combine vinegar, olive oil, salt, pepper, and parsley and mix well with wire whisk.
Add remaining ingredients and toss to coat.
Cover and chill 2 hours, or serve immediately.

This is a great slaw recipe for diabetics as well as for those on low carb diets
Total time to cook:

Ingredients:
3 Carrots shredded
1 granny smith apple chopped
1/2 cup chopped pineapple
1/4 cup shredded cheddar cheese
1 teaspoon lemon juice
1/3 cup salad dressing
1/4 cup slivered almonds
Step Wise Instructions:
In mixing bowl, combine carrots, apple, pineapple and cheese.
Sprinkle with lemon juice.
Add salad dressing.
Stir to coat.
Cover and chill until ready to eat.
Add milk if dressing becomes too thick.
Before serving, sprinkle on toasted almonds.
Approximately 5 minutes.

Sausage salad is not the norm around my neighborhood, but I really like this recipe

Ingredients:
1/2 pound knockwurst; cooked and cooled
2 small pickles
1 medium onion
3 tbsp vinegar
1 tbsp Dijon or Gulden mustard
2 tbsp vegetable oil
1/2 tsp salt
1/4 tsp pepper
1/4 tsp paprika
1/4 tsp sugar
1 tbsp capers
1 tbsp parsley; chopped
Step Wise Instructions:
Cut the knockwurst into small cubes.
Mince the pickles and onion.
Mix together the vinegar, mustard and oil.
Add salt, pepper, paprika and sugar. Adjust seasonings if desired.
Add the capers; mix well.
Stir in the chopped knockwurst, pickles, and onions.
Just before serving, garnish with chopped parsley.

Light and tasty salad recipe

Ingredients:
7 - 8 Brinjals/Aubergine
2tbsp Olive Oil
Juice of half a Lemon
Salt to taste
Step Wise Instructions:
Char the Aubergines.
When they are well charred completely remove all the skin.
Grind the Aubergines to a paste.
Remove to a serving bowl, add the other ingredients and mix well.
Garnish with chopped Tomatoes or Olives.
Serve cold either as a spread or a dip.

One of the easiest and quickest Crunchy Pea Salad recipes I have seen.

Ingredients:
2 1/4 cups shelled green peas
1 1/4 cups diced cucumber
1/2 cup thinly sliced radishes
1/4 cup thinly sliced green onions
2 tbsp rice vinegar
1 tbsp olive oil
1 tbsp honey
1/2 tsp coarsely ground pepper
1/4 tsp salt
Step Wise Instructions:
Steam peas, covered, 6 minutes or until tender.
Rinse under cold water; drain well.
Combine peas, diced cucumber, radishes, and green onions in a bowl.
Combine vinegar and remaining ingredients in a small bowl.
Stir with a whisk.
Pour over vegetable mixture; toss well. Serving

Tasty, light version of the ever popular Lemon salad recipe

Ingredients:
1 cup vegetable or olive oil
1/3 cup white wine vinegar
1 clove garlic minced
1 tbsp lemon peel grated
2 tbsp sugar
1 tbsp Dijon mustard
1/2 tbsp salt
6 cups long grain rice cooked
2 cups wild rice cooked
2 cups seeded cucumbers diced
2/3 cup green onions thinly sliced
1/4 cup fresh parsley minced
1/4 cup fresh basil or 1 Tbls dried minced
1/2 tbsp pepper
1/2 cup chopped pecans toasted
Step Wise Instructions:
In a jar with tight-fitting lid, combine the first 7 ingredients; shake well. In a large bowl, combine long grain and wide rice; add dressing and toss.
Cover and refrigerate overnight.
Add the cucumbers, green onions, parsley, basil and pepper; mix well. C
hill for 2 hours.
Fold in pecans just before serving.

You can make this Coleslaw year-round, but they are really fun to serve around holidays.

Ingredients:
1/2 cup plain low-fat yogurt
2 tbsp Dijon mustard
1 tbsp water
2 tbsp low-fat mayonnaise
2 tsp fresh lemon juice
6 cups thinly sliced cabbage
4 medium carrots, shredded
1 cup thinly sliced red onion
1/2 tsp dill seeds
salt and pepper to taste
Step Wise Instructions:
Whisk together yogurt, mustard, water, mayonnaise, and lemon juice in a large bowl.
Add remaining ingredients and toss to combine well.
Season coleslaw with salt and pepper.
Coleslaw may be made 1 day ahead and chilled, covered.

I love Broccoli Slaw, and it’s even more fun to eat you make it at home

Ingredients:
2 16 oz. packaged broccoli slaw
1 3 oz. package Ramen noodles
1/2 cup green onions
1 cup unsalted peanuts
Dressing
1/4 cup granulated white sugar
1/4 cup canola oil
1/3 cup cider vinegar
seasoning packet from Ramen noodles
Step Wise Instructions:
Make the slaw first: Using a rolling pin, crush the Ramen noodles.
This can be done while the noodles are still in the package, or you can remove the noodles and place them in a sealed zip-loc bag and then crush them.
Toss together the broccoli slaw, crushed Ramen noodles and green onions in a large salad bowl. Set aside.
To make the dressing: Whisk together the sugar, oil, vinegar and Ramen seasoning packet in a small bowl.
Pour the dressing over the slaw and toss well to coat evenly.
Sprinkle the peanuts on top.
Serve immediately.

Ingredients:
3 tbsp balsamic vinegar
1/3 cup extra virgin olive oil
1/2 tsp salt
1/4 tsp black pepper, ground
1 medium red onion, peeled
1 tbsp extra virgin olive oil
1 clove garlic, fresh minced
4 slices rustic bread
4 cups arugula, washed and dried
1 fennel bulb, cored and thinly sliced
1/2 cup roasted red bell pepper
1/4 cup pine nuts, toasted
1 1/2 cups California green or red seedless grapes
1/4 cup Parmesan cheese
Step Wise Instructions:
In a small bowl whisk together dressing ingredients.
Place red onions in baking dish lined with foil.
Drizzle with 2 tablespoons of prepared dressing and toss well.
Cover tightly with foil and bake at 350 degrees for 30 minutes.
Remove from oven and let cool.
Mix 1 tablespoon olive oil with crushed garlic.
Brush onto bread slices.
Broil or grill bread for 1 to 2 minutes on each side until toasted.
Cut bread into strips about 1/2 inch wide.
Place bread, roasted onions, arugula, fennel, bell pepper, pinenuts and grapes in large bowl, and toss with remaining vinaigrette.
Sprinkle with Parmesan and serve.

Wonderful lemon salad recipe. The cheese really works well with the gelatin in this recipe.

Ingredients:
1 cup hot water
1 box lime gelatin
2 packages cream cheese
1/2 cup vegetable oil
1 jar Marshmallow Crème
1 cup whipping cream, whipped
1 can crushed pineapple, drained well
Step Wise Instructions:
Place water and gelatin in blender.
Cover and process until gelatin is dissolved.
Place container in refrigerator until mixture is cool.
When mixture is cool, add cream cheese, oil and Marshmallow Creme.
Cover and process until smooth.
Fold whipped cream into mixture.
Fold pineapple into mixture.
Pour into a 6-cup mold coated with nonstick cooking spray.
Refrigerate until set. Unfold onto serving platter.
