Coke Salad

Coke Salad

Quick, easy, tasty, wonderful salad recipe. The better the cheese, the better the salad!
 
Total time to cook: 30 minutes
Serves: 7
Category: Side dish , fruits, healthy recipe
Ingredients:
  1. 8 ounce can of crushed pineapple
  2. 15 ounce can of pitted dark sweet cherries
  3. 2 large packages of Cherry Jello
  4. 16 ounces of Coca Cola (2 cups)
  5. 1 cup of chopped pecans
  6. 8 ounce package of cream cheese
Step Wise Instructions:
  1. Drain and save juices from pineapple and cherries.
  2. Heat juice and add Jell
  3. Stir until Jell is dissolved. Set aside to cool.
  4. When cool, add Coca Cola, the canned fruit, and pecans.
  5. Cut cream cheese into small pieces and add to mixture.
  6. Pour into 9×13 dishes.
  7. Place in refrigerator until set.
  8. Can be served on lettuce leaf.

Such a simple salad recipe. Great recipe for the Atkins’ and South Beach diet fans out there.
 
Total time to cook: 30 minutes
Serves: 7

Ingredients:
  1. 1/2 cup vegetable oil
  2. 3 tbsp lemon juice, divided
  3. 1 tsp sugar
  4. 1/4 tsp salt
  5. 1 cup dried cranberries
  6. 3 large red apples, cut into 1/2-inch cubes
  7. 2 cups fresh broccoli florets
  8. 1/2 cup chopped walnuts
Step Wise Instructions:
  1. In a bowl, whisk the oil, 2 tablespoons lemon juice, sugar and salt.
  2. Add cranberries; let stand for 10 minutes.
  3. In a large bowl, toss apples with remaining lemon juice.
  4. Add the broccoli, walnuts and cranberry mixture; toss to coat.
  5. Cover and refrigerate for 2 hours or until chilled.
  6. Toss before serving.

Marinated Chicken and Pasta Salad

I love restaurant style chicken and pasta dishes I can fix at home.
 
Total time to cook: 45 minutes
Serves: 5

Ingredients:
  1. 3 tbsp soy sauce
  2. 2 tbsp honey
  3. 2 tbsp tomato sauce
  4. 2 tbsp plum sauce
  5. 1 tbsp Worcestershire sauce
  6. 1 tsp sesame seeds
  7. 1 tsp chopped fresh basil
  8. 3 skinless, boneless chicken breast halves
  9. 2 cups elbow macaroni
  10. 2 tbsp olive oil
  11. 1/2 cup low-fat mayonnaise
  12. 1/2 cup fat free sour cream
  13. 1 tsp coarse grained prepared mustard
  14. 1/4 cup shredded sharp Cheddar cheese
  15. 1 avocados - peeled, pitted and sliced
  16. 1/2 cup cashews
Step Wise Instructions:
  1. In a large bowl, combine 3 tablespoons soy sauce, 2 tbsp honey, 2 tablespoons tomato sauce, 2 tbsp slump sauce, 1 tbsp Worcestershire sauce, sesame seeds, and basil.
  2. Add chicken, and turn to coat.
  3. Marinate in refrigerator for at least 1 hour.
  4. Bring a large pot of lightly salted water to a boil.
  5. Add pasta, and cook for 8 to 10 minutes or until al dente; drain and rinse.
  6. Heat olive oil in a skillet over medium heat.
  7. Cook chicken until no longer pink, and juices run clear.
  8. Drain on paper towels. Allow to cool, then cut into bite-size strips.
  9. In a large bowl, whisk together mayonnaise, sour cream, mustard, 1 tbsp honey, 1 tbsp tomato sauce, and 1 teaspoon
  10. Worcestershire sauce.
  11. Mix in cooked pasta, chicken, and Cheddar cheese.
  12. Gently stir in sliced avocado and cashews just before serving.

Balsamic Chicken Salad

A quick chicken salad recipe that is great for a small snack. Server on a roll or over a bed of lettuce.

Ingredients:
  1. 2 large apples
  2. 1/2 cup celery
  3. 1/4 cup raisins
  4. 1 tbsp lemon juice
  5. 1 tbsp Mayonnaise
  6. 8 lettuce leaves
Step Wise Instructions:
  1. In a large skillet, saute chicken and garlic in 1 tablespoon oil until chicken juices run clear
  2. Remove from pan.
  3. In the same skillet, bring vinegar to a boil.
  4. Add chicken, tomatoes, basil, salt, pepper and remaining oil
  5. Cook and stir until heated through.
  6. Divide salad greens among six plates; top with chicken mixture.

Watergate Salad

Another simple, fresh salad recipe - A different type of pineapple salad

Total time to cook: 45 minutes
Serves: 5

Ingredients:
  1. 2 pkg. Jell-O Pistachio
  2. 2 cans crushed pineapple
  3. 2 cups Jet-Puffed Miniature Marshmallows
  4. 1 cup chopped Planters Pecans
  5. 3 cups thawed Cool Whip Whipped Topping
Step Wise Instructions:
  1. Mix dry pudding mix, pineapple, marshmallows and pecans in large bowl until well blended.
  2. Gently stir in whipped topping; cover.
  3. Refrigerate hr or until ready to serve.
  4. Garnish with additional Cool Whip Whipped Topping and chopped pecans, if desired.
  5. Makes 16 servings, about 1/2 cup each.

Baccala Salad

A quick summer time salad that everyone loves. Anytime I make it for someone new, they want the recipe.

 
Total time to cook: 1 hour
Serves: 5
Category: salad , fish, seafood
Ingredients:
  1. 1 1/2 pound baccala
  2. 4 medium potatoes, quartered
  3. 1 clove garlic, minced
  4. 2 medium onions
  5. 1 tablespoon parsley, chopped
  6. 1/4 cup wine vinegar
  7. 1/2 cup oil
  8. 1 teaspoon salt
  9. 1/2 teaspoon pepper
  10. 1/2 stalk celery, chopped
Step Wise Instructions:
  1. Cut baccala in 2 pieces. Soak in water for 2 days.
  2. Change water twice a day.
  3. Boil fish in 3 quarts of water together with onions and potatoes for about 30 to 40 minutes or until baccala is tender.
  4. Strain and cool.
  5. Place sliced baccala and potatoes on large platter.
  6. Sprinkle salt, pepper, garlic, parsley, celery, oil and vinegar.
  7. Mix gently.

A super bowl treat all the guys will love.
Total time to cook: 40 minutes

Ingredients:
  1. 1 large loaf of freshly baked white bread
  2. 1 large onion, diced
  3. 1 stick of butter
  4. 1 apple, peeled and diced
  5. Sage, to taste
  6. Salt, to taste
  7. 2 stalks of celery, sliced
  8. Half a cup of raisins
  9. Pepper, to taste

  1. Saute the onion, the apple and the in butter.
  2. Combine and moisten all of the ingredients with hot water.
  3. Stuff the turkey, or bake in a buttered pan.

Dill salad

A fine salmon salad, a very agreeable dish. The perfect way to use your salmon leftovers.

Total time to cook: 45 minutes
Serves: 6

Ingredients: salad
  1. 750g waxy potatoes, peeled
  2. 2 handfuls watercress
  3. 1 tbsp olive oil
  4. 4 fillets of salmon, 150g each
  5. Sea salt and pepper
Dressing:
  1. 3 tbsp extra virgin olive oil
  2. 2 tbsp red wine
  3. vinegar
  4. 1 tsp Dijon or seed mustard
  5. Sea salt and black pepper
  6. 3 spring onions, finely chopped
  7. 2 tbsp dill, finely torn
  8. 1 tbsp small capers, rinsed
Step Wise Instructions:
  1. Cook the potatoes in simmering, salted water until tender but still firm, about 20 minutes.
  2. To make the dressing, whisk the extra virgin olive oil, vinegar, mustard, salt and pepper in a large bowl until thickened.
  3. Add the spring onions, dill and capers.
  4. Heat 1 tbsp olive oil in a large fry pan and sear the salmon, skin side down, until the skin is crisp.
  5. Turn to finish cooking briefly on the other side, leaving the inside pink.
  6. Season well.
  7. Drain the potatoes and slice them thickly as soon as you can handle them.
  8. Toss them carefully in the dressing, making sure the slices are well-coated, and arrange on four warmed dinner plates.
  9. Place the salmon on top.
  10. Wash the watercress, toss it in any remaining dressing and serve alongside salmon.

Great salad recipe. This recipe makes a great summer picnic salad.

Ingredients:
  1. 1 head lettuce, torn
  2. 8 slices bacon, cooked and crumbled
  3. 8 ounces turkey, cut into match sticks
  4. 2 tomatoes, seeded and cut up
  5. 2 cups jumbo croutons
  6. 8 ounce bottle of your favorite dressing
Step Wise Instructions:
  1. Toss all ingredients together except dressing.
  2. Add dressing just before serving. Serves
