I just love Salsa recipes!

Ingredients:
2 medium tomatoes
1 medium onion
1 or 2 jalapeno peppers
1 tbsp lime or lemon juice
1 tbsp water
1 tablespoon chopped cilantro
1/2 tsp salt
Step Wise Instructions:
Combine all ingredients in a food processor or chop by hand.

Not the same old dinner that you find at parties. This is wonderful to share with others.
Total time to cook:
45 minutes
Serves:

Ingredients:
1 pkg. Spanish rice mix
1lb ground beef
1 jar salsa (to taste and consistency)
Shredded cheese
Chopped onion
Water
1 can chopped tomatoes (as needed)
Corn to taste
Bell pepper to taste
Garlic
Cumin
Chili powder
Hot sauce to taste
Sour cream
Step Wise Instructions:
Cook rice mix according to directions.
Cook and crumble ground beef until done. Drain.
If you like onions, bell pepper or corn, saute them.
Add ground beef to rice. Add spices and veges to taste.
Add enough salsa and/or canned tomatoes to make it as saucy as you’d like.
Sprinkle with cheese.
Serve with a dollop of sour cream.

It’s one of those meals I make when I’m happy. It also makes regular appearances for celebrations, slumber parties and potlucks.

Ingredients:
1 Tb Olive Oil
2 Can Pinto Beans - 15 oz, drained and rinsed
1/2 C Mild Salsa, plus more for serving
9 Oz Baby Spinach
1/2 C Cheddar or Monterey Jack cheese, shredded
6 ea lour or Whole Wheat Tortillas - large Guacamole
Step Wise Instructions:
In a skillet, heat oil and add beans and salsa and cook for several minutes, stirring occasionally.
In a loosely covered bowl, wilt the spinach in the microwave about 2 minutes.
Add the spinach to the skillet and stir it gently.
Remove the bean mixture from the heat and add the cheese.
Stir it gently until cheese is melted. Warm tortillas in microwave, Put a scoop of bean mixture in middle of tortilla.
Add more salsa and guacamole if desired.
Fold half the tortilla up over the beans and roll it up tightly.

AA little different, but this combination of tortillas and salsa make a wonderful snack.

Ingredients:
4 (12 inch size) flour tortillas
3 ounces shredded white Cheddar cheese
3 ounces shredded Monterey Jack cheese
3 ounces shredded Cheddar cheese
1 tomato, diced
1 cup chopped red bell pepper
1/8 cup chopped green onions
1/3 cup black beans, drained
2 tbsp hot salsa
1/8 tsp chili powder
Step Wise Instructions:
Preheat oven to 425 degrees F (220 degrees C).
Lightly grease two 12 cup muffin pans.
Cut each tortilla into 6 smaller round pieces.
Insert the pieces into the muffin tin cups.
Arrange the white Cheddar cheese, Monterey Jack cheese, Cheddar cheese, tomato, red bell pepper, green onions, black beans, hot salsa and chili powder in the cups as desired.
Bake in the preheated oven 5 minutes, or until the cheeses are lightly browned and bubbly

Spicy! Serve as a main dish with Mexican food as the main entree or bring to any casual get-together.

Ingredients:
3 skinless, boneless chicken breast halves
2 tbsp. butter
1 pkg taco season mix for chicken
1 cup diced green chilies
Chopped fresh tomatoes
4 chopped scallions
1 pkg. egg roll skins
1 pkg. shredded Mexican 4-cheese blend
Shredded lettuce
Sour cream
Salsa
2 cups cooking oil
Step Wise Instructions:
Cut chicken breast in 1/2-inch pieces.
Heat butter in pan; add chicken and cook until chicken is done.
Add taco season mix, stirring to coat chicken.
Take chicken out of pan and put in a bowl.
Meanwhile have green chilies, tomatoes, scallions, egg roll skins, and cheese ready in bowls.
Place egg roll skin on flat surface; add some of the chicken mixture in center of egg roll skin.
Add some of the green chilies, cheese and scallions.
Fold as directed on egg roll package.
Dab your finger in some water; wipe it on the edge of egg roll and seal.
Heat oil in frying pan and place 3 rolls at a time in pan and fry till all sides are brown.
Take out and drain on paper towels.
Place 2 rolls on each plate with sour cream, salsa and lettuce on top, and eats.

1/4 Real Mayonnaise
1 Tbsp. lime juice
1/2 tsp. ground cumin
2 cups quartered grape tomatoes or cherry tomatoes
1 medium ripe mango, peeled and chopped
1/2 cup chopped red onion
1 medium jalapeno pepper, finely chopped
1 tsp. chopped fresh cilantro
Step Wise Instructions:
In medium bowl, blend Hellmann’s or Best Foods Real Mayonnaise, lime juice and cumin.
Stir in remaining ingredients.
Serve, if desired with corn chips.

Simple homemade beef jerky!
Total time to cook:

2 pounds ground beef
1/2 onion, chopped
1 tsp ground black pepper
1/2 tsp garlic salt
2 1/2 cups tomato sauce
1 jar salsa
4 tbsp chili seasoning mix
1 can light red kidney beans
1 can dark red kidney beans
Step Wise Instructions:
In large bowl mix melted butter into cracker crumbs and garlic powder.
Split the lobsters down the center and remove the stomach and vein.
Save the tamale and add to cracker crumb mixture.
Stuff lobsters with cracker mixture.
Bake for 20 minutes at 450F.

Ingredients:
1/2lb cooked noodles
6 eggs separated
1 lb cottage cheese
6 oz cream cheese
1/2 cup sugar
4 tbsp sour cream
1/4 lb butter
2/3 cup graham cracker crumbs
1 stick butter
1/2 cup sugar
Step Wise Instructions:
Melt 1/4 butter in noodles.
Beat egg whites.
Beat yolks and sugar,
Add cheeses and sour cream to yolks and sugar.
Fold into noodles and egg whites.
Top with mixture of graham cracker crumbs,1 stick butter and 1/2 cup sugar.
Bake @350 for 1 hour in 13×9 pyrex.

This delicious savory recipe is a delightful snack at cocktail parties. But beware, once you start, it’s hard to stop eating them!
Total time to cook:

Onion, seafood, tabasco sauce, side dish
Ingredients:
1 (5 lb.) bass or equivalent
1 lg Onion, chopped
1 Bell pepper, chopped
1/2 Stick margarine
2 cn Tomato sauce
1 cn Whole tomatoes
juice of 1 lemon 1 c Cooking wine
1/2 c Green onions
Tabasco sauce
salt to taste
pepper, garlic powder
Step Wise Instructions:
Sprinkle fish with lemon juice and season well, ahead of time, preferably overnight.
Wilt onions, and bell pepper in margarine.
Add tomato sauce and whole tomatoes and cook over medium heat for 45 minutes in uncovered pot.
Add 2 cups cold water and seasoning to taste along with dash of Tabasco .
Cook for 25 minutes over medium heat.
Add wine and pour mixture over fish you have placed in a baking dish.
Bake in 325 degree oven for 40 minutes.
Baste several times.
Sprinkle with parsley and onion tops and serve, garnishing with slices of lemon.
