Cocktail Sauce

I am constantly throwing together my own special sauces during grilling season. I particularly like this cocktail sauce recipe.
 
Total time to cook: 40 minutes
Serves: 7

Ingredients:
  1. 1/2 cup tomato ketchup
  2. 9 tsp Lemon juice
  3. 1 tsp Worcestershire sauce
  4. 1 tsp Salt
Step Wise Instructions:
  1. Mix all the ingredients well.
  2. This sauce goes well with any fried dish

Almond Sauce

Almond Sauce

This is a really easy recipe for soothing flavors of almond and lard.

Total time to cook: 35 minutes
Serves: 5
Category: Snacks, side dish, sauce, healthy recipe
Ingredients:
  1. 2/3 cup slivered almonds
  2. 2 tablespoons lard
  3. 2 cups seasoned chicken broth
  4. 3 tablespoons vegetable oil
  5. 2 tablespoons all-purpose flour
  6. Salt
  7. Pepper
  8. 1/2 teaspoon ground cumin
Step Wise Instructions:
  1. Lightly sauté the almonds in lard. Place in a blender.
  2. Add 2 cups of the chicken broth and purée until creamy.
  3. Heat the oil in a Dutch oven and brown the flour until it is light brown.
  4. Add the almond mixture and cook over medium heat until creamy and thick, stirring constantly.
  5. Taste for seasoning and adjust, if necessary.
  6. Add ground cumin and cover. Remove from heat. The sauce must be the consistency of heavy cream.
  7. If it becomes too thick, thin it with a little reserved chicken broth and cook, stirring, until of the desired consistency.
  8. To use, arrange cooked chicken pieces in a casserole dish, cover with the almond sauce, and cover.
  9. Heat in the oven at 325 degrees F.

Dutch Sauce

Dutch Sauce

A wonderful relish that goes well on any holiday table.

Total time to cook: 35 minutes
Serves: 5
Category: Snacks, side dish, sauce, healthy recipe
Ingredients:
  1. 5 level tsp flour
  2. 3 tsp butter
  3. 4 cups milk
  4. 1 tsp onion, chopped
  5. 1/4 tsp Sugar 2 pieces bay leaf
  6. 10 peppercorns
  7. Pinch of Red chili pepper
  8. Pinch of grated nutmeg
  9. 2 Cloves
  10. Salt to taste
  11. 4 to 6 tsp Lemon juice
  12. 4 to 5 tsp Vinegar
  13. 1/2 tsp mustard powder
  14. 2 tsp chopped green Coriander Leaves
Step Wise Instructions:
  1. Put the milk to boil with chopped onion, green Coriander leaves, bay leaf, peppercorns and cloves.
  2. Cool the milk and strain.
  3. Melt the butter, stir in the flour on fire, fry a little without browning it.
  4. Add the milk, whisk over the fire until it boils and let it simmer for a few minutes.
  5. Add a pinch of red chilli and grated nutmeg and 1 teaspoon salt.
  6. When cold, add vinegar, lemon juice and mustard powder and mix it.
  7. Check for salt.
  8. Serve with cutlets.

Blue Ribbon Chili

Simple homemade beef jerky!

Total time to cook: 45 minutes
Serves: 6

Ingredients:
  1. 2 pounds ground beef
  2. 1/2 onion, chopped
  3. 1 tsp ground black pepper
  4. 1/2 tsp garlic salt
  5. 2 1/2 cups tomato sauce
  6. 1 jar salsa
  7. 4 tbsp chili seasoning mix
  8. 1 can light red kidney beans
  9. 1 can dark red kidney beans
Step Wise Instructions:
  1. In large bowl mix melted butter into cracker crumbs and garlic powder.
  2. Split the lobsters down the center and remove the stomach and vein.
  3. Save the tamale and add to cracker crumb mixture.
  4. Stuff lobsters with cracker mixture.
  5. Bake for 20 minutes at 450F.

Corn Chowder

Corn Chowder

Great little snacks to have around the house.
 
Total time to cook: 45 minutes
Serves: 6
Category: soup, corn, side dish
Ingredients:
  1. 4 slices Salt pork, diced
  2. 1/2 cup Diced onion
  3. 1 cup Diced, peeled potatoes
  4. 1 1/2 cups Chicken broth
  5. 1-15 oz can Cream-style corn
  6. 1-14 oz can Kernel corn
  7. 3-4 tbsp Flour
  8. 1/2 cup Cold water
  9. Cayenne pepper and mace
  10. 1 rich milk
Step Wise Instructions:
  1. Fry salt pork slowly in a deep saucepan until crispy, then add the onion and stir-fry until golden. Pour off excess fat and add potatoes and broth.
  2. Cover and simmer about 15 minutes, or until potatoes are tender.
  3. Add both cans of corn and corn juice. Simmer for 2 minutes.
  4. Stir in a smooth mixture of the flour and water. Let come to a boil, stirring constantly.
  5. Add a few dashes of cayenne pepper and a pinch of mace.
  6. Stir in the milk and reheat thoroughly, but do not boil.
  7. Taste for seasoning.

One of the easiest and quickest soup recipes I have seen.

  1. 1 ounce jar of pineapple preserves
  2. 1 ounce jar of apple jelly
  3. 2 ounces of Coleman’s dry mustard
  4. 1 ounce jar of horseradish
  5. 1 tablespoon cracked black pepper
  6. 1 ounce block of cream cheese
Step Wise Instructions:
  1. Mix all ingredients together in a mixing bowl
  2. Pour 1 cup of the mixture over an 8 ounce block of cream cheese

Beefy Onion Gravy

One of the easiest and quickest Beefy Onion Gravy recipes I have seen.
 
Total time to cook: 30 minutes
Serves: 10

Ingredients:
  1. 1 envelope Lipton beefy onion recipe soup mix
  2. 1 3/4 cups water
  3. 2 T. flour
Step Wise Instruction:
  1. In medium pan, blend beefy onion recipe soup mix with 1 1/4 cups water.
  2. Bring to a boil, then simmer covered, stirring occasionally, 8 minutes.
  3. Stir in flour blended with remaining water.
  4. Bring to a boil, then simmer, stirring constantly until gravy is thickened, about 2 minutes.
  5. Makes about 1 1/2 cups gravy
