Caprese Grilled Swordfish

Nice mixture of swordfish and lemon flavor in this Caprese Grilled Swordfish
 
Total time to cook: 50 minutes
Serves: 4

Ingredients:
  1. 1 pound swordfish, cut into 3/8-inch-thick slices
  2. Fresh lemon juice
  3. Olive oil
  4. Chopped fresh oregano
  5. Salt and pepper
Step Wise Instructions:
  1. Sprinkle fish with lemon juice, then with oil, oregano and salt and pepper to taste. Let marinate for 30 minutes.
  2. Cook on a hot grill for about 2 to 3 minutes per side, making sure the fish stays moist.
  3. Serve immediately.
  4. Traditionally, the fish is drizzled with oil and served with lemon slices on the side.

Ingredients:
  1. 8 ounces linguine
  2. 1 pound cooked salmon
  3. 1 (10-ounce) package frozen broccoli florets
  4. 1 tablespoon extra virgin olive oil
  5. 2 cloves garlic, minced
  6. 3/4 cup chicken broth
  7. 3/4 cup Italian-style croutons, crushed
  8. 1/4 cup freshly grated Parmesan cheese
Step Wise Instructions:
  1. Heat oil in dutch oven over medium heat until you hear it sizzling.
  2. Heat oil in a large skillet.
  3. Add garlic; cook for 1 minute.
  4. Add broccoli and broth; cook for 5 to 6 minutes, or until broccoli is tender.
  5. Add salmon; heat through.
  6. 2. Toss pasta with salmon and broccoli mixture.
  7. Serve in deep bowls; top with crushed croutons and cheese.

Crawfish Maque Choux

Total time to cook: 1- 1.5 hours

Ingredients:
  1. 1/4 cup vegetable oil
  2. 2 pounds crawfish tails
  3. 1 bell pepper
  4. 6 ribs celery
  5. 2 onions
  6. 1 15-ounce can tomato sauce with bits
  7. 1 8-ounce can mushroom stems and pieces
  8. 6 green onions
  9. 2 12-ounce cans shoe peg corn
  10. 2 sprigs parsley
  11. 1 rounded teaspoon salt
  12. 1/4 teaspoon hot sauce
Step Wise Instructions:
  1. Heat oil in dutch oven over medium heat until you hear it sizzling.
  2. Add crawfish and place lid on pot. Saut for 10 minutes.
  3. Remove crawfish with a slotted spoon and place them in a bowl to cool.
  4. In the remaining oil, saut? the bell pepper, celery and onions for about 20 minutes or until tender.
  5. Add tomato sauce, mushrooms and most of the green onions.
  6. Cook 10 minutes.
  7. Add crawfish tails and corn and cook 10 minutes more.
  8. Add parsley and remaining green onions and cook another 5 minutes.
  9. Add salt and hot sauce to taste.

Pan Fried Fish Fillets

An easy delicious fish fillets
 
Total time to cook: 1- 1.5 hours

Ingredients:
  1. 3 tbsp of peanut oil
  2. Chilly powder
  3. Salt
  4. 1tsp ginger& cumin seed paste
  5. 1tbsp of fine semolina
  6. 1tbsp butter
  7. 1tbsp coriander leaves finely chopped
  8. fish
Step Wise Instructions:
  1. Heat oven to 350 degrees.
  2. Coat the cleaned fish with mixture of red chilly paste, ginger & cumin paste, salt and marinate for an hour.
  3. Dust the fish portions lightly with semolina to coat on both sides and shallow fry in peanut oil till crisp and brown. (About 2-3 minutes per side).
  4. When done, remove add butter and coriander leaves (cilantro) and serve.

Chicken Florentine Rice Casserole

  1. 3 cups water
  2. 4 cubes chicken bouillon
  3. 2 cups instant brown rice
  4. 2 tablespoons cornstarch
  5. 1/4 cup olive oil
  6. 4 boneless, skinless chicken breast halves
  7. 1 tsp dried thyme
  8. 1 tsp dried sage
  9. 2 tsp dried basil
  10. 1 tsp dried parsley
  11. 1 tsp dried marjoram
  12. 1 medium onion, chopped
  13. 2 (10 ounce) packages frozen chopped spinach
  14. 2 cups cottage cheese
  15. salt and pepper to taste
  16. 1/2 cup Parmesan cheese
  17. 1/4 cup margarine
Step Wise Instructions:Crust
  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a medium saucepan, boil 2 cups water and chicken bouillon.
  3. Stir in rice.
  4. Remove from heat, and set aside.
  5. In a small bowl, mix cornstarch with remaining water.
  6. Heat olive oil in a medium skillet over medium heat.
  7. Place chicken in skillet with thyme, sage, basil, parsley, and marjoram.
  8. Cook until chicken is no longer pink and juices run clear.
  9. Drain and cube.
  10. Stir onion into the skillet, and cook 5 minutes, or until browned and tender.
  11. In a large bowl, thoroughly mix rice, cornstarch mixture, chicken, onion, spinach, and cottage cheese.
  12. Transfer the mixture to a medium baking dish.
  13. Season with salt and pepper.
  14. Top with Parmesan cheese, and dot with margarine.
  15. Bake, covered, 45 minutes in the preheated oven.
  16. Remove cover, and continue baking 15 minutes, until surface is lightly browned.

Chicken Chili Nachos

Light and Easy

Ingredients:
  1. 4 chicken breasts, boiled and shredded
  2. 2 (8 oz.) packages of cheese (chedder, jack, or colby)
  3. 1 or 2 cans spicy chili beans
  4. 16 oz. sour cream
  5. 1 can of cream of chicken soup
  6. 1 can of diced tomatoes with green chilies
  7. 1 small can diced chilies or jalapenos
  8. 1 to 2 bags of nacho cheese Doritos
Step Wise Instructions:
  1. Preheat oven to 350 degrees.
  2. In large pot, add sour cream, soup, tomatoes, chilies, and chicken.
  3. Let simmer 10-15 minutes. Layer baking dish with smashed Doritos, then pour chicken mixture on top.
  4. Spread half of the 8 oz. package of cheese, add cans of beans, top with remainder of cheese.
  5. Bake 20-30 minutes until cheese melts. Serve with additional Doritos instead of fork.

Caviar Puff Pastry Stars

Ingredients:
  1. 1/2 pound frozen puff pastry
  2. 1 large egg and 1 tsp water
  3. 1/3 cup sour cream
  4. 1 ounce black caviar
  5. 3 tbsp minced fresh chives
Step Wise Instructions:
  1. On a floured surface roll out the puff pastry 1/8 inch thick and with a 3-inch star-shaped cutter cut out 8 pastry stars.
  2. Transfer the stars to a lightly greased baking sheet, brush the tops with the egg wash, being careful not to let the wash drip down the sides
  3. Bake the stars in the middle of a preheated 400°F. oven 12 to 15 minutes, or until they are puffed and golden.
  4. Transfer the stars to a rack and let them cool completely.
  5. With a sharp small knife carefully split the stars in half horizontally to form a total of 16 stars
  6. Leaving the bottoms cut sides up and the tops cut sides down. Just before serving, spoon about 1 tsp of the sour cream onto each star
  7. Divide the caviar among the stars, and sprinkle the hors d’oeuvres with the chives.

Silver Pomfret Fry

Ingredients:
  1. 3- 4 tsp of ginger paste
  2. 1-2 tsp red chili powder
  3. ½ tsp turmeric
  4. ½ pepper powder
  5. 1tsp fish masala
  6. 1-2 tsp salt
Step Wise Instructions:
  1. Clean the pomfret by making a slit at the side and take out the intestines.
  2. Wash with salt and turmeric.
  3. Make few slits on both sides of the fish with knife.
  4. Apply the paste all over the fish and allow to marinate for 1 hr in the fridge.
  5. Heat the pan at low heat with 5-6 tsp of oil.
  6. Once the oil gets hot add the fish and let it cook for 5 minutes.
  7. Turn the fish to the other side and let to cook for another 5 minutes.
  8. Do the process twice for each side and cook for about 20 minutes covered.
  9. Be very careful while turning the fish, the fish can easily break into pieces, so handle with care.
  10. Serve hot with rice

Angel chicken pasta

Excellent pasta with chicken. I know that everybody makes pasta, but we do like this particular recipe

 
Total time to cook: 50 minutes
Serves: 5

Ingredients:
  1. 6 boneless, skinless chicken breast
  2. 4 tbsp butter or margarine
  3. 1 package dry Italian salad dressing mix
  4. 1/2 cup white wine
  5. 1 ounce condensed golden mushroom soup
  6. 1 package cream cheese with chives
  7. 1 package angel hair pasta
Step Wise Instructions:
  1. In a large saucepan melt butter or margarine over low heat.
  2. Add package of dressing.
  3. Blend in wine and undiluted can of soup.
  4. Blend in cream cheese and stir until smooth.
  5. Heat through gently.
  6. Arrange chicken breasts in a baking dish.
  7. Pour sauce over.
  8. Bake in a preheated 325 degree F (165 degree C) oven for 60 minutes.
  9. As baking time nears, in a large pot with boiling salted water cook angel hair pasta until al dente.
  10. Drain well.
  11. Serve chicken dish over warm angel hair pasta

Balsamic Chicken Salad

  1. 2 large apples
  2. 1/2 cup celery
  3. 1/4 cup raisins
  4. 1 tbsp lemon juice

Step Wise Instructions:
  1. In a large skillet, saute chicken and garlic in 1 tablespoon oil until chicken juices run clear
  2. Remove from pan.
  3. In the same skillet, bring vinegar to a boil.
  4. Add chicken, tomatoes, basil, salt, pepper and remaining oil
  5. Cook and stir until heated through.
  6. Divide salad greens among six plates; top with chicken mixture.
