Banana Sour Cream Waffles

Banana Sour Cream Waffles

I found this recipe and it comes highly recommended. It was very nice but I think I’d change the icing to a cream cheese icing.
 
Total time to cook: 40 minutes
Serves: 7

Ingredients:
  1. 1 cup all-purpose flour
  2. 1 1/2 teaspoons granulated sugar
  3. 1 tsp baking powder
  4. 1/4 tsp baking soda
  5. 1/4 tsp salt
  6. 1 egg, separated
  7. 1 cup sour cream
  8. 1/4 cup milk
  9. 1/4 cup butter, melted
  10. 1 banana, mashed
Step Wise Instructions:
  1. Heat waffle iron.
  2. Stir together flour, sugar, baking powder, baking soda and salt in mixing bowl.
  3. Set aside.
  4. In separate bowl whisk together egg yolk, sour cream, milk, butter and banana.
  5. Add liquid mixture to dry ingredients, stirring just until blended.
  6. Fold in beaten egg white.
  7. Pour batter from cup or ladle onto center of hot waffle iron.
  8. Bake about 5 minutes or until steaming stops.
  9. Remove waffle carefully.

Spinach Burritos

Spinach Burritos

It’s one of those meals I make when I’m happy. It also makes regular appearances for celebrations, slumber parties and potlucks.
 
Total time to cook: 50 minutes
Serves: 6
Category: Spinach , beans , salsa
Ingredients:
  1. 1 Tb Olive Oil
  2. 2 Can Pinto Beans - 15 oz, drained and rinsed
  3. 1/2 C Mild Salsa, plus more for serving
  4. 9 Oz Baby Spinach
  5. 1/2 C Cheddar or Monterey Jack cheese, shredded
  6. 6 ea lour or Whole Wheat Tortillas - large Guacamole
Step Wise Instructions:
  1. In a skillet, heat oil and add beans and salsa and cook for several minutes, stirring occasionally.
  2. In a loosely covered bowl, wilt the spinach in the microwave about 2 minutes.
  3. Add the spinach to the skillet and stir it gently.
  4. Remove the bean mixture from the heat and add the cheese.
  5. Stir it gently until cheese is melted. Warm tortillas in microwave, Put a scoop of bean mixture in middle of tortilla.
  6. Add more salsa and guacamole if desired.
  7. Fold half the tortilla up over the beans and roll it up tightly.

Chicken & Rice Bake

My cookbook collection is growing out of hand. In an effort to justify my addiction, I thought I would share my collection with everyone by actually trying more new recipes. This one ‘Chicken and Rice Bake’ is my recently prepared recipe, I found it superb. You all just try and comment.
 
Total time to cook: 50 minutes
Serves: 6 to 8
Category: Dinner, non veg, side dish
Ingredients:
  1. 4 boned and skinned chicken breast halves
  2. 1 1/2 cups uncooked white rice
  3. 1 can condense cream of celery soup
  4. 1 can condense cream of chicken soup
  5. 2 soup cans of water
  6. 1 package Onion Soup Mix
Step Wise Instructions:
  1. Spread rice evenly over the bottom of a 9″ X 9″ X 2″ baking dish.
  2. Combine condensed soups and water; pour 1/2 of this mixture over the rice.
  3. Arrange the chicken breasts in the pan, making sure not to overlap.
  4. Pour remaining soup mixture over the chicken.
  5. Sprinkle onion soup mix evenly over the chicken.
  6. Bake in a 400 degree oven for 1 hour.

Banana Millet Muffins

Toffee brickle turns these otherwise ordinary banana muffins into a delicious treat.
 
Total time to cook: 50 minutes
Serves: 6
Category: Egg, fruits, side dish
Ingredients:
  1. 2 c Whole wheat flour
  2. 1/4 c + 1T soy flour
  3. 2 t Baking soda
  4. 1/2 t Salt
  5. 1/3 c Millet
  6. 1/2 c Applesauce
  7. 2 large Egg
  8. 2 c Mashed over-ripe bananas
  9. 1/4 c Golden raisins
Step Wise Instructions:
  1. Preheat oven to 350 F .In a large bowl, mix together flours, baking soda, salt, and millet.
  2. Set aside. In blender, puree on high speed the applesauce, egg or equivalent, bananas and raisins.
  3. Add wet stuff to dry, moisten evenly.
  4. Spoon batter into non-stick 12 muffin tin dividing evenly and bake 40-50 minutes at 350 F or until browned.
  5. Remove muffins from pan, cool to room temperature.
  6. Wrap and chill. Or eat on the spot.

Vegetarian Posole

A little different, but this posole makes a wonderful party snack.
 
Total time to cook: 40 minutes
Serves: 7
Category: Squash , dinner, beans
Ingredients:
  1. 1/2-1 cup onion, chopped.
  2. 2-5 cloves garlic, chopped.
  3. 1 1/2 cups mushrooms cut into halves or quarters.
  4. 2 sliced carrots
  5. 1 cup green beans
  6. 2 cups chopped squash
  7. 2 cups canned tomatoes
  8. One can hominy
  9. pinch salt
  10. 2 tsp each cumin and oregano
  11. black pepper to taste.
  12. Fresh cilantro to taste
Step Wise Instructions:
  1. Brown the onions and garlic in a little oil.
  2. Add the vegetables to the browning onions and garlic.
  3. Add the tomatoes and cook until vegetables start to soften
  4. Add the seasonings.
  5. Add the hominy.

Chocolate Dipped

A great snack recipe for your Halloween party. Works well year round, but is especially fun at Halloween.
 
Total time to cook: 40 minutes
Serves: 7
Category: Chocolate , appetizer, snacks
Ingredients:
  1. 1/2 cup Milk Chocolate Chips
  2. 1/2 cup Semi-Sweet Chocolate Chips
  3. 1 tbsp vegetable shortening
  4. Cookies, dried apricots, miniature pretzels or potato chips
Step Wise Instructions:
  1. Cover tray with wax paper.
  2. Place chocolate chips and shortening in small microwave-safe bowl.
  3. Microwave at high (100%) 1 minute; stir.
  4. If necessary, microwave at high an additional 15 seconds at a time, stirring after each heating, just until chips are melted and mixture is smooth when stirred.
  5. Cool slightly.
  6. Dip 2/3 of each snack or fruit into chocolate mixture.
  7. Shake gently to remove excess chocolate.
  8. Place on prepared tray. Refrigerate, uncovered, about 30 minutes or until coating is firm.
  9. Store in airtight container in cool, dry place.

I am constantly throwing together my own special sauces during grilling season. I particularly like this cocktail sauce recipe.
 
Total time to cook: 40 minutes

Ingredients:
  1. 1/2 cup tomato ketchup
  2. 9 tsp Lemon juice
  3. 1 tsp Worcestershire sauce
  4. 1 tsp Salt
Step Wise Instructions:
  1. Mix all the ingredients well.
  2. This sauce goes well with any fried dish

Cheese Spoon Bread

These delicious savory Breads are a delightful snack at cocktail parties. But beware, once you start, it’s hard to stop eating them!
 
Total time to cook: 50 minutes
Serves: 6 to 8
Category: Side dish , Corn, eggs recipe
Ingredients:
  1. 1/2 cup Corn Meal
  2. 2 cups water
  3. 1 1/4 cups shredded cheddar cheese, divided use
  4. 3 large eggs, separated
  5. 2 tbsp margarine or butter
  6. 1/4 tsp baking powder
Step Wise Instructions:
  1. Preheat oven to 375° F. Grease 11/2-quart casserole dish.
  2. Combine dry milk and corn meal in large saucepan.
  3. Stir in water.
  4. Cook, stirring constantly, until mixture comes to a boil and thickens.
  5. Remove from heat.
  6. Stir in 3/4 cup cheese, egg yolks, margarine and baking powder.
  7. Beat egg whites in small mixer bowl until stiff peaks form.
  8. Fold into corn meal mixture lightly but thoroughly.
  9. Pour into prepared dish.
  10. Sprinkle with remaining cheese.
  11. Bake for 30 to 35 minutes or until top is golden and filling is set.
  12. Serve warm.

We love to make Seafood in my house. This recipe’s got a little kick!
 
Total time to cook: 40 minutes
Serves: 6

Ingredients:
  1. 2 cups milk
  2. 1 cup half and half
  3. 2 bay leaves
  4. 3 slices onion
  5. 3 sprigs parsley
  6. 2 tbsp celery leaves
  7. 3 tbsp celery stalk
  8. Tabasco sauce
  9. 3 tbsp unsalted butter
  10. 1 pound bay scallops
  11. 2 tsp fresh tarragon
  12. OR 1/2 tsp dried tarragon
  13. 1 tsp fresh summer savory
  14. OR 1/2 tsp dried
  15. salt
  16. fresh ground black pepper
  17. unsalted crackers or fresh toast
  18. 4 tsp chives
Step Wise Instructions:
  1. Scald the milk and the half and half with the bay leaves, the onion slices, parsley sprigs, and the chopped celery leaves. cover and let stand for about 5 minutes.
  2. Strain out the bay leaf, parsley, celery leaves and onion, and add the finely chopped celery stalk, 2 - 3 dashes of Tabasco , and the butter.
  3. Bring the liquid to a boil again, lower the heat, and simmer gently for about 5 minutes.
  4. Add the scallops and the herbs, taste for seasoning, and add a little salt and pepper if you think it needs it.
  5. Simmer 10 - 12 minutes.
  6. Put crackers or pieces of toast in each of 4 soup plates, and pour the stew over, sprinkling with finely chopped chives.

Bacon Tomato Dip

Kids love these little Bacon Dips Ups, and moms love them because they’re easy to make.

Ingredients:
  1. 2 cups sour cream
  2. 10 slices crisply cooked bacon, crumbled
  3. 1 large tomato, seeded and chopped
  4. 1 tablespoon chopped fresh flat-leaf parsley
Step Wise Instructions:
  1. Chips, crackers or cut-up fresh vegetables for accompaniment
  2. Combine all ingredients in a bowl until well mixed.
  3. Cover; refrigerate to blend flavors for a minimum of 2 hours.
  4. Serve with chips, crackers or cut-up fresh vegetables.
