My cookbook collection is growing out of hand. In an effort to justify my addiction, I thought I would share my collection with everyone by actually trying more new recipes. This one ‘Chicken and Rice Bake’ is my recently prepared recipe, I found it superb. You all just try and comment.

Ingredients:
4 boned and skinned chicken breast halves
1 1/2 cups uncooked white rice
1 can condense cream of celery soup
1 can condense cream of chicken soup
2 soup cans of water
1 package Onion Soup Mix
Step Wise Instructions:
Spread rice evenly over the bottom of a 9″ X 9″ X 2″ baking dish.
Combine condensed soups and water; pour 1/2 of this mixture over the rice.
Arrange the chicken breasts in the pan, making sure not to overlap.
A great snack recipe for your Halloween party. Works well year round, but is especially fun at Halloween.

Ingredients:
1/2 cup Milk Chocolate Chips
1/2 cup Semi-Sweet Chocolate Chips
1 tbsp vegetable shortening
Cookies, dried apricots, miniature pretzels or potato chips
Step Wise Instructions:
Cover tray with wax paper.
Place chocolate chips and shortening in small microwave-safe bowl.
Microwave at high (100%) 1 minute; stir.
If necessary, microwave at high an additional 15 seconds at a time, stirring after each heating, just until chips are melted and mixture is smooth when stirred.
Cool slightly.
Dip 2/3 of each snack or fruit into chocolate mixture.
Shake gently to remove excess chocolate.
Place on prepared tray. Refrigerate, uncovered, about 30 minutes or until coating is firm.
We love to make Seafood in my house. This recipe’s got a little kick!

Ingredients:
2 cups milk
1 cup half and half
2 bay leaves
3 slices onion
3 sprigs parsley
2 tbsp celery leaves
3 tbsp celery stalk
Tabasco sauce
3 tbsp unsalted butter
1 pound bay scallops
2 tsp fresh tarragon
OR 1/2 tsp dried tarragon
1 tsp fresh summer savory
OR 1/2 tsp dried
salt
fresh ground black pepper
unsalted crackers or fresh toast
4 tsp chives
Step Wise Instructions:
Scald the milk and the half and half with the bay leaves, the onion slices, parsley sprigs, and the chopped celery leaves. cover and let stand for about 5 minutes.
Strain out the bay leaf, parsley, celery leaves and onion, and add the finely chopped celery stalk, 2 - 3 dashes of Tabasco , and the butter.
Bring the liquid to a boil again, lower the heat, and simmer gently for about 5 minutes.
Add the scallops and the herbs, taste for seasoning, and add a little salt and pepper if you think it needs it.
Simmer 10 - 12 minutes.
Put crackers or pieces of toast in each of 4 soup plates, and pour the stew over, sprinkling with finely chopped chives.
