Gingerbread Waffles

Gingerbread waffles are a wonderful treat for that special occasion or weekend brunch. The enticing aroma will fill your kitchen with hungry guests.

 
Total time to cook: 45 minutes
Serves: 5

Ingredients:
  1. 2 c Buttermilk baking mix
  2. 1 c Milk
  3. Egg
  4. 1/3 c Molasses
  5. 1/4 c Packed light brown sugar
  6. tsp Ginger
  7. 3/4 ts Cinnamon
  8. 1/4 ts Nutmeg
  9. Peach Sauce:
  10. Cn (16 oz) sliced Cling Peaches in heavy syrup
  11. 1 tb Cornstarch
  12. tbsp Lemon juice
Step Wise Instructions:
  1. Combine baking mix, milk, egg, molasses, sugar, ginger, cinnamon and nutmeg.
  2. Pour 1/2 cup of batter in preheated waffle iron.
  3. Texture of finished waffle will be cake-like; it is not intended to be crisp.
  4. Do not over bake because waffle will burn.
  5. Repeat with remaining batter.
  6. For Peach Sauce:
  7. Drain liquid from peaches into a 4 cup glass measure.
  8. Stir in cornstarch mixed with lemon juice.
  9. Heat on medium until mixture thickens.
  10. Cut peach slices into pieces and add to sauce.
  11. Serve over waffles.

Artichoke Souffle

The perfect treat for your New Year’s Eve or any other holiday party!
Total time to cook: 1.5 hours
Serves: 5

Ingredients:
  1. 6 Tbsp mild salsa
  2. 1/4 C grated Parmesan cheese
  3. 1 C shredded sharp Cheddar
  4. 16 oz light sour cream
  5. 1 can artichokes hearts, chopped
  6. 1 C shredded Monterey Jack
  7. 10 large eggs
  8. parsley sprigs
Step Wise Instructions:
  1. Spray 6 oz ramekins with butter flavored PAM. Spread 1 TBS salsa in the bottom of each dish.
  2. Distribute chopped artichokes evenly in each of 6 dishes.
  3. Sprinkle Monterey Jack & cheddar cheese over each.
  4. Place the eggs & sour cream in blender container and blend until smooth.
  5. Pour the egg mixture over the cheeses.
  6. Bake uncovered in a 350 oven for 30-40 minutes or until set.
  7. May be made ahead of time: leave overnight in the refrigerator or freeze uncooked.
  8. Remove from freezer the night before cooking to aid in thawing.

Asparagus Wrap

A great snack recipe for your Halloween party. Works good year round, but is especially fun at Halloween. .
Total time to cook: 40 minutes
Serves: 5

Ingredients:
  1. 10 Asparagus Spears
  2. 2 tb Dijon Mustard
  3. 1 tb Reduced-Calorie Mayonnaise
  4. 10 slice Bologna
Step Wise Instructions:
  1. Trim the bottom end of the asparagus and blanch with boiling water.
  2. Blend the mustard and mayonnaise in a small bowl.
  3. Divide and spread the mustard mixture evenly on the large bologna slices.
  4. Wrap one asparagus spear in each bologna slice.
  5. Place the slices in a single layer on a round microwave platter or plate.
  6. Cover lightly with paper towels.
  7. With the microwave on MEDIUM, cook for 1 minute or until hot; rotate the plate one-half turn after 30 seconds.

Pumpkin Muffins

I just love the fall and all of the pumpkin foods I can get my hands on. Pumpkin pies, pumpkin breads, even pumpkin lattes. Yum. So naturally I had to add a pumpkin muffin recipe to the mix. Enjoy.
 
Total time to cook: 45 minutes
Serves: 4

Ingredients:
  1. 1 Cup Pumpkin
  2. 2 eggs, beaten
  3. 2/3 Cup non-fat dry milk powder
  4. 2 tsp. pumpkin pie spice
  5. 1 tsp. cinnamon
  6. 6 pkg. of sugar subsitute
  7. 1/2 cup grated carrots
  8. 5 Tbsp. Flour
  9. 1 tsp. baking soda
  10. 4 Tbsp. Raisins
  11. 1 tsp. Vanilla
Step Wise Instructions:
  1. Combine dry ingredients add eggs and vanilla, then the pumpkin, raisins and carrots. ‘
  2. Mix well.
  3. spray a 12 cup muffin pan with spray or use muffin/cupcake liners.
  4. Bake 350 oven for 15 minutes.
  5. Freezes well.
  6. Serving with , meat, fruit, milk, bread, vegetable.

Linguine Frittata

Linguine Frittata is delightful the combination of marjoram & linguine. This delicious kid’s friendly healthy recipe is easy to make. Try our PLinguine Frittata recipe.

Ingredients:
  1. 8 ounces uncooked linguine
  2. 3 tablespoons olive oil, divided
  3. 1 cup chopped carrots
  4. ¼ cup chopped onion
  5. 2 cloves garlic, minced
  6. ½ pound asparagus, cut into 1-inch pieces
  7. 1 large red bell pepper, diced
  8. 1 medium tomato, seeded and chopped
  9. 1 teaspoon dried basil
  10. 1 teaspoon dried marjoram
  11. 1 teaspoon dried oregano
  12. 5 eggs
  13. ¼ cup grated Parmesan cheese
  14. ½ teaspoon salt
  15. ¼ teaspoon black pepper
Step Wise Instructions:
  1. Cook linguine according to package directions. Drain in colander.
  2. Place in large bowl.
  3. Heat 1 tablespoon oil in large skillet over medium heat until hot.
  4. Add carrots, onion and garlic; cook and stir 5 minutes or until carrots are crisp-tender.
  5. Add asparagus, bell pepper, tomato, basil, marjoram and oregano; cook and stir 5 minutes or until asparagus is crisp-tender.
  6. Add vegetable mixture to linguine in bowl; mix well.
  7. Beat eggs in medium bowl with wire whisk until frothy.
  8. Stir in cheese, salt and black pepper; pour over linguine mixture and toss.
  9. Heat remaining 2 tablespoons oil in 12-inch nonstick skillet over medium heat until hot. Add linguine mixture, spreading evenly. Reduce heat to low.
  10. Cook 5 minutes or until browned on bottom.
  11. Place large rimless plate over skillet; invert frittata onto plate.
  12. Slide frittata back into skillet.
  13. Cook 5 minutes more or until browned on bottom and eggs are set.
  14. Slide frittata onto serving plate.
  15. Cut into wedges.
