Holiday Punch

I love to serve this pineapple raspberry recipe around the holidays.
Total time to cook: 30 minutes
Serves: 6
Category: Honey, egg, cake, party
 
Ingredients:
  1. 1 bottle apple juice
  2. 1 can pineapple juice
  3. 1 bottle raspberry juice
  4. 1 cup water
Step Wise Instructions:
  1. One broken cinnamon stick
  2. 5 to 6 whole cloves
  3. 1/4 teaspoon freshly ground nutmeg
  4. Mix all ingredients and blend well. Serve chilled.

This delicious savory recipe is a delightful snack at cocktail parties. But beware, once you start, it’s hard to stop eating them!
 
Total time to cook: 55 minutes
Serves: 4
Category: Onion, seafood, tabasco sauce, side dish
Ingredients:
  1. 1 (5 lb.) bass or equivalent
  2. 1 lg Onion, chopped
  3. 1 Bell pepper, chopped
  4. 1/2 Stick margarine
  5. 2 cn Tomato sauce
  6. 1 cn Whole tomatoes
  7. juice of 1 lemon 1 c Cooking wine
  8. 1/2 c Green onions
  9. Tabasco sauce
  10. salt to taste
  11. pepper, garlic powder
Step Wise Instructions:
  1. Sprinkle fish with lemon juice and season well, ahead of time, preferably overnight.
  2. Wilt onions, and bell pepper in margarine.
  3. Add tomato sauce and whole tomatoes and cook over medium heat for 45 minutes in uncovered pot.
  4. Add 2 cups cold water and seasoning to taste along with dash of Tabasco .
  5. Cook for 25 minutes over medium heat.
  6. Add wine and pour mixture over fish you have placed in a baking dish.
  7. Bake in 325 degree oven for 40 minutes.
  8. Baste several times.
  9. Sprinkle with parsley and onion tops and serve, garnishing with slices of lemon.

Very tasty Mango ketchup.
 
Total time to cook: 40 minutes
Serves: 4

Ingredients:
  1. 4 medium mangos
  2. 2 ounces vinegar
  3. 1 tbsp ground ginger
  4. 1/8 teaspoon ground cinnamon
  5. 1 tbsp salt
  6. 1/2 cup raw sugar
  7. 1/2 cup white wine
  8. 1/2 tbsp ground allspice
  9. 1/2 tbsp cayenne pepper
  10. 1 whole clove
Step Wise Instructions:
  1. Peel the mangoes and discard the center pit.
  2. Remove pulp and puree in food processor or blender.
  3. Add vinegar, ginger, cinnamon, salt, sugar, wine, allspice, cayenne pepper, and clove.
  4. Puree until well combined.
  5. In heavy saucepan over low heat, cook mixture until reduced and thickened.
  6. Remove from heat and allow to cool.
  7. Strain mixture through fine sieve.
  8. Refrigerate overnight to allow flavors to meld.

Antipasto Kabobs

Your very own homemade Kabob recipe. We prefer homemade recipes over canned varieties any day of the week.
 
Total time to cook: 45 minutes
Serves: 6
Category: Appetizer, salad, side dish
Ingredients:
  1. 8 Salami
  2. 8 Pepper, pickled, mild
  3. 2 Zucchini, quarter crosswise
  4. 16 Olives, black, pitted
  5. 16 Tomatoes, cherry, washed & drained
  6. 1/3 c, olive oil
  7. 2 tb Lemon juice
  8. 1 tb Vinegar
  9. 1/4 ts Oregano, dried
  10. 1 clove garlic
  11. 1/4 ts Salt
  12. 1/4 ts fresh Pepper
Step Wise Instructions:
  1. Soak 8 bamboo skewers in cold water for 15 minutes. Drain.
  2. Wrap a slice of salami around a small pepper.
  3. Thread on skewer. Thread on a piece of zucchini, an olive, a tomato, then another olive and another tomato.
  4. Repeat with the remaining skewers.
  5. Set kabobs aside.
  6. Light the coals.
  7. Mix remaining ingredients for dressing.
  8. Brush kabobs with dressing.
  9. When coals are hot, set kabobs on grill rack about 4 to 6 inches from heat source.
  10. Grill kabobs for 3 to 4 minutes, turning once or twice as needed.
  11. Food should be hot and beginning to char.
  12. Transfer kabobs to serving dish.

Asian Chicken Noodle Soup

One of the easiest and quickest chicken noodle soup recipes I have seen.
 
Total time to cook: 20 munites
Serves: 6
Category: Non veg, side dish, soup, lime juice
Ingredients:
  1. 1 tbsp vegetable oil
  2. 1 tbsp bottled minced garlic
  3. 1 tbsp bottled grated ginger
  4. 2 stalks fresh lemongrass, peeled
  5. 2 cups water
  6. 2 (14-ounce) cans fat-free, less-sodium chicken broth
  7. 1 pound chicken breast tenders, cut into bite-sized pieces
  8. 4 ounces uncooked angel hair pasta
  9. 1/4 cup chopped fresh cilantro
  10. 1 tbsp fresh lime juice
  11. 1/2 tsp salt
  12. 2 green onions, thinly sliced
  13. 1 red chilli pepper, finely chopped
Step Wise Instructions:
  1. Heat oil in a large nonstick skillet over medium-high heat.
  2. Add garlic, ginger, and lemongrass; sauté 3 minutes.
  3. Add water and broth; bring to a boil.
  4. Add chicken and pasta; cook 5 minutes or until chicken is done.
  5. Remove from heat; stir in remaining ingredients.
  6. Let stand 5 minutes.
  7. Discard lemongrass

Total time to cook: 30 minutes
Serves: 4

Ingredients:
  1. 2 c Cooked shrimp
  2. 1 Onion; quarter
  3. 1 Green pepper; quarter
  4. 1 Rib celery w/leaves; chunk
  5. 2 Cl garlic
  6. 1 Egg; beaten
  7. 1/2 c Seasoned bread crumbs
  8. Salt and pepper
  9. Oil for deep drying
Step Wise Instruction:
  1. Process shrimp, onion, green pepper, celery and garlic.
  2. Add egg, crumbs, salt and pepper.
  3. Shape into 1″ balls and fry in deep hot oil until golden.
  4. Serve with tartar or cocktail sauce.

Carrot And Lentil Soup

Smooth and creamy Carrot - Lentil Soup.
 
Total time to cook: 40 minutes
Serves: 7

Ingredients:
  1. 1/2 lb red lentils
  2. 2 pints chicken stock or vegetable stock or water
  3. 1/2 large onion, chopped
  4. 3 garlic cloves, chopped
  5. 1 1/2 teaspoons ground cumin
  6. 1/2 teaspoon ground coriander
  7. 1/2 teaspoon paprika
  8. 1 bay leaf
  9. 3 medium carrots
  10. 1 small sweet red pepper
  11. 1 red onion, thinly sliced
  12. 2 tablespoons chopped fresh coriander
  13. 1-2 tablespoon fresh lemon juice
  14. 1/4 teaspoon black pepper
Step Wise Instruction:
  1. In a large saucepan set over high heat, bring lentils and stock/water to a boil.
  2. Skim off froth.
  3. Stir in chopped onion, garlic, seasonings and bay leaf. Reduce heat to medium-low. Simmer, covered.
  4. Dice carrots and red pepper. Stir into soup.
  5. Continue simmering, covered, until carrots are very tender, about 15 minutes. Lentils in soup will need a total of about 20 minutes to cook.
  6. Stir in red onion, coriander, lemon juice and pepper.
  7. Remove bay leaf. Liquidise if required.
  8. Serve immediately or refrigerate, covered, up to 3 days or freeze.

Beer Cheese Soup

A small, simple to make Beer Cheese soup recipe. Quite flavorful.
 
Total time to cook: 20 minutes
Serves: 6

Ingredients:
  1. 1 tablespoon margarine
  2. 1 chicken broth
  3. 1/2 cup chopped onion
  4. 1/2 teaspoon minced garlic
  5. 1 teaspoon Worcestershire sauce
  6. 3 tablespoons cornstarch
  7. 2 cups half-and-half
  8. 1 light beer
  9. 2 cups shredded sharp Cheddar cheese
Step Wise Instruction:
  1. Melt the butter or margarine in a 4 1/2 quart soup pot over medium heat.
  2. Add the onion, garlic and Worcestershire sauce and stir well.
  3. Add the beer and raise the heat to high and boil for 3 minutes to evaporate the alcohol.
  4. Add the chicken broth and bring the soup back to a boil.
  5. Lower the heat to medium-low and simmer.
  6. Combine the cornstarch with 3 tablespoons water and stir until smooth.
  7. Set aside.
  8. Add the half-and-half and shredded cheese to the soup.
  9. Stir constantly until the cheese melts.
  10. Then stir in the cornstarch mixture.
  11. Stir constantly until the soup is thick, about 2 minutes.
  12. Serve garnished with bacon bits.

Ginger Fruit Dip

This fruity dip is easy to make and it’s a sweet treat. Serve as an appetizer or a dessert!

Ingredients:
  1. 1 3-ounce package cream cheese, softened
  2. 1 cup marshmallow cream
  3. ½ cup mayonnaise or salad dressing
  4. 1 teaspoon ground ginger
  5. 1 teaspoon grated orange rind
  6. Garnish: fresh mint sprig
Step Wise Instruction:
  1. Beat cream cheese at medium speed with an electric mixer until smooth.
  2. Add marshmallow cream and next 3 ingredients, stirring until smooth.
  3. Garnish if desired.
  4. Serve with fresh fruit or layer with fruit and granola in parfait glasses.

  1. 1 pound crabmeat special
  2. 3 tablespoons self-rising flour
  3. 1 each egg
  4. 3 drops hot pepper sauce
  5. 1 tablespoon prepared mustard
  6. 1 tablespoon mayonnaise
  7. 1 tablespoon Old Bay seasoning
Step Wise Instruction:
  1. Put crabmeat in bowl, removing shell pieces.
  2. Add all ingredients and mix gently until blended.
  3. Form into balls.
  4. Deep fry until golden.
