Ingredients:
- 1 bottle apple juice
- 1 can pineapple juice
- 1 bottle raspberry juice
- 1 cup water

Step Wise Instructions:
- One broken cinnamon stick
- 5 to 6 whole cloves
- 1/4 teaspoon freshly ground nutmeg
- Mix all ingredients and blend well. Serve chilled.

Ingredients:
- 1 (5 lb.) bass or equivalent
- 1 lg Onion, chopped
- 1 Bell pepper, chopped
- 1/2 Stick margarine
- 2 cn Tomato sauce
- 1 cn Whole tomatoes
- juice of 1 lemon 1 c Cooking wine
- 1/2 c Green onions
- Tabasco sauce
- salt to taste
- pepper, garlic powder

Step Wise Instructions:
- Sprinkle fish with lemon juice and season well, ahead of time, preferably overnight.
- Wilt onions, and bell pepper in margarine.
- Add tomato sauce and whole tomatoes and cook over medium heat for 45 minutes in uncovered pot.
- Add 2 cups cold water and seasoning to taste along with dash of Tabasco .
- Cook for 25 minutes over medium heat.
- Add wine and pour mixture over fish you have placed in a baking dish.
- Bake in 325 degree oven for 40 minutes.
- Baste several times.
- Sprinkle with parsley and onion tops and serve, garnishing with slices of lemon.

Ingredients:
- 4 medium mangos
- 2 ounces vinegar
- 1 tbsp ground ginger
- 1/8 teaspoon ground cinnamon
- 1 tbsp salt
- 1/2 cup raw sugar
- 1/2 cup white wine
- 1/2 tbsp ground allspice
- 1/2 tbsp cayenne pepper
- 1 whole clove

Step Wise Instructions:
- Peel the mangoes and discard the center pit.
- Remove pulp and puree in food processor or blender.
- Add vinegar, ginger, cinnamon, salt, sugar, wine, allspice, cayenne pepper, and clove.
- Puree until well combined.
- In heavy saucepan over low heat, cook mixture until reduced and thickened.
- Remove from heat and allow to cool.
- Strain mixture through fine sieve.
- Refrigerate overnight to allow flavors to meld.

Ingredients:
- 8 Salami
- 8 Pepper, pickled, mild
- 2 Zucchini, quarter crosswise
- 16 Olives, black, pitted
- 16 Tomatoes, cherry, washed & drained
- 1/3 c, olive oil
- 2 tb Lemon juice
- 1 tb Vinegar
- 1/4 ts Oregano, dried
- 1 clove garlic
- 1/4 ts Salt
- 1/4 ts fresh Pepper

Step Wise Instructions:
- Soak 8 bamboo skewers in cold water for 15 minutes. Drain.
- Wrap a slice of salami around a small pepper.
- Thread on skewer. Thread on a piece of zucchini, an olive, a tomato, then another olive and another tomato.
- Repeat with the remaining skewers.
- Set kabobs aside.
- Light the coals.
- Mix remaining ingredients for dressing.
- Brush kabobs with dressing.
- When coals are hot, set kabobs on grill rack about 4 to 6 inches from heat source.
- Grill kabobs for 3 to 4 minutes, turning once or twice as needed.
- Food should be hot and beginning to char.
- Transfer kabobs to serving dish.

Ingredients:
- 1 tbsp vegetable oil
- 1 tbsp bottled minced garlic
- 1 tbsp bottled grated ginger
- 2 stalks fresh lemongrass, peeled
- 2 cups water
- 2 (14-ounce) cans fat-free, less-sodium chicken broth
- 1 pound chicken breast tenders, cut into bite-sized pieces
- 4 ounces uncooked angel hair pasta
- 1/4 cup chopped fresh cilantro
- 1 tbsp fresh lime juice
- 1/2 tsp salt
- 2 green onions, thinly sliced
- 1 red chilli pepper, finely chopped

Step Wise Instructions:
- Heat oil in a large nonstick skillet over medium-high heat.
- Add garlic, ginger, and lemongrass; sauté 3 minutes.
- Add water and broth; bring to a boil.
- Add chicken and pasta; cook 5 minutes or until chicken is done.
- Remove from heat; stir in remaining ingredients.
- Let stand 5 minutes.
- Discard lemongrass

Ingredients:
- 2 c Cooked shrimp
- 1 Onion; quarter
- 1 Green pepper; quarter
- 1 Rib celery w/leaves; chunk
- 2 Cl garlic
- 1 Egg; beaten
- 1/2 c Seasoned bread crumbs
- Salt and pepper
- Oil for deep drying

Step Wise Instruction:
- Process shrimp, onion, green pepper, celery and garlic.
- Add egg, crumbs, salt and pepper.
- Shape into 1″ balls and fry in deep hot oil until golden.
- Serve with tartar or cocktail sauce.

| Smooth and creamy Carrot - Lentil Soup. |

Ingredients:
- 1/2 lb red lentils
- 2 pints chicken stock or vegetable stock or water
- 1/2 large onion, chopped
- 3 garlic cloves, chopped
- 1 1/2 teaspoons ground cumin
- 1/2 teaspoon ground coriander
- 1/2 teaspoon paprika
- 1 bay leaf
- 3 medium carrots
- 1 small sweet red pepper
- 1 red onion, thinly sliced
- 2 tablespoons chopped fresh coriander
- 1-2 tablespoon fresh lemon juice
- 1/4 teaspoon black pepper

Step Wise Instruction:
- In a large saucepan set over high heat, bring lentils and stock/water to a boil.
- Skim off froth.
- Stir in chopped onion, garlic, seasonings and bay leaf. Reduce heat to medium-low. Simmer, covered.
- Dice carrots and red pepper. Stir into soup.
- Continue simmering, covered, until carrots are very tender, about 15 minutes. Lentils in soup will need a total of about 20 minutes to cook.
- Stir in red onion, coriander, lemon juice and pepper.
- Remove bay leaf. Liquidise if required.
- Serve immediately or refrigerate, covered, up to 3 days or freeze.

Ingredients:
- 1 tablespoon margarine
- 1 chicken broth
- 1/2 cup chopped onion
- 1/2 teaspoon minced garlic
- 1 teaspoon Worcestershire sauce
- 3 tablespoons cornstarch
- 2 cups half-and-half
- 1 light beer
- 2 cups shredded sharp Cheddar cheese

Step Wise Instruction:
- Melt the butter or margarine in a 4 1/2 quart soup pot over medium heat.
- Add the onion, garlic and Worcestershire sauce and stir well.
- Add the beer and raise the heat to high and boil for 3 minutes to evaporate the alcohol.
- Add the chicken broth and bring the soup back to a boil.
- Lower the heat to medium-low and simmer.
- Combine the cornstarch with 3 tablespoons water and stir until smooth.
- Set aside.
- Add the half-and-half and shredded cheese to the soup.
- Stir constantly until the cheese melts.
- Then stir in the cornstarch mixture.
- Stir constantly until the soup is thick, about 2 minutes.
- Serve garnished with bacon bits.

- Beat cream cheese at medium speed with an electric mixer until smooth.
- Add marshmallow cream and next 3 ingredients, stirring until smooth.
- Garnish if desired.
- Serve with fresh fruit or layer with fruit and granola in parfait glasses.

- 1 pound crabmeat special
- 3 tablespoons self-rising flour
- 1 each egg
- 3 drops hot pepper sauce
- 1 tablespoon prepared mustard
- 1 tablespoon mayonnaise
- 1 tablespoon Old Bay seasoning

Step Wise Instruction:
- Put crabmeat in bowl, removing shell pieces.
- Add all ingredients and mix gently until blended.
- Form into balls.
- Deep fry until golden.
