Stir Fried Spinach

Stir Fried Spinach

Tasty spinach flavor, easy to prepare, delicious
Total time to cook: 40 minutes
Serves: 6
Category: Chicken, lamb, side dishs
Ingredients:
  1. 2 cups of cubed cooked lamb
  2. 2 cups of chicken broth
  3. 2 medium onions, chopped
  4. 1 garlic clove, minced
  5. 2 tbsp of flour
  6. 1 tbsp of butter
  7. 1 tbsp of cooking oil
  8. 2 tsp of curry powder
  9. ½ teaspoon of cumin
Step Wise Instruction:
  1. In a suitably sized saucepan, heat the butter and the oil.
  2. Sauté the onions until they soften, then add the garlic and cook for one minute.
  3. Stir in the curry powder, cumin and flour; then cook for a few seconds.
  4. Whisk in the chicken broth and cook, stirring continuously, until thickened.
  5. Add the cooked lamb cubes and heat though.
  6. Serve with rice and traditional curry condiments.

Roast turkey

Cooking a post holiday recipe made easy. Use leftover holiday turkey as the base.
Total time to cook: 1 hour
Serves: 4

Ingredients:
  1. 6 crushed garlic cloves
  2. 4 tbsp of honey
  3. 4 tbsp of hoi sin sauce
  4. 2 tbsp of soy sauce
  5. 2 tablespoons of oyster sauce
  6. 2 tsp of salt
Step Wise Instruction:
  1. Mix all of the ingredients over the turkey.
  2. Place in a 375°F (190°C) oven with a tray filled with water underneath.
  3. Roast for some times..
  4. Serve.

Lamb Curry

I like this soup alot. Fresh lamb and a nice curry flavor… mmmm.
Total time to cook: 40 minutes
Serves: 4
Category: Spinach, side dish, onion
Ingredients:
  1. 2 medium sized bunch
  2. 2 tbsp oil
  3. 8 cloves garlic
  4. 1 medium sized onion
  5. 1 or 2 green chilies
  6. 1 small tomato
  7. 1 tsp coriander powder
  8. salt to taste
Step Wise Instruction:
  1. Wash the spinach and chop finely.
  2. Lightly heat oil in a non-stick pan.
  3. Add the crushed garlic and fry for few seconds till light brown.
  4. Add onions, green chilies and saute on a medium flame till pink.
  5. Add spinach and stir fry on a high flame till the water from the spinach dries completely.
  6. Add the chopped tomato and cook on a high flame for 5 minutes.
  7. Add salt and coriander powder and cook for 2 minutes.
  8. Serve hot with rotis.

Crockpot Dressing

Wonderfully quick and easy snack to make Try our Crockpot dressing.
Total time to cook: 1 minutes
Serves: 4

Ingredients:
  1. 1 c. butter
  2. 3/4 c. chopped onion
  3. 2 c. chopped celery
  4. 1/4 c. parsley sprigs
  5. 2 cans mushrooms, drained
  6. 2 pkgs. seasoned stuffing mix
  7. 3 to 3 1/2 c. chicken broth
  8. 2 eggs, slightly beaten
Step Wise Instructions:
  1. Melt butter in skillet and saute onion, celery, parsley and mushrooms.
  2. Pour over bread cubes in large bowl.
  3. Pour in broth, add beaten eggs and mix together well.
  4. Pack lightly into crockpot.
  5. Cover and cook on high 45 minutes; then reduce to low 4 or more hours.

Linguine Frittata

Total time to cook: 45 minutes
Serves: 4

Ingredients:
  1. 8 ounces uncooked linguine
  2. 3 tablespoons olive oil, divided
  3. 1 cup chopped carrots
  4. ¼ cup chopped onion
  5. 2 cloves garlic, minced
  6. ½ pound asparagus, cut into 1-inch pieces
  7. 1 large red bell pepper, diced
  8. 1 medium tomato, seeded and chopped
  9. 1 teaspoon dried basil
  10. 1 teaspoon dried marjoram
  11. 1 teaspoon dried oregano
  12. 5 eggs
  13. ¼ cup grated Parmesan cheese
  14. ½ teaspoon salt
  15. ¼ teaspoon black pepper
Step Wise Instructions:
  1. Cook linguine according to package directions. Drain in colander.
  2. Place in large bowl.
  3. Heat 1 tablespoon oil in large skillet over medium heat until hot.
  4. Add carrots, onion and garlic; cook and stir 5 minutes or until carrots are crisp-tender.
  5. Add asparagus, bell pepper, tomato, basil, marjoram and oregano; cook and stir 5 minutes or until asparagus is crisp-tender.
  6. Add vegetable mixture to linguine in bowl; mix well.
  7. Beat eggs in medium bowl with wire whisk until frothy.
  8. Stir in cheese, salt and black pepper; pour over linguine mixture and toss.
  9. Heat remaining 2 tablespoons oil in 12-inch nonstick skillet over medium heat until hot. Add linguine mixture, spreading evenly. Reduce heat to low.
  10. Cook 5 minutes or until browned on bottom.
  11. Place large rimless plate over skillet; invert frittata onto plate.
  12. Slide frittata back into skillet.
  13. Cook 5 minutes more or until browned on bottom and eggs are set.
  14. Slide frittata onto serving plate.
  15. Cut into wedges.

Spicy Chicken

This is a great side dish for meat-lovers. Try serving it with spice-rubbed chicken placed on top.
 
Total time to cook: 20 minutes
Serves: 4

Ingredients:
  1. 2 lbs Chicken
  2. 2 tsp Corn Flour
  3. 2 tsp All Purpose Flour
  4. 1 no Egg
  5. 1 1/2 tsp. each of Ginger and Garlic paste
  6. 2 tsp Red Chilies powder
  7. 12 no Green Chilies
  8. 2 cups Yogurt
  9. 1 tsp Curry Powder
  10. 4 drops of red food color
  11. Onion for garnishing
  12. 3 tsp Lime juice
  13. Salt according to taste
  14. Vegetable Oil for frying
Step Wise Instructions:
  1. Mix corn flour, all purpose flour, egg, ginger garlic paste, chili powder and salt to thick batter. Add water if required.
  2. Add chicken pieces to the batter and marinate for an hour.
  3. Deep fry the marinated chicken pieces till they turn golden.
  4. Heat 4 tsp. oil in a sauce pan and add slit chilies, yogurt, garam masala, and red color, little salt and fried chicken pieces.
  5. Fry for 4-5 minutes and remove from heat.
  6. Add lime juice, mix well, garnish with onions
  7. Serve hot.

Chickpea Patties

Yams for the holiday season are required in our household. A must for Thanksgiving as well as Christmas
 
Total time to cook: 20 minutes
Serves: 4
Category: dinner, non veg, egg, peas
Ingredients:
  1. 1 can chickpeas rinsed and drained
  2. 1 cup shredded carrots
  3. 1/3 cup seasoned dry bread crumbs
  4. 2 tablespoons creamy Italian salad dressing
  5. 1 egg
  6. 2 tablespoons vegetable oil
Step Wise Instructions:
  1. Mash chickpeas coarsely in medium bowl with hand potato masher, leaving some larger pieces.
  2. Stir in carrots, bread crumbs, dressing and egg.
  3. Shape chickpea mixture into 4 patties.
  4. Heat oil in large nonstick skillet over medium-high heat.
  5. Add patties; cook 3 minutes per side or until well browned.
  6. Remove from skillet; drain on paper towels.
  7. Serve immediately.

Meat Loaf

This meatloaf recipe is as simple as it gets. We like to make up a double batch and freeze them so that we always have meatloaf around for pasta dishes. The kids love them
 
Total time to cook: 40 minutes
Serves: 4
Category: non veg, dinner, smoked ham
Ingredients:
  1. 2 pounds lean ground beef
  2. 1 pound ground pork
  3. 1 large green bell pepper, minced (about 1/2 cup)
  4. 1 small onion, minced (about 1/2 cup)
  5. 2 large eggs, lightly beaten
  6. 4 cups soft breadcrumbs
  7. 3/4 cup finely chopped smoked ham
  8. 1/3 cup ketchup
  9. 1/4 cup firmly packed brown sugar
  10. 1/4 cup maple syrup
  11. 3 tablespoons Worcestershire sauce
  12. 2 tablespoons hot sauce
  13. 1 (15-ounce) can tomato sauce
  14. 4 bacon slices
Step Wise Instructions:
  1. Stir together ground beef and next 11 ingredients in a large bowl just until combined. Shape mixture into 2 (9- x 4-inch) loaves; place in an aluminum foil-lined broiler pan.
  2. Pour half of tomato sauce evenly over each loaf, and arrange 2 bacon slices over each loaf.
  3. Bake at 350° for 1 hour. Let stand 10 minutes before serving.
  4. Mini Alabama Meat Loaves: Shape mixture into 12 (2- x 4-inch) loaves, and arrange on a rack in a foil-lined broiler pan. Bake 40 to 45 minutes.
  5. To make ahead: Omit tomato sauce and bacon.
  6. Wrap unbaked meat loaf in plastic wrap and foil. Freeze up to 1 month.
  7. Thaw in refrigerator overnight, unwrap, and proceed as directed.

Tandoori Chicken

Outstanding chicken recipe for summertime cookouts.
 
Total time to cook: 40 minutes
Serves: 4

Ingredients:
  1. 8 Large Chicken pieces
  2. 2tbs Lime Juice
  3. 2tsp Coriander Seeds
  4. 2cloves Crushed Garlic
  5. 1″piece Grated Ginger
  6. Salt to taste
  7. 3 Dried Red Chilies
  8. 1 Clove
  9. 2tsp Garam Masala
  10. 2tsp Chilli powder
  11. 1/2quantity Chopped Onion
  12. 11/4cup Yogurt
Step Wise Instructions:
  1. Make slits in the flesh of the chicken pieces and rub lime juice and salt over them.
  2. Keep aside for half an hour.
  3. Grind dried chillies, coriander seeds, ginger, garlic and clove together.
  4. Mix the paste with garam masala and chilli powder.
  5. Heat a pan and saute the masala. Add onions and fry.
  6. Pour yogurt and stir well.
  7. Remove the pan from fire.
  8. Arrange chicken pieces in a dish and pour over the yogurt mixture.
  9. Refrigerate the marinade overnight or at least for 4-6 hours.
  10. Arrange the chicken on a broiler tray cook it in a pre-heated oven for 20-30 minutes or brush oil over the chicken pieces and cook in a gas stove turning over till both sides are done.
  11. Keep pouring oil and masala over the chicken pieces in between.

Chicken sandwich

Open face sandwich sancks for the entire family
 
Total time to cook: 50 minutes
Serves: 6
Category: Egg, chicken, snacks, non veg
Ingredients:
  1. 4 boned and skinless chicken breasts finely chopped
  2. 3 T. butter
  3. 2 C. unseasoned breadcrumbs
  4. 1/2 C. half and half light cream
  5. 1 beaten egg
  6. 2 T. Dijon mustard
  7. 1 C. chopped red pepper
  8. 1/2 C. chopped celery
  9. 6 green onions chopped
  10. 2 T. fresh chopped tarragon
  11. Salt and freshly ground black pepper to taste
  12. Oil for sautéing
Step Wise Instructions:
  1. Saute red peppers, celery and green onions in a pan, until tender, about 5 minutes.
  2. Cool.
  3. Add to a mixing bowl with the rest of the ingredients.
  4. Mix well.
  5. Chill for 2 hours or as long as overnight.
  6. Shape chicken mixture into patties.
  7. Saute in a skillet over medium heat, about 6 -7 minutes.
  8. Serve on onion buns, with mayonnaise, tomato and lettuce.
