Molasses Tossed Potatoes

I love to serve this Molasses Tossed Potatoes around the holidays.
 
Total time to cook: 50 minutes
Serves: 6

Ingredients:
  1. Nonstick cooking spray
  2. 2-1/2 small Yukon Gold potatoes
  3. 2 tablespoons cooking oil
  4. 2 tablespoons molasses
  5. 2 tablespoons balsamic vinegar
  6. 1 teaspoon dried thyme, crushed
  7. 1/2 teaspoon salt
  8. 1/2 cup walnut pieces
  9. Fresh chive (optional)
Step Wise Instructions:
  1. Preheat oven to 450 degree F. Coat a 13×9x2-inch baking pan with nonstick cooking spray.
  2. Scrub and quarter potatoes (halve any large quarters).
  3. Arrange potatoes in pan.
  4. In a small bowl combine oil, molasses, vinegar, thyme, and salt.
  5. Drizzle mixture over potatoes.
  6. Toss gently to coat. Bake potatoes, uncovered, for 20 minutes.
  7. Add nuts; stir to mix. Bake 15 to 20 minutes more or until potatoes are tender, stirring once.
  8. Transfer to a serving bowl.
  9. Garnish with fresh chive. Makes 8 side-dish servings.
