Breakfast casserole

Yes, many breakfast casseroles are similar. No, this is not different. But, I think you will love the taste of this casserole if you include the optional mushrooms and tomatos.
Total time to cook: 40 minutes
Serves: 4

Ingredients:
  1. 8 frozen hash brown patties
  2. 3 cups shredded Sharp Cheddar cheese
  3. 1 cup shredded Monterey Jack cheese
  4. 1 cup fully cooked ham
  5. 1 scallion, thinly sliced
  6. 7 eggs
  7. 1 cup milk
  8. 1/2 tsp. salt
  9. 1/2 tsp. dry mustard
  10. 1/4 tsp. pepper
Step Wise Instructions:
  1. Place hash brown patties in a single layer in a greased 13×9″ baking dish.
  2. Sprinkle with cheeses, ham and onion.
  3. In a bowl, beat eggs, milk, salt, mustard and pepper until well combined.
  4. Pour over hash browns.
  5. Cover and bake at 350°F for 1 hour.
  6. Uncover and 15 minutes longer or until edges are golden brown and knife inserted near center comes out clean.
